The Study of Alcohol Consumption and Nutritional Status of University Male Freshman in Rural Area (일부 지방 대학 남자 신입생의 알코올 섭취와 영양소 섭취상태에 관한 연구)

  • The purpose of this study was to investigate the relationship between alcohol consumption and nutritional status of university male freshman in Chungnam area. The total of 111 subjects took part in the study and, they were observed general characteristics, alcohol consumption status, and nutrient intake using questionnaires. The mean age, height, weight, and BMI of the subjects were 19.3 years, 174.3㎝, 65.2㎏, and 21.5㎏/$m^2$ respectively. The mean alcohol consumption, and energy intake from alcohol were 7.8g/day, 55.3kcal/day. A significant number of subjects(48.2%) answered their frequency of alcohol consumption was once 2 weeks. Only 4.6% of subjects answered never drink. In almost subjects, alcohol consumption have been stared since they were adolescents, and major type of alcoholic beverage was 'soju'. The mean energy intake was 1985.6kcal and, energy ratio from carbohydrate, protein, fat was 58 : 15 : 27. There were significantly positive correlation among alcohol consumption and, body weight(p<0.05), intake of food, (p<0.05), energy(p<0.001), animal fat(p<0.05), fiber(p<0.05), vitamin $B_2$(p<0.05) and niacin(p<0.05). The alcohol consumption period showed a significantly positive correlation with alcohol consumption per one time(p<0.05). In summary, high consumption of alcohol in subjects was observed. Also, increase of alcohol consumption was related to weight gain and nutritional imbalance. Therefore, it is need that nutrition education for prevention of high alcohol consumption in university freshman and adolescents.

Effect of Smoking on the Levels of Antioxidant Vitamins and Enzymes in Healthy and Young Men (흡연이 건강한 젊은 남자의 항산화 비타민과 항산화 효소에 미치는 영향)

  • It has been reported that cigarette smoking increases free radical generation, which can also increase lipid peroxides and deplete antioxidants. The purpose of this study was to determine whether cigarette smoking and other lifestyle choices may affect serum lipid peroxide concentrations, serum antioxidant concentrations such as tocopherol and vitamin C, and serum antioxidant enzyme activity such as glutathione peroxidase and superoxide dismutase. Dietary intakes were assessed by 24-hour recall and survey questionnaires from 48 male non-smokers and 52 male smokers. Overnight fasting blood was collected and measured for individual antioxidant status. The daily vitamin C intakes of smokers tended to be lower than those of non-smokers, and the intakes of both groups were under the Recommended Daily Allowance (RDA). Vitamin E intake was sufficient for smokers and non-smokers. Serum lipid peroxide concentrations were no difference among all subjects. The serum $\alpha$-tocopherol concentrations of all subjects were in a normal range, and they were highest in mild smokers (p<0.05). Mean serum vitamin C levels were lowest in heavy smokers (p<0.05). The activities of serum glutathione peroxidase and superoxide dismutase were not significantly different in smokes and non-smokers. In conclusion, smoking did not increase oxidative stress in heathy young men. However, it is desirable for heavy smokers to consume more vitamin C than the RDA sine their serum vitamin C concentrations are relatively low.

Correlation between Nutrient Intakes and Bone Mineral Density in Carpus of Female University Students (일부 여대생의 영양섭취와 손목 골밀도와의 상관성)

  • The purpose of this study was to examine the correlation between nutrient intakes and bone mineral density in female university students. A total 27 female university students were measured the anthropometric characteristics, dietary intake and the bone mineral density of carpus using DEXA. The average age, height, weight, % body fat, WHR, and BMI of the subjects were 22.7 years, 161.5 cm, 57.0 kg, 29.9%, 0.8, 21.8 kg/$m^2$, respectively. Bone mineral density of ultradis and distal carpus as T-value were -1.5 and -0.4, respectively. The daily energy intake of the subjects was 1589.0kcal. And the intakes of energy, calcium, iron, zinc, vitamin $B_2$, and folic acid did not meet the Korean RDAs. The daily total food intake of the subjects was 1011.0g and food intake from cereals and vegetables was high. The major food groups of mineral intake were vegetables/cereals/milks/fishes for calcium, cereals/meat/vegetables/fishes for phosphorus, cereals/vegetables/meats for iron, seasonings/vegetables/cereals for sodium, vegetables/cereals/seasonings for potassium, and cereals/meats for zinc. The body weight and body mass index were significantly positive correlated to the bone mineral density of average carpus, respectively. The intakes of animal calcium and vitamin $B_2$ were significantly negative correlated to the bone mineral density of average carpus, respectively. In conclusion, bone mineral density in carpus and nutrient intakes of some female university students were low. Therefore, health management and the study on relation between bone mineral density in various site and long-term intakes of nutrients in many subjects are required.

Study on the Relationship between the Nutrient Intake and Level of Depressive Symptoms - Using the Data from the Korea National Health and Nutrition Examination Survey 2016 - (영양소섭취와 우울증상 수준의 관련성에 대한 연구 - 2016년 국민건강영양조사 자료를 이용하여 -)

  • The purpose of this study was to examine the relationships between the nutrient intake and level of depressive symptoms. A total of 5,761 subjects with depression were selected for the main data analysis from a Korean National Health and Nutrition Examination Survey, KNHANES (2016), and were divided into low depressed and high depressed groups. The data were analyzed by descriptive analysis, ${\chi}^2-test$, logistic regression, and t-test using SPSS 24.0 statistics. The results revealed significant differences in the prevalence of depression according to sex (P<0.001), age (P<0.001), income (P<0.001), and education (P<0.001). Regarding the health behavior, higher stress levels (P<0.001) and smoking habit (P<0.001) appeared to be strongly associated with high levels of depression. On the other hand, the possibility of experiencing depressive symptoms was lower when the number of walking days per week was more than 3 days (P<0.05), when the number of working days per week was more than 5 days (P<0.01), and the rate of aerobic physical activity was higher. Based on the 'Dietary Reference Intakes for Koreans 2015', the subjects in the low depression group showed better intake of energy and 22 nutrients than the high depression group.

Survey on Nutrients of Served and Consumed Foods in Korean Restaurants in Changwon (창원시 소재 한정식업소에서 제공되는 1인분 제공량과 섭취량 실태조사)

  • The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ⅱ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by Korean style restaurants in Changwon. A total of 20 restaurants in Changwon participated in this study, and two investigators visited there, consumed and investigated it. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance(RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) 1,821.2Kcal were served, 1,052.6Kcal were consumed and 768.6Kcal which is equivalent to 1/3RDA were thrown away on average. 2) The average carbohydrate:protein:fat(CPF) ratio of caloric nutrients was 42:27:31. 3) The correlation between the consumed and unconsumed calories was r=0.661 and the correlation between served and unconsumed calories was r=0.819. Both consumed and unconsumed calories were closely related to the served calories. 4) The result of the research showed that mean INQ in most nutrients was higher than 1.0, especially INQ in unconsumed food is mostly higher than INQ in provided and consumed food. 5) The unconsumed food and the meal prices were closely correlated in terms of price loss. These findings indicate the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. They should also be strongly encouraged to play an active role in improving their customers’ nutritional status, as well as reducing the restaurants wastage of food. Lastly, further research should be conducted to improve the quality of the menus in Korean restaurants.

A Study on Dietary Related Factors and Blood Parameters of Obese Children Residing in Samcheok (삼척지역 일부 중등도 이상 비만 아동의 식생활관련 요인과 혈액성상에 관한 연구)

  • The purpose of this study was to investigate the dietary related factors and blood parameters of moderately or severely obese children residing in Samcheok. Anthropometric measurement, 24-hour recall for dietary intake, blood analysis and questionnaire response including nutritional knowledge, nutritional attitude, body image recognition and eating habits were conducted in 23 obese children(16 boys and 7 girls) and their mother. The mean age of subjects are 10.0 years. The average body weight, BMI, obesity index and percent body fat were 57.5㎏, 27.0㎏/$m^2$, 47.3 and 38.1% in boys and 51.0㎏, 24.8㎏/$m^2$, 40.3 and 43.9% in girls. The average nutritional attitude, the self-satisfaction and the nutritional knowledge scores in subjects were 29.9/40, 32.7/50 and 7.3/10, respectively. 34.8% of the subjects were unsatisfied with their body image, whereas, 81.8% of their mothers were unsatisfied with children’s body image. 60.9% of subjects had one or both obese parents. Average intake of energy were 90.6% of RDA in boys and 84.3% of RDA in girls. The ratio of energy from carbohydrate/protein/fat were 66/16/18 in boys and 66/17/17 in girls. The mean serum cholesterol concentration of the subjects was 191.8mg/dl and 78.3% of the subjects were above the normal serum cholesterol rage of children. In the results of correlation analysis, obesity index was negatively correlated with self and mother’s nutritional attitude scores. Body weight and BMI were positively correlated with vitamin C(p<0.05) and fruits(p<0.05) intakes. And there was a positive correlation between obesity index and BMI, and serum cholesterol(p<0.05).

An Analysis on the Job Satisfaction and Job Characteristic for the dietitians who perform Nutrition Service in the field of Industry Foodservice (영양서비스업무를 수행하는 사업체급식소 영양사의 직무만족 및 직무특성 분석)

  • This study has been focused on understandings for the problems of dietitian who perform nutrition service in the field of industry foodservice and then focused on using of its findings as basic material for smooth nutrition service performance through analyzing job satisfaction, job characteristic and its importance of dietitians' task in industry foodservice. A questionnaire survey of 120 nutritionists who have engaged themselves in industry foodservice―60 are under direct management and 60, held in trust―has been performed, and 95 responses (79%) have been collected and categorized, except some unfinished responses. The examined data have been classified statistically by using of SPSS, and then analyzed into frequency, percentage, mean value, standard deviation, and correlation among factors, according to questionnaires. The findings of the research can be summarized as following: The details of the surveyed dietitians were: 20-25 years old on an average; working less than two years; college graduates; mere employees; receiving monthly pay of 70~100 won on an average; working more than 52 hours weekly; and providing with four meals a day in a single menu. For job satisfaction and job characteristic, the service itself and the understanding of the service appear as main features. For the relative importance of the service, the findings show that the menu making, sanitation and cost control occupy an important position, while nutrition counseling, nutrition education and dietary control by ailments make up very low portion. For the cause of not enacting the nutrition service, the lack of counseling ability and the overburden of food service are at the top. The findings of this research, therefore, present the needs of the service capacity education and the reduction of excessive foodservice hours of dietitians in order to secure the efficient nutrition service in industry foodservice. To achieve this goal, first of all, there should be an intensive education course in school by using of practice hours. for enhancing practical service adaptability, and then the computerization of foodservice should be executed perfectly to reduce the excessive foodservice hours.

Effectiveness of Worksite Nutrition Counseling for Hyperlipidemic Employees in Kyung - buk Area (영양교육을 통한 사업장 근로자의 고지혈증 개선)

  • This study was aimed to implement and evaluate worksite nutrition counseling for industrial workers with hyperlipidemia in Kyung-buk area. Forty-six subjects consisted of 41 men and 5 women who were diagnosed hyperlipidemia though health examination had their average age, 40.3$\pm$ 6.0 and half of them were office workers and one third labor workers. Twenty-eight subjects had fatty liver with or without other complications and six had gastric problems. The subjects were interviewed using questionnaires on food habit, food frequency, smoking, drinking and exercise, and they were given nutrition counseling which was continued for 7 months. Desirable food selections were practiced using foods or food models and various written materials individually or as group during lunch times and breaks. After counseling, smoking and drinking were reduced and exercise and food habits were improved. Average levels of initial serum total cholesterol(T-Chol), HDL-cholesterol(HDL-Chol) and triglyceride(TG) were 214$\pm$ 44, 45.07$\pm$ 7.14 and 281$\pm$ 13mg/dl respectively and were not changed significantly except 2.30$\pm$ 7.04mg/dl increase of HDL-Chol(p<0.1) after nutrition counseling. However, subjects who improved their food habits and smoking, drinking and exercise habits had higher tendency to have reduced serum T-Chol and TG levels compared with those who drank less. Food habit score was negatively correlated with serum TG levels(r=-0.378, p<0.01). It is concluded that an efficient and regular nutrition counseling by dietitian at worksite is beneficial for health of industrial workers.

The Meal Management of Korean Type 2 Diabetes Patients Using Carbohydrate Counting (Carbohydrate counting 을 이용한 제2형 당뇨병 환자의 식사 관리)

  • Carbohydrate(CHO) counting is a meal planning approach used with diabetic patients that focuses on carbohydrate as the primary nutrient affecting post-prandial glycemic response. However, it has not been used in meal management of diabetic patients in Korea. CHO counting can be used by clients with type 1 and 2 diabetes. The purpose of the study was to determine the barriers to utilize the CHO counting when three levels of CHO counting were educated to type 2 diabetic patients who started continuous subcutaneous insulin infusion (CSⅡ) therapy by nutrition lectures and counseling. And the CHO-to-insulin ratios were determined for the individual patients who followed the carbohydrate counting as a meal management, and the factors to influence the CHO-to-insulin ratios were selected through the stepwise regression analysis. Twenty- four subjects were received three lectures, and one or two nutritional counseling for a month. The average age of the subjects was 50.7 years, and the duration of diabetes was 9.4 years. Their body mass index (BMI) was 21.5 kg/$m^2$. The difficulties of using CHO counting were 1) confusing the CHO exchange system to diabetic food exchange system, 2) lack of basic nutrition and not distinguishing nutrients such as CHO, fat and calorie, and 3) lack of motivation to make effort to count and record the amount of carbohydrates eaten. Nutritional counseling replenished the nutrition education and made patients practice CHO counting. Average CHO-to-insulin ratios at breakfast, lunch and dinner were 4.1$\pm$3.3, 2.9$\pm$2.6 and 2.9$\pm$3.0units/23g of CHO, respectively. CHO-to-insulin ratios were influenced by gender, age, BMI, post-prandial blood glucose levels and post-prandial c-peptide levels. The effective education and nutritional counseling of CHO counting can make CHO counting applicable to type 2 diabetic patients as meal management for improving glycemic control with less hypoglycemic episode.

Comparison of Nutrient Calculation Programs for Dietary Intake Analysis (식품섭취 조사 분석시 영양가 계산 프로그램의 비교 연구)

  • With the growing number of nutrient calculation software packages on the market, there are need to compare each programs. Since each program use different nutrient databases, the result of calculation may be different in value. In this study, we use three(A, B, C) most popular program package to compare the result of nutrient calculation. For the analysis, 24hour recall data from 97 preschool children, 66 university students and 95 aged persons were used. For the calculation if subjects gave the complete recipe, recipes from the subjects were used. Otherwise, recipe from the program database were used. Common 15 nutrients of which all program can give results, are analyzed and compared for mean nutrient intake and nutrient intake for food groups. Ten nutrients among 15 nutrients which have RDA were analyzed for % of RDA and the distribution of RDA. Mean nutrient intake of Fe, vitamin A, Na were statistically different among results of the calculation using three programs(p<0.001). The distribution of Fe, vitamin A and vitamin $B_2$, niacin were statistically different among three results of the calculation using three program(p<0.001, p<0.05). Nutrient intakes of food groups were statistically different in cereal and products, bean and products, vegetables, fruits, fishes and shellfishes, milk and products, beverages, and seasonings(p<0.0001). It is hard to say that the difference among three program are coming from the difference from nutrient database or recipe database in this study. With these result, we conclude that it is necessary to evaluate nutrient database and recipe database as the foremost consideration in selecting nutrient calculation software. Those differences should be considered when interpreting results, comparing results with other studies, and when developing treatment plans in the clinical settings.
