A Mixture of Thyme, Quillaja, and Anise at Different Nutrient Density on Growth Performance, Nutrient Digestibility, Meat Quality, Organ Weight, Cecal Bacteria, Excreta Moisture, and Bone Contents in Broiler Chicks

  • The experiment was carried out on 648 Ross 308 broilers ($40.4{\pm}0.2$ g; 1 d) chickens. It lasted for 28 days to evaluate the effects of phytogenic feed additive (PFA) on growth performance, nutrient digestibility, cecum microbiota, bone minerals contents, meat quality and internal organ weights. The chickens were haphazardly divided into any 1 of 6 dietary treatments (6 replicate pens/treatment; 18 broilers/pen). The experimental diets were: CON, control; T1, CON + 150 ppm PFA; T2, CP 0.5% reduced from basal diet; T3, T2 + 150 ppm PFA; T4, Ca 0.07% reduced + available P (aP) 0.065% reduced from basal diet; T5, T4 + 150 ppm PFA. Overall, broilers fed with T3 diet tended to have higher (P=0.08) body weight gain (BWG), and lower (P=0.05) feed conversion ratio (FCR) than T2 diet. The apparent total tract digestibility (ATTD) of P was lower (P=0.03) in T2 as compared to CON and it was higher (P=0.02) in T3 as compared to T2. There were no differences in meat quality, relative organ weight, and cecum microbiota (P>0.05). The supplementation of PFA showed trends in improvement in ash content in the bone of birds fed T1, T2 and T4 diets compared with CON. Likewise, the supplementation of PFA tended to increase (P=0.07) Ca content in the bone of birds fed T1 diet compared to CON. In conclusion, dietary supplementation with 150 ppm PFA could improve BWG in birds fed protein reduced diet, improve apparent total tract digestibility (ATTD) of P, and the bone Ca contents in broilers.

Quality Characteristics of Chicken Emulsion Sausages with Different Levels of Makgeolli Lees Fiber

  • Makgeolli lees is a by-product of the makgeolli brew processing. Makgeolli lees contains high levels of fibers, which can be separated and used to develop foods rich in dietary fibers. The purpose of this study was to determine the effect of makgeolli fibers (0-4%) on proximate composition, caloric content, pH, color, cooking yield, textural profile, and sensory characteristics of chicken-emulsion sausages. The moisture content of 1, 2, and 3% makgeolli lees fiber-amended product was higher than the control, while that of the 4% product was not. Total calorie estimates of makgeolli lees fiber-amended sausages were lower than the control, except for in the case of the 4% treatment. Moreover, chicken sausages supplemented with makgeolli lees fiber had higher cooking yields and improved textural properties. Chicken emulsion sausages prepared with makgeolli lees fiber had improved overall acceptability, and the best results of sensory characteristics were obtained for the emulsion sausages containing 2% makgeolli lees fiber.

Feeding Effect of Dried Citrus Byproduct on the Quality of Jeju Native Pig Meat (제주도 토종 돼지고기의 품질에 영향을 미치는 건조 감귤 부산물 급여 효과)

  • This study was carried out to investigate the possibility for utilization and the effectiveness of citrus byproducts on the nutritional composition and sensory score of Jejudo native pig meat. The groups are consisting of the Jejudo native pig loin without citrus byproduct ($JNP-T_0$) and the Jejudo native pig loin fed with 8% and 15% citrus byproduct during growing and fattening period($JNP-T_1$). The contents of moisture, crude protein, crude fat, crude ash, calorie, cholesterol content Mg, P, K, Na, vitamin $B_1\;and\;B_2$, total amino acid, and total free amino acid content were not significantly different between $JNP-T_0$ and $JNP-T_1$(p>0.05). It was found that palmitic acid($25.301{\sim}27.403%$) was the highest one among saturated fatty acid while oleic acid($42.234{\sim}43.061%$) was the highest among unsaturated fatty acid in both groups. In case of sensory score, the color and aroma of raw meat, and the flavor preference of boiled meat of $JNP-T_0$ were higher than those of $JNP-T_1$(p<0.05). But the taste, texture, juiciness and palatability of boiled meat were not influenced by feeding of citrus byproduct.

Quality Characteristics of Kochujang Prepared with Soy Powder (콩가루를 첨가한 고추장의 품질 특성에 관한 연구)

  • To improve the sensory acceptability of Kochujang with added Meju powder, Kochujang was prepared with added raw soy powder and roasted soy powder were added instead of Meju powder. These Kochujang were fermented for 45 days at $25{\pm}3^{\circ}C$ and examined for changes in their physicochemical properties and sensory characteristics. Results were as follows. In the moisture content and acidity of Kochujang, the group with added Meju powder was the highest. There were no significant differences in the lightness (L value), although the group with added with Meju powder and raw soy powder were decreased in lightness over days of storage. For redness (a value), the group with added raw soy powder was the highest, and the group with added raw soy powder was decreased with increasing storage days. For yellowness (b value), the group with added roasted soy powder was the highest, and there was no significant difference over storage days. The reducing sugar content of Kochjang to which roasted soy powder was added was the highest, and the amino-nitrogen contents of Kochjang to which Meju powder was added was the highest In sensory evaluation, the Kochjang with added roasted soy powder had the best score in taste and overall acceptability. Therefore, these results suggest that roasted soy powder can be applied to Kochjang for enhanced sensory preference.

Quality Characteristics and Antioxidant Properties of Omija-pyun (Schisandra chinensis Jelly) added with Stevia Leaf Powder (스테비아 잎 분말 첨가 오미자편의 품질 특성 및 항산화 특성)

  • This study added stevia leaf powder at ratios of 0.5, 1.0, 1.5, and 2.0 percent to Omija-pyun (Schisandra chinensis Jelly) as a natural low-calorie sweetener instead of sugar which is added to Omija-pyun in considerable amounts to evaluate quality characteristics and antioxidant activities compared to the control group with the addition of sugar. Moisture content of Omija-pyun expanded by increasing the measurement of stevia leaf powder (p<0.001), pH (p<0.01) and sugar content (p<0.001) decreased. L-values and b-values revealed a tendency to increase by adding more stevia leaf powder, but a-value revealed a tendency to decrease (p<0.001). Hardness (p<0.001) and chewiness (p<0.05) decreased by adding more stevia leaf powder. Based on the consumer preference evaluation, Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of color and flavor (p<0.001). The control group and Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of taste and texture (p<0.001). There were significant differences in the organoleptic properties except hardness between the samples by quantitative descriptive analysis. The control group revealed the highest preference in terms of redness and transparency, and redness and transparency tended to decrease by adding more stevia leaf powder (p<0.001). Organoleptic properties on bitterness and sourness were enhanced by adding more stevia leaf powder in the principal component analysis (PCA). Regarding antioxidant properties, total phenol compounds and flavonoid contents of Omija-pyun increased by adding more stevia leaf powder, and DPPH radical scavenging capacity also increased (p<0.001). Based on results, it is preferable to serve Omija-pyun with the addition of 1.0 percent stevia leaf powder instead of sugar within the context of quality and antioxidant activity.

Nutritional and Sensory of Green Leafy Vegetables Cultivated from Medicinal Plant Seed (약용식물 종자로 재배된 쌈잎채소의 영양학 및 관능적 평가)

  • Ten green leafy vegetables were cultivated from medicinal plant seed. Their nutritional content, taste, appearance and texture were evaluated. Moisture content was $91.23{\pm}0.00%$ in $Saururus$ $chinensis$ (Sc), $90.39{\pm}0.05%$ in $Perilla$ $frutescens$ (Pa) and $66.78{\pm}0.05%$ in $Agastache$ $rugosa$ (Ar). The fat content was 8.89% in $Salvia$ $plebeia$ (Sp) and 0.13% in $Peucedanum$ $japonicum$ (Pj). The protein content was $11.1{\pm}0.00%$ in Ar and $0.54{\pm}0.03%$ in Pj. Total sugar content was $20.06{\pm}0.03%$ in $Geum$ $japonicum$ (Gj), $12.73{\pm}0.03%$ in $Coixlacry$ $majobi$ (Cm) and $1.04{\pm}0.03%$ in $Atractylodes$ $japonica$ (Aj). Medicinal leafy vegetables had higher glucose, sucrose and fructose, but lower maltose. Ascorbic acid content was $33.67{\pm}1.40$ mg% in Sc, $27.91{\pm}2.91$ mg% in Pa and $15.68{\pm}1.09$ mg% in At. Chlorophyll content was higher in $Perilla$ $frutescens$ var. $acuta$ Kudo than other leafy vegetables. The evaluation also showed that Cm, Pa and Aj tasted sweeter and had low acidity.

Study on Food Scientific Value of Korean Comfrey (한국산(韓國産) Comfrey의 식품학적(食品學的) 가치(價値)에 관(關)한 연구(硏究))

  • General components of comfrey collected during the period of July-September 1978 in Pusan area were investigated with a view to determine its possible value as a foodstuff by means of titrimetry, chromometric analysis and fluorometric analysis. As a result, the following data were obtained. 1) The contents of moisture, crude lipid, crude protein and carbohydrates of the comfrey were similar to those of other green vegetables such as spinach, crowndaisy, lettuce, leek and mallow. 2) The inorganic Ca, P and Fe of the comfrey were fairly greater in contents than those of other green vegetables. Compared with spinach, for instance, there were 4 times as much Ca and about 2 times as much Fe in it, respectively. 3) The contents of vitamins of the comfrey were also found in an amount much greater than those of other green vegetables. V-A of the comfrey, for instance, were 6 times greater in content than that of lettuce, and about 2 times greater than that of crowndaisy, leek and mallow, respectively. It also showed a greater content of V-A than even that of spinach, known as a vegetable most rich in V-A. V-B of the comfrey showed a little lower level of content than that of spinach but showed about the same level of content as that of leek and lettuce. V-B of the comfrey was 6 to 8 times greater in content than that of lettuce and leek. The content of niacin of the comfrey was also found much greater than those of other foodttuffs. V-C of the comfrey compared 3.5 times greater with that of lettuce, 2 times greater with that of mallow, and generally a higher level with those of other green vegetables. The above findings seem to firmly establish the food scientific value of the comfrey. Furthermore, the vegetable is very prolific and grows easily. If the general public is made aware of these facts, the vegetable is thought to contribute not a little to their dietary life as a nutritious foodstuff.

Comparison of Quality Analyses of Domestic and Imported Wheat Flour Products Marketed in Korea (시판 중인 우리밀 및 수입밀 밀가루의 품질 및 특성 비교 분석)

  • The physicochemical characteristics of 4 domestic wheat flour products were compared to those of 4 imported wheat flour products marketed in Korea. The contents of moisture, ash, protein, total dietary fiber (TDF), color (L, a, b), whiteness, solvent retention capacity (SRC), water absorption index (WAI), water soluble index (WSI), pasting characteristics by rapid visco analyzer (RVA), and principle component analysis (PCA) were analyzed. The domestic wheat flour products were composed of higher content in ash and protein, compared to the imported wheat flour products. The domestic wheat flour products had lower SRC and WSI characteristics than the imported wheat flour products. The values of lactic acid SRC (LASRC) in the imported wheat flour products showed an increasing trend as the protein content increased. The differences in viscosity were observed in the domestic wheat flour products. However, no major significant differences of viscosity were found among the imported wheat flour products. The result of PCA showed a consistent trend in the imported wheat flour (strong, medium, and weak), while a consistent trend was not shown in the domestic wheat flour products. Therefore, further research is needed to standardize the different types of domestic wheat flour products.

Nutritional Analysis of Cultivated Mushrooms in Bangladesh - Pleurotus ostreatus, Pleurotus sajor-caju, Pleurotus florida and Calocybe indica

  • Mushroom cultivation has been started recently in Bangladesh. Awareness of the nutritional and medicinal importance of mushrooms is not extensive. In this study, the nutritional values of dietary mushrooms- Pleurotus ostreatus, Pleurotus sajorcaju, Pleurotus florida and Calocybe indica that are very popular among the cultivated mushrooms in Bangladesh have been determined. These mushrooms were rich in proteins ($20{\sim}25%$) and fibers ($13{\sim}24%$ in dry samples) and contained a lower amount of lipid (4 to 5%). The carbohydrate contents ranged from 37 to 48% (on the basis of dry weight). These were also rich in mineral contents (total ash content is $8{\sim}13%$). The pileus and gills were protein and lipid rich and stripe was carbohydrate and fiber-rich. The moisture content of mushrooms ranged from 86 to 87.5%. Data of this study suggest that mushrooms are rich in nutritional value.

Effects of the Residues from Medicinal Herb Extracts on Growth and Body Composition of Olive Flounder (Paralichthys olivaceus) (한약 탕제 부산물 첨가사료가 넙치 (Paralichthys olivaceus)의 성장과 체조성에 미치는 영향)

  • This study was conducted to evaluate the effects of dietary medicinal herb residues (MHR) on the growth and body composition of olive flounder (Paralichthys olivaceus). Two replicate groups of olive flounder with initial mean body weight of $18.7\pm0.3\;g$ were fed 8:2 (raw fish and commercial compound meal ratio)MP diet containing $0\%,\;50\%,\;10\%,\;15\%\;and\;20\%$ MHR for 7 weeks. Weight gain and feed efficiency increased in the $5\%\;and\;10\%$ group as compared to the control group, whereas they decreased in the $15\%\;and\;20\%$ groups. Moisture, crude protein, and crude ash content of the whole body were not significantly different between experimental groups, whereas crude lipid content of the $5\%\;and\;10\%$ groups were significantly higher than that of the $10\%\;and\;20\%$ groups. The results indicate that the addition of $5\%\;and\;10\%$ MHR in 8:2 MP diet can improve growth and feed efficiency, but addition of more than $15\%$ were not effective.
