In order to investigate the possibility of low fat meat products, beef patties were prepared with gumssuch as carrageenan, methyl cellulose, and xanthan gum. The quality characteristics of beef patties were examined. Moisture contents of raw and cooked patties of control were lower than those of patties containing gums. and fat content was higher than those of containing gums. There was no significant difference in the protein contents of patties. In case of L-value(lightness) of raw patty, the control was higher than those patties containing gums. a- ( redness) and b-value(yellowness) among patties were not significantly different. Cooking yield, fat retention, and water holding capacity of beef patties containing gums were higher than control beef patty, but salt soluble protein and gel strength were not significantly different. Significant difference did not exist among beef patties in hardness, but the chewiness and gumminess of patties containing gums were higher than control. In case of sensory evaluation, there was no significant difference among patties in aroma and palatability. Texture of control was higher than patties containing gums, and juiciness of control was higher than patties containing carrageenan.
The purpose of this study was to determine the most desirable mixture ratio of apricot powder to rice flour for the preparation of apricot Sulgidduk (Sulgidduk containing apricot powder). The moisture contents of the samples ranged from 38% to 42%. The L-value decreased, while the a- and b-values increased, with increasing amounts of added apricot powder. In the mechanical evaluation of the physical properties, we found that the hardness, adhesiveness, cohesiveness and springiness decreased with increasing apricot powder content. And in addition, throughout the storage period, gumminess and chewiness decreased. Based on the sensory evaluations, the apricot power intensified the color, flavor, sweetness and sourness of the Sulgidduk. The sample containing 12% apricot powder had the highest moistness, chewiness however, but the overall-acceptability scores of the sample containing 6% apricot powder had were the highest. Consequently, the addition of 6% apricot powder to the rice flour was determined to be the best formula for apricot Sulgidduk in terms of the sensory qualities such as softness, moistness, chewiness and overall-acceptability.
Codonopsis lanceolata serves as, an appetizing health food for its, characteristic flavor, taste, and texture:however, it requires a long and complicated cooking process. Therefore, this study conducted pre-processing procedures to improve the cooking process and Codonopsis lanceolata more easily. For processing efficiency, freezing and blanching were efficient for peeling and the rate of peel disuse. In addition the freezing process, effectively reduced the time spent in beating raw material. In the salinity test, freezing and blanching quickly increased salinity over 28 days. As the result of SEM cross-section tests showed that frozen Codonopsis lanceolata become porous, it's assumed that seasoning permeates into this cross-section efficiently. As the appearance of Deodeok-gui as significant differences according to the pre-processing methods, this study examined pre-processing methods(time spent in peeling, rate of peel disuse, time spent in beating out material, salinity, moisture content, texture, and the color) of Codonopsis lanceolata. After testing Deodeok-gui, it was found that freezing is effective, not only for process efficiency and cooking time reduction, but also for improving its qualities.
This study investigated the quality characteristics of burdock glutinous rice dasik prepared with different contents of freezedried burdock powder (0, 3, 6, 9 and 12%) and roasted glutinous rice. The moisture contents of burdock glutinous rice dasik significantly increased as the amount of burdock powder increased(p<0.001). The L-value, a-value and b-value of burdock glutinous rice dasik were lower than those of the control group. The sugar content of glutinous rice dasik added with 6% or more burdock powder was higher than that of the control group. The hardness and adhesiveness significantly increased as the amount of burdock powder increased. The DPPH free radical scavenging activities of burdock glutinous rice dasik added with 9% and 12% burdock powder was higher than that of the control group. In the sensory evaluation, the burdock glutinous rice dasik added with 6% burdock powder was highly preferred, and was thus as the optimal mixing ratio for texture and sensory characteristics.
This study was conducted to investigate the quality of white pan breads as affected by various concentration of Cordyceps powder. Breads were prepared by addition of 0, 1, 2 and 3% of Cordyceps to flour of basic formulation. The moisture content of white pan breads decreased with increasing Cordyceps powder concentration. The pH of white pan breads also decreased with increasing Cordyceps powder concentration. In color values, with increase of Cordyceps powder concentration, L value decreased and a value increased in the crumb. The weights of breads cooled decreased with increasing Cordyceps powder concentration. The volume and height of dough decreased with increasing Cordyceps powder concentration. However, the specific volume and yield of dough were not significantly different among groups. The baking loss rate was higher in the breads with Cordyceps powder than in the control. In the texture characteristics, hardness and chewiness of breads significantly increased with increasing Cordyceps powder concentration and adhesiveness increased. In the sensory evaluation, when compared to the control, the breads added to 1% of Cordyceps powder was superior to in color and flavor, while was similar to texture and taste.

This study was performed to investigate the effect of dietary processed sulfur supplementation on water-holding capacity, color, and lipid profiles of pork according to the level of dietary processed sulfur (0%, CON; 0.3%, S). The pigs were slaughtered at an average final weight of 120 kg, and the longissimus dorsi muscles were collected from the carcasses. As results, pork processed with sulfur had significantly higher moisture and ash contents compared to those of CON but lower crude fat, pH, expressible drip, lower redness and yellowness, and greater lightness. Pork processed with sulfur showed significantly lower total lipid content, triglycerides, and atherosclerosis index but significantly higher high-density lipoprotein cholesterol. Feeding processed sulfur significantly lowered myristic acid, heptadecanoic acid, and stearic acid contents, whereas monounsaturated fatty acids and oleic acids were significantly higher compared to those in the CON. Higher amounts of polyunsaturated fatty acids and n-6 fatty acids were observed in the pork processed with sulfur than that of the CON. Therefore, supplementing pigs with dietary sulfur improved nutrient and meat quality.
Objective: This study focused on the effect of dietary metallo-protease and Bacillus velezensis CE 100 on growth performance, carcass parameters, intestinal microflora, footpad dermatitis (FPD), and manure odor in broiler chickens. Methods: One hundred-ten (two-day-old Ross 308) broiler chicks were randomly assigned to five groups with two replicate pens. The dietary treatments were divided to control, metallo-protease groups (A1, added with 0.1%; A2, added with 0.2%) and B. velezensis CE 100 groups (B1, added with 0.5%; B2, added with 1.0%). Results: The feed intake was decreased in A1 and B2 compared to the other group (p<0.05). The liver weight was lower in B2 than in A2 (p<0.05). The Salmonella in the cecum was decreased in A2 compared to control and A1 (p<0.05). However, the lactic acid bacteria were increased in all treatments (p<0.05). The litter moisture content was decreased in A2, B1, and B2 (p<0.05). The litter quality visual score was increased in all treatments (p<0.05). The FPD score and prevalence were reduced in all treatments (p<0.05). The (CH3)2S emission was decreased in all treatments (p<0.05). Conclusion: The present study indicated that both additives improve litter quality and reduce the incidence of FPD. These findings suggest that dietary metallo-protease and B. velezensis CE 100 have the potential to improve the broiler chickens' welfare.
Purpose: To provide the public with nutritional information on consumption types of garlic, we evaluated the influence of heat treatment method on the nutritional contents of different species of garlic. Methods: We determined the content of general components, minerals, vitamins, and fatty acids in each species of garlic produced in Seosan and Goheung by heating with blanching or microwave roasting. Results: The results of the two-way analysis of variance test indicated that the species in particular, as well as method of heat treatment and interaction, had an influence on nutritional content. The moisture and crude fat content was higher in Southern type garlic than in Northern type garlic, while crude proteins, crude ash, and dietary fibers were more abundant in Northern type garlic than in Southern type garlic. With regard to the total mineral content, K, P, Mg, and Ca were the main components in Northern type garlic and Southern type garlic. Moreover, unsaturated fatty acids showed high levels in both Northern type garlic and Southern type garlic, with more abundant linoleic acid. Overall, Northern type garlic showed a higher content of minerals and fatty acids, while more vitamin B was present in Southern type garlic. In addition, the results indicated that the content of general components (dietary fiber excluded) was increased in both Northern type garlic and Southern type garlic upon heat treatment. Blanching resulted in increased mineral and fatty acid content in Southern type garlic and decreased content in Northern type garlic, indicative of species differences; conversely, microwave roasting contributed to an increase in the content in both Northern type garlic and Southern type garlic. Conclusion: The nutritional content of garlic is more dependent on species than the cooking method, and grilling is associated with less nutrient loss than blanching.
본 연구는 민들레 추출물이 분쇄돈육의 품질 및 관능특성에 미치는 영향을 검토하였다. 분쇄돈육은 돈육등심과 지방에 냉수 10% 첨가(대조군), 민들레 잎 추출물 10% 첨가(DL), 민들레 뿌리 추출물 10% 첨가(DR), 그리고 전체 부위 추출물 10% 첨가(DW)하여 네 종류를 제조하였다. 총 폴리페놀 함량은 대조군, DL, DR 및 DW가 각각 2,07, 6.49, 3.85 및 5.77 mg/100 g으로 DL이 다른 분쇄돈육들보다 더 높았다. 명도($L^*$) 및 황색도($b^*$)는 시료들 사이에 유의한 차이가 없었지만, 적색도($a^*$)는 DL이 가장 높았다. pH는 대조군이 가장 높았고, VBN 함량은 시료들 사이에 유의한 차이가 없었다. TBARS는 대조군, DL, DR 및 DW가 각각 0.52, 0.20, 0.31 및 0.24 mg MA/kg으로 DL에서 가장 낮았다. 생육 및 가열육의 수분, 단백질, 지방 및 회분함량은 시료들 사이에 유의한 차이가 없었다. 분쇄돈육의 수율, 보수력, 수분 보유율, 지방 보유율 및 직경 감소율은 시료들 사이에 유의한 차이가 없었다. 총 유리아미노산 함량은 2,343.65~2,395.39 ppm으로 시료들 사이에 유의한 차이가 없었다. 맛, 조직감, 다즙성 및 전체적인 기호성은 시료들 사이에 유의한 차이가 없었지만, 풍미는 DL이 가장 우수하였다. 민들레 추출물 첨가의 경우, 다른 부위보다 잎 추출물의 첨가가 총 폴리페놀 함량이 가장 높으며, 적색도와 관능적 풍미를 개선하고, 지방산화를 억제하는 것으로 나타나, 육제품의 천연 항산화제로 이용이 가능할 것으로 판단된다.
배전도와 분쇄도를 달리하여 가공한 수프리모 커피 추출물의 일반성분, pH, 당도, 색도 및 미네랄 조성 등의 이화학적 특성을 분석하였다. 수분 함량은 약배전보다 강배전 시 감소하였고, 탄수화물은 강배전 후 감소하였다. 조단백질, 조지방, 조회분은 강배전 후 증가하였다. pH의 변화는 약배전보다 강배전 시 높아졌고, 당도와 총 당 함량은 배전강도에 따라 유의적인 차이를 나타내지 않았다. 밝기 정도를 나타내는 L값은 생두는 강배전할수록 낮아지고, 적색도를 나타내는 a값과 황색도를 나타내는 b값은 약배전에서 높고, 강배전에서 낮아졌다. 배전도가 클수록 L값, a값, b값은 낮아지고 분쇄도가 클수록 L값은 낮아졌으며, a, b 값은 배전도에 따라 유의한 차이가 있는 것으로 나타났다. 수프리모 커피의 Ca, Fe, K, Na, P 함량을 측정한 결과는 K 함량이 가장 높게 나타났다. 총 식이섬유 함량은 약배전 약분쇄 시 가장 높아 다른 배전 조건과 비교해 유의적으로 높았다. 수용성 식이섬유 함량은 강배전 약분쇄 4.25 g/100 g, 불용성 식이섬유소는 약배전 약분쇄 63.49 g/100 g으로 가장 높아 배전 조건에 따라 식이섬유소 함량이 유의적으로 다르게 나타났다. 수프리모 커피에 함유되어 있는 지방산 중에 특히 palmitic acid 및 linoleic acid의 함량이 다른 지방산에 비해 높게 측정되었다. 하지만 배전도와 분쇄도에 따른 지방산 조성에는 큰 차이를 나타내지 않았다. 배전도와 분쇄도를 달리한 수프리모 커피의 유기산은 acetic acid, propionic acid, oxalic acid, citric acid, fumaric acid가 검출되었다. 특히 수프리모 커피의 생두는 휘발성을 갖는 유기산인 acetic acid가 높았고, 배전강도와 분쇄도를 달리하여 가공 처리한 수프리모 커피는 fumaric acid의 함량이 높게 측정되었다. 본 연구 결과 커피 품종에 따라 배전도와 분쇄도를 달리하면 다양한 이화학적인 특성을 지닌 커피의 제조가 가능할 것으로 기대된다.
