This study wa performed to investigate the effects of dietary protein and fiber on the lead and protein metabolism in lead poisoning rats. Seventy male rats of Sprague-Dawley strain weighing 172$\pm$2g were blocked into 14 gropus according to body weight. Protein(casein) was given at levels of 15 or 40%, and fibers(pectin, cellulose and CMC) were given at levels of 0, 4 or 10%. The results are summarized as follows: 1. Food intake, weight gain and food efficiency ratio(FER) in groups fed high protein diets were higher than those in low protein groups. Liver weight in groups fed no dietary fiber was higher than that of animals fed fiber. Kidney and femur weights were greater in high protein groups. Tibia and femur lengths, and tibia weight were not significantly different among groups. 2. Hemoglobin content and hematocrit values showed no significant differance with dietary factors. 3. Total protein contents of serum and liver showed no significant difference, but tended to increase with increasing dietary protein level. Both daily urinary and fecal nitrogen excretions in high protein groups were higher than those in low protein groups. Especially daily fecal nitrogen excretions in high dietary fiber groups were significantly high. Body nitrogen absorption rate was the highest in animals fed no fiber. 4. Pb levels in blood, liver, kidney and bone tended to decrease with high dietary protein and fiber levels. Especially Pb level of kidney was high in all groups. Daily urinary Pb excretion showed no significant difference with dietary factors, but fecal Pb excretion increased significantly in high protein and fiber groups.
This study was performed to investigate the adequacy of dietary fat and protein intakes among female college students. Daily intakes of energy, fat, protein, major amino acids and other nutrients were measured in 52 female college students. Daily energy intake was 75.8% of the recommended intake. Fat and protein consist 19.2% and 16.7% of the total calorie, respectively. The average protein consumption per day was 105% of the recommended intake. Essential amino acids intakes were more than the recommended amounts which appears in the 6th edition of Recommended Dietary Allowances for Koreans. However, when the intake of each essential amino acid was compared to the recommended amino acid requirement pattern, these subjects did not meet the estimated requirements. There was a highly significant correlation between daily protein intake and lipid intake implying the major sources of protein in the diet were also major sources of fat. Daily intakes of dietary fiber, vitamin C, iron, and phosphorous were above the recommended levels of intake. However, blood hemoglobin concentration was marginal indicating dietary iron consumption is not a good marker for iron status. Also, calcium intake was only 63.5% of the recommended intake. Therefore, these results imply that main problems for these subjects are low energy consumption, low calcium intake, and the quality of protein. However, as opposed to the hypothesis, the main energy sources were not the food items high in saturated fats such as instant foods, which should be emphasized further.
Contents of insoluble(IDF), soluble dietary fiber (SDF), and total dietary fiber(TDF) of 30 foods which are consumed commonly by 80 Koeran male college students were determined by Prosky and colleagues' enzymatic-gravimentric method. Foods with highest intake frequency were rice, Kimch'i, and red pepper powder. TDF, IDF, and SDF contents of rice were 0.96, 0.59 and 0.37g/100g wet wt., respectively and tose of Kimch'i were 3.07, 2.19 and 0.88g/100g wet wt., respectively. Red pepper powder contained high amount of TDF(39.37) and IDF (33.13g/100g wet wt.). The TDF content of the 30 foods ranged from 0.70 to 39.37g/100g wet wt. Red pepper (39.37), dried laver(31.36), and dried sea mustard (37.77g/100g wet wt.) contained high amounts of TDF. The IDF content of the 30 foods ranged from 0.13 to 33.13g/100g wet wt. Red pepper powder (33.13), dried laver(15.55) and sesame(15.43g/100g wet wt.) contained high amounts of IDF. SDF of the 30 foods ranged from 0.01 to 25.66g/100g wet wt. Dried sea mustard(25.66), dried laver(15.81), coffee powder (13.17), and garlic(8.72g/100g wet wt.) were good sources of SDF. % ratio of SDF to TDF of the 30 foods was lower than 50% except soybean curd(94.27%), coffee powder (88.93%), garlic(86.17%), dried sea mustard(67.94%), and dried laver(50.41%). It is recommended to increase intake of seaweeds in order to supply TDF adn SDF properly.
This study was conducted to investigate the supplementary effects of Suwon 464 developed by Rural Development Administration, which has over two times of dietary fiber content compared with normal rice (Ilpum), on lipid metabolism in diabetic mice. We supplied 5 kinds of experimental diets (com starch diet as a control (CO), Ilpum polished rice diet (IP), Ilpum brown rice diet (IB), polished rice diet (SP) and brown rice diet (SB) of Suwon 464) to diabetic mice for 8 weeks, after analyzing dietary fiber contents of 5 experimental diets. Diet intake, body weight, organ weights, and lipids levels of serum, liver and feces were measured. The dietary fiber contents in CO, IP, IB, SP, and SB diets were 1.0, 1.2, l.4, 1.4, and 2.0% respectively. Body weight and liver and epididymal fat pad weights were lower in SB group than the other groups though there was no significant difference in diet intake among experimental groups. The concentrations of serum triglyceride was lower in SP and SB groups than CO and IP groups. The levels of hepatic total lipid and total cholesterol were significantly lower in SP and SB groups than CO group, and the level of hepatic triglyceride was lower in IB, SP and SB groups than CO group. The levels of total lipid and triglyceride excreted in feces were higher in IB, SP and SB, and the level of total cholesterol in feces was higher in SP and SB groups than CO group. These results suggested that the high dietary fiber rice (Suwon 464) decrease the triglyceride or total cholesterol concentrations of serum and liver by increasing of fecal lipid excretion in diabetic mice. One metabolism trial(Experiment I) and another respiration trial(Experiment II) were conducted to investigate the effects of dietary fiber supplementation(20% wheat bran) on the water balance, blood acid-base balance, body temperature, and metabolic rate of heat-stressed adult roosters. In Experiment I, twenty 20-wk-old SCWL roosters(BW 1.6 kg) were randomly alloted to 4 treatments with 5 birds per treatment and one per replicate. The 4 treatments were consisted of two temperature(21~22˚C vs. 34~35˚C) and two dietary fiber treatment(0% and 20% wheat bran), making Experiment I a 2x2 factorial. After 4 d of preliminary period, birds we subjected to 3-d collection period. Sixteen 20-wk-old SCWL roosters(BW 1.6 kg) were employed Experiment H, with two temperature(21~22˚C vs. 34~35˚C) and two wheat bran levels(0% and 20%). Brids were housed in individual metabolism cages under normal temperature(21~22˚C), at fed one of the experimental diet. After 4 d of preliminary period, a respiration trial with open-circuit gravimetric respiratory apparatus was carried out for each bird for 6 h, one by one, normal(20~21˚C) and hot(34~35˚C) temperatures. The ANOVA test and comparisons among treatment means were done at 5% probability level for both experiments. Results obtained from Experiment I and, II were summarized as follows, 1.The amounts of DM intake and excretion were significantly(P<.05) decreased by heat stress. The DM intake was not affected by the addition of 20% wheat bran, however, the amount of DM excretion was significantly increased by the high fiber diet. Thus, the DM metabolizability decreased significantly by the addition of 20% wheat bran. 2. The heat-stressed roosters increased the water intake and excreta moisture content significantly. Although not significant, the water intake tended to increase in roosters fed the 20% wheat bran diet. 3. The amounts of total water input and evaporative water loss were increased significantly by heat stress, and the addition of 20% wheat bran did not exert any influence on the total water input and evaporative water loss. However, roosters fed the 20% wheat bran diet increased the excreta water output significantly. 4. Neither the heat stress nor the dietary fiber did affect the blood pH, pCO2, and HCO$_3$- significantly. 5. The body temperature increased significantly by the heat stress. However, the high fiber deit failed to decrease the body temperature. 6. The heat-stressed roosters decreased the 02 consumption and C0$_2$ production, and increased the evaporative water loss significantly. However, the high fiber diet did not exert any infulence in this regard. It appears that the beneficial effect, if any, of high fibrous diet during heat stress episode may be due to the increased heat loss through the enhanced excreta water.
This research involved a survey on the dietary patterns of children and adolescents living in group homes, to find out their wrong eating habits and to devise measures for correcting their problems. The BMIs of the subject children and adolescents in group homes were measured, and the result showed that although many of them appeared to have normal weights, about 42.2% were actually underweight. Most of them had meals regularly, three times a day at fixed times. However, half of them frequently skipped breakfast because of the lack of time in the morning. In addition, more than half of them had the habit of having imbalanced diets, especially with low vegetable intake. The score for their satisfaction toward meals at group homes were highest (3.97) with the taste of food, while it was relatively lower (3.61) with the variety of food than with the other items. The average score for their snack intake was 3.47, showing that the majority of them had the habit of eating snacks, while the largest portion (26.0%) of them preferred bread and cookies. According to the result of the analysis on their food intake, overall calorie intake was about 82~96% of estimated energy requirements, while that of the male subjects aged 12 or older was about 82% of the standard energy requirements. Their overall intake of calcium and potassium was lower than recommended nutrition intake, but sodium intake was higher than 3 times recommended intake. Especially, in addition to calcium and potassium, the male subjects aged 15 or older showed low intake of dietary fiber, iron, zinc, riboflavin, niacin, vitamin C and folate also; whereas the female subjects aged 15 or older showed low intake of iron, zinc, riboflavin and folate also. Taken together, it was concluded that government level of dietary life-related support and management would be necessary for the healthy growth and development of children and adolescents in group homes.

This study aimed to offer groundwork for grasp and evaluation of nutritional status and dietary fiber intake through 24-hr recall method among middle school students in Chungbuk area. In addition, this study attempted to develop food frequency questionnaire (FFQ) for dietary fiber intake. Average calorie intake per person a day was 2035.6 kcal for boys, and 1876.7 kcal for girls which were 75.4% and 93.8% of estimated energy requirement (EER), respectively. Percent estimated average requirements (%EAR) of calcium, iron and folate were the lowest showing 34.3%, 54.2%, 67.5% for boys and 36.6%, 59.2%, 64.4% for girls, respectively. Average dietary fiber intake per day was $17.6\pm5.3$ g for boys and $16.5\pm4.8$ g for girls which indicate 54.8% and 68.8% of adequate intake (AI), respectively. The main food sources of dietary fiber were polished rice and kimchi. The main food source groups were vegetables, cereals and their products were fruits, seaweeds in the order named, indicating 68.44% total dietary fiber intake from vegetables and cereals. From preliminary 39 food items, 19 food items were selected to derive the correlation coefficient of each food item between 24-hr recall and FFQ method. Correlation coefficient was increased from 0.71 to 0.78 with significant level of p<0.01 after adjustment of FFQ from 39 items to 19 items set. Percentage of classifying subjects into the same levels by food frequency questionnaire and 24-hr recall based on joints classification quartile Kappa value was evaluated. Agreement was highest in the second lowest group showing percentage to correspond rose from 90.2% to 92.4% and Kappa value of 0.54 to 0.59. Consequently, FFQ developed in this study would be useful for estimating the groups which show low intake.
The aim of this investigation was to assess the relationship between food habits and nutrient intake in college female students. Nutrient intakes of 149 female subjects aged 19.3 y were determined by using 24-hr recall. The questionnaire included general characteristics and food habits (frequency of breakfast and fast food intake). Body composition was determined by bioim- pedance analysis. Nutrient analysis was performed with Can pro software. Statistics were generated using SAS 9.3 (SAS Institute, Cary, NC). Mean intake of energy, fiber, calcium, potassium. vitamin $B_2$ and vitamin C by the subjects ware below KDRIs. The nutrients for which the largest proportion of subjects showed inadequate intakes (less than the RI or AI) were potassium, calcium, vitamin C and fiber. Subjects that consumed fast food ${\leq}6$ times showed significantly lower intakes of calcium, potassium, fiber, vitamin A, vitamin $B_6$ and vitamin C. Subjects who skipped breakfast more frequently showed significantly lower intakes of energy, carbohydrate, fiber, calcium, iron, potassium, vitamin $B_2$ and vitamin C than subjects who ate breakfast more frequently. This is strong evidence that higher intakes of nutrients such as potassium, fiber, and calcium are associated with increased frequency of eating breakfast or decreased frequency of eating fast food. Low calcium, fiber, and potassium intakes may thus lead to chronic diseases. Nutrition education can be an important facilitator for improving nutrient intakes.
The present study was performed to investigate the effect of cereal fiber on lipid concentration of liver and serum in rats. Male Sprague-Dawley rats weighing 180$\pm$4g were divided into five groups by completely randomized block design : R, BR, B, W, and F. Each group fed a diet containing 0.7% cholesterol and a kind of cereal among rice(R), brown rice(BR), barley(B), whole wheat(W), and wheat flour(F) for 5 weeks. The results were summarized as follow : 1) Food intake. weight gain and feed efficiency ratio were not significantly different among the groups. 2) Fecal wet weight and dry weight were significantly higher in W group which fed the most amount of IDF(insoluble dietary fiber). 3) The weight of large intestine was significantly heavier in the W group compared to the others. But the weights of liver, stomach and small intestine were not significantly different among the groups. 4) Total lipid. triglyceride(TG) and total cholesterol(TC) content in liver were significantly different among the groups. The values were the lowest in the B group whose intake of SDF(soluble dietary fiber) was the highest 5) TC content in serum was not significantly different among the groups. TG content in serum was significantly lower in the rest groups than in the R group. HDL-c and free-c content in serum were significantly higher in the B group than in the rest groups. HDL-c/LDL-c, free-c/ester-c ratio were the highest in the B group but not significant. Above results show that the dietary fiber contained in cereals has physiological effects and they are different depending on fractions, IDF and SDF.
The purpose of this study was to investigate the correlation of dietary and serum phospholipid fatty acids composition and serum lipid levels in postmenopausal women. Data about anthropometry, dietary intake, physical activities, serum lipid profile and serum phospholipid fatty acid composition were collected from eighty-five postmenopausal women. The subjects were classified as normocholesterolemia (NC), moderate hypercholesterolemia(MC) and phyperchollesterolemia(HC) according to their serum total cholesterol (TC) levels based on The Guideline for Korean Hyperlipidemia set/published by The Committee for Hyperlipidemia in Korea. The results were as follows. Total energy intake and the ratio of energy intake to energy expenditure were positively related, while dietary fiber intake was negatively related, with serum TC level. Dietary fat intake was positively related with serum LDL-C level. Dietary cholesterol, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA) intake and the ratio of ingested saturated fat and cholesterol to calories (RISCC) were positively related, while the P/S ratio of dietary fat was negatively related, with serum TC and LDL-C levels. Serum phospholipid fatty acids composition was not significantly different among the three groups. SFA of serum phospholipid fatty acids was positively related, while P/S and M/S ratios of serum phospholipid fatiy acids were negatively correlated, with serum TC and LDL-C levels. We recommend that the dietary P/S ratio of postmenopausal women is increased by reducing their dietary SFA intake. With these changes in the diet, serum phospholipid fatty acid composition could be also changed, and serum lipids levels could be improved.
