  • Brewer's spent grain (BSG) is a by-product of beer manufacturing. This study was conducted to evaluate the effect of dietary fiber extracts from brewer's spent grain on quality characteristics of chicken patties. The total fiber content of BSG dietary fiber extracts after extraction increased from 58.11% to 68.57%, and the extracted dietary fiber extracts were added to chicken patties at 0, 1, 2, 3, and 4%, respectively. The effects of the BSG dietary fiber extracts on pH, color, cooking loss, reduction in patty diameter, salt-soluble protein solubility, texture, and sensory characteristics of chicken patties were evaluated. The addition of BSG dietary fiber extracts decreased pH and lightness values, and increased redness and yellowness. Chicken patties formulated with 3-4% BSG dietary fiber extracts had the lowest cooking loss among all treatments (p<0.05). The diameter of chicken patties was not affected by the addition of BSG dietary fiber extracts. Additionally, no significant difference was observed in salt-soluble protein solubility after adding 3% BSG dietary fiber extracts compared to that in the control. Textural and sensory properties were different among the chicken patties, and the 3% BSG dietary fiber-added chicken patty had the highest acceptability. Our results indicate that 3% BSG dietary fiber extract can be used as a good source of dietary fiber for improving the quality characteristics of chicken patties.

  • This study was carried out to investigate the dietary attitudes, nutrition knowledge, nutrient intake, eating-related characteristics of dancing major and non-major female university students. The survey was conducted from October 1 to November 10, 2003 by questionnaires and data analyzed by SPSS program. The results are summarized as follows: 25.5% of the underweight group, 53.6% of the normal weight group, 12.5% of the overweight group and 66.7% of the obese group had correct perception about their body image. Eighty-one point three percent of the dancing majors and 77.2% of the non-majors were concerned about weight control, and 71.3% of the dancing majors and 64.5% of the non-majors had weight control experiences. There were no significant differences in nutrition knowledge scores and dietary attitude scores between dancing majors and non-majors. There were no significant differences in ‘predisposition to obesity scores’ between dancing majors and non-majors, and the scores were low. ‘Predisposition to anorexia’ scores and ‘uncontrollable urges to eat’ scores were significantly higher in the dancing majors compared to the non-majors. Intakes of the nutrients were lower than those of the Korean recommended dietary allowances (RDAs), except vitamin C in the dancing majors. Intakes of calories, calcium and iron were lower than those of the RDAs in the non-majors. Dietary attitude was positively correlated with nutrition knowledge but was negatively correlated with ‘uncont-rollable urges to eat’. In the dancing majors, ‘predisposition to obesity’ showed significantly positive correlation with obesity rate and ‘uncontrollable urges to eat’ and was negatively correlated with nutrition knowledge and dietary attitude. In the non-majors, obesity rate showed positive correlation with ‘predisposition to obesity’ and ‘uncontrollable urges to eat’. Therefore proper nutritional education program and recommended dietary allowances are required for dancing majors to improve their nutritional status.

  • An experiment was performed to evaluate the effects of dietary metabolizable energy (ME) and lysine on carcass characteristics and meat quality in Arbor Acres (AA) broilers from 1 to 56 days of age. A total of 2,970 1-d-old male broiler chicks were randomly allocated to nine dietary treatments (three ME levels in combination with three lysine levels), and dietary ME and lysine concentrations were formulated by varying corn, soybean meal, tallow, and L-lysine sulfate concentrations. Live body weight (BW), carcass weight (CW), dressing percent, breast muscle weight (BMW), yield of breast muscle, muscle color (CIE L*, a*, and b*), pH values 45 min and 24 h postmortem ($pH_{45}$, and $pH_{24}$), meat shear force value (SFV), and water loss rate (WLR) were evaluated. Results showed that live body weight and dressing percent increased (p<0.05) as dietary energy increased. Higher dietary lysine content improved breast muscle weight. Neither carcass weight nor yield of breast muscle was affected by dietary energy or lysine content. Higher ME increased the b* value (p = 0.067) and $pH_{24}$ value (p<0.05), whereas it decreased SFV (p<0.05) and WLR (p = 0.06). Only water loss rate was influenced (p<0.01) by dietary lysine, which was higher in broilers from the high lysine diet as compared to those from medium or low lysine diets. The $pH_{45}$ value and L* value of breast muscle were not affected by ME or lysine. Significant interaction of dietary ME and lysine was found on a* value of breast muscle. These results indicated that dietary ME and lysine had important effects on breast muscle growth and meat quality, however their effects were different. Different concentrations of dietary ME and lysine might be considered to improve meat quality.

  • The purposes of this study were to investigate the perception of nutrition labeling on restaurant menus, and to analyze the differences among subject's characteristics, eating-out behaviors, and dietary attitudes. Information concerning general characteristics, health status, eating-out behaviors and dietary attitudes of subjects was collected by a structured questionnaire. From January 5th to February 27th in 2009, 406 questionnaires were completed by 157 males and 249 females. Statistical analyses were performed using by SPSS 14.0 package program. The perception of the importance of nutrition labeling was 3.89, while knowledge of whether restaurants provided sufficient nutrition information scored 2.26 indicating that being highly conscious of nutrition labeling, respondents did not view the supplied information as sufficient. Nutritional perception was greater in females and varied in both genders with age and health status. Significant differences concerning the perceptions of nutrition labeling were evident, based on eating-out behaviors and dietary attitudes. The results imply that nutrition labeling on restaurant menus should be based on consumer characteristics. Relevant nutrition labeling might help improve health by encouraging proper dietary habits and providing valuable nutritional information. Recognition of the importance of nutrition labeling and strategic implementation of labeling in menus would be prudent strategies for restaurant managers. • Effects of added green tea powder and Angelica keiskei powder on the quality characteristics of Yukwa were examined for the purpose of improving functioanality and variety of Yukwa, and usage of green tea Powder and Angelica keiskei. Dietary fiber contents of green tea powder were 5.2% soluble dietary fiber, 22% insoluble dietary fiber, while Angelica keiskei contained 28.9% soluble dietary fiber, 29.6% insoluble dietary fiber. Expansion rate of yukwa was 3,675% for control and the rates were slightly decreased as the addition level increased. Although Yukwas added 6% green tea and angelica keiskei powder were harder than the others when determined by rheometer, sensory evaluation results showed that hardness and mouthfeel were soft without any significant difference among the control and experimental samples. And internal structure of 4 and 6% green tea powder and those added angelica keiskei at three levels were evaluated by sensory panel as moderately compact. Overall acceptability of yukwa added 2% green tea Powder was the best of all while yukwas added angelica keiskei at three levels were evaluated as good. The results of peroxide value and TBA value showed that green tea powder had stronger antioxidative property than angelica keiskei. In conclusion addition of green tea powder by 2% level and angelica keiskei powder up to 4% would give us beneficial effects in the aspects of functionality and storage life of yukwa without any detrimental effects on the quality characteristics of it.
