  • This study was conducted to investigate the effect of an uncooked powdered food(UPF) on the weight loss and changes of the biochemical nutritional status for 20 overweight and 26 obese women in Iksan area. We just replaced common breakfast and dinner of the subjects with UPF. Their dietary intake status was evaluated by 24-hour recall method. Also anthropometric and biochemical measurements before and after the UPF program were estimated. The intake of energy, lipid and protein decreased and the quality of meals improved as people started to take UPF. Due to the energy loss by taking UPF, weight and body fat decreased significantly. The percentage of the body fat was high among the weight lost, from which we judged that the process of losing weight was successful. It is hard to predict whether weight loss will occur to people who are already in shape or not, but if overweight and obesity people regularly take UPF instead of other food products, we assume that UPF will help lessening the body fat. The most positive change among biochemical changes by taking UPF was the decrease of serum lipid contents. When overweight and obesity women replaced two out of three meals with UPF for 3 month period, no significant nutritional problems occurred. It seems that the 12weeks of UPF program used in this study was effective in improving anthropometric indices without producing the deficiency of iron or other susceptible nutrients.

  • The present study was conducted to evaluate nutritional intake by lunch-box of middle school girls who live in Chonbuk area. Anthropometric measurements and food intake from lunch-box over a three day period were investigated in a total of 110 middle school girls from rural (n=37) and urban (n=73) areas. The results are summarized as follows : 1. Not all the steamed rice in the lunch-box had enough mixed-cereal. 2. In the survey of food intake by food groups, 70.5% of the food came from the cereal group. 3. The intake of protein, phosphate, Vitamins $B_1 and B_2$, niacine and Vitamin E were adequate, however, the intake of other nutrients was significantly lower than those of one-third of the Korean RDA.4. Protein, lipid, and zinc intakes of the students from the rural area were significantly lower than those of students from the urban area. however, the carbohydrate and dietary fiber intakes of those in the rural area were significantly higher than those of the students in the urban area. 5. The percentage of calories from carbohydrate : protein lipid ratio was 67.6 : 12.2 : 16.9 for students in the rural area and 59.2 : 14.9 : 22.5 respectively for those in the urban area. In Summary, the intake of calcium, iron, Vitamins A, $B_6$, and D, folate and zinc from lunch-box in middle school girls was much lower than that of one-third of the Korean RDA. The intake of carbohydrate and dietary fiber of the students in the rural area was significantly higher, but that of protein, lipids, and zinc was lower than that of the students in the urban area. Therefore, nutritional education programs for both students and their parents should be provided to improve the daily food intake from lunch-box.

  • The objective of this study was to investigate the effects of dietary vitamin B intake on biomarkers related to lipid metabolism, inflammation and blood glucose control, that are important in the development of type 2 diabetes and its complications. Seventy-six adults (42 males, 34 females) were recruited from a group of diabetes patients who had visited the medical center for treatment. Data on anthropometric characteristics and dietary intake of thiamine, riboflavin, niacin, vitamin B6 and folate were collected using 24-hour diet recall and the CAN Pro 4.0 program. Also, data on clinical indices such as serum lipids, blood pressure, high-sensitivity C-reactive protein (hs-CRP), hemoglobin A1c (HbA1c) and homeostasis model assessment 2-insulin resistance (HOMA2-IR) were collected and analyzed for correlation with dietary vitamin B intake. Results from the dietary intake survey showed that riboflavin and folate intake (in males) and folate intake (in females) were below the Dietary Reference Intake for Koreans. Statistical analysis revealed a negative correlation between hs-CRP and dietary intake of B vitamins. Riboflavin intake was inversely associated with systolic blood pressure after adjustments for age, BMI, smoking, alcohol consumption, exercise, ingestion of diabetes mellitus medication and energy intake (p<0.05). Our results suggest that dietary vitamin B may influence inflammation and consequently may help in better management of type 2 diabetes.

  • The effects of eicosapentaenoic (EPA, 20:5n-3) and docosahexaenoic acids (DHA, 22:6n-3) on the phospholipase $A_2$ ($PLA_2$)-mediated release of arachidonic acid (AA, 20:4n-6) were studied in kidney microsomes from rats fed diets containing sunflower oil (SO) or fish oil (FO) concentrate for 11 months. The amounts of AA released by the endogenous $PLA_2$ enzyme were significantly lower by 38% in the FO, compared to the SO-fed rats (23.2 nmol versus 60.7 nmol AA released/mg protein/h in the FO- and SO-treated groups, respectively). The FO-derived microsomes released less linoleic acid (LA, 18:2n-6) and adrenic acid (22:4n-6), but larger amounts of the n-3 fatty acids, including EPA, DHA, docosapentaenoic acid (DPA, 22:5n-3), and 20:4n-3 than the SO-derived microsomes. A similar replacement of the AA and adrenic acid with the n-3 fatty acids including EPA and DHA was also observed in the microsomal phospholipid fraction from the FO-fed rats relative to the SO-treated group. The results suggest that the $PLA_2$-mediated release of AA is reduced and that of EPA is increased in compensation for AA decline in kidney microsomes from FO-fed rats (0.7 nmol EPA/mg protein/h versus 22.7 nmol EPA/mg protein/h for the SO and FO-treated groups). Replacement of the n-6 with n-3 fatty acids may explain the reduced synthesis of the AA-derived prostaglandins and the concomitant rise in the EPA-derived prostaglandins observed in kidneys of FO-treated rats.

  • This feeding experiment was conducted to investigate the effects of dietary inclusion of various additives on growth performance, hematological parameters, fatty acid composition, gene expression and histopathological changes in juvenile olive flounder (Paralichthys olivaceus). Eleven isonitrogenous (49% crude protein) and isolipidic (10% crude lipid) experimental diets were formulated: no additives (Con); 5% kelp meal (Ke); 10% krill meal (Kr); 1% garlic powder (Ga); 1% citrus meal (Ci); 3% onion powder (On); 1% ginger powder (Gi); 1% mugwort powder (Mu); 1% licorice powder (Li); 1% wasabi powder (Wa); and a mixture (Mix) of these additives. Three replicate groups of juvenile flounder (average weight of 8.5 g) were fed one of the experimental diets to visual satiety twice a day for 15 weeks. The dietary inclusion of additives did not affect survival, weight gain, specific growth rate feed efficiency, daily feed intake, daily protein intake, protein efficiency ratio, hepatosomatic index and visceralsomatic index of the fish. Plasma triglyceride levels were significantly lower in fish fed the Ke, Ga, On, Gi, Mu, Li, and Mix diets than in fish fed the control diet. Plasma glucose, glutamic oxaloacetic transaminase and total cholesterol did not differ among dietary treatments. No significant difference was observed in fatty acid composition and lipid content of the dorsal muscle in fish fed the experimental diets. Myosin gene expression did not differ significantly among treatments after 5 weeks but was significantly lower in fish fed the Kr, Ci, Li, and Mix diets than in control group after 15 weeks. Histopathological analysis showed mild gill hyperplasia and mild necrosis of liver parenchymal cells in several individuals of each experimental group. These conditions were also observed in the control group and were not thought to be related to the inclusion of feed additives. The present findings indicate that the dietary inclusion of additives did not affect growth performance, fatty acid composition, gene expression, and histopathological changes in juvenile flounder. However, plasma triglyceride content may be reduced by supplementation with 5% kelp meal, 3% onion powder, 1% garlic powder, 1% ginger powder, 1% mugwort powder, and the additive mixture.

  • A feeding experiment for 160 days was conducted to evaluate effects of dietary soybean meal (SBM) on the apparent digestibility, ammonia excretion and body composition of rainbow trout (Oncorhynchus mykiss). Seven diets containing $0\~70\%$ SBM were formulated based on iso-nitrogenous and iso-caloric basis of $44\%$ crude protein and approximately 4,200 Kcal/kg of gross energy. To evaluate the nutritional utilization of the SBM diets at the end of 60 and 120-day rearing with test diets, digestion rates of protein and lipid of SBM diets were measured. Fish fed the diets containing above $46\%$ SBM showed higher apparent digestibility for protein, but lower for lipid than did fish fed the control diet in both trials. Protein and fat contents in the carcass were similar for all experimental fish, except for fish fed $58\%$ and $70\%$ SBM which showed lower fat content than the others, but composition of fatty acid and amino acids were not affected by dietary SBM levels. Gill and urinary post-prandial ammonia ($NH_3-N$) excretions were measured at 12 and 24 hours after single feeding of the experimental diets. Excretions of $NH_3-N$ measured after 24 hours were almost 1 times higher than those measured after 12 hours. Total excretion fer the 24 hours by fish fed $70\%$ SBM was $15\%$ higher than that of fish fed the control diet. Results of present study may suggest that the rainbow trout which were fed above $34%\;or\;46\%$ of SBM diet showed a decrease gradually in lipid bioavailability compared to the control group.

  • The effect of dietary carnitine on ethanol-induced fattv liver and hvpertriglyceridemia was examined in an animal model. Consistent with literature, ethanol fed at 5g/Kg of b.w. to rats produced a significant increase in hepatic concentrations of total lipid, kislycerine, phospholi-pid, free cholesterol and esteriaed cholesterol as well as elevated plasma concentrations of triglvceride. It was when the ethanol diet was supplemented with D.L. camitine that there was a singini-cant reduction in the accumulation of lipids in the ethanol-compromised liver. Dietary cacti-tine was also effective in ameliorating ethanol-induced hypeuriglyceridemia. Total protein con-tents in the plasma was not varied among the groups.

  • A feeding experiment was conducted to determine the nutritional value of various dietary protein sources without a vitamin premix supplementation in juvenile black rockfish, Sebastes schlegeli. Diets containing similar quantities of lipid and carbohydrate with 50% crude protein from fish meal (FM)/soybean meal (SBM)/corn gluten meal (CGM), FM only, casein/gelatin, high FM/low casein and low FM/high casein were fed to rockfish along with a commercial rockfish diet. The diet containing only 65.6% FM and the commercial rockfish diet produced significantly greater weight gain (WG) and feed efficiency (FE) than all other semipurified diets (SPDs); the economical diet with 52.8% FM, 10% SBM and 5% CGM produced lower WG than the diet containing FM and commercial rockfish diet, but FE and survival were similar both diets. Intermediate responses were observed for rockfish fed the SPD containing 32.8% FM and 27.4% casein, while SPDs containing 10% FM and 41.8% casein and 38.5% casein and 10% gelatin yielded the lowest WG and FE. Some differences in tissue indices and body composition of rockfish were induced by the diets containing various protein sources and levels without the vitamin premix supplementation.
