This study surveyed dietary intake and adherence to the Korean national dietary guidelines in Korean adolescents. To elucidate basic data for use in nutrition education, which aims to improve adolescent compliance with the national dietary guidelines and to increase the intake of dietary fiber, we evaluated the sources of fiber in adolescent diets. This study included 182 male and 212 female students from 2 middle schools in the Jeonju province. From November 15~20, 2011, we surveyed the students for general characteristics, adherence to the Korean national dietary guidelines, and dietary intake. Dietary fiber intake was $16.57{\pm}6.95$ g/day for male students and $16.14{\pm}7.11$ g/day for female students. The food groups that contributed most to dietary fiber intake were (in descending order) cereals, vegetables, seasoning, and fruits. The fiber-containing food items consumed most were cabbagekimchi, cooked rice, instant noodles, and cabbage. Based on adherence to the Korean national dietary guidelines, the vegetable-based intake of dietary fiber in groups 1 (score 15~45), 2 (score 46~52), and 3 (score 53~75) were $4.41{\pm}2.595$ g/day, $4.12{\pm}2.692$ g/day, and $5.49{\pm}3.157$ g/day, respectively (p 0.001). In addition, the total intake of dietary fiber varied significantly among the three groups (p 0.001) as follows: Group 1, $14.99{\pm}6.374$ g/day; Group 2, $15.32{\pm}6.772$ g/day; and Group 3, $18.79{\pm}7.361$ g/day. In this study, we discovered that adherence to the Korean national dietary guidelines correlates with improved intake of dietary fiber. Therefore, marketing and educational development is needed to promote adherence to the Korean national dietary guidelines. In addition, nutritional education is needed to improve dietary fiber consumption through the intake of vegetables and fruits other than kimchi.
The study purpose was to investigate pattern of dining-out and effects of obesity on the dietary attitude of the 213 male employees with high educational background. The results are as follows : Subjects were 20's bachelor and unmarried mostly. Mean height weight BMI and fat(%) were 172.1cm 70.5kg 23.8 and 21.3% respectively. The most frequency for dining-out was 3∼4 times/week Younger unmarried subjects had more dining-out. The most common meal for dining-out was dinner there being no connection with age, education level marrige and income. The most favorite food style among the subjects was Korean-style. Obese subjects answered that the took more consideration into nutritional balance regularity and proper amount of diet. Also they showed more food-intake especially animal protein and fats. all subjects had scores in dietary attitude there being no connection with obesity. Despite of high education they showed poor dietary attitude. Thus it is necessary to develop the nutritional education program for proper nutritional status of employees.
This study attempted to evaluate the effectiveness of nutrition education especially high nutrient density diet, which promotes low carbohydrate, high protein and fiber. Sixty nine college students participated in the 8 week weight management program with nutrition education. After the program, forty six experienced a small amount of weight loss (WL group, 1.3 kg), but twenty three did not (WG group). The WL group's dietary habits and diet quality improved significantly. The INQ of nutrients and MAR significantly increased only in the WL group. The total DQI-I score significantly increased from 71.1 to 75.3 in the WL group, but it did not in the WG group. The total dietary habit scores significantly increased in both groups, but the changes in the dietary habit scores were greater than the WG group in the WL group. After the program, total cholesterol and triglyceride level decreased significantly in the WL group (p < 0.05). These results show that nutrition education which focuses on a nutrient density diet could help improve dietary habits, diet quality, total cholesterol, and the triglyceride level in college women.
This study was designed to develop, implement and evaluate a nutrition education program for elementary school children. Subjects consisted of 47 children in the 6th grade in Seoul, Korea. They received five sessions of nutrition education from June to July, 1999. Topics for nutrition education included function of nutrients, food sources of nutrients, balanced diet, meal planning, and adequate energy intake. Each session lasted 40 minutes. To evaluate program effectiveness, one group pretest-posttest design was used. Subjects were given a pretest and a posttest on nutrition knowledge, eating attitudes, eating behavior, and dietary intake. All data were statistically analyzed mainly using the paired t-test and $\chi$$^2$-test. There was a significant difference between pretest and posttest score on nutrition knowledge(p<0.001), subscales of nutrition knowledge including food sources of nutrients, function of nutrients, and balanced diet(p<0.001). These changes in nutrition knowledge were also shown both in boys(p<0.001) and in girls(p<0.001). Eating attitudes, subscales of eating attitudes, and eating behavior were not significantly changed after nutrition education, although some changes were observed in these variables. Dietary intakes were not significantly were not significantly changed after nutrition education for all subjects ; however, different patterns in dietary intakes were observed when examined by sex. There was an increase in nutrient intakes among boys, while there was a significant decrease in nutrient intakes among girls after program implementation. Especially, it was noted that girls had diets deficient in iron, calcium, and vitamin A, even after nutrition education. It was concluded that a five-week nutrition education program can improve nutrition knowledge or some dietary intake, but this might not be enough to induce changes in food attitudes, eating behavior or dietary intakes. It might be necessary to incorporate diverse approaches, targeting sub-groups of children, and follow-up in nutrition education for elementary school children. With recent increases in demand for women's social participation, children have tended to favor western-style foods and dislike vegetables (Veg.). The objective of this study was to evaluate dietary behavior and Veg. intake in 612 elementary school children (339 boys; 273 girls) in Gyeonggi-do. 66.5% of the subjects reported that they liked Veg. The most frequent reason given for this preference in Veg. liking group was that vegetables were 'delicious' (35.6%), followed by 'nutritious' and 'frequent intake'. The most frequent reason given for disliking Veg. in the Veg. disliking group was that vegetables are 'not delicious' (94.6%). Approximately half of the subjects had correct knowledge about vegetables. The total score of general nutrition knowledge was 7.7 points (a perfect score is 10 points) and the majority of students generally had good dietary behaviors. The Veg. liking group scored higher on knowledge about Veg., general nutritional knowledge, dietary behavior, and Veg. preference than did the members of the Veg. disliking group (p<0.001). The 'active' group had the highest score for dietary behavior (p<0.001), and the scores for dietary behavior and Veg. preference increased with increasing self-rated health status (p<0.001). The score of normal BMI group for nutritional knowledge about Veg. was higher than that of the underweight group (p<0.05). The higher self-rated academic score group showed higher on knowledge about Veg., general nutrition knowledge, dietary behavior (p<0.001) and Veg. preference (p<0.05). Dietary behavior and preference of Veg. were positively correlated with nutritional knowledge. To improve health by increasing Veg. intake, education about the nutritional importance of Veg. should be needed, and continuous nutritional education is recommended to foster good food habits and Veg. preferences in children.
Objectives: The study was conducted to investigate the relationship between several stress measures in everyday life, emotional eating behavior, and dietary pattern (snacks, fatty foods, sweet beverages, fruits and vegetables) in school-aged children. Methods: One hundred and ninety-four students of an elementary school located in Seongnam City participated in the study. The students responded to the survey questionnaire by self-report, which consisted of items regarding general characteristics, height, weight, dietary habits, frequency of consuming healthy (fruits and vegetables) and unhealthy foods (snacks, fatty foods, and sweet beverages), emotional eating behavior, and daily stress. Correlational analysis was performed to examine the relationship between stress, emotional eating behavior, and dietary pattern, and Poisson and logistic regression analyses were conducted to investigate the effects of stress on dietary pattern. Results: Positive correlations were found between all stress factors and emotional eating behavior and between the friend and personal factor (one of the stress factors) and the consumption of sweet beverages. The frequency of consuming sweet beverages was 2.6 times higher in the high stress group than in the low stress group (95% CI). Conclusions: Children's daily stress was associated with emotional eating behavior and undesirable dietary pattern such as consumption of sweet beverages.
Objectives: The purpose of this study was to evaluate the effect of nutrition education using materials based on social cognitive theory. Education topics focused on improving health-related and dietary self-awareness and behavior capability in adolescents. Methods: Participants were recruited from a middle school for girls; 67 students (educated group, n=34 and control group, n=33) participated. The education group received 12 lessons in club activity class. Self-administered surveys were conducted for each group before and after the nutrition education program. The questionnaires consisted of variables such as self-efficacy, outcome expectation, outcome expectancy, knowledge, and dietary practices based on the social cognitive theory. Education satisfaction was evaluated using a five-point Likert scale for two sections: a) teaching and learning and b) education results. The data were analyzed using a t-test and Chi Square-test (significance level: p < 0.05). Results: In the education group, post-education, there were significant differences in self-efficacy (p < 0.05), knowledge (p < 0.01), and dietary practices (p < 0.05), whereas outcome expectation and expectancy did not show any significant differences. None of the variables showed any significant differences in the control group. Educational satisfaction scores were $4.38{\pm}0.12$ (teaching and learning) and $4.14{\pm}0.15$ (education results). Conclusions: This study showed that improving adolescent's awareness and behavior capability has a positive effect on their dietary practices. Moreover, this study suggested that a theory-based determinant should be considered to improve dietary behavior among adolescents.
The aim of this study was to develop a Dietary Education Program focused on Slow Life (DEPSL) and verified its effectiveness in elementary school children using the extended Theory of Planned Behavior (TPB). The DEPSL was developed effectively according to the systematic program development model, ADDIE. The developed DEPSL was applied to the Education group (EDU), which was total of 130 students aged 12-13 in an elementary school by trained instructors for five weeks. The control group (CON) composed of 100 students of the same age was not given any dietary education. Pre- and post- questionnaires were collected from the students in both groups to compare the change in students' dietary life during educational intervention between EDU and CON. EDU showed significant positive effects in all extended TPB variables (p< .01), but CON showed a significant difference only in the 'knowledge' and 'behavior intention' (p< .05). In addition, the extended TPB model verified its conformity to determine if the effect of education leads to a change in the children's behavior. In conclusion, the DEPSL has a positive impacts on dietary life in school children. Nevertheless, further research will be needed to develop various and specialized dietary education programs with different level of grades in other school areas.
The present study was undertaken to test the hypothesis that dietary antioxidants protect DNA damage induced by peroxynitrite, a potent physiological inorganic toxin. The present study showed that dietary antioxidants such as (-)-epigallocatechin gallate, quercerin, rutin, resveratrol, and ursolic acid inhibit single strand breaks in supercoiled plasmid DNA induced by 3-morpholinosydnomine N-ethylcarbamide (SIN-1), a generator of peroxynitrite through the reaction between nitric oxide and superoxide anion. The formation of 8-hydroxy-2'-deoxyguanosine (8-OH-dG) in calf thymus DNA by SIN-1 was also inhibited by dietary antioxidants. When U937 cells were incubated with 1 mM SIN-1 bolus, a significant increase of 8-OH-dG level was observed. However, oxidative DNA damage was significantly lower in the cells pre-treated with dietary antioxidants when cells were exposed to SIN-1.
This study has been performed to analyze nutrition knowledge, dietary self-efficacy and eating habits of the elementary- and middle- school students (n = 342) according to student's stage of regular breakfast or exercise. Middle school students had higher nutrition knowledge than primary school students. Total dietary self-efficacy and dietary habit scores were not different by school year and gender. Nutrition knowledge, dietary self-efficacy and dietary habit scores were positively correlated each other. By the stage of regular breakfast, the pre-contemplation stage comprised 13.6%, contemplation 2.1%, preparation 15.7%, action 11.5% and maintenance stage 59.1%. By the stage of regular exercise, the pre-contemplation stage comprised 20.9%, contemplation 7.3%, preparation 45.6%, action 9.8% and maintenance stage 16.4%. According to the stage of change, movement from the pre-contemplation and contemplation to upper stage increased the dietary self-efficacy score. Dietary habit score increased significantly across the five stages of changes. The results of this study indicate differences in stages of changes in breakfast intake and regular exercise and indicate the need for taking these phases of change into account in nutrition education.
