20세 이상 성인 여성의 소득계층에 따른 영양상태 및 식습관 평가 - 제4기(2007~2009) 국민건강·영양조사 자료를 이용하여 - (An Evaluation of Dietary Habit and Nutritional Status by Household Income in Female Adults over the Age of 20 - Using Data from the Fourth Korea National Health and Nutrition Examination Survey -)

  • The purpose of this study was to evaluate dietary habit and nutritional status by household income in female adults, using data from the $4^{th}$ Korea National Health and Nutrition Examination Survey (2007~2009). Subjects were 8,356 women over the age of 20 years. The subjects were classified into 4 groups by household income level. Dietary data from 24 hr recall methods were used to analyze nutritional status. The obesity rate of the low income group was significantly higher than the rates of other income groups. Additionally, the nutritional status of the low income group was worse than those of other groups. The percentage of carbohydrate in total energy intake was higher and food security status was lower in the low income group than in other groups. Awareness and adherence to dietary guidelines were also lower in the low income group. Adherence to a dietary guideline of 'avoiding salty foods and trying to eat foods with bland taste' and 'eating a variety of foods from each food group' were lower than those of other groups. However, the frequency of skipping breakfast among the low income group was lower than that of others. Therefore, this study suggested that low income women should decrease the percentage of carbohydrate in total energy intake and adhere to dietary guidelines, especially those of avoiding salty foods and eating a variety of food groups, in order to improve their nutritional status.

식이조건(食餌條件)이 백서(白鼠) 뇌(腦)의 Acetylcholine 및 Cholinesterase에 미치는 영향(影響) (The Effect of Dietary Condition on the Acethylcholine and Cholinesterase in Rats Brain)

  • The effect of dietary condition on the acethylcholine and chotinesterase activity in the brain was observed. Rats weighting $120{\sim}130\;gm$ was fed on diets deprived of protein, carbohydrate and lipid, respectively. Experimental terms was devided into 3, 7 and 15 days. The results are summarized as follows: 1. The lipid free diet makes greater contribution to the gain of body weight than the carbohydrate free and protein free diet. 2. The acethylcholine in the protein free diet group is reduced after 7 days and that in the carbohydrate free diet, after 3 days. 3. The cholinesterase activity shows continuing decrease after 3 days by protein free diet, and the other diet groups appear temporal decrease at 7 days and increase, at 15 days. 4. The relation of acethylcholine, and cholinesterase is similar to each other except that of the carbohydrate diet. From the above results, the conclusions are obtained that the protein free diet makes the acethylcholine and cholinesterase activity lower, and the carbohydrate free diet, acethylcholine lower.

쥐에서 유산소 운동이 식이섭취 선택에 미치는 영향 (Effects of Aerobic Exercise on Macronutrient Self-Selection in Rats)

  • The purpose of this study is to determine the effects of the aerobic exercise type on macronutrient self-selection. Male Sprague-Dawley rats were placed on a macronutrient self-selection diet for 4 weeks. For this purpose, mixed feeds were prescribed for the rats while they were forced to swim and run for 4 weeks. Animals were either swimming exercise or treadmill running exercised at 20m/min(60min/day). Cumulative daily energy and macronutrient intake were determined during this period. The running exercise group gained weight much more than the control group, while the swimming exercise group lost weight less than the control group. Such findings suggests that the former group took more feed. On the other hand, the dietary efficiency of the control group was higher, which implies that no physical exercise would result in a higher dietary efficiency. And there was significant difference of total dietary and calorie intakes among the three groups, Although insignificant in statistical means, it was found that the running group took feed most, which is attributable to the homeostasis requiring the supplementation of the calorie lost by exercise. Also, the running exercise group took the protein and carbohydrate most. while the control group took fat most. The decrease of fat intake by the running exercise group suggests the possibility that the in-body enzymes should adapt themselves to the changing in-body condition caused by the endurance exercise. In contrast, it is conceived that the more intake of the carbohydrate may be attributable to the need of supplementing the nutrient lost by the endurance exercise. As discussed above, the endurance exercise group took carbohydrate and protein and less fat than control group. In particular, it was found that the amount of feed intakes was affected much by types, intensity and duration of the exercises. All in all, such findings would apply to human beings. Now can increase the intakes of carbohydrate and decrease the intake of fat through an effective running exercise program and thereby, change our dietary patterns to the benefit of our body and simultaneously, prevent and adult\\`s diseases by decreasing the in % body fat level.(Korean J Nutrition 33(8) : 794-801, 2000)

Associations between dietary patterns and hypertension among Korean adults: the Korean National Health and Nutrition Examination Survey (2008-2010)

  • The objective of this study is to identify the dietary patterns associated with the risk of hypertensions among Korean adults using data from the Korean National Health and Nutrition Examination Survey (KNHANES, 2008-2010). This study analyzes data from 11,883 subjects who participated in the health and nutrition survey, aging from 20 to 64 years. We performed factor analysis based on the weekly mean intake frequencies of 36 food groups to identify major dietary patterns. We identified three major dietary patterns in both sexes, namely "traditional", "western" and "dairy and carbohydrate" patterns. Participants in the highest quartile of western pattern scores had significantly higher blood pressure, serum total cholesterol, and triglyceride levels than those in the lowest quartile. Although not statistically significant, a trend (P for trend = 0.0732) toward a positive association between the western dietary pattern and hypertension risk was observed after adjustments for age, sex, education, income, body mass index (BMI), smoking, physical activity, and energy intake. The dairy and carbohydrate pattern was inversely related with BMI and blood pressures and positively associated with serum high-density lipoprotein (HDL)-cholesterol. After adjusting the age, sex, education, income, BMI, smoking, physical activity and energy intake, the dairy and carbohydrate pattern showed inverse associations with hypertension prevalence (OR = 0.64, 95% CI = 0.55-0.75; P for trend < 0.0001). Intakes of fiber, sodium, and antioxidant vitamins were significantly higher in the top quartile for the traditional pattern than in the lowest quartile for the traditional pattern (P for trend < 0.0001). Intakes of fiber (P for trend < 0.0001), calcium (P for trend < 0.0001), retinol (P for trend = 0.0164), vitamin $B_1$ (P for trend = 0.001), vitamin $B_2$ (P for trend < 0.0001), niacin (P for trend = 0.0025), and vitamin C (P for trend < 0.0001) were significantly increased across quartiles for the dairy and carbohydrate pattern whereas sodium (P for trend < 0.0001) intake was decreased for this pattern. In conclusion, the dairy and carbohydrate pattern may be associated with a reduced risk of hypertension whereas the western pattern may be associated with an increased risk of hypertension among Korean adults.

청소년용 식품섭취빈도 조사지의 개발 및 타당도 검증 (The Development and Validation of a Food Frequency Questionnaire to Assess Diets of Korean Adolescents)

  • The purpose of this study was to develop and evaluate the validity of a food frequency questionnaire for Korean adolescents (FFQ-A) which could be used in clinical and epidemiological studies of the lifestyle and health of young people. The FFQ-A was designed to reflect the eating pattern of Korean adolescents, and was based on the 1998 Korean National Health and Nutrition Survey Reports. The FFQ-A had 25 (food categories. A total of 125 subjects (aged 13 to 15 years) was recruited from a randomly chosen middle school in a middle-income neighborhood in Anyang, South Korea. Each subject completed a FFQ-A, as well as a three-day dietary record. Data from 117 subjects (boys 47, girls 70) was used in the final analyses. Data on the nutrients was analyzed to estimate the Pearson correlations, Spearman rank-order correlations and agreement with categories. The validity of the FFQ-A was assessed relative to a three-day dietary record. The Pearson correlation coefficients for all the subjects were 0.94, 0.87, 0.77, 0.79, 0.49 and 0.68 for energy, carbohydrate, protein, fat, calcium, and iron, respectively. Similarly the Spearman rank-order correlation coefficients were 0.94, 0.85, 0.79, 0.81, 0.46, and 0.77 for energy, carbohydrate, protein, fat, calcium and iron, respectively. The Kappa values for energy, carbohydrate, protein, fat, calcium, and iron were 0.88, 0.67, 0.63, 0.67, 0.26, and 0.59, respectively. The percentage for misclassification of the lowest quartile into the highest quartile or vice versa ranged from 0% (energy, carbohydrate, or fat) to 16.7% (Vitamin C). Therefore the FFQ-A has a reasonable ability to assess the energy, carbohydrate, protein and fat intakes as estimated from a three-day dietary record of Korean adolescents. Utilization of dietary protein, lipid and carbohydrate by flounder (Paralicthys olivaceus)

  • Although flounder is one of the most important marine fish for aquaculture in Korea, feeding the flounder in commercial farms depends mainly on moist pellet in which over 70% frozen fishes (e.g. frozen horse mackerel) are incorporated in its formulation. Therefore, for further expansion of flounder farming, it is essential to employ practical formulated feeds that can support reasonable growth. Development of nutritionally balanced and cost-effective feeds is dependant on the information about nutritional requirement and feed utilization of the species. Nutrient and energy source in feed are needed for the growth and maintenance of fish. Protein is probably the most important nutrient affecting fish growth and feed cost. Therefore, it is essential to determine the optimum dietary protein level for the growth of fish, both its high proportion in the feed and because it is the main factor in determining feed cost. Dietary energy level is also critical because protein source in the feed is utilized as an energy source when the feed deficient in energy is fed to fish, whereas when the feed excess in energy is fed to fish, feed consumption decreased and resulted in growth reduction due to lack of other necessary nutrients for normal growth. Improper dietary protein, energy levels and/or their ratio will lead to an increase of fish production cost and deterioration of water quality resulting from wasted feed; thus, they are important in formulating commercial feed. Dietary lipids play important roles in providing energy and essential fatty acid for normal growth and survival of fish. Although carbohydrates are not essential nutrients for carnivorous fish, these compounds play important roles as a low-cost energy source for protein sparing and also as a feed binder. Nutrition researches for flounder have identified its requirements of protein, lipid and essential fatty acid, vitamin, and minerals for normal growth. Other studies have also been carried out to investigate the utilization of the protein, lipid and carbohydrate sources. Based on these nutritional information obtained, practical feed formulations have been studied for improve aquaculture production of flounder. The results of the researches on utilization of dietary protein, lipid and carbohydrate by flounder are discussed in this review.

Influence of dietary nonstructural carbohydrate concentration on growth performance and carcass characteristics of Holstein steers

  • Objective: Since very little information exists about the topic; in this experiment we compare, in a long-term finishing program, the growth-performance responses and carcass characteristics of Holstein steers where non-structural carbohydrate concentration of the diet is reduced from 64% to 51% (dry matter basis). Methods: Sixty Holstein steer calves ($129{\pm}2.2kg$) were blocked by initial weight into five groups and randomly assigned within weight groupings to 10 pens. Calves were fed with a steam-flaked corn-based finishing diets containing 51% higher fiber (HF) or 64% lower fiber (LF) nonstructural carbohydrates. Non-structural carbohydrates concentrations were manipulated substituting dried distiller grain with solubles and alfalfa hay for flaked corn. Cattle were weighed every 112 days and at the end of the experiment (day 308) when the cattle were harvested and carcass characteristics were evaluated. Results: Steers fed the HF diet showed improvement (8.8%) in average daily gain (ADG) during the initial 112-d period. This effect was followed by a numerical trend for greater ADG throughout the remainder of the study so that overall ADG tended to be greater (4.9%, p = 0.06) for the HF than for LF. There were no treatment effects on dry matter intake. Gain efficiency and estimated dietary net energy (NE) were greater 8.3% and 5.2%, respectively for HF during the initial 112-d period. Overall (308-d) gain efficiency and estimated dietary NE were similar for both dietary treatments. However, due to differences in tabular dietary NE, the ratio of observed:expected dietary NE tended to be greater (4.1%, p = 0.06) for the HF vs LF diet. There were no treatment effects on carcass characteristics except for a tendency toward a slightly greater (0.5%, p = 0.09) estimated carcass yield. Conclusion: Reducing the non-structural carbohydrate concentration of a conventional steam-flaked corn-based growing finishing diet for Holstein steers can effectively enhance growth performance, particularly during the early growing and late finishing phases.

The Requirement of Ruminal Degradable Protein for Non-Structural Carbohydrate-Fermenting Microbes and Its Reaction with Dilution Rate in Continuous Culture

  • A continuous culture study was conducted to determine the impact of ruminal degradable soy protein (S-RDP) level and dilution rate (D) on growth of ruminal non-structural carbohydrate-fermenting microbes. Corn starch, urea and isolated soy protein (ISP) were used to formulate three diets with S-RDP levels of 0, 35 and 70% of total dietary CP. Two Ds were 0.03 and $0.06h^{-1}$ of the fermenter volume in a single-effluent continuous culture system. As S-RDP levels increased, digestibilities of dietary dry matter (DM), organic matter (OM) and crude protein (CP) linearly (p=0.001) decreased, whereas digestion of dietary starch linearly (p=0.001) increased. Increasing D from 0.03 to $0.06h^{-1}$ resulted in decreased digestibilities of dietary DM and OM, but had no effect on digestibilities of dietary starch (p=0.77) and CP (p=0.103). Fermenter pH, the concentration of volatile fatty acids (VFA) and daily VFA production were unaffected (p=0.159-0.517) by S-RDP levels. Molar percentages of acetate, propionate and butyrate were greatly affected by S-RDP levels (p=0.016-0.091), but unaffected by D (p=0.331-0.442). With increasing S-RDP levels and D, daily bacterial counts, daily microbial N production (DMNP) and microbial efficiency (MOEFF; grams of microbial N produced per kilogram of OM truly digested) were enhanced (p=0.001). The increased microbial efficiency with increasing S-RDP levels is probably the result of peptides or amino acids that served as a stimulus for optimal protein synthesis. The quantity of ruminal degradable protein from soy proteins required for optimum protein synthesis of non-structural carbohydrate-fermenting microbes appears to be equivalent to 9.5% of dietary fermented OM.

  • Objectives : The aim of this study was to investigate the relationship between the contributions of macronutrients to the total energy intakes and Body Mass Indices (BMI, $kg/m^2$) of Korean women. Methods : We used dietary records data from 115 healthy Korean women, ages 20 and over, who completed four 3-day dietary records between February 2003 and March 2004. For the calculation of nutrients we used a dietary assessment program developed by the Korean Nutritional Society. Macronutrient intakes were estimated by averaging individual total daily intakes in four 3-day dietary records. Subjects were categorized into three Body Mass Index (BMI) groups : underweight (BMI < 20), normal (20 $\leq$ BMI < 25), and overweight (BMI $\geq$ 25) group. Results : The total energy intakes were not different among the three BMI groups. Similarly, other macronutrient intakes such as protein, fat, carbohydrate, vegetable protein, animal protein, saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids were not different. From the multivariate nutrient density model, substituting polyunsaturated fatty acid for carbohydrate was positively associated with BMI in women aged 20 to 49 ($\beta=2.31$, p<0.01). In women aged 50 and over, substituting animal protein for carbohydrate was positively associated with BMI ($\beta=0.549$, p=0.04). Conclusions : No single macronutrient was associated with BMI when all subjects were combined. However, when stratified by age, polyunsaturated fatty acid intake in younger women, and animal protein intake in older women, were positively associated with BMI. In the future, we recommend a larger study to confirm these results.

우리나라 성인의 당질섭취가 혈청 중성지방수준에 미치는 영향 (The Effects of Dietary Carbohydrate on Serum Triglyceride Concentrations in Korea)

  • The relationship between dietary carbohydrate (CHO) and fasting triglyceride (TG) concentrations was examined in 2,689 men, 1,908 premenopausal women, and 966 postmenopausal women aged 20-69 years in the 1998-Korean Health and Nutrition Survey. The serum TG concentrations in fasting blood samples were measured and dietary CHO intake was assessed by using 24-hour recall method. As CHO intake increased, the TG concentrations were significantly affected (127.4 mg/dl, 132.4 mg/dl, 134.8 mg/dl, 142.6 mg/dl, 147.2 mg/dl) in postmenopausal women, while CHO intake was not significantly associated with TG concentrations in men and in premenopausal women. For the lowest to the highest quintiles of CHO, the mean TG concentrations were 120.0 mg/dl and 140.3 mg/dl in postmenopausal women with body mass index (BMI) <25 kg/m$^2$ and 135.6 mg/dl & 155.3 mg/dl in postmenopausal women with BMI$\geq$25 kg/m$^2$. In multivariate analysis, BMI, waist hip ratio (WHR), glucose, smoking, and drinking habit were associated with serum TG concentrations in men. In premenopausal women, BMI, WHR, and glucose levels were associated with serum TG concentrations, while age, BMI, WHR, glucose levels, and CHO intake were associated with serum TG concentrations in postmenopausal women. In conclusion, CHO intake is related to serum TG concentrations in postmenopausal women in Korea.
