우리나라 사슴고기와 노루고기 조리법(調理法)의 역사적(歷史的) 고료(考寮) (The Historycnl Study of Deer and Roe Deer Cooking in Korea)

  • The purpose of this paper is to examine the various kinds of recipes of deer and roe deer through classical cookbooks written from 1670 to 1943. The recipes of deer and roe deer are found 31 times in the literature written in classical Chinese from 1715 to the mid-l8th century, which can be classified six groups. Their records are less than other recipes such as beef, chicken, pork, lamb, and dog, but the deer recipe is recorded frequently as four times as the roe deer one The deer were cooked and preserved by the following six ways like large-size drying, drying, boiling, soup, roasting, and gruel, while three ones such as boiling, roasting, and drying were applied to the roe deer. However, there is little difference in recipes between deer and roe deer. In case of deer, boiling and drying were the most popular ones with the frequency of 28%. But the recipes of the roe deer, boiling, roasting, and drying are recorded with the same frequency of 33.3%. The recipes were introduced from China, and had many characteristics different from other kinds of meat, of which most process reflected the mordern cooking scientific aspect. The main ingredients were flesh meat, tail, and tongue and horn was used with uniqueness. Salt, vinegar, oil soy sauce, and the white part of the green onion were used as main seasonings. Alcohol, chuncho, sesame flower powder, and cinnamon powder are frequently added.

녹용수침액(鹿茸水浸液)이 Mouse의 Stress 방어작용에 미치는 영향(影響) (Effect of the Antler (Deer Horn) Water Extract on the Stress Resistance in Mice)

  • Antler, deer horn, occupies a particular place in oriental folk medicine as so called tonic remedy. In order to study on the effects of Antler water extract on stress resistance in mice, quantitative response was measured for the change of spontaneous activity by chemical stress drugs in the control group or the Antler water extract pretreated group. Spontaneous activity in mice was measured by counting the number of interruptions of light. The results of experiment were summerized as follows; I) In case of administrating Antler water extract 10mg/kg, 20mg/kg, 50mg/kg, and 100mg/kg, no significant change was observed in spontaneous activity in comparison with the control group. II) In case of administrating Antler water extract for 5 days or 10 days, no significant change was observed in spontaneous activity by chemical stress drugs, caffein and chloropromazine, in comparison with the control group.

  • To evaluate constitutional preference and clinical symptoms on the foods, we statistically analyzed the 572 patients' data based on the Sasang Constitutional Information Bank (SCIB) in Korea Institute of Oriental Medicine (KIOM). As a result, these are supposed to constitution-related foods ; crucian, watermelon, barley, ginseng, honey, chicken, deer's horn, beef, cold foods. Among these, crucian, barley, cold foods are fit for Soyangin, ginseng, honey, chicken for Soeumin and deer's horn, watermelon, beef for Taeumin. Whereas pork and sliced raw fish are nothing to do with sasang constitution in this study.

  • Deer horn has been used in oriental medicine and folk remedy. It has had much effects on 'health and tonic efficacy' But this word, 'health and tonic efficacy', is very obscure in modern sense This report attempts to investigate their scientific and objective effects among many papers. The biochemical components of antler are composed of pentoses, hexoses, acid mucopolysaccharides, free and ester fatty acids, glycolipids, phospholipids, prostaglandins, sterols, protein and peptides, free amino acids, minerals, hormones etc. Deer horn extract especially increases body weight gain and feed efficiency, and it stimulates the ability of spermatogenesis of animal. However, a few papers have reported concerning the toxicity and side effects of antler.

녹용중(鹿茸中)의 아미노산(酸) 함량(含量)에 관(關)하여 (제 1 편)(第 1編) (Study on Amino Acid Contents in Deer Horn)

  • Free amino acids in water extracts and total amino acids in hydrolystates of Deer Horn were analyzed by amino acid autoanalyzer (Technicon PNC-1 Type). The results obtained from this study are as follows ; 1) 17 kinds of amino acid, including 7 kinds of essential amino acid in human nutrition except tryptophan were identified and quantified. 2) Of all free amino acid contained in water extract, glutamic acid is the richest, and then comes Ala, Gly, Leu, Lys, valin in that order. Of all total amino acid which are closely related with nutritional valuation glycin is the richest, and then comes Glu, Lys, Ala, Leu, Ala, Pro, in that order. 3) Besides 17 kinds of amino acid, one kinds of unknown amino acid are found in water extracts and hydrolysates.

  • 녹용은 인삼과 함께 중국을 위시하여 우리나라에 있어서는 수천년래 소위 보약으로써 상용되고 있다. 녹용의 효능중 본초강목 동의보감등에 기재된 것을 보면 조혈 작용이 있다 하였고 한방에서도 빈혈환자에 진효하다고 인정되고 있다. 오와 그 공동 연구자가 조혈에 관한 지견을 보고한바 있으나 저자는 녹용이 과연 조혈작용이 있는가를 재검토코저 하였다. 건전한 웅성가토(체중 2kg내외)를 사용하여 실험적으로 가토빈혈을 야기시킨 다음 이에 녹용을 투여하여 빈혈생성억제여부및 빈혈의 자연회복경과등을 관찰코저 하여 적혈구수, hemoglobin농도,hematocrit및 reticulocyte등을 측정하였다.

  • The hematologic values and serum chemistry were examined healthy male 12 Pere David's Deer and 8 Wapiti at the Farmland Zoological Garden. In wapiti, the blood values collected from horn and jugular vein were compared. The results were as follows: 1. 녹용이 집토끼 조직에 미치는 영향(1)-수용성 단백의 비교연구- (The Effect of Deer Horn Extract on the Rabbit Tissues(1) -The effect on the soluble proteins-)

  • 녹용이 동물체에 미치는 영향을 조사하기 위한 일환으로 녹용 침출액을 집토끼에 주사한 후 여기에서 여섯개의 조직(골격근, 간, 신장, 부신, 비장, 심장근)을 선택 적출하여 disc-gel electrophoresis로 수용성 단백 분획상을 비교 하여 보았다. 대조군과 5일간 주사한 군에서 간, 신장, 부신, 비장에서는 서로 동일한 영동분획상이 나타났으나 골격근과 심장근에서는 대조군보다 실험군(5일간과 15일간 녹용침출액을 주사한 군)의 영동대에서 하나의 영동대가 더 나타났다. 한편 15일간 주사한 실험군과 5일간 주사한 실험군 사이에서는 단백분 획상의 차이점이 없음을 알았다. 이와 같은 변화는 녹용의 어떤 특수성분이 주로 근육형 조직에서만 백질을 합성하는 기작에 영향을 끼친 것이 아닌가 사려된다.
