The Color-Developing Methods for Cultivated Meat and Meat Analogues: A Mini-Review

  • Novel meat-inspired products, such as cell-cultivated meat and meat analogues, embrace environmental sustainability, food safety and security, animal welfare, and human health, but consumers are still hesitant to accept these products. The appearance of food is often the most persuasive determinant of purchasing decisions for food. Producing cultivated meat and meat analogues with similar characteristics to conventional meat could lead to increased acceptability, marketability, and profitability. Color is one of the sensorial characteristics that can be improved using color-inducing methods and colorants. Synthetic colorants are cheap and stable, but natural pigments are regarded as safer components for novel food production. The complexity of identifying specific colorants to imitate both raw and cooked meat color lies in the differences in ingredients and methods used to produce meat alternatives. Research devoted to improving the sensorial characteristics of meat analogues has noted various color-inducing methods (e.g., ohmic cooking and pasteurization) and additives (e.g., lactoferrin, laccase, xylose, and pectin). Additionally, considerations toward other meat components, such as fat, can aid in mimicking conventional meat appearance. For instance, the use of plant-based fat replacers and scaffolds can produce a marked sensory enhancement without compromising the sustainability of alternative meats. Moving forward, consumer-relevant sensorial characteristics, such as taste and texture, should be prioritized alongside improving the coloration of meat alternatives.

Analysis of Ginsenoside Composition of Ginseng Berry and Seed

  • This study was performed to provide basic information that can be used to differentiate Korean ginseng (Panax ginseng CA. Meyer) berry and seed from American ginseng (Panax quinquefolium L.) seed. Total ginsenoside contents of Korean ginseng berry, Korean ginseng seed, and American ginseng seed were 9.09, 3.30, and 4.06%, respectively. Total ginsenoside content of Korean ginseng berry was about 2.2 to 2.7 times higher than those of Korean ginseng seed and American ginseng seed. Particularly ginsenoside Re content of 4-year cultivated Korean ginseng berry (5.99%) was about 3.6 to 5.4 times higher than that of 4-year cultivated Korean ginseng seed (1.65%) and 4-year cultivated American ginseng seed (1.10%). The contents of total ginsenoside and ginsenoside Re of Korean ginseng berry were about 4.8 and 28 times higher, respectively, than those of 4-year cultivated Korean ginseng root. In general the contents of total ginsenoside and ginsenoside Re of Korean ginseng berry were significantly higher than those of Korean ginseng seed and American ginseng seed.

16S rRNA gene-based sequencing of cucumber (Cucumis sativus L.) microbiota cultivated in South Korea (16S rRNA 유전자 염기서열 분석에 기반한 국내 재배 오이의 상재균총 분석)

  • Various vegetables, including cucumbers, have a high probability of foodborne illness because they are usually eaten raw. In this study, we analyzed the 16S rRNA gene sequences of the cucumber (Cucumis sativus L.) microbiota. The diversity indices of cucumber cultivated in May were higher than in cucumber cultivated in November. At the phylum level, Proteobacteria, Firmicutes, and Actinobacteria were predominant. The classes generally comprised Gammaproteobacteria, Bacilli, Alphaproteobacteria, and Actinobacteria. At the genus level, the proportions of Aureimonas, Escherichia, and Microbacterium in samples from May were relatively high, whereas Enterococcus, Pseudomonas, and Rhizobium accounted for a higher proportion in samples from November. Moreover, it is noteworthy that potential pathogenic genera such as Acinetobacter, Aerococcus, Aureimonas, Enterobacter, Enterococcus, Escherichia, Pantoea, Pseudomonas, and Staphylococcus were detected. Although further studies on the characteristics of potential pathogens are required, our results can be used to improve the food safety of vegetables.

  • The proximate and amino acid compositions of wild and cultivated Codonopsis lanceolata were analyzed. Wild Cadonopsis lanceolata (WCL) had higher contents of fat, protein, fiber and ash as compared with cultivated Codonopsis lanceolata (CCL). Calcium was 1.47 times higher in WCL than CCL. However, contents of iron and phosphorus was 1.45 times and 4.90 times higher in CCL than WCL, respectively. Arginine was the predominant amino acid in both WCL and CCL.

Chemical Properties of Medicinal Plant Cultivated Soils (약용작물(藥用作物) 재배지(栽培地) 토양(土壤)의 화학성분(化學成分) 함량(含量))

  • This survey was conducted to investigate the chemical properties of soils cultivated medicinal plants. The soils were collected at 254 sites(Angelica gigas : 81, Astragalus membranceus : 38, Platycodn glandiflorum : 36, Paeonia albiflora : 34, Codonopsis lanoceolata : 32, Ligusticum chuanxiong : 17. Bupleurum falcatum : 16, respectively) throughout the country by 0-15cm depth. The chemical properties of soils were pH 5.6, O.M 3.0%. Av.$P_2O_5$ : 405 mg/kg, Ex.K : $0.67cmol^+/kg$, Ex.Ca : $6.3cmol^+/kg$, Ex.mg : $1.6cmol^+/kg$. The percentage distribution of pH on the basis of soil sample numbers were much more at the 5.1-6.0 range than any other ranges, especially those of below pH 6.0 were 83-91% for Angelica gigas, Platycodn glandiflorum and Codonopsis lanoceolata. The distribution of OM and Av.$P_2O_5$ in soils were much at the 2.1-4.0% and above 500mg/kg ranges, respectively. And the content of those in soils cultivated with Platycodn glandiflorum were lower than any other medicinal plants. The distribution of exchangeable cations in soils were much at the 0.2-0.8, 2.1-4.0 and $0.5-2.0cmol^+/kg$ of Ex.K. Ca and mg. respectively, and the contents were higher in soils cultivated Astragalus membranceus. and lower in soils cultivated Platycodn glandiflorum and Codonopsis lanoceolata than any other samples.

  • Biofouling causes many problem in industrial processes, medical health industries, water utilities and our daily life. So detecting formation of biofilm on the surface of medical appliance, water pipe and industrial utility is highly important to prevent the problem caused by biofouling. In this study, we suggest an electrochemical sensor for detecting biofilm. We fabricated the electrochemical sensor in MEMS process and cultivated two different kinds of Pseudomonas aeruginosa RpoN type and Wild type on the surface of electrochemical sensor. Each group of Pseudomonas aeruginosa was cultivated according to the hours of 2, 4, 6, 8, 12 and 24. Then we investigated changes in degree of biofilm cultivation using cyclic voltammetry. As a result, it was observed that peak of the cyclic voltammetry curve is increased according as the biofilm growth on the surface of electrochemical sensor. Also we can discern between Pseudomonas aeruginosa RpoN type and Wild type.

  • Government Organization and Public Institution have been developed many kinds of agricultural information systems such as agricultural policy, cultivated technology, marketing, and trade so on since 2000. Farm management conditions are diverse and complex more and more. Therefore, farmer want to service the specific agricultural information. Farmer don't like to access many Web sites to retrieve agricultural informations. They hope to receive one-stop its service. Government Organization began to review its information in order to make them more customized agricultural information service. We came up with an effective plan and Service Standardization Code for integrating agricultural technology informations in 2009. We can guide to carry out an effective portal service of agricultural information because we have a good experience about integrating information and system. This paper suggested the service scheme of integrated agricultural information for improving accessibility its information to farmer.

A new functional mushroom cultivated variety Jangsaeng of Fomitella fraxinea (기능성버섯 장수버섯의 신품종 『장생』)

  • A new functional mushroom cultivated variety "Jangsaeng" of Fomitella fraxinea was developed by crossing monokaryons derived from collected strains for contribution to mushroom farmers. The major characteristics of this mushroom were compared to Yeongji 2ho of Ganoderma lucidum because of their morphological similarities. The optimal temperature of mycelial growth and fruitbody sprouting and growth were 30 and 25~30, respectively. The surface color of fruitbody pilus was reddish brown and the fruitbody was flat kidney-shaped like Ganoderma lucidum except that the stipe was absent. Its texture was so tough and rigid that the yield per 1,000 ml bottle might be as high as 136 g. The hot water extract of this medicinal mushroom is fit to drink just like Ganoderma lucidum but its taste is not bitter.

Heavy Metal Accumulation in Edible Part of Eleven Crops Cultivated in Metal Contaminated Soils and Their Bio-concentration Factor (중금속 오염 토양에서 재배한 주요 작물별 가식부 중금속 축적 농도 및 생물농축계수)

  • BACKGROUND: The current study was conducted to examine the species specific accumulation of Cd and Pb in 11 crop species (Soybean, Sesame, Corn, Polished rice, Carrot, Potato, Garlic, Spring onion, Chinese leek, Red pepper, Eggplant), through cultivating them under the same condition with metal contaminated soils.METHODS AND RESULTS: Eleven crop species were cultivated in three different soils contaminated with Cd and Pb and harvested. Edible parts of each crop was pretreated and analyzed to determine Cd and Pb concentrations, and subsequently bioconcentration factors (BCFs) were calculated. In general, the crops of which seeds are used as food showed high concentrations of both Cd and Pb. For instance, Cd concentrations in crops cultivated in Soil A was in the order of soybean (0.432 mg kg-1) > sesame (0.385) > polished rice (0.176) > carrot (0.116) > corn (0.060) > red pepper > (0.047) > potato (0.044) > egg plant (0.025) > garlic (0.023) > spring onion (0.016) > Chinese leek (0.011). BCFs showed the same order.CONCLUSION: From this study, it can be conclude that seeds plants should not be cultivated in Cd and Pb contaminated soils to secure food safety from metal contaminated soils.

Comparison of the Chemical Properties of Soil and the Main Components of the Southern Ecotype Garlic Cultivar Cultivated in the Volcanic or Nonvolcanic Ash Soil of Jeju Island (제주의 화산회토양 및 비화산회토양에서 재배한 난지형 마늘의 주요성분과 토양의 화학적 특성 비교)

  • In this study, we analyzed and compared the constituents of Southern ecotype garlic cultivars, Namdo and Daeseo garlic, cultivated in volcanic and non-volcanic ash soil in Jeju Island and compared the soil properties in these regions. The volcanic ash soil in which Namdo garlic grew had higher electrical conductivity and more available sulfur, whereas the volcanic ash soil in which Daeseo garlic was cultivated had a higher amount of organic matter and total nitrogen. Also, non-volcanic ash soil in which Namdo garlic was cultivated had higher levels of available phosphorous. Namdo garlic cultivated in volcanic ash soil had high levels of total soluble solids and a high allicin content and Daeseo garlic exhibited a higher reducing sugar content. Furthermore, amongst the macroelements found in garlic grown on Jeju Island, potassium was highest, followed by sulfur, magnesium, calcium, and sodium. Iron was the most abundant micronutrient, followed by zinc, manganese, and copper. These results will be of interest to farmers aiming to cultivate high-quality garlic.
