농후제를 달리한 토마토소스의 품질 특성 (Quality Characteristics of Tomato Sauce added with Various Thickening Agent)

  • 본 연구에서는 토마토소스 제조 시 일반적으로 사용되고 있는 루(roux)를 대신하여 멥쌀가루, 찹쌀가루, 감자전분, 타피오카전분을 농후제로 사용한 토마토소스를 제조하였고, 일반성분 및 칼로리, 색도, 염도, 가용성 고형분 및 환원당, 점도 및 관능검사를 실시하여 토마토소스에 가장 적합한 농후제를 밝혀내고자 하였으며, 그 결과 토마토소스를 제조할 때 기존의 루 대신에 감자전분이나 타피오카전분을 사용하였을 경우, 관능적 기호도가 더 높아졌음을 알 수 있었다. 또한 저지방, 저열량의 토마토소스를 제조할 수 있으므로 최근 고지방, 고열량 식품을 기피하는 추세에 알맞은 토마토소스를 제조할 수 있음이 확인되었다. 추후에는 전분을 농후제로 사용한 토마토소스를 조리적으로 접목하여 관능적 특성을 연구하여 그 이용도를 높이는 연구가 진행되어야 할 것이다.

홍화(Carthamus tinctorius L.)의 부위별 이화학적 특성 (Properties of the Chemical Composition of Safflower (Carthamus tinctorius L.))

  • In order to develop new materials for the functional feed, the components of safflower (Carthamus tinctorius L.) was studied. Chemical composition, minerals, amino acids, and fatty acids of the seed and the flower of safflower were analyzed. The chemical composition of safflower seed was 3.48% (w/w) moisture, 17.10% crude protein, 30.10% crude fat, 6.11% crude ash and these of safflower flower was 7.47% moisture, 26.30% crude protein, 11.50% crude fat, 5.73% crude ash. Mineral contents of the seed were K 170.70ppm, P 14.82ppm, Ca 13.17ppm, Mg 7.83 ppm whereas these of the flower were K 64.99 ppm, P 49.90 ppm, Ca 10.43ppm. Other mineral contents were less than 7.00ppm in all parts. The composition of the amino acid were approximately as follow, the major amino acid in all parts were aspartic acid, leucine, glycine, and arginine, the contents of these were 12.17mg/g, 11.52mg/g, 8.27mg/g, 6.99mg/g, 4.86mg/g in the seed, 19.35mg/g, 31.67mg/g, 10.30mg/g, 9.06mg/g, 12.51mg/g in the flower, respectively. The mahor fatty acids in the all parts were linoleic acid (C아래첨자). The linoleic acid and the palmitic acid (C아래첨자) in the seed and the flower parts were 77.75% (w/w), 19.32% and 8.37%, 25.62% respectively. On the basis of chemical analysis, the safflower showed to have relatively high contents of crude protein and crude fat, minerals, polyunsaturated fatty acid as linoleic acid. These results suggested that safflower was found to be a useful material of natural health food for the functional food development.

송화분이 흰쥐의 간장에 미치는 영향(II) (Effect of Pine Pollen on Rat Liver(II))

  • This study was conducted to investigate the nutritional constituents of pine pollen and the effects of pine pollen on rat liver. Using the chemical components analysis method, the constituents of pine pollen are crude protein(13.97%). crude lipid (6.50%), crude ash (3.25%). Detectable in pine pollen are main fatty acids and non-essential amino acids such as glutamic acid and aspartic acid such as oleic and linoleic acid and 18kinds of amino acid including essential amino acids. The effects of pine pollen on rat liver fed with a high fat diet for 6 weeks showed significant decrease in total lipid and triglyceride as compared with the group fed with a fat diet only. Total cholesterol content decreased by 20.33%. No significant difference was found in total protein content of each group. Pine pollen Is efficacious in preventing geriatric diseases (arteriosclerosis, hyper-lipidemia and cardiovascular system-related diseases).

담두시의 제조방법 확립 및 제조방법 개선에 관한 연구 (A Study on the Preparation Method and on the Improvement of Damdusi)

  • Damdusi was a kind of fermented soybean food added with ginger and sancho(Zanthoxylum schinifolium). To improve the preparing method of Damdusi, Asperillus oryzae was inoculated at steamed soybean and fermented at 25~3$0^{\circ}C$ incubator far 48 hours. Salt, ginger and sancho was mixed into it after 1st fermentation, and the 2nd fermentation was also done at 30~37$^{\circ}C$ for 1 week. After drying under the sun, sancho was removed from it. Dried Damdusi was composed of 4.90% of moisture, 35.07% of crude ash, 13.61% of crude fat and 23.44% of crude protein, respectively. Its flavor earned the high score(3.94) but taste did not (2.98) due to the salty taste by the sensory evaluation. Therefore, salt ratio was reduced to 18%, 16%, and 14% for improving the taste. The one with 14% salt concentration had the highest crude ash and crude fat but the lowest crude protein composition. The crude protein was the highest in the group of 16% salt. By the sensory evaluation, the taste and the overall acceptability was the highest in the 14% salt group.

A Comparison of Egg Quality of Pheasant, Chukar, Quail and Guinea Fowl

  • The quality characteristics and proximate composition of the eggs of pheasant, chukar, quail, and guinea fowl were compared. Eggs of the 4 species had a similar ovalish conical shape with blunt and pointed ends, showing the shape indices of 77.30-79.63 with no statistical difference. Egg weight was heaviest in guinea fowl (46.65 g), followed by pheasant (25.79 g), chukar (19.16 g) and quail (10.34 g). Proportion of yolk to the total egg weight was highest in pheasant (35.7%), followed by chukar (33.9%), quail (31.4%) and guinea fowl (30.6%). Albumen content was highest in quail showing 61.2%, while pheasant, chukar and guinea fowl were in the range of 55.6~57.4%. The ratio of yolk to albumen (Y/A) was highest in pheasant (0.65), followed by chukar (0.60), guinea fowl (0.55) and quail (0.52). The portion of shell to the total egg weight was highest in guinea fowl (13.5%) and lowest in quail (7.3%). The shell thickness of the eggs was thickest in guinea fowl ($462.8{{\mu}m}$), followed by pheasant ($241.5{{\mu}m}$), chukar ($231.8{{\mu}m}$) and quail ($174.8{{\mu}m}$). The contents of moisture, crude protein, crude fat and crude ash of whole egg were in the ranges of 74.26-74.50%, 11.98-12.77%, 10.83-11.91% and 1.02-1.10%, respectively, with no statistical difference (p>0.05) among the species. Albumen was high in moisture (87.46-87.99%) and very low in crude fat (0.09-0.13%), which was quite different from yolk. Yolk showed relatively low level of moisture (49.71-50.42%) and high levels of fat (31.48-32.32%), crude protein (15.12-15.99%) and crude ash (1.53-1.86%). No species difference in the proximate compositions of albumen and yolk was found except in crude ash content of albumen.

한국고유식품중(韓國固有食品中)의 지질함량(脂質含量)에 관(關)한 조사연구(調査硏究) (Contents of Lipids of Traditional Diet in Korea)

  • The purpose of this survey was to determine crude fat, crude protein, phospholipid, and total Cholesterol contents of Seolnong-Tang and Other 11 Samples which are traditional diet in Korea, The results obtained were summarized as folllows; 1) The content of crude protein was $7.34{\pm}1.08%$ in Chueo-Tang to $2.94{\pm}0.08%$ in Sundae-Gug, and the content of crude fat was $7.20{\pm}0.31%$ in Seonji-Gug to $2.64{\pm}0.31%$ in Jog-Tang 2) Triglyceride Content of fat was the highest value in Seolnong-Tang ($89.09{\pm}1.34%$) and the lowest one Samgae-Tang ($75.29{\pm}0.37%$). 3) Phospolipid content of fat showed the highest group in Yuqqae-Jang ($12.39{\pm}0.28%$) and Seonji-Gug ($12.18{\pm}0.31%$) the lowest group was Seolnong-Tang ($4.88{\pm}0.73%$) and Dogani-Tang ($4091{\pm}0.30%$). 4) In total cholesterol content of fat extracted, Bosin-fang ($1732.28{\pm}80.85mg%$) was the highest value and Dogani-Tang ($570.66{\pm}22.04mg%$) showed the lowest. 5) In total cholesterol contents of one diet, the highest group was Seonji-Gug ($667.40{\pm}35.73mg$) and Bosin-Tang ($652.96{\pm}22.27mg$) the lowest group was Jog-Tang ($147.64{\pm}17.33mg$) Daggom-Tang ($174.32{\pm}16.63mg$) and Dogani-Tang ($176.36{\pm}19.13mg$).

Possibility of Making Low-fat Sausages from Duck Meat with Addition of Rice Flour

  • Low-fat sausages with or without 10% hydrated rice flour were made from duck, chicken and pork and their physical and sensory properties were compared. Results showed that moisture content did not differ significantly among the sausage batters. However, crude protein, crude fat and total ash content were significantly lower in the group with added rice flour compared with the no flour group. Crude protein and crude fat were the highest in pork sausages without rice flour (p<0.05). Adding 10% rice flour reduced total expressible fluid in all meat type sausages. Cooking loss was also decreased when 10% rice flour was used in making sausages from chicken and pork. However, no changes in cooking loss were found in duck meat by adding rice flour. Again, the highest cooking loss was in pork sausages without rice flour and lowest in chicken sausages with 10% rice flour. The pH of the meat from different animal species differs significantly, although no significant difference was found within meat types with or without rice flour. Lightness ($L^*$) increased, while redness ($a^*$) decreased with adding rice flour in all meat type sausages. Results showed that hardness was significantly reduced when 10% rice flour was added to pork, chicken and duck meat (p<0.05). This may be due to increased water retention of rice flour after cooking. Sensory evaluation indicated that the overall acceptability of pork and chicken sausages with or without rice flour was the same, but duck sausages without rice flour had the highest off-flavor score among the sausages. Addition of rice flour increased the overall acceptability of duck sausage to that of pork and chicken sausages.

Estimation of Oil Yield of Perilla by Seed Characteristics and Crude Fat Content

  • Perilla (Perilla frutescens var.frutescens) is an annual plant of the Lamiaceae family, mainly grown for obtaining oil by press extraction after roasting the seeds. Oil yield is one of its important traits, but evaluating this yield is time-consuming, requires many seeds, and is hard to adjust to pedigrees in a breeding field. The objective of this study was to develop a method for selecting high-oil-yield lines in a breeding population without oil extraction. Twenty-three perilla cultivars were used for evaluating the oil yield and seed traits such as seed hardness, seed coat thickness, seed coat proportion and crude fat. After evaluation of the seed traits of 23 perilla cultivars, the ranges of oil yields, seed hardness, seed coat thickness, seed coat proportion, 100-seed weight, and crude fat were 24.68-38.75%, 157-1166 gf, $24-399{\mu}m$, 15.4-41.5%, 2.79-6.69 g, and 33.0-47.8%, respectively. In an analysis of correlation coefficients, the oil yield negatively correlated with seed length, seed width, the proportion of seed coat, seed hardness, and 1000-seed weight, but positively correlated with crude fat content. It was observed that as the seed coat proportion increased, the seed coat thickness, hardness, and 1000-seed weight also increased. Multiple linear regression (MLR) was employed to find major variables affecting the oil yield. Among the variables, traits crude fat content and seed coat proportion were assumed to be indirect parameters for estimating the potential oil yield, with respect to a significant positive correlation with the observed oil yield ($R^2=0.791$). Using these two parameters, an equation was derived to predict the oil yield. The results of this study show that various seed traits in 23 perilla cultivars positively or negatively correlated with the oil yield. In particular, crude fat and the seed coat proportion can be used for predicting the oil yield with the newly developed equation, and this approach will improve the efficiency of selecting prominent lines for the oil yield.

밀가루 및 건면의 지방질 조성과 측정 방법에 따른 조지방 함량 차이 (Lipid Composition and Differences in Crude Fat Contents in Wheat Flour and Dry Noodles according to Determination Methods)

  • 밀가루 및 5종의 건면에 함유되어 있는 정확한 조지방 함량을 정량하기 위하여 Soxhlet법을 비롯한 5종의 측정 방법과 3종의 추출 용매를 이용하여 상호간의 차이를 살펴보았다. 그 결과 밀가루에서는 0.09~1.37%, 건면에서는 0.07~1.36%의 조지방이 정량되었다. 이와 같이 밀가루와 건면에서 그 측정 방법에 따라 조지방 함량이 큰 차이를 보이는 이유는 지방질의 종류에 기인하는 것으로 밝혀졌다. 실제 시중 대형 마트에서 구입한 5종의 겉면에 표시되어 있는 영양성분표를 살펴 본바, 조지방 함량은 0~1.5%로 큰 차이를 보이고 있었다. 이러한 원인을 밝히기 위하여 밀가루와 건면에 함유되어 있는 지방질의 종류 및 함량을 정량하였다. 그 결과, 밀가루에는 1.02%의 유리 지방질과 0.21%의 결합 지방질이 함유되어 있었으며, 건면에는 0.95~1.01%의 유리 지방질과 0.21~0.25%의 결합 지방질이 함유되어 있었다. 밀가루 및 건면 제품에 함유되어 있는 유리 지방질에 함유되어 있는 극성 및 비극성 지방질의 함량을 조사한 결과, 밀가루에서 중성지방질, 당지방질 및 인지방질 함량은 각각 58.5%, 33.6% 및 8.6%였다. 상대적으로 5종의 건면 시료에서는 각각 49.2~58.2%, 33.3~41.6% 및 8.5~9.3% 범위였다. 또한, 밀가루 및 건면 제품에 함유되어 있는 결합 지방질에 함유되어 있는 극성 및 비극성 지방질의 함량을 조사한 결과, 밀가루에서 중성지방질, 당지방질 및 인지방질 함량은 각각 16.7%, 33.5% 및 49.5%였다. 상대적으로 5종의 건면 시료에서는 각각 13.2~15.3%, 35.6~45.7% 및 41.6~49.4%로 유리 지방질에 함유되어 있는 각 지방질의 함량과는 큰 차이를 보였다. 이와 같은 지방질 조성 및 함량에 따라 밀가루 및 건면에서 정확한 조지방 함량을 측정하기 위해서는 산가수분해법을 적용하여야 한다는 결론을 얻었다.

고지방식이(高脂肪食餌)로 유발(誘發)된 비만(肥滿) 흰쥐의 체지방 및 Leptin과 Neuropeptide-Y(NPY)에 대한 홍삼(紅蔘) 조사포닌의 효과(效果) (Effect of Crude Saponin of Korea Red Ginseng on High Fat Diet-induced Obese Rats)

  • The purpose of this study was to investigate the anti-obesity effects of crude saponin (CS) in Korean red ginseng (KRG) on rats fed a high fat (HF) diet. Methods: Male Sprague-Dawley (SD) rats were divided into a normal diet group and a high-fat (HF) diet group. The HF diet group became obese from being fed a HF diet over five weeks. The normal diet group were fed a normal diet. Each CS group of the normal diet group and HF diet group was administered CS (200 mg/kg, i.p.) for three weeks, the control group of both types was administered normal saline (1ml/kg, i.p.) instead of CS. Each group had 5 rats. Results: After administration of CS, the body weight, food consumption, adipose tissues, and expression of appetite peptides such as leptin and neuropeptide-Y (NPY) were investigated in the HF diet group as well as the normal diet group. Administration of CS reduced body weight, food intake, and fat content in the HF and normal diet groups. After CS administration, NPY expression and leptin were lower in the HF diet group. Conclusions: Our results suggest that CS may be useful in the treatment of obesity, especially of type qixu (氣虛).
