Investigation of Quality Properties of Commercial Jerky from Korean Market for Establishment of Quality Parameters (품질기준설정을 위한 국내 시판 육포의 품질 특성 조사)

  • The study was carried out to evaluate the quality of commercial pork and beef jerky at a market in Korea. The amount of food additives, place of origin, meat content, microbiological and physicochemical characteristics were investigated in 46 different jerky samples. Meat contents of pork and beef jerky were 75.2~94.0% and 80.0~95.6%, respectively. Food additives, including sodium nitrite, potassium sorbate, and sodium erythorbate were mainly used in jerky. Pork jerky was processed from domestic pork, and beef jerky was mostly processed from imported beef from the USA, Australia, or New Zealand. Pork jerky contained $23.82{\pm}5.74%$ moisture, $37.86{\pm}7.05%$ crude protein, $6.16{\pm}4.91%$ crude fat, and $4.6.87{\pm}1.76%$ crude ash. Beef jerky contained $26.64{\pm}5.21%$ moisture, $41.36{\pm}3.50%$ crude protein, $4.67{\pm}3.46%$ crude fat, and $7.21{\pm}1.91%$ crude ash. Water activity (Aw) of pork jerky was $0.73{\pm}0.09$ while that of beef jerky was $0.78{\pm}0.08$. Volatile basic nitrogen (VBN) content to jerky was 7.1~36.0 mg/100 g. There was no significant difference in the physicochemical composition of meat type (p<0.05). Coliform, Escherichia coli and Staphylococcus aureus were not detected in pork or beef jerky, whereas yeast and molds were detected below $1.2{\times}10^1CFU/g$ in beef jerky samples.

  • To evaluate the chemical characteristics of organic Korean cabbages, the content of moisture, crude protein, crude lipid, crude ash, dietary fiber, mineral, vitamin C, free sugar, organic acid, chlorophyll and carotenoid were analyzed in organic and nonorganic cabbages. The levels of crude protein, crude lipid, crude ash, soluble dietary fiber, insoluble dietary fiber, minerals(Ca, P, Ee, Mg, S, Zn), ascorbic acid, dehydroascorbic acid, fructose, glucose, sucrose, chlorophyll a, chlorophyll b and carotenoid in organic cabbages were higher than those in nonorganic cabbages. However, the content of moisture, malic acid, citric acid, potassium in organic cabbages were lower than those in nonorganic cabbages.

A Study on the Purification by Protein Precipitants and Washing of Agar (단백질(蛋白質) 침전제(沈澱制)의 처리(處理) 및 수세(水洗)에 의한 한천(寒天)의 정제(精製))

  • In this study, an effective method for purifying of crude agar was attempted, and at the same time, the effect of crude protein and ash contained in impurified agar on the gel strength of the agar were investigated. In order to reduce the content of protein of crude agar, the agar extract was treated with a protein precipitant such as tricholoroacetic acid(TCA) or perchloric acid(PCA), whereas washing with deionized water was applied to decrease the ash content of agar extract. Among the protein precipitants used in the experiment PCA reduced the crude proteins of crude agar most efficiently; addition of 0.01% PCA resulted in the reduction of crude protein content by 3%, and the gel strength of agar thereby increased from 220g/$cm^{2}$ to 402g/$cm^{2}$. High ash content of crude agar was removed by means of washing treatment and it decreased from 8.1% to 2.7%, leading to the gel strength of 530g/$cm^{2}4$.

  • This experiment was carried out to determine the relationships between maturity and content of the chemical components in flue-cured tobacco. The results were as follows : 1) Among the chemical components, the contents of total nitrogen, ammonia nitrogen, total alkaloids, nicotine, total volatile base, petroleum-ether extract, crude fiber, crude ash, water soluble ash, and chlorine decreased significantly, and those of total sugar, reducing sugar, and starch increased as leaf maturity progressed until the stage of ripeness, but, afterwards, a reverse tendency appeared. 2) There was a significant relationship between maturity and the contents of chemical components, such as total nitrogen, protein nitrogen, ammonia nitrogen, total volatile base, and the correlation coefficients of them were -0.743, -0.789, -0.797, and -0.642, respectively.

A Study on the Nutritional Values and Variations of Food Wastes according to Seasons and Sources (계절별 및 배출원별 남은 음식물의 영양적 가치 평가)

  • An experiment was conducted to determine the nutritional values and variations of food wastes according to seasons and sources. Food wastes were sampled monthly from Feb. to Aug. at gathering sites from home kitchens, school restaurants and Korean food restaurants. chemical analyses revealed that crude fiber and NaCl contents were in the range of 5.41∼10.36 and 3.67∼5.40%, respectively, and the variations were especially high in summer. Ash content was highest in spring. With regard to the sources, the wastes from Korean food restaurants was highest in ash, calcium and phosphorus. On the other hand, crude fiber and fat were highest in the waste from house kitchens and NaCl in those from school restaurants.

Physicochemical Properties of Introduced and Domestic Sesame Seeds (국내산과 국외산 참깨의 이화학적 특성 비교)

  • To obtain basic information for the quality evaluation, the introduced or domestic sesame seeds were investigated to measure proximate components (crude protein, ash, mineral and oil) and isolated by preparative HPLC system for lignan contents. Although crude protein contents were the highest in Sudan sesame seeds, lipid, ash and mineral contents were not significantly(p<0.05) different between introduced and domestric sesame seeds. Unsaturated fatty acids such as oleic and linoleic acids were the highest in the domestic sesame seeds. The Mg content of domestic sesame seeds also was larger than that of introduced sesame seeds. A Ca content of domestic sesame seeds, however, was significantly (p<0.05) lower than that of China. Lignan contents, the most important component known as antioxidant, were significantly (p<0.05) higher in domestic sesame seeds than other sesame seeds tested. Our findings suggest that domestic sesame seed has the best quality in terms of the functional components.

Seasonal Variation in Body Composition in Boleophthalmus pectinirostris Collected from Gangjin, Jeonnam, Korea (전남 강진산 짱뚱어(Boleophthalmus pectinirostris) 체성분의 계절변화)

  • This study was carried out to investigate seasonal changes in body composition in Boleophthalmus pectinirostris in Korea. B. pectinirostris collected in Gangjin, Jeonnam, consisted of 58.7-75.8% moisture content, 16.1-17.6% protein, 0.8-3.4% crude lipids, and 1.3-3.6% crude ash. Livers consisted of 15-17% moisture content, 14.0-16.8% crude protein, 34.4-71.2% crude lipids, and 0.5-1.2% crude ash. Calcium, iron, potassium, etc., content in B. pectinirostris muscle averaged 267.5-599.8 mg/100 g, 1.98-28.3 mg, 160.7-327.9 mg, 20.6-60.2 mg, 0.4-2.2 mg, 0.23-0.46 mg, 66.5-192.9 mg, and 1.32-3.8 mg, respectively. (Please clarify: the list of measured values must correspond directly with what was measured, not just "etc.") The major amino acids in B. pectinirostris muscle, in proportional order, were glutamic acid, isoleucine, and leucine; whereas the major amino acids in the liver were glutamic acid, lysine, aspartic acid, and leucine. The major saturated fatty acids in the muscle were palmitic acid (15-19%) and stearic acid (8-11%). The major monoenes and polyenes were palmitoleic acid (C16:1) and oleic acid (C18:1), and EPA and DHA, respectively. The major saturated fatty acids and polyenes in the liver were the same as in muscle, but the monoenes were palmitoleic acid (C16:1) and cis-10-hepta-decenoic acid (C17:1). Seasonal changes in B. pectinirostris body composition may be attributable to differential accumulation of fat and nutrients in comparison to the spawning and hibernation period.

Changes of Chemical Components in Persimmon Leaves (Diospyros kaki Thunberg) during Growth (감잎의 성장시기에 따른 화학성분 변화)

  • In order to promote the utilization of persimmon leaf as food, chemical components in freeze dried Persimmon leaves were analyzed. The proximate composition was composed of moisture(79.65%), crude protein(17.97%), crude fat(1.33%), ash(2.37%), crude fiber(2.01%). During growth, moisture content was decreased and crude fat, crude fiber and ash were increased, respectively. Free sugar was composed of glucose, fructose, sucrose, raffinose. Nonvolatile organic acid contents were composed of oxalic acid, levulenic acid, magic acid and citric acid in the order. 18 amino acids of total amino acid in persimmon leaves were detected and major amino acid were glutamic acid, aspartic acid, leucine, phenylalanine, arginine and valine. The soluble tannin and vitamin C of persimmon leaves were 6859.37 mg% and 1487.12 mg%. During growth, its contents increased and then decreased after 20th June.

Effect of Content of Crop Component on the Bioethanol Production (작물의 성분 함량이 바이오에탄올 생산에 미치는 영향)

  • The contents of starch, moisture, crude protein, crude fat, crude fiber, and ash of different varieties of various crops such as brown rice, barley, corn, sweet potato were analyzed. The average starch contents of brown rice, barley, corn, and sweet potato were $70.1{\pm}0.4\;{\sim}\;72.2{\pm}2.1$, $68.7{\pm}0.2\;{\sim}\;71.4{\pm}1.2$, $67.6{\pm}0.8\;{\sim}\;69.4{\pm}1.8$, and $21.7{\pm}0.9\;{\sim}\;28.3{\pm}0.5%$, respectively. The ground powder of each starchy substrate was suspended in distilled water, and then liquefied, saccharified, and fermented by dried active yeast at 32 for 4 days. By statistical analysis, the effectiveness of the contents of the different components such as starch, moisture, crude protein, crude fat, crude fiber, and ash of the crops on the ethanol production were examined. The results showed that the starch content positively affected the ethanol production in all the tested cereals and sweet potato. In brown rice, ash content affected negatively the ethanol production. In barley, protein content affected negatively the ethanol production, while fiber content affected positively the ethanol production. The sweet potato containing higher content of moisture produced less amount of ethanol.

  • This experiment was carried out to compare chemical composition of corn-cowpea inter cropping and corn monocropping plants at different harvestion time and obtained the following results. 1. In both cropping systems, the contents of crude fat and nitrogen free extract (NFE) were significantly increased (P<0.01), while that of crude protein crude fiber and crude ash were decreased (P<0.01) with each harvesting time. 2. The acid detergent fiber (ADF) and crude fiber contents were decreased same patterns in growing period, however, according to maturing of corn ears the difference between ADF and crude fiber contents reduced. 3. At mature stage, crude protein yields per 10a in corn monocropping and corn-cowpea intercropping system were 127.6kg and 152.1kg, respectively. The difference of crude protein content between corn-cowpea intercropping and corn monocropping system was 19.2%. 4. TDN yields of each cropping system, at mature stage, obtained similar results and TDN yields per 10a of corn monocropping and corn-cowpea intercropping system were 1006.1kg and 990.1, respectively. 5. Conseqently, corn-cowpea intercropping system could be increased protein yield without decreasing of dry matter yield in comparison with corn monocropping system.
