This study was conducted to investigate the food value of Cudrania tricuspidata at its various maturation stages. The pH, total acid and reducing sugar contents of its fruit juice were determined to have been 4.2~5.1, 1.4~2.0% and 5.4~8.6%, respectively. The general chemical components of its fruit were observed as 76~80% moisture, 2.2~3.5% crude protein, 1.7~2.9% crude fat, 0.8~1.2% ash and 14.5~16.4% carbohydrate. Its free sugar, glucose and fructose contents were determined. The fructose contents of both its ripened and over-ripened fruits were higher than their glucose contents. Organic acids such as oxalic acid, citric acid, tartaric acid, malic acid and succinic acid were detected, and the concentration of the malic acid and the succinic acid were found to have been most abundant. The K content was higher than the amounts of other minerals, such as Ca, Fe, K, Mg, Na and P. Its vitamin C and the total amount of its dietary fiber were 127.5~149.2 mg% and 22.7~38.7%, respectively. Its insoluble dietary fiber content was higher than its soluble dietary fiber content. Its total polyphenol and flavonoid content were 18.9~19.6 mg% and 40.9~48.2 mg%, respectively.
Three experiments were conducted to investigate the effect of cellulose addition on high (Exp. I) and low (Exp. II and III) dry matter barley straw silages. In Exp. I : 1 kg barley straw + 16 g glucose + 600 g water + 0 g as control (E0G), + 2 g (E2G), + 4 g (E4G), + 6 g (E6G), and + 8 g (E8G) of cellulose as treatments were ensiled. In Exp. II and III, 10 g glucose was and was not added, respectively, into 2 kg barley straw + 0 g (E8W, E8T) of cellulose as treatments. Samples were stored for 10 (Exp. I) and 7 (Exp. II and III) months at $21^{\circ}C$. The effect of cellulose addition on the fermentation and breakdown of the polysaccharides component in the silos at ensiling occurred more markedly at low dry matter silages rather than at the high ones. All cellulose treated silages were well preserved (pH below 5 in Exp. I and below 4 in Exp. II and III), while lactic acid and ethanol concentration increased. The fibrous fraction (ADF, NDF, crude fiber, hemicellulose, and cellulose) significantly (p<0.01) decreased (except hemicellulose content in Exp. I) compared with corresponding untreated silages. In vitro dry matter digestibility values (IVDMD) were similar for all silages. The present study showed that cellulose addition improved the potential nutritional and fermentation quality of barley straw silage.
This study investigated the chemical composition and ruminal degradability of corn stover in three maize-planting regions in Qiqihaer, Heilongjiang Province, China. The whole stover was separated into seven morphological fractions, i.e., leaf blade, leaf sheath, stem rind, stem pith, stem node, ear husk, and corn tassel. The assessment of nutritive value of corn stover and its fractions was performed based on laboratory assays of the morphological proportions, chemical composition, and in situ degradability of dry matter (DM), neutral detergent fiber (NDF), and acid detergent fiber (ADF). The chemical composition of corn stover was significantly different from plant top to bottom (p<0.05). Among the whole corn stover and seven morphological fractions, leaf blade had the highest crude protein (CP) content and the lowest NDF and ADF contents (p<0.05), whereas stem rind had the lowest CP content and the highest ADF and acid detergent lignin (ADL) contents (p<0.05). Ear husk had significantly higher NDF content and relatively lower ADL content than other corn stover fractions. Overall, the effective degradability of DM, NDF, and ADF in rumen was the highest in leaf blade and stem pith, followed by ear husk. The results indicate that leaf blade, ear husk, and stem pith potentially have higher nutritive values than the other fractions of corn stover. This study provides reference data for high-efficiency use of corn stover in feeding ruminants.
In this study, Artemisia capillaris, which has been used in oriental medicine and folks remedy, was investigated to characterize the nutritional composition (protein, lipid, ash, fiber, amino acids, fatty acids, Na, K, P, Mg, Ca and Fe) and effective substance (scopoletin). Artemisia capillaris has often been cited in medical literature for its medicinal effects. The Korean Food and Drug Administration allowed Artemisia capillaris as a food stuff and indicated as In-Jin-Sook. From the view point of the subjects who eat In-Jin-Sook products, most of them ingested it for a certain pharmacological efficacy rather than as a beverage or a food. Therefore, we need to develop functional foods using In-Jin-Sook. Artemisia capillaris was superior in protein, crude fiber, amino acid and fatty acid compositions to wild greens according to Korean Nutritional Composition Table. Also scopoletin, blown for blood vessel relaxation and hypotensive effect, was detected at the level of 326.13 $\mu\textrm{g}$/g. These results demonstrated that Artemisia capillaris has both pharmaceutical effects and balanced nutritional contents. Artemisia capillaris has sufficient values to use as a food stuff for functional foods.
Changes of in vitro true digestibility (IVTD) of Napiergrass (Pennisetum purpureum) were determined by a filter bag system, and their relationships to chemical composition, leaf to stem ratio, plant height, geographic location, climatic factors and harvest interval were studied and used to develop prediction models for the crude protein (CP), acid-detergent fiber (ADF), and neutral-detergent fiber (NDF) contents and IVTD. Partitioning the total variance of IVTD of Napiergrass showed that 80% was attributable to the effect of harvest interval. Days of growth, plant height, leaf/stem ratio, CP, ADF and NDF of Napiergrass had highly significant relationships (p<0.01) with IVTD. The highest coefficient of correlation between the ADF, NDF, and IVTD of Napiergrass and growth degree days was obtained when the base temperature was set at $0^{\circ}C$. Growth degree days could predict ADF, NDF, and IVTD of Napiergrass more accurately than plant height, and plant height is not suitable to predict IVTD.
The present study was conducted to evaluate the usefulness of four kinds of legumes(black soybean: BS, yellow soybean: YS, green peas: GP, soybean curd residue: SCR) as a high-fiber supplement in the therapeutic diet for diabetic patients. Seven groups of normal and streptozotocin-induced diabetic rats were fed isocaloric experimental diets containing 8% dietary fiber from one of legumes for 6 weeks. The effects of legumes on the gastrointestinal function and diabetic symptoms in diabetic rats were also examined and compared with the effects of cellulose or pectin diet. Legume supplementations had no significant effects on alleviating typical diabetic symptoms such as polydipsia, polyphasia, polyuria, and urinary glucose excretion when compared with cellulose or pectin supplementations. The supplementations of legumes all resulted in remarkable changes in gastrointestinal functions: shortening of GI transit time and increases in fecal volume, fecal water and crude fat contents. Legume supplementations appeared to supress the damages of the small intestine villi and the enteritis symptoms in diabetic rats. GP led to regular villus patterns closer to normal villus. BS, YS and GP led to the enlargement of cecum in diabetic rats. In conclusion, the present studies have demonstrated that legumes may possess a significant physiological actions in the control of various diabetic conditions.

This study was carried out to investigate the effects of Yerba Mate (YM) supplementation on nutrients' degradation, in vitro dry matter disappearance, gas production and rumen ammonia concentration. Three rumen-fistulated Holstein Friesian cows were used for the in situ incubations and provided rumen liquor for in vitro incubations. The inclusion of YM in a control diet (pasture+pellets) affected some in sacco degradation parameters. YM supplementation decreased the effective degradability and degradation rate of pasture crude protein (CP), and it seems to slow down the degradation of pasture neutral detergent fiber. A significant increase of degradation of pasture acid detergent fiber (ADF) was detected after YM inclusion in the control diet. YM supplementation reduced in vitro gas production of pasture and ammonia concentration of pellets. The addition of YM in ruminant diet could decrease ammonia production and increase protein availability for productive purposes. The moderate presence of tannins in YM could have affected the degradation kinetics of pasture CP and ADF and the ammonia production of pellets.
Broiler litter can be used as a feedstuff for ruminants. Fifty seven litter samples collected from 47 farms in Kyungkee Province of Korea were analyzed to assess the effects of type and amount of bedding (rice hulls vs. sawdust), season (winter vs. summer) and drinkers (bell- vs. trough-type) on composition of broiler litter. Rearing conditions of broilers were also surveyed from the farms to estimate annual production rate of litter. Nutrient composition of broiler litter varied widely and moisture and ash concentrations were higher than observed by other researchers. Ash concentration was higher (p<0.05) for samples taken in winter than in summer and higher (p<0.05) in the rice hulls- than in the sawdust-based litter both in winter and summer. Only minor differences in litter composition were noted between drinkers. Ash was negatively correlated with crude protein and neutral detergent fiber (p<0.01), and acid detergent fiber (p<0.05). The estimated litter production rate was 2.7 kg per bird per flock on a wet basis (60% DM) and the annual production rate was 12.7 kg per bird per yr (60% DM). Therefore, the 42 million broilers per month grown in Korea in 1999 produced a total of 533,400 metric tons of litter.
Four ruminally cannulated buffalo bulls were fed mottgrass diets using a $4{\times}4$ Latin square design. Treatments were arranged factorially and consisted of mottgrass fertilized with 0 for Kg nitrogen (N) per acre and harvested at 40 and 60 days of age. Nitrogen fertilization improved the concentrations of neutral detergent fiber (NDF), and acid detergent fiber (ADF) in early-cut mottgrass (ECM) but, the acid detergent lignin (ADL) contents were higher in the late-cut mottgrass (LCM). The crude protein (CP) contents of the mottgrass decreased with advancing maturity, but N fertilization increased CP at both maturities. The intake of dry matter (DM), organic matter (OM), CP, NDF and ADF were higher by buffalo bulls fed ECM than those fed LCM. The ruminal pH increased in first 6 hours post feeding in animals fed N fertilized mottgrass and may be due to higher concentration of ruminal ammonia. The digestibilities of DM, OM, CP, NDF and ADF were higher by buffalo bulls fed ECM than those fed LCM. However, the application of N fertilizer did not affect the digestibilities of these nutrients.

This study was conducted to determine the effects of freezing and supplementation of molasses (M), lactic acid bacteria (LAB) and LAB+enzyme mixture on chemical and nutritional composition of sunflower silage (SF). Sunflower crops were harvested (at about $29.2%{\pm}1.2%$ dry matter) and half of fresh sunflower was ensiled alone and half was frozen (F) at $-20^{\circ}C$ for 7 days. Silage additives were admixed into frozen SF material. All samples were ensiled in glass jars with six replicates for 90 days. The treatments were as follows: i) positive control (non-frozen and no additives, NF), ii) negative control (frozen, no additives, F), iii) F+5% molasses (FM), iv) F+LAB (1.5 g/tons, Lactobacillus plantarum and Enterococcus faecium, FLAB); v) F+LAB+enzyme (2 g/tons Lactobacillus plantarum and Enterococcus faecium and cellulase and amylase enzymes, FLEN). Freezing silage increased dry matter, crude ash, neutral detergent fiber, and acid detergent lignin. The organic matter, total digestible nutrient, non-fiber carbohydrate, metabolizable energy and in vitro dry matter digestibility were negatively influenced by freezing treatments (p<0.05). In conclusion, freezing sunflower plants prior to ensiling may negatively affect silage quality, while molasses supplementation improved some quality traits of frozen silage. Lactic acid bacteria and LAB+enzyme inoculations did not effectively compensate the negative impacts of freezing on sunflower silage.
