Effects Of Grass/Legume Pasture on Forage Production, Forage Nutritive Values and Live Weight Gain of the Grazing Heifer

  • A grazing trial was carried out to determine the effects of different grass/legume pastures on forage production, legume proportion, nutritive value, and animal performance. The pasture mixtures were mainly orchardgrass (OG) + ladino clover (T1), OG + alfalfa (T2), perennial ryegrass + alfalfa (T3), and grass alone mainly OG (T4). The pastures were rotationally grazed 7 times with heifers which had an initial liveweight of about 243 kg in 1991 and 1992. The average plant height at each grazing was 32.4 cm. The annual dry matter yield ranged from 9.19 MT in T4 to 9.61 MT/ha in T3, but no significant difference among different mixture combinations was found. The proportion of ladino clover in T1 mixtures rapidly increased from 21% to 68% during the grazing season. However, the proportion of alfalfa in T2 and T3 ranged from 12% to 23%. The contents of crude protein and calcium, respectively, in the forages were highest in T1 (23.2%, 0.68%) and lowest in T4 (18.5%, 0.13%), while crude fiber content showed the opposite trends. Liveweight gain was greatest on T1 (1.073 kg) and lowest on T4 (643 kg). It was concluded that pasture mixtures containing legume (ladino clover) can increase forage nutritive value and animal performance.

Determination of Nutritive Value of Citrus Tree Leaves for Sheep Using In vitro Gas Production Technique

  • The nutritive values of leaves of Citrus grandis, Citrus aurantium, Citrus oranges, Citrus limon, and Citrus deliciosa were evaluated by chemical composition and in vitro gas production techniques. There were significant (p<0.001) differences among citrus species in terms of chemical composition. Crude protein (CP) contents ranged from 123.0 to 148.3 g/kg DM. Neutral detergent fibre (NDF) and acid detergent fibre (ADF) contents were varied with species in the range 219.4-355.4 and 215.0-278.8 g/kg DM respectively. Condensed tannin (CT) contents were ranged from 5.9 to 10.2 g/kg DM. The PEG addition significantly (p<0.001) increased the gas production and some estimated parameters of citrus tree leaves. However, species showed variable responses to polyethylene glycol (PEG) treatment. There were also significant (p<0.001) differences among species in terms of gas production and estimated parameters. The OMD and ME contents of citrus leaves without PEG supplementation were ranged from 66.5 to 73.3% and 9.8 to 10.9 MJ/kg DM respectively. The improvement in gas production, organic matter digestibility (OMD) and metabolizable energy (ME) with PEG emphasized the negative effect of tannins on digestibility. The increase (%) in the estimated OMD and ME contents ranged from 5.5 to 9.8% and 5.7 to 10.2% respectively. All citrus tree leaves studied in this experiment have potential nutritive values indicated by high crude protein content, OMD, ME and low fiber values.

  • The implications of incorporating deoiled rice bran (DORB) in diet on the utilization of certain nutrients had been examined through balance studies made with 6- and 10- week-old Japanese quails. The stuffs evaluated in this study had their origin from two different types of processes- a batch extraction (DORB-B) and another continuous process (DORB-C), and each included at 10, 20 or 30% level in an iso-nitrogenous and iso-caloric diet. On chemical analyses, the DORB-B was found to contain crude protein, 19.0; ether extract, 0.79; total ash, 17.05; Ca, 0.11; P, 1.92; glucose, 2.35 and starch 11.22 g/100 g day matter. Corresponding values for DORB-C were 15.02, 1.56, 13.0, 0.40, 2.76, 2.16 and 19.0, respectively. The data on nutrient balances with quails fed diets containing the two-types of DORB suggested no significant (p>0.05) differences in per cent retention of diet dry matter (DM), organic matter (OM), ether extract (EE), gross energy (GE), nitrogen (N), crude fiber (CF), calcium (Ca) or phosphorus (P) content attributable to the extraction process. The age of the birds also appeared to have no significant (p>0.05) effect on nutrient utilization by them. However, the level of inclusion of DORB had a significant (p<0.05) effect on nutrient utilization by quails in that the retention of dietary N, EE, CF, Ca and P was better at lower than at higher levels. It is concluded that the DORB, irrespective of extraction process, can safely be employed upto 20% level in diet of adult Japanese quails without noticeable interference in utilizing the major dietary nutrients.

  • In order to provide recommendations on the most useful forage species to smallholder farmers, eleven grass and eleven legume forages grown in Abomey-Calavi in Republic of Benin were investigated for nutritive value (i.e. chemical composition and energy content) and fermentation characteristics (i.e. gas and volatile fatty acid production, organic matter degradability). The in vitro gas production technique was used, incubating the forages for 120 h under anaerobic condition with buffalo rumen fluid. Compared to legume, tropical grass forages showed lower energy (8.07 vs 10.57 MJ/kg dry matter [DM]) and crude protein level (16.10% vs 19.91% DM) and higher cell wall content (neutral detergent fiber: 63.8% vs 40.45% DM), respectively. In grass forages, the chemical composition showed a quite high crude protein content; the in vitro degradability was slightly lower than the range of tropical pasture. The woody legumes were richer in protein and energy and lower in structural carbohydrates than herbaceous plants, however, their in vitro results are influenced by the presence of complex compounds (i.e. tannins). Significant correlations were found between chemical composition and in vitro fermentation characteristics. The in vitro gas production method appears to be a suitable technique for the evaluation of the nutritive value of forages in developing countries.

경단백질(硬蛋白質)의 이용(利用)에 관(關)한 연구(硏究) (Studies on the Utilization of Keratins)

  • 우모(牛毛) 및 모발을 단백질자원(蛋白質資源)으로 이용하고자 그 처리 가공방법(加工方法)을 실험하여 얻은 결과를 요약하면 다음과 같다. (1) 알칼리 분해(分解)는 NaOH 1% 용액(溶液)에 우모(牛毛) 및 모발을 10% 투입하여 $100^{\circ}C$에서 $25{\sim}30$분(分) 가열 분해(分解)하면 팽윤하여 연화분해(軟化分解)된다. (2) 이것을 humin질(質), fiber 등 불순물과 이물(異物)에서 단백질(蛋白質)을 분리(分離)해 내는 데는 용해도차(差) 및 등전점(等電點) pH를 이용하여 분리단백질(分離蛋白質)을 만들 수 있었다. (3) 분리단백질(分離蛋白質)은 pH $3{\sim}4.5$의 등전점(等電點) pH 를 가졌고 이의 조성(組成)은 대부분이 단백질(蛋白質)로 되어 있고 amino acid조성도 비교적 좋아서 단백질(蛋白質)로 이용할 만했다. (4) 산분해(酸分解)는 20%의 HCl, $H_2SO_4$ 용액에 액량(液量)의 30%의 keratin을 투입하여 분해시킴이 좋았고 불순물은 용액도차(溶液度差) 및 흡착제로 제거할 수 있었다. (5) 이때의 amino acid concentrate는 분리단백질(分離蛋白質)과 같이 몇 종의 필수아미노산을 안가(安價)로 강화(强化)시키면 훌륭한 단백질자원(蛋白質資源)으로 활용(活用)할 수 있을 것으로 사료된다.

  • Choline Chloride를 이용하여 고구마의 단작재배와 맥후작재배간에 어떤 수준의 농도에서 괴근의 비대촉진과 생육 및 수량에 미치는 영향을 구명하기 위하여 시험하였든바 그 결과는 다음과 같다. 1) 처리의 적정농도는 재배기에 따라 다소 차이가 있어 단작재배에서는 23.3ppm 그리고 맥후작 재배의 경우 31.1ppm이 적정농도이고 처리시간은 24시간이며 처리방법은 묘를 채취한 후묘의 기부만을 침지하면 좋다. 2) Choline Chloride는 지상부의 생육을 억제하여 만장을 단축케 하고 건물중을 저하케 하였다. 3) 지하부의 생육관계는 지상부의 동화산물을 지하부에 전류케 함으로써 괴근수를 많게 하는 동시에 수확기별 수량의 증가가 현저하였고 그 경향은 적기수학에서 보다도 조기수확에서 높았다. 4) 따라서 일반유기성분의 함유율 분석결과 당분전분등이 높은 편이고 그밖의 조섬유, 조단백질등은 낮은 편으로서 금후 더욱 연구할 필요가 있다고 느끼는 바이다.

백미와 발아현미의 혼합비율이 압출성형 멥쌀가루의 이화학적 특성에 미치는 효과 (Effect of Mixing Ratio of White and Germinated Brown Rice on the Physicochemical Properties of Extruded Rice Flours)

  • To develop the high quality gluten-free rice products with health functionality and desirable texture with moistness, the physicochemical properties of extruded rice flours prepared from the mixture of germinated brown and white rices were investigated. The domestic organic Samgwangbyeo was used to make white and germinated brown rices. White rice (WR) was dried after soaked for 6 h at $15{\pm}3^{\circ}C$ and mixed with germinated brown rice (GBR) with different mixing ratios (100:0, 75:25, 50:50, 25:75, 0:100). The operating conditions of twin screw extruder were 250 rpm of screw speed, $120^{\circ}C$ of barrel temperature, and 25% moisture content of rice flour. The ash, crude protein and crude lipid contents were significantly different (p<0.05) and those of extruded GBR were the highest values, but those of extruded WR were the lowest. The color difference of extruded WR based on white plate showed the lowest among them. The water binding capacity (334.16%), swelling power (8.83 g/g), solubility (33.13%), and total starch (79.50%) were the lowest in extruded GBR. The viscosities of all extruded rice flours by RVA were maintained during heating. The peak and total setback viscosities of extruded rice flours ranged 127-352 and 58.0-85.5 cP, respectively. The novel food biomaterial from germinated brown rice as well as white rice was developed by twin screw extruder. The extruded rice flours control the moistness to improve the texture and also have functional materials, dietary fiber, GABA, and ferulic acid, etc to increase quality of gluten free rice products.

오디 착즙액 첨가비율에 따른 젤리의 품질 특성 (Quality Characteristics of Jelly Added with Mulberry Juice)

  • The purpose of this study is to investigate the effect of mulberry juice on the quality characteristics of mulberry jelly. Samples of mulberry jelly were divided into four groups by adding different mulberry juice. The four groups were divided into MJ-0 (mulberry jelly without mulberry juice), MJ-30 (mulberry jelly with 30% mulberry juice), MJ-50 (mulberry jelly with 50% mulberry juice) and MJ-70 sample (mulberry jelly with 70% mulberry juice). The moisture content in all MJ samples decreased with an increase in the addition of mulberry juice. The highest crude ash content, brix and pH in MJ-70 sample were 0.66%, 25.00 °Brix and 4.84, respectively. No significant crude fiber changes were observed in all MJ samples. In the case of Hunter's value, 'L' values in all MJ samples decreased with an increase in the addition of mulberry juice. Turbidity, brown degree, total phenolic content, DPPH radical scavenging activity and content increased with an increase in mulberry juice. Levels of Ca, K, Na, and Mg contents in all samples were higher than those of the other minerals. Texture in all MJ samples on the whole decreased with an increase in mulberry juice added. However, no significant texture charges were observed in all samples. The highest scores for the overall acceptance (4.52) were found in the MJ sample with 50% mulberry juice.

대두의 처리방법에 따른 일반성분과 효소활성변화 (Changes of chemical composition and enzyme activity of soybean by processing method)

  • 생대두를 이용한 발효장류의 개발을 위한 기초조사로서 대두의 처리조건을 찾고저 처리방법 [생콩(A), 수침탈각(B), 건열처리(C) 및 습열처리(D)]을 달리한 대두의 일반성분과 효소활성변화를 검토하였다. 그 결과 일반성분 중 수분함량은 A, D구가 B, C구 보다 $2.0{\sim}3.0%$, 조지방 함량은 A, B구가 C, D구 보다 약 2%, 조단백질 함량은 C, D구가 A, B구 보다 $1.16{\sim}1.74%$, 조섬유 함량은 A구가 B, C, D구 보다 $0.11{\sim}1.41%$ 많았으나, 회분은 B, C, D구가 A구 보다 0.49% 많았다. ${\alpha}-amylase$, ${\beta}-amylase$, protease, lipase 활성도는 생콩(A) 및 수침탈각(B) 구가 전열처리(C) 및 습열처리(D)구 보다 약 $2{\sim}5$배 이상 높았다. Trypsin inhibitor 활성도 크기는 $B(56.7{\sim}119.2%)>A(42.9{\sim}95.6%)>D(32.9{\sim}39.6%)>C(20.8{\sim}38.3%)$구 순이었다.

숙성에 따른 토종 복분자 딸기의 특성 (Characteristics of Rubus coreanus Miq. Fruits at Different Ripening Stages)

  • 토종 복분자 딸기 열매를 이용하여 건강식품을 개발하기 위하여 성숙시기에 따라 토종 복분자 딸기 열매의 구성성분, 이화학적 특성과 항산화활성을 조사하였다. 숙성시기에 따라 미숙과, 중숙과 및 완숙과를 전남 곡성군에서 수확하여 동결건조하여 분말을 제조하고 분쇄과정에서 씨를 분리하여 비교하였다. 완숙된 토종복분자 딸기의 열매분말은 밝은 적색을 띠었으나 북미산 복분자 딸기 열매 분말은 칙칙한 검붉은색이었으며 토종 복분자 열매 씨는 북미산에 비해 더 부드럽고 작았다. 숙성시기에 따라 조단백질, 조지질과 총 당 함량은 증가하였고 회분과 총 식이섬유 함량은 감소하였다. 유리당은 fructose, glucose와 rhamnose가 분석되었는데 fructose가 가장 많았다. 아미노산은 aspartic acid와 glutamic acid를 많이 함유하고 있으며 필수아미노산 중에는 leucine함량이 높았다. 무기질 중 위해금속은 검출되지 않았고 성숙에 따라 감소경향을 보이며 K와 Ca함량이 높았다. 유기산도 성숙에 따라 감소하였으며 citric acid가 가장 많은 비율을 차지하였다. 총 페놀함량은 미숙과(12.84 mg/100 g)가 가장 높았고 중숙과와 완숙과(9.38, 9.66 mg/100 g)는 유사하였다. DPPH 자유라디칼 소거능으로 분석한 항산화활성은 86.21-81.22%로 미숙과가 높았고 성숙에 따라 감소하였다.
