Effect of Ulmus Davidiana Powder on the Quality of Rice Dasik (유근피가루 첨가가 쌀다식의 품질에 미치는 영향)

  • To evaluate the effect of Ulmus davidiana powder on rice dasik, Ulmus davidiana dasik was made after supplementation with Ulmus davidiana powder(0, 3, 6, 9 and 12%(all w/w)). The proximate component of Ulmus davidiana powder was 7.49% moisture content, 2.33% crude protein, 0.84% crude fat, 14.09% crude fiber and 8.50% crude ash. The moisture content of samples were significantly(p<0.05) lower than that of dasiks with Ulmus davidiana powder. The pH values were significantly decreased with increased Ulmus davidiana powder(p<0.05). The lightness(L-value) was significantly decreased as Ulmus davidiana powder increased(p<0.05). Redness(a-value) of dasik with Ulmus davidiana powder was significantly higher than that of the control group. However redness was decreased with the amount of increased Ulmus davidiana powder. The yellowness(b-value) decreased significantly as Ulmus davidiana powder increased(p<0.05). In the mechanical evaluation, hardness in the groups with Ulmus davidiana powder increased significantly(p<0.05). Adhesiveness of the control group was lower than that of the groups with Ulmus davidiana powder. Springness in the control group was lower than that in the groups with Ulmus davidiana powder. But no significant difference in cohesiveness, gumminess and chewiness among groups was found. The intensity of color, odor and astringency of dasik with Ulmus davidiana powder significantly increased as the amount of supplementation increased(p<0.05). And the preference of flavor with 12% Ulmus davidiana powder was significantly lower than that of the control group. In conclusion, rice dasik with less than 9% of Ulmus davidiana powder would be most proper in taste and overall acceptability.

Nutritional Compositions and Physiological Activities of Chungbuk New Mulberry Cultivar 'Cheongsu' (충북 신품종 오디 '청수'의 영양성분 및 생리활성 분석)

  • Mulberry (oddi) is one of the most popular functional foods with many physiological components. This study investigated and compared the nutritional compositions and physiological activities of four mulberry fruits from Morus albo L. including Cheongilppong, Iksuppong, Suwonppong and Cheongsuppong (a new cultivar from Chungcheongbuk-do). To analyze the nutrient contents, mulberry fruits were freeze-dried. The results showed that the proximate compositions of the four mulberry cultivars ranged from 9.61~14.11% for moisture, 8.28~11.90% for crude protein, 3.70~4.86% for crude ash, 4.28~5.54% for crude lipid and 7.46~10.78% for crude fiber. The above proximate contents of mulberry cultivars were not significantly different. However, Cheongsuppong had the highest content of reducing sugar, 74.7%. Chungsuppong and Iksuppong showed higher contents of total polyphenol and anthocyanin than other mulberry cultivars, while all mulberry cultivars showed high antioxidant activities. Hypoglycemic effect had a slightly higher level in Suwonppong and Cheongsuppong than in the other samples. Taken together, the new cultivar "Cheongsu" oddi can be suggested as a potential source of functional food.

Rapid Soybean-Milk Preparation with Dehulled Soybean and Its Quality Properties (탈피대두를 이용한 신속 두유 제조 및 품질 특성)

  • The purpose of this study was to investigate the quality of dehulled soybean (DHSB), and the rapid preparation possibility of soybean milk with DHSB (SM-DHSB), and then the quality of SM-DHSB. In DHSB, the moisture content decreased, the crude protein, crude fat, minerals, and carbohydrate contents increased, and the isoflavone (daidzein, genistein and glycitein) content was similar to that of soybean (SB). The water absorption rate of DHSB for soybean milk preparation was higher than that of SB. In the results of SM-DHSB and soybean milk (SM) qualities, the crude protein content, total solid content, and the viscosity of SM-DHSB were higher, the yield and the proximate composition (except crude protein) were similar, and the Biji production rate, and total dietary fiber content of SM-DHSB were lower compared to the SM. In terms of the isoflavone contents of SM-DHSB, daidzein and genistein content were similar, and glycitein content was lower compared with the SM. Consequently, these results suggest the possible use of DHSB for rapid SM-DHSB preparation, because the soaking time was decreased by the high water absorption rate of DHSB in the SM preparation, and the quality of SM-DHSB improved compared to those of the SM.

Stimulating the Growth of Kefir-isolated Lactic Acid Bacteria using Addition of Crude Flaxseed (Linum usitatissimum L.) Extract

  • Linum usitatissimum L. (flaxseed) is emerging as an important functional food ingredient because of its rich contents, namely, ${\alpha}$-linolenic acid (ALA, omega-3 fatty acid), lignans, and fiber, which are potentially beneficial for human health. Furthermore, flax or flaxseed oil has also been incorporated as a functional food ingredient into various foods such as milk, dairy products, and meat products. Flaxseed is known to possess antimicrobial activity in vitro and in vivo, but its growth-stimulating effect on lactic acid bacteria is not clear. Hence, the objective of this study was to determine whether crude flaxseed extract stimulated the growth kefir-isolated lactic acid bacteria in vitro. The result of this study showed that Lactobacillus kefiranofaciens DN1, Lactobacillus brevis KCTC3102, Lactobacillus bulgaricus KCTC3635, and Lactobacillus plantarum KCTC3105 treated with $100{\mu}L$ of crude flaxseed extract showed significantly higher growth than the control treated with $100{\mu}L$ of water (p<0.05). Based on the results of this study, crude flaxseed extract could be used as a growth stimulator for lactic acid bacteria in various food applications, including production of milk and dairy products.

The Fertility and Some Agronomic Characteristics of Morus tiliaefolia Makino Growing Wild in the Korean Peninsula (韓半島에 자생하는 돌뽕나무(Morus tiliaefolia Makino)의 稔性 및 재배학적 특성)

  • The agronomic characteristics and fertility of Morus tiliaefolia growing wild in Korean peninsula are as follows. The possibility of seed formation is 46∼80% and that of germination is 19∼28%. The height period of making flower is April 4-May 3, it means that is later than Morus bombycis, faster than Kaeryangppong. Green tip sprouting stage in spring is April 21∼24. This is later than Morus bombycis and faster than Kaeryangppong. The leaf has very big width and the ratio of leaf length to leaf width is 1.05. The thickness of leaf is thicker than Morous bombycis. There are a lot of matter of soluble nitrogen free, crude ash, and are little crude protein, crude fat and crude fiber in chemical contents of maturation leaf. The attitude of low cutting is spread out type and the branch is long type. The internord length is long. It is weak against cold and die-back.

Physico-Chemical Characteristics of Korean Red Ginseng Powder on Pulverizing Methods (분쇄방법에 따른 고려홍삼분말의 이화학적 특성)

  • In this study, cell cracker method as a non-collision method was evaluated for the possibility of new red ginseng grinding technique. The moisture contents were 3.16% for the powder pulverized by hammer mill (group A) and 6.30% for the powder produced by cell cracker (group B), and the difference between both groups was significant, The contents of other component such as ash, crude lipid, reducing sugar, total sugar, acidic polysaccharide, crude fiber and crude protein between both groups were not significant. There were no significant differences in phenolic compound, fatty acid, amino acid, free sugar, crude saponin and ginsenosid contents between both groups. And also the contents of mineral components were evaluated to determine the incorporation of red ginseng powder during grinding, and also the differences of those between both groups were not significant.

Effect of Pomegranate Powder on the Quality of Rice Dasik (석류가루 첨가가 쌀다식의 품질에 미치는 영향)

  • To evaluate the effect of pomegranate powder on rice dasik, pomegranate dasik was prepared after supplementation with pomegranate powder(0, 5, 10, 15 and 20%(all w/w)). The proximate components of pomegranate powder was 9.98% moisture content, 1.54% crude protein, 3.50% crude lipid, 16.00% crude fiber and 4.84% crude ash. The moisture content of samples showed no significant difference. The pH values in samples with the pomegranate powder were lower than that of the control group and pH values were significantly decreased with increased pomegranate powder(p<0.05). The lightness(L-value) was significantly decreased as pomegranate powder increased(p<0.05). Redness(a-value) was increased as pomegranate powder increased until 10%. However redness was decreased in samples with more than 15% pomegranate powder. The yellowness(b-value) decreased significantly with the amount of increased pomegranate powder(p<0.05). In the mechanical evaluation, hardness in the groups with pomegranate powder decreased significantly (p<0.05). Adhesiveness was decreased with increased pomegranate powder. Springness in groups with more than 15% pomegranate powder was higher than that of the control group. Cohesiveness and chewiness in groups with pomegranate powder were higher than that of the control group. But no significant difference in gumminess among groups was found. The intensity of color, odor and astringency of dasik with pomegranate powder significantly increased as the amount of supplementation increased(p<0.05). And the preference of taste and overall acceptability significantly increased as pomegranate powder increased(p<0.05). In conclusion, rice disik with 5% of pomegranate powder would be most proper in taste and overall acceptability.

Effects of Mixed Application of Chemical Fertilizer and Liquid Swine Manure on Agronomic Characteristics, Yield and Feed Value of Sorghum × Sudangrass Hybrid for Silage in Paddy Field Cultivation

  • This study was conducted to investigate the influence of the mixed application of chemical fertilizer (CF) and liquid swine manure (LSM) on the agronomic characteristics, dry matter yield, amino acids, minerals, and free sugars in cultivating Sorghum ${\times}$ Sudangrass hybrid (SSH) on paddy soil. The field experiment was designed in a randomized block design with three replications and consisted of CF 100% (C), CF 70% + LSM 30% (T1), CF 50% + LSM 50% (T2), CF 30% + LSM 70% (T3), and LSM 100% treatment (T4). The application of LSM was based solely on the nitrogen. Plant length, leaf length, leaf width and number of leaf were significantly higher in T4 (p<0.05), but stem diameter did not show significant differences among treatments. Stem hardness increased significantly (p<0.05) as the LSM application rate decreased, but sugar degree decreased significantly (p<0.05) as the LSM application rate decreased. Fresh yield, dry matter yield and TDN yield were the highest in T4, whereas the lowest in T2 (p<0.05). Crude protein, crude fat and crude ash were the highest in C, T4 and T2, respectively (p<0.05). However, NDF and ADF did not show significant difference among treatments. Crude fiber decreased significantly (p<0.05) as the LSM application rate increased. The total mineral content was decreased significantly (p<0.05) as the LSM application rate increased. Total amino acid content was higher in the order of T1> C> T3> T4> T2 (p<0.05). Free sugar content increased significantly (p<0.05) as the LSM application rate increased. The analysis of all the above results suggests that the application of liquid swine manure is very effective, considering the yield performance and the content of sugar degree and free sugar. In addition, liquid swine manure may be possible to grow Sorghum ${\times}$ Sudangrass hybrid without chemical fertilizer.

  • This experiment was conducted to find out the response of orchardgrass (Dactylis glorneruta L.) varieties to grazing at the condition of monocultures and mixed pastures on the field of Livestock Experiment Station at Suwon from Sep. 1989 to Oct. 1991. The varieties of orchardgrass used in this experiment were Potomac, Hallmark and Syn. No. 2 as a early maturing type, and Lidacta, Rancho and Syn. No. 10 as a late maturing type. The results obtained were as follows: 1. Herbage utilization of mixture with Hallmark variety(T2) was the highest as 78.2% and that with Rancho variety(T5) was the lowest as 70.2%. but there was no difference(P>0.05). Mixtures with early maturing varieties(T1, T2 and T3) were higher as 77.4% than those with late varieties(T4, T5 and T6) as 72.9% in herbage utilization. In monocultures Rancho variety(T5) was the highest as 68.6% and Lidacta variety(T4) was the lowest as 58.8%, and mixtures with early maturing varieties(T1, T2 and T3) as 66.6% were higher than those of late(T1, 72 and 73) as 64.6%. 2. The content of crude protein of 6 mixed pastures ranged from 19.7% to 22.8%, and those of ether extracts, crude fiber, crude ash and nitrogen free extract were 6.6 to 7.5%, 24.9 to 26.2'76, 1 1.5 to 1 1.9% and 33.6-35.4 8, respectively, But there were not different significantly(P>0.05). In monocultures, significant difference by variety was observed in crude protein content(P<0.05). 3. In botanical composition, there was just a little different among 6 mixtures, having 90% or more in grass percentage. The percentages of each orchardgrass varieties were decreased, but those of perennial ryegrasses were increased as grazing sesson was progressed in all treatment.

Effects of Planting Densities on the Major Characters, Forage Yield and Chemical Composition of Jeju Italian Millet (제주 조의 재식밀도에 따른 주요형질, 사초수량 및 조성분 변화)

  • Jeju Italian millet was grown at five planting densities(5$\times$5, 15$\times$15, 20$\times$20, 25cm) form May 13 to Aug. 14, 2000 at jeju island to determine influence of planting density on agronomic characters, forage yield and quality. Days to heading increased from 87 to 89 days as planting density was decreased. In 5$\times$5cm planting density plot, plant height was 185.4cm and it was gradually decreased as planting density was increased. So in 30$\times$30cm planting density plot, plant height was 173cm. As planting density increased, stem diameter, the number of nodes per plant, the umber of leaves, leaf width and SPAD reading values was increased, the longer leaf length as the broader planting density. Fresh forage yield increased from 29.99 to 55.01MT/ha, dry matter(DM) yield from 8.04 to 15.59MT/ha, crude protein(CP) yield from 0.78 to 2.26MT/ha and total digestible nutrients(TDN) yield from 3.65 to 7.93MT/ha as planting density was decreased. Crude protein content increased from 9.8 to 14.5% ether extract comtent from 1.4 to 1.9%, nitrogen free extract content from 38.4% to 38.9% and TDN content from 45.4 to 50.9%, but crude fiber content decreased from 34.5 to 30.1% and crude ash content from 9.1 to 8.0% as planting density was decreased.
