Comparison of the Properties of Wheat Flours Supplemented with Various Dietary Fibers

  • The effects of resistant starch (RS) and non-starch polysaccharide (NSP) addition on the properties of hard wheat flour were investigated. Total dietary fiber (TDF) levels of various NSP ranged from 78.3-100.0%, but TDF and RS levels of autoclaved RS3 and cross-linked RS4 were 16.1 and 35.0% and 13.2 and 90.9%, respectively. DF-supplemented flour increased swelling power, but RS4-supplemented flour exhibited the lowest it. Solubility increased with the addition of pectin and RS3, but decreased with the addition of cellulose and RS4. RS-supplemented flour had increased lightness (L), but decreased values of redness (a) and yellowness (b). RS3 and pectin increased the dough development time, but RS4, cellulose, and chitosan decreased it. The water absorptions of pectin- and RS4-supplemented flours increased, however the dough stability decreased. The initial pasting temperatures of RS- and NSP-supplemented flours increased regardless of amount added, but the maximum peak viscosity decreased for all except the pectin-supplemented flour.

  • Preparing food is a universal activity of families and households around the world. The kitchen is the site of these activities and is often considered the center of the home. This symposium examines housing and kitchens in Eastern and Western countries through an exploration of cultural history and lifestyles throughout the centuries. Korea and the United States were selected as the original countries for comparison and study. China and Japan were included to provide a more comprehensive Oriental perspective, while England and Italy were included to expand on the European heritage prevalent in the history of the United States.

  • In this paper, a flexible track modeling of turnout was developed and dynamic characteristics of turnout rails were analyzed when a vehicle passed through the turnout. The flexible track modeling is effective to the stiffness and durability design of turnout, because it can capture the deformation and dynamic stress due to the collision of between wheels and rails when the vehicle move to the tongue rail. Also, a more accurate running safety can be obtained by considering the interaction between wheel and rail deformation. Solid finite elements were used for variable cross-sections of rails and the variation of rubber stiffness was modeled. The proposed flexible track modeling in this paper was verified to be valid by comparison with the experiment of the turnout system.

Numerical investigation on beams prestressed with FRP

  • This paper aims to make a contribution to understanding which methods apply for structural analysis of beams prestressed with FRP cables. A parametric non-linear numerical analysis of simply supported beams has been performed. In this analysis the shape of the cross-section, the strength of concrete, the material adopted for the cables (steel, GFRP, CFRP), the prestressing system (bonded or unbonded prestressing) and the degree of prestressing were changed to collect a broad range of data which, the author contends, should cover the most frequent types of common practice. The output data themselves and their comparison allow us to suggest some rules that could be adopted when dealing with beams prestressed with these innovatory materials that have an elastic-brittle behaviour.

  • In this article, the force method and Charged System Search (CSS) algorithm are used for the analysis and optimal design of truss structures. The CSS algorithm is employed as the optimization tool and the force method is utilized for analysis. In this paper in addition to member's cross sections, redundant forces, geometry and topology variables are considered as the optimization variables. Minimum complementary energy principle is used directly to analyze the structure. In the presented method, redundant forces are calculated by the CSS in order to minimize the energy function. Combination of the CSS and force method leads to an efficient algorithm in comparison to some of the optimization algorithms.

  • It is a long known fact that there exists a tight correlation between far-infrared and radio emission both for galaxies hosting active galactic nuclei and for star forming galaxies. We probe the radio - infrared correlation for a sample of extragalactic sources constructed by the cross-correlation of the AKARI/IRC All-Sky Survey Point Source Catalogue, the AKARI/FIS All-Sky Survey Bright Source Catalogue, and the NRAO VLA Sky Survey. Additionally, all objects of our sample were identified as galaxies in NED and SIMBAD databases, and a part of them is known to host active galactic nuclei (AGNs). After remeasuring all the fluxes, in order to avoid small aperture effects, we compare the ratio of radio to infrared emission from different types of extragalactic sources, and discuss the FIR/radio correlation as seen by AKARI and make a comparison to the previous results obtained thanks to IRAS.

  • Recently, the massive offshore bridges in a ship passage have been constructed on the sea. Therefore, the ship impact protection for the bridge-piers are installed to consider the possibility of vessel collision danger. Due to the ship impact protection, the flow-field characteristics are changed in comparison with the condition without the ship impact protection. Especially, the fluid velocity between the pier and the ship impact protection is possible to increase due to the contraction of the cross sectional area of flow. In this study, the tidal energy magnitude around the ship impact protection of Incheon bridge is assessed by simulating the flow-field by using FLOW-3D software.

Determinants of Quality of Financial Information: Empirical Evidence from Cement Sector of Bangladesh

  • Purpose - The purpose of this paper is to find out the determinants of the quality of financial information in the financial environment of the cement companies of Bangladesh. Research design, data and methodology - This study considers a total of fifty-eight firm years as the sample from the seven listed cement companies of Bangladesh during the period of 2007 to 2015. This study applies the multivariate regression analysis including the pooled OLS, panel and controlling time. Results - This study finds that profitability and external financing are the two major explanatory variables in determining the quality of financial information. This study also finds that firm size and accrual quality don't have any significant influence on quality of financial information. Conclusion - This study observed that profitability of this sector which is much volatile and prone to be manipulated. Thus, this paper suggests that higher profitability needs more scrutiny while assessing quality of financial information. Finally, this study provides some indications for future research such as considering the listed firms of other sectors of Bangladesh or cross country comparison in different country setting.

  • The purpose of this study is to obtain the information about the development process of GDI spray. To acquire the characteristics of GDI spray, the computational study of hollow cone spray for high-pressure swirl injectors was performed. Several hybrid models using the modified KIVA code have been introduced and compared. WB model and LISA model were used for the primary breakup, and DDB and APTAB models were used for secondary breakup. To compare with the calculated results, the experimental results such as cross-sectional images and SMD distribution were acquired by laser Mie scattering technique and Phase Doppler Analyzer respectively. The results show that LISA+APTAB hybrid model has the best prediction for spray formation process.

Comparison of Full-Field Stresses around an Inclined Crack Tip by Using Fringe Data of Finite Element Method with Photoelastic Experiment

  • Abrupt change of cross-section in mechanical parts is one of significant causes of structural fracture. In this paper, a hybrid method is employed to analyze the stress distribution of a discontinuous plate. The plate with an inclined crack is utilized in our experiment and the stress field in the vicinity of crack tip is calculated through isochromatic fringe order of given points. This calculation can be made handy through least-squares method integrated with complex power series representation(Laurent series) implemented on a computer program for high-speed processing. In order to accurately compare calculated results with experimental ones, both of actual and regenerated photoelastic fringe patterns are doubled and sharpened by digital image processing. The experiment results show that regenerated patterns obtained by hybrid method are quite comparable to actual patterns.
