초등학교 단체급식 종사원의 직무실태에 관한 분석 -경북 및 대구지역을 중심으로- (An analysis on the condition of kitchen employees in elementary school.)

  • The purpose of This study is focused on the directions to improve the performance evaluation of cooks working in the primary school by searching for present job satisfaction and job description. Most of the employees' are women-cook and there were no man-cook in school feeding. This fact indicates that the foods which serving by school are not properly developed for the direction of taste and menu variations in the future. Most of married housewives were dissatisfied with long working hours, short break-time, dirty toilet, and other working conditions. And they were also complained of limited job performance in spite of their capacity and knowhow. In order to solve above-mentioned problems, School feeding is, needless to say, very important meal-program for the children and nations, therefore, The authorities concerned give much attention to solve their needs gradually. A real custom that help employees will conducted for the satisfaction of students, If so, really good quality of food service to younger students will be realized.

경기 일부 지역 학교 급식 조리 종사자의 HACCP 교육이 위생 지식에 미치는 영향 (A Study on the Educational Effects of HACCP Training for Employee Cooks of School Foodservice Operations in the Kyeonggi Area)

  • The purpose of this study was to investigate the effects of HACCP education on improvements of knowledge in school foodservice employees in Gyeonggi-do, particularly in Anyang, Ansan, Siheung and Hwasung City. A first and second questionnaire was answered both before and after HACCP education that was directed by a dietitian. The change in HACCP knowledge after education, as compared to before, was statistically significant(p<0.01). Specifically, the average score after education increased more than 30 points in CCP2 and CCP6, and more than 60 points in CCP3. Most of the school foodservice operations performed sanitary education once a month; however, they did not perform regular HACCP education. The fact that the level of sanitary knowledge was different after HACCP education than before suggests the possibility of improving the sanitary performance levels of foodservice employees through continual education.

조리유형별 메뉴의 노동강도 측정에 관한 연구 (A Study on Measuring the Labor Intensity of Menus according to Various Cooking Types)

  • The purpose of this study was to measure the labor intensity of menus according to various cooking types. Through a literature review and in-depth interview, the attributes that affected the labor intensity were identified as the level of skill, amount of effort, degree of tiredness, time consumed, and machine usage. A survey was conducted in April, 2001 among cooks who Dew the entire process of cooking. There was a strong positive correlation between labor intensity and labor intensity attributes. Through regression analysis, a regression equation was obtained between labor intensity and labor intensity attributes. The labor intensity index calculated from this study showed the extent of labor intensity of menus. The result of this study could be used as basic data for foodservice manager to establish a menu planning and work schedule based on a scientific method.

효과적인 조리실습을 위한 학습모델에 관한 연구 - 조리 관련대학 중심으로- (A Study on the Learning Model for Efficient Culinary Practice)

  • This study aims to develop the learning model for efficient culinary practice. Today, the environment of culinary education haw an oversupply of cooks who graduated from a lot of culinary schools. From now on , we should consider the quality than the quantity of culinary education. For improving the quality of culinary education, we have to study the learning model for efficient culinary practice. The learning model for culinary practice is based on the educational psychology and the study theories. For achieving the goal of this research, the educational psychology and learning theories need to be adopted to the teaching skill of culinary practice. It should play a very important role in improving the quality of culinary teaching skill in school. But this study has some limitations in this respect, because of being lack of professional studies and data for the educational psychology and leaning theories in the culinary practice part. The next study is needed the significantly adapting result of educational theories in culinary school.

  • The research is on the satisfaction of the students in culinary academy education which provides basic information about the operation of an efficient private culinary school, training qualified cooks. In this research, it is found that four factors which influenced on satisfaction about private culinary schools: service, environment, operation, advertisement. Students choose private culinary schools considering educational contents, sincerity and kindness of staffs, location and tuition fees. This kind of studies should go on for the private culinary academy to have efficient education environment and for educators and staff members in the private culinary academy to feel pride as an educator who takes charge in social education.

쌀밥, 오곡밥의 대량생산 표준레시피 개발 (Standardization of the Recipe for the Large-scale Production of Salbob and Ogokbob)

  • The principal objective of this study was to develop a standardized recipe for the large-scale production of Salbob and Ogokbob. The recipe was standardized as follows: we collected and recorded the amount of ingredients and production procedures currently being used by cooks in the contracted foodservice management company and hotel-based Korean restaurants. According to the food preferences of Koreans, we selected 2 kinds of rice; Salbob and Ogokbob. We developed a revised recipe and an evaluation form. We conducted a sensory evaluation with 30 panels, using a JAR (just-about-right) scale. We developed a standardized recipe for both kinds of rice. Yield, portion size, temperature, preparation time, equipment, cost, ingredients, weight of ingredients, method, and critical point were all components accounted for in the developed recipe. The factor method and the percentage method were proposed techniques for adjusting the recipe, and a direct measurement table for Salbob and Ogokbob was also devised.

충북지역 학교급식 조리종사원의 안전사고 실태 및 인식 (Actual Conditions and Perception of Safety Accidents by School Foodservice Employees in Chungbuk)

  • 본 연구는 충북지역 학교급식에서의 안전사고 실태 및 인식, 작업환경 및 운영환경의 실태 및 인식, 안전교육 실태 및 인식과 요구도를 조사, 분석하여 향후 학교급식의 질적 개선을 위한 기초자료 및 개선방안을 제공하고자 수행되었다. 충청북도 학교급식에 근무하고 있는 초 중 고등학교 조리 종사원을 대상으로 2012년 7월 30일부터 8월 8일까지 설문조사를 실시하여 배포된 설문지 총 234부 중 202부(86.3%) 회수하여 응답이 누락된 8부를 제외한 194부(82.9%)를 분석에 이용하였다. 충북지역 조사대상 조리종사원의 고용형태는 기능직이 72.7%, 최종학력은 고등학교 졸업이 51.8%로 가장 높게 나타났고, 연령은 평균 49.68세, 학교급식에서의 총 경력 평균은 13.73년이며 현재 근무학교의 경력 평균은 4.51년으로 나타났다. 근무학교의 일반사항으로 급식운영형태는 단독관리가 77.8%로 가장 높게 나타났고 1일 평균 제공 식수는 평균 497.05명, 급식 인력 수는 영양(교)사를 제외한 평균 5.07명으로 나타났다. 학교급식 조리종사원의 안전사고 실태 조사 결과, 현재 학교에서 안전사고 경험이 있다고 응답한 조리종사원은 44.3%이며 안전사고 경험이 있다고 응답한 사람 중 사고횟수가 1회인 경우가 60.5%로 가장 높게 나타났고, 6~8월, 8~11시에 가장 많이 발생한 것으로 응답되었다. 안전사고가 발생한 작업공정은 조리 52.3%, 청소 37.2%이며, 안전사고가 발생한 설비 및 기기는 국솥, 튀김솥이 52.4%로 가장 많았다. 안전사고 유형은 화상 데임 64.7%, 손목과 팔의 통증 41.2%, 미끄러짐 떨어짐 35.3% 순이며, 안전사고 후의 사고 처리 방법으로는 종사자 개인부담 57.6%, 산업재해 처리 35.3% 순이었다. 안전사고 후 산업재해 처리 치료기간은 4~14일 45.3%, 4일 미만 28.3%, 15~28일 17.0% 순으로 나타났다. 학교급식에서 안전사고가 발생하는 주요 원인으로 조리종사원의 과도한 업무량 41.2%, 안전한 급식을 위해 가장 중요한 요소는 충분한 근무인원이 71.1%로 가장 높게 응답되었다. 현재 근무 학교에서 안전사고와 관련된 가장 큰 문제점으로는 조리인원의 부족이 45.9%로 가장 많았으며, 물리적 작업환경 중 최우선으로 개선해야 할 점은 환기시설 28.4%, 기계 및 기구의 현대화 22.7%, 조리기기의 효율적 배치 13.9% 순으로 나타났고, 안전사고 예방을 위한 개선사항으로 안전교육의 체계화, 정기화 46.4%, 안전사고의 빈도와 원인 분석 21.6% 순으로 나타났다. 근무하는 학교의 시설 설비 등의 물리적인 작업환경이 얼마나 안전한가에 대한 안전성 인식은 평균이 2.88로 낮은 인식 점수로 나타났으며, 근무하는 학교의 급식생산운영시스템의 효율성에 대한 인식 정도는 3.11점으로 보통 이상으로 나타났다. 학교급식 운영에 대한 환경 평가 조사 결과, 예산확보 항목을 제외한 안전사고 예방 조치 및 처리 항목, 정보제공 및 활용 항목, 작업의 효율성 항목의 평균이 3점 이상으로 나타났으나 예산확보 항목의 평균은 1.77점으로 매우 낮은 평가 결과를 보였다. 학교급식 조리종사원을 대상으로 한 안전교육 실태 조사 결과 안전교육을 받은 경험이 있다고 응답한 사람이 94.8%, 교육 횟수는 연 3.45회, 교육 시간은 평균 5.10시간이며, 교육 주관 기관은 현재 근무학교가 64.1%, 교육 방법으로는 강의식이 74.5%로 가장 높게 나타났다. 안전교육에 대한 인식 조사 결과 안전보건 교육 이해 정도는 3.72점, 산업안전보건 교육 내용의 적합성은 3.88점, 산업안전보건 교육의 실제 적용 정도는 3.99점, 산업안전보건 교육의 필요 정도는 4.42점으로 나타났다. 안전교육의 효과를 높이는 가장 중요한 요인으로 작업내용에 맞는 내용이 85.9%로 가장 많았다. 안전교육 요구도 조사 결과 모든 항목이 4점 이상으로 높은 교육 요구도를 나타내고 있었다. 학교급식조리종사원의 배치기준의 합리화, 작업환경개선을 위한 행 재정적 지원 증가와 안전사고 예방 교육 강화 및 안전관리시스템 구축 등이 요구된다.

의료기관 영양서비스 현황 I : 영양부서 조직.인력체계 및 작업생산성 (Hospital Nutrition Services I : Organization, Personnel and Productivity of Nutrition Department)

  • To evaluate the infra structure supporting hospital nutrition services, we conducted a survey on the unit of organization, unit of dietitians work system, number of personnel engaged on nutrition services, productivity of food service, management of dietitians works, computerization of nutrition services etc. Total ninety-six hospitals were participated in the survey, and they were varied in terms of hospital classification, location, number of beds and type of food service management. All of the large hospitals with more than 400 beds conducted nutrition services under the department of nutrition, but some of the middle and small hospitals with less than 400 beds conducted nutrition services under the other department such as administration. In most of the tertiary hospitals, the work of dietitians were separated in which food services and medical nutrition services were conducted independently by different dietitians, whereas, in most of general hospitals and all the hospital, food services and medical nutrition services were conducted by the same dietitians in all time. The numbers of dietitians and cooks per 100 beds were fewer in the large hospitals with more than 400 beds than the hospitals with less than 400 beds, and the number of cooking and meal serving assistants were the just opposit. The average productivity of food service was 44.5 meals per hour for each dietitian, 84.8 meals per hour for a cook and 7.0 meals per hour for a cooking and meal serving assistant. The productivities for dietitians and cooks tend to be higher in large hospitals than middle and small hospitals, whereas the productivities for cooking and meal serving assistants were just opposite. The large hospitals seemed to solve the problem on the lack of working personnels by hiring part-time workers and by utilization of computer system for their works. The pattern of daily work management in food service area was not much different between dietitians duties, but the pattern of daily work management in medical nutrition service area was different in a way which the analysis of patients nutrient intakes was almost not conducted by dietitians handling both food services and medical nutrition services. Therefore, this study demonstrates that there are significant differences in the infra structures conducting nutrition services among hospitals, suggesting that the strategies to improve this improve this structure in relation to the improvement of service qualities need to be investigated in the future. 전국 초등학교 급식 관리 실태조사 (Evaluation of National School Foodservice Management : Labor Control Menu Management , and Maintenance of Equipments and Facilities)

  • The purpose of this survey was to investigate the operation and the environment of foodservice in elementary schools nationwide. A questionnaire about foodservice management to practice and foodservice operation was mailed to dietitians of each school . Of the 1, 416 schools that participated in this survey, 388 schools were selected for analysis. The main results of this study are as follows. More schools in small cities . Education levels of dietitians were significantly different from area to area. Mean total length of employment for dietitians at school foodservice was 4.7 years and varied significantly by area and the type of foodservice system. Foodservice has been operated for 2-5 years in most of schools. Schools in large cities served more people than those in small cities and rural areas. Also , schools adapting conventional foodservice system served more people than those adapting commissary or joint management system. Foodservice expense also veried significantly by area and foodservice systems. Mean foodservice expense per meal were significantly higher in schools adapting commissary system than those adapting other systems. Most schools employed dietitians, cooks, and assistant cooks, but not engineers not drivers. Mothers of students were working voluntarily. The degree of participation by mothers in cooking , serving , and cleaning was higher in schools of small cities and rural areas than those in large cities, in schools adapting commissary or joint management system than those adapting conventional system. Education and training ranked as personnel management had one of the hardest tasks. Education and training of employees were also difficult for dietitians, especially in commissary or joint management systems. Percentage of schools having separate lunchroom was higher in small cities rural areas than in large cities, in joint management or commissary system than conventional system. Most difficult matters in serving was the portion control. Over 40% of schools did not use standard recipes. Menu cycles were shorter in schools in small cities and rural areas which adapted the joint management system than area other schools. Except refrigerators, thermos , display racks, sterilizers, sinks, worktables, and table, all other equipment were insufficient in most of schools. More than half of the schools didn't have rice cookers, flatware racks, and distributing carts which are stated plainly in detailed enforcement regulations for school foodservice. Cooking equipments were described as the most needed by dietians. According to the results of this survey, many and urgent problems need to be addressed improve the quality of school foodservice . Lunchroom setups, effective personnel management and expenses, recipes standardization, serving size control and regular checking and repairing of equipments are all problems to be addressed.

브랜드 개성과 종사원 개성이 종사원 브랜드 동일시에 미치는 영향 : 서울 소재 특 1급 호텔 식음료.조리 부서를 중심으로 (The Impacts of Employee-Perceived Brand Personality on Employee Brand Identification : Focused on Food & Beverage Department of Deluxe Hotels in Seoul)

  • The purpose of this study was to examine the impacts of brand personality and employee personality on employee brand identification. The questionnaire developed for this study was distributed to 460 employees in F&B (food and beverage) departments and kitchen of 11 deluxe hotels in Seoul. A total of 398 questionnaires were used for analysis (86.5%) and the statistical analyses were completed using SPSS Win(12.0) for descriptive analysis, reliability analysis, t-test, and regression analysis. The results showed that employee brand identification was stronger at higher position, and also stronger among F&B department employees than among kitchen cooks. In addition, international hotels showed a higher level of employee brand identification than local hotels. Employee brand identification was also affected by hotel brand personality and employee personality. The dimension of 'sincerity' had the strongest effect on brand identification, followed by the dimensions of 'excitement' and 'sophistication'. Especially, when the hotel brand personality was lower than the employee personality at the dimension of 'sincerity', the level of employee brand identification was much lower. Overall, employee brand identification, which is a key factor for successful brand delivery to customer, could be enhanced through strong strategies to improve the brand personality dimensions and enhance employee development.
