경북지역 초등학교 6학년 학생들의 가정과 학교에서의 조리활동 실태 (The Study on Cooking Activities at Home and at School among Elementary School 6th Graders in $Gyeongbuk$ Province)

  • 본 연구는 경북지역 초등학교 6학년 학생들을 대상으로 가정과 학교에서의 조리활동 실태를 조사하기 위해 수행되었다. 대상 아동의 86.9%가 조리에 대해 보통 이상의 관심이 있었고, 성별로 보면 남학생은 45.6%, 여학생은 77.8%가 조리에 '매우 관심 있다'고 응답하여 유의한 차이가 있었다(p<0.01). 아동들의 70% 이상이 10세 이전에 조리를 해 본 경험이 있었으며, 전체 아동의 52.6%가 '혼자서 조리할 수 있다'고 응답하였고, 남녀 학생 간(남학생 35.3%, 여학생 66.7%)에 유의한 차이가 있었다(p<0.01). 아동들은 다지기(64.8%), 통썰기(62.3%), 깍둑썰기(62.3%), 채썰기(53.3%), 어슷썰기(45.1%), 반달썰기(34.4%), 나박썰기(22.1%) 등을 해 본 경험이 있으며, 모든 썰기 방법에 대해 여학생의 경험이 더 많았다(p<0.05). 아동의 93.4%가 가정에서 조리해 본 적 '있다'고 응답하였고, 대부분의 부모들(95.1%)이 가정에서의 조리 활동에 긍정적인 반응을 보인 것으로 조사되었다. 가정에서 조리하는 이유는 '조리하는 것이 좋아서' 55.3%, '배가 고파서' 17.5%, '내가 먹고 싶은 음식을 먹기 위해서' 14.0% 등의 응답이 있었다. 학교 조리활동 수업에 대해서는 10.7% 정도만이 '어렵다' 또는 '매우 어렵다'고 응답하여 대부분의 학생들이 어렵지 않게 생각하고 있었다. 학교에서 배운 것을 집에서 조리해 본 경험에 대해서는 전체 대상자 중의 62.3%가 '있다'고 응답하였고, 성별에 따른 응답에 유의한 차이를 보여 가정에서의 실천율은 남학생 보다 여학생이 더 높았다(p<0.05). 학교에서 조리해 보고 싶은 음식으로는 피자, 스파게티, 떡볶이, 햄버거 등이었으며, 음식 '양념하기'(34.4%)와 '조리 후 뒷정리하기'(21.5%)가 조리 시 가장 큰 어려움으로 조사되었다. 학교 조리활동 수업에 바라는 것은 조리활동 수업을 좀 더 '자주 했으면 좋겠다'(35.8%), '다양한 요리를 배우고 싶다'(29.7%), '조리기구 및 시설이 잘 갖추어졌으면 좋겠다'(14.8%) 등의 순서로 조사되었다. 초등학생들을 대상으로 하는 조리활동은 아동의 조리능력 및 조리기술, 요구도 등에 관한 본 연구결과들을 고려하여 계획될 필요가 있다.

  • This study aimed to investigate fruit and vegetable consumption status of school children and adolescents and factors influencing their consumption from focus-group interviews with school nutrition teacher(s) and nutritionists. Most of all the evaluated fruit and vegetable intake levels of school children and adolescents was very low. They mentioned the intake of fruit and vegetable was similar between children and adolescents and boys tended to have less vegetable intake than girls. There was substantial difference in the serving frequencies of fruit between schools due to budgets. Fruit was consumed more than vegetables and fruit without seeds or peeled fruit was more preferred by children and adolescents. Factors affecting fruit and vegetable intake of children and adolescents were analysed by personal, family and school. Personal factors were gender, child development level, the lack of knowledge or perception on vegetables, westernized diet pattern and the preference of spicy foods. Family factors were the perception of parents, family meal environment, and income disparity. The factors related to schools were the principal, class teacher, friends, nutrition teacher, cooking and serving methods, cooking personals, budget and so on.

초.중.고등학교 교과서에 나타난 식생활 교육 내용 분석 (Analysis of Food and Dietary Educational Content in Primary, Middle and High School Textbooks)

  • This study investigated the food and dietary educational content in primary, middle and high school textbooks in order to provide fundamental data for the development of educational programs on Korean traditional food culture. The research objects consisted of 51 kinds of textbooks (15 kinds of primary school textbooks, 29 kinds of middle school home economics textbooks and 7 kinds of high school home economics textbooks), and the contents related to food and dietary education were counted and analyzed. The content analysis was performed using two categories: application method and subject matter. Application method included texts, cases, visual aids (pictures, photos, illustrations, chart, etc.) and activities, whereas subject matter consisted of seven types (well balanced nutrition and health, understanding of food and nutrition, cooking principles, cooking lessons, traditional foods and culture, others). The results of the application method in primary school textbooks show that visual aids were the most common in all six grades. For the subject matter, 'understanding of food and nutrition' was most abundant in primary school textbooks while 'well balanced nutrition and health' accounted for a large part of the contents in middle school textbooks. However, the contents regarding traditional foods and culture were insufficient in primary and middle school textbooks. These results suggest that educational contents on traditional foods and culture should be added to primary and middle school textbooks and covered in various subjects. Furthermore, high school 'home economics' contents need to emphasize comprehensive food and dietary education and adjust to 'science & technology for life'.

이태리 레스토랑 메뉴의 표준량 목표에 관한 연구 - 서울 특급호텔을 중심으로 - (A Research on Controlling tile Portion Standardization of the Italian Restaurant Menu - Base on the Seoul Five-Star Hotel -)

  • Data collections were made from the Seoul five-star hotels'Italian restaurant to set goals on the quantity standardization by bringing up the issues from the analysis of their menus and portions. Brief of this research is as follows. The first, variations of Italian cuisine are significantly different from the region to region. The chef or cook must have general knowledge and understanding, and consider the ingredients and its cooking method. The second, for the understanding of fire Italian menu, languages used for the menu have to be in worldwide understandable languages and for the better understanding of Korean chefs, it should be also described in Korean. The third, for the cost controller and to reduce the cost, all food should be prepared in proper cooking method and set goal for the right portion size. The fourth, menu should be selected based on the customer preferences and the menu cycle change is adequate for four times a year. Italian food and dishes are prepared by above points with the standardized portion size and cooking method, more efficient and uniformed dishes will be provided to customers and customers will be fulfilled with the satisfaction.

  • The purpose of this study is analysis of fusion cuisine recipe a gathering datum and informations for development of the fusion cuisine. The fusion cuisine is a new creative cuisine that come from a mixing between different cuisine recipe especially eastern cuisine wi th western cuisine. The fusion food is becoming a world popular food since 1980's. In Korea, the fusion food is favorite food is needed for development of the fusion cuisine, and we are able to get the datum and informations from mass media such as cuisine journals, newspapers and internet web site. Results of the analysis are as follows : 1. The fusion cuisine that core stuff is the grain have features that make a use of a spice and fat such as butter and olive oil. Boiling is used most frequently as a way of cooking among the grain centred fusion cuisine. Spagetti is used very after as a stuff for the fusion food. 2. The fusion cuisine that core stuff is meat make use of unusual meat such as the pigeons and spicery, and its popular cooking way is a baking. 3, The fusion cuisine that core stuff is a fish make use of herbs and alchole to get rid of a fishy smell, and various sauces are used for promoting taste and styling. 4. The fusion cuisine that core stuff is fruit and vegetables make use of boiling as cooking ways most frequently, but in the case that cook try to keep nutritive qualities, baking is used most frequently. 5. In beverage centred fusion cuisine, mixing of alchole with juice is most popular, its taste and color is unusually gorgeous.

시판용 육수 제품의 구매 수용 태도 - 특급 호텔 조리사를 중심으로 - (Purchase Accommodation Attitude of Commercial Stock Merchandise - Focused on Cuisiniers of Deluxe Hotels -)

  • The purpose of this study is to validate the evaluation of stock, which has relation with self-esteem and career for the development of commercial stock. This study conducted a survey of purchasing attitudes & receptiveness in order to hold an accurate course for developing stock. According to the analysis, the results are as follows. It examined the cuisiniers of deluxe hotels who mainly use stock of Seoul and the capital region. A total of 350 samples were distributed and 289 samples were selected for the research. Statistical analysis of collected data executed frequency, percentage, average, reliability analysis, factor analysis using SPSSWIN 12.0 PC package programs. Making stock, cooking skills, cooking methods, quality of food ingredients and cooking recipes are important. Also, sensory characteristics such as color, odor, and taste should be considered. Career and self-esteem act on the purchase accommodation attitude of commercial stock. Commercial stock products more than 1,000 mL or 2,000 mL of liquid styles need packing of vacuum pack(vinyl). Based on the result of this study, we will make efficient use of research data for the development of commercial stock products and we will be able to improve conservation of taste with good quality by making by hand through standardization and mass production of traditional culinary skills.

  • The purpose of this study was to gather useful information for establishing an efficient marketing direction by investigating the flavor, serving patterns, price and cooking method of Dong-rae Pajeon which is a native local food of Pusan area. A questionnaire was answered by 226 citizens who experienced Dong-Lae Phajeon. The study data were analyzed by frequency analysis, t-test, ANOVA, and multiple regression analysis. The findings are summarized as follows: The flavor, presentation, types of oil, and price of Dong-rae Pajeon had influence on the satisfaction of respondents. To globalize Dong-rae Pajeon, 'developing its cooking method', 'decreasing its price', and 'developing its serving patterns' should be considered.

  • The food service industry represents one of Korea's fastest-growing and most challenging areas of business but it is at the beginning of the industry. Italian cooking of the food service industry has a lot of merits but it is difficult to manage because of the shortage of domestic customers and the poor management of the industry. This research suggests the marketing strategies in order to systematize Italian food service satisfy the customers requirements and promote the sale of Italian food. The circulation structures should be simplified and systematized in order to enhance the quality of the food and lower the price. Italian food should be recognized as health food cooked with unsaturated fatty acid, olive oil. It is necessary that the Italian food for the Korea especially for the women and children be developed. The information about Italian food the advertisement of it should be structured because 13 percent of Italian food sale has dropped in the current environment.

돌산지역 갓김치의 관광 상품에 대한 관광객의 선호도에 미치는 영향 요인 평가 (Assessing Preference for Leaf Mustard Kimchi using Conjoint Model)

  • The aim of this study was to determine the relative importance of a set of attributes which influence purchase decision of leaf mustard kimchi such as color, package, taste, availability and price, and to identify tourist product factor combinations which confer the highest utility to tourists of each age group. Conjoint model was used for this study. The findings from this study were as follows. First, it was found that all age groups regarded taste and price as the very important factor. Second, it was found that the products with different attribute levels were preferred by age groups. Third, it was found that the most preferred product in each age group was significantly different by cluster. Finally, it was found that the most preferred simulation product was different by age groups.

  • This research made an alternative plan about tour experience program development utilizable cooking peculiar of an Andong locality. First currently Andong region have an Andong bass fishing great meeting, an Andong international mask dance, an Andong apple expo, an Andong Korean beef miss choice meeting, an Andong Hahoe folk village dabbling in water festival, but Andong didn't have about food festival. This region will mask a planning about food festival after this. Second, an Andong have a rich tradition of confucianism and buddhism. For example, there are Bongieong temple and Dosan private school. Therefore it is necessary tour experience program development can join of food and culture. Third, in term original locality of mask dance, we can tour experience development program out of the traditional food festival and mask dance performance. Fourth, Andong have a traditional food (a bluff memorial service rice, Andong fermenting rice, Gunjin noodle) and a traditional Korean-style house(sueding, chirye artists). It is necessary the development of board and loading experience program.
