Physicochemical properties, sensory characteristics, and consumer acceptability of cookies produced with oat and barley powder were evaluated. Oat and barley powder was incorporated into cookie dough at 6 levels: oat : barley = 100:0 (S1), 80:20 (S2), 60:40 (S3), 40:60 (S4), 20:80 (S5), 0:100 (S6) and control. pH of the cookie dough was lowest in the S6 group and highest in the control, S1, S2, and S3 groups. There were no significant differences in density. The spread ratio and loss rate of cookies increased significantly with an increase in content of barley powder. The leavening rate of the S1 cookie group was the lowest. With regard to color, the a-values and b-values of cookies increased with a rise in content of oat powder, and the L-value increased with an increase in barley powder content. Analysis of cookie texture showed that hardness was highest in the S6 group with barley and lowest in the S1 group, but there was no significant difference between the control group and other experimental groups. In the sensory evaluation of cookies, there was no significant difference between the control and experimental groups in roasted nuttiness and sweetness. In overall acceptance of cookies, S6 was the least acceptable and S1, S2, and S3 were the most acceptable. Results suggest that oat powder is a suitable ingredient for increasing the functionality of cookies and consumer acceptability.
Quality characteristic of Kipfel cookies with 0, 20, 40 and $60\%$ of freeze dried chitosan-chungkukjang(CC), which was fermented for 24 hours at $40^{\circ}C$ with steamed soybean added with $0.25\%$ of chitosan(MW 2,025 kDa) powder and inoculated $2\%$ of Bacillus lichenifomis, were investigated Bulk density was higher in the CC cookie, but there were no difference among the CC cookies. While hardness was decreased, brittleness and springiness were increased in the higher ratio of CC, but no significant difference was observed in cohesiveness and gumminess. According to increasing the CC ratio, L$\ast$ values and hue angle were decreased from 62.69 and 96.71 to 44.41 and 69.30, respectively. While a$\ast$ values were increased from -1.94 to 4.95, and no changes were observed in b$\ast$ values. Glucosamine content was $27.34 mg\%$ in the control cookie, $40{\~}93.75 mg\%$ in the CC cookies. Antioxidant activity of the CC cookies were higher than the control. The activity of the control cookie was decreased during storage, while it was maintained in CC cookies. There were no differences in the sour, sweet and savory taste. Off-flavor did not detected in the $0{\~}40\%$ CC cookies, but the chungkukjang odor was slightly detected in the $60\%$ CC cookie. The $20{\~}40\%$ CC cookies did not affect on native odor of Kipfel cookie. Color acceptability also did not affect by addition of CC $20{\~}40\%$ but it was lower in $60\%$ CC cookie. Overall acceptability was the best in the $20\%$ CC cookie.
This study was conducted to investigate the effects of acorn (fruits of Quercus species) powder on the antioxidant activity and quality characteristics of cookies. Cookies were prepared with different amounts (0, 0.5, 1, 3 and 5% to the flour quantity) of acorn powder. The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenolic acid content in acorn powder and cookies. For analyzing quality characteristics, bulk density, pH of the dough, spread factor, loss rate, leavening rate, color, texture profile analysis, and sensory evaluations were measured. The moisture contents, a values, total phenolic acid content and DPPH free radical scavenging activity of cookies significantly increased with increasing acorn powder (p<0.001), while the pH of the dough, L values and b values of the cookies significantly decreased with increasing acorn powder (p<0.001). The consumer acceptability score for the 3% acorn cookie groups ranked significantly (p<0.05) higher than the other groups in overall preference, appearance, flavor, taste and color. From these results, we suggest that acorn is a good ingredient for increasing the consumer acceptability and the functionality of cookies.
The purpose of this research was to provide basic information for cookies made with black soybeans, chick peas, lentils, oatmeal, and brewer's yeast and to establish the optimum formula for the development of low glycemic index (GI) cookies with high biotin content for lactating women. This study was performed to determine the optimal composite recipe of oatmeal cookies with two different concentrations levels of bean powder (black soybeans, chick peas, lentils) and brewer's yeast using a central composite design. In addition, the mixing conditions of oatmeal cookies were optimized using response surface methodology of sensory evaluation and mechanical and physicochemical analysis. As a result, mechanical and physicochemical analyses showed significant values for lightness, redness, yellowness, hardness, and water content (P<0.05), while sensory evaluation showed significant values for flavor, taste, crispness, and overall acceptability (P<0.05). The optimal sensory combination was suggested to be 3.73 g of bean powder and 1.59 g of brewer's yeast. Considering all outcomes obtained throughout the experiments, brewer's yeast, black soybeans, chick peas, lentils, and oatmeal are suitable ingredients for increasing functionality and consumer acceptability of cookies. In addition, these results are expected to be useful in producing cookies of optimal quality, contributing to the development of various nutritious foods, and improving the food industry for lactating women.
Job's tears(Coix lachryma-jobi L.) chungkukjang powder and wheat bran powder were added to American cookies for practical use as healthy compounds. We examined the antioxidant activity and quality characteristics of cookies prepared with different amounts(as ratios of 10%, 20%, 25% to the flour quantity) of Job's tears chungkukjang & wheat bran powder. The antioxidant activity was estimated by DPPH free radical scavenging activity, the total phenolic compounds content and flavonoid content in Job's tears chungkukjang & wheat bran powder and cookies. The quality characteristics of Job's tears chungkukjang & wheat bran powder American cookie were estimated in terms of bulk density, pH of the dough, spread ratio, color, texture profile analysis, proximate composition, and sensory evaluations. While the spread ratio and the total polyphenol contents, flavonoid contents and DPPH free radical scavenging activity of cookies significantly increased, pH, hardness and L value of the cookies decreased with increasing Job's tears chungkukjang & wheat bran powder(p<0.01). The consumer acceptability score for the 10~20% Job's tears chungkukjang & wheat bran powder American cookie ranked significantly(p<0.05) higher than those of the other groups in texture andoverall preference. This suggests that Job's tears chungkukjang and wheat bran powder are good ingredient candidates for increasing consumer acceptability and functionality of cookies.
The purpose of this study was to examine the quality characteristics of cookies made with Angelica gigas Nakai fermented by Lactobacillus paracasei. As the content of Angelica gigas Nakai fermented by L. paracasei (AFL) powder increased, the pH of the cookies decreased from 6.3 to 5.2. There was no significant difference in the moisture content depending on AFL powder content. The content of reducing sugar also increased with increasing AFL powder content. Regarding the surface color of the cookies, the L- and b-values decreased with increasing AFL powder content, whereas the a-value increased. As the AFL powder content increased, the total polyphenol content and ABTS and DPPH radical scavenging activities significantly increased. Cookies with 8% AFL powder (AC8) had the highest levels of 107.16 mg%, 38.69%, and 65.56%, respectively. The texture, adhesiveness, and cohesiveness of the cookies with various AFL powder levels were not significantly different, and hardness, springiness, gumminess, and chewiness showed no tendencies toward changes. Taken together, these results showed that when AFL powder was added to cookies, bioactivities such as antioxidant activity increased, making AFL powder a good material with high potential for use in commercially baked products.
본 연구는 세발나물의 활용 범위를 다양화하기 위하여 생리활성이 우수한 동결건조 세발나물 분말을 각각 0%(대조군, C), 1%(SM1), 3%(SM3) 및 9%(SM9) 첨가한 쿠키를 제조한 후, 관능검사 및 품질특성을 살펴보았다. 세발나물 쿠키의 일반성분 분석 결과 수분의 함량은 세발나물 분말 첨가량이 증가할수록 대조군(C)에 비해 유의하게 낮아졌고, 조단백질 함량은 대조군(C)에 비해 SM9군이 4.27%로 가장 낮은 값을 나타냈으며, 조지방 및 조회분 함량은 세발 나물 첨가량에 관계없이 유의적 차이가 없었다. 쿠키의 퍼짐성 지수는 세발나물 분말 첨가군들(SM1, SM3, SM9)이 대조군(C)과 비교하여 유의적으로 감소하였다. 쿠키의 색도는 세발나물 분말 첨가량이 증가함에 따라 명도(L값)과 적색도(a값)은 낮아지고, 황색도(b값)은 높아지는 경향을 보였다. 쿠키의 경도는 대조군(C), SM1군 및 SM3군은 유의차가 없었으나 세발나물 분말 첨가군 중 SM9군이 큰 폭으로 증가하여 가장 높은 값을 나타냈다. 관능평가 결과 쿠키의 향미, 맛, 조직감에 있어서는 세발나물 분말 3%(SM3), 9%(SM9) 첨가군이 높은 점수를 받아 유의적인 차이를 나타냈고, 전체적인 기호도 면에서는 3% 첨가군(SM3)이 유의적으로 가장 높은 선호도를 보였다. 이상의 결과를 볼 때 쿠키 제조 시 세발나물 분말을 3% 첨가하는 것이 향미, 맛, 조직감 및 전체적인 기호도 등의 조건을 잘 만족시킬 것으로 판단된다.
본 연구에서는 현미가루를 밀가루 중량기준 0%, 20%, 40%, 60%의 비율로 첨가하여 쿠키를 제조하고 반죽의 밀도, pH, 쿠키의 일반성분, 퍼짐성, 손실률, 팽창률, 색도, 경도, GABA 및 아미노산 함량, 기호도 검사 등을 실시하였다. 수분함량은 첨가군이 대조군보다 높게 나타났고 조단백질 함량과 조지방 함량은 시료 간에 유의적인 차이를 나타내지 않았으며 조회분 함량은 60% 첨가군에서 가장 높게 나타났다. 쿠키반죽의 밀도는 60% 첨가군이 가장 낮았고 pH는 가장 높았다. 퍼짐성은 헌미가루 첨가량이 증가할수록 대체적으로 감소하였고 손실률과 팽창률은 증가하는 경향을 나타내었다. 경도는 40% 첨가군과 60% 첨가군에서 낮게 나타났다. 밝기를 나타내는 L값은 대조군이 가장 높았고 a값은 현미가루 첨가량이 증가할수록 증가하였으며 b값은 감소하였다. 쿠키의 GABA 함량은 대조군이 가장 낮았고 현미가루 첨가량이 증가할수록 증가하여 60% 첨가군에서 가장 높게 나타났다. 총 아미노산 함량은 대조군이 가장 높게 나타났으나 쌀의 제1제한 아미노산인 lysine의 함량은 대조군이 가장 낮았고 첨가군에서 높게 나타났다. 쿠키의 기호도 검사 결과 표면색은 대조군보다 현미가루 첨가군이 낮은 점수로 평가된 반면 냄새, 맛, 조직감 및 전체적인 기호도는 모든 시료 간에 유의적인 차이가 없었다. 이와 같은 결과를 종합하여 볼 때 현미가루를 60%까지 첨가하여 제품화 한다면 대조군과 비교하여 관능성이 크게 저하되지 않으면서 GABA 함량이 증진되어 기능성이 향상된 쿠키가 될 것으로 사료된다.
본 연구에서는 현재 국내에서 소비가 낮고 그 활용에 대한 연구 개발 단계인 톳의 소비량을 증가시키기 위하여 톳 분말 첨가 쿠키를 개발하고자 하였으며, 소비자의 기호도를 만족시키는 최적의 톳 분말, 버터, 설탕의 양을 찾기 위하여 반응표면분석을 실시하였다. 1. 톳 분말, 버터, 설탕의 양을 달리한 16개의 실험군에 대한 관능검사 결과에 대하여 반응표면분석을 한 결과 바삭거리는 정도, 딱딱한 정도, 전반적인 수응도에서 회귀식이 유의적(p<0.01)인 것으로 나타났다. 2. 6개의 반응변수들의 관능점수를 동시에 목표값 7점에 가장 근접하게 만족시키는 최적 조건은 밀가루 200 g에 대하여, 톳 분말은 6.00 g(코드값 0.0), 버터 100.00 g (코드값 0.0), 설탕 70.00 g(코드값 0.0)이였다. 3. 최적치로 제시된 분량의 톳 분말, 버터, 설탕을 첨가한 쿠키에 대하여 소비자 기호도 조사를 실시하였으며, 그 결과 전반적인 수응도가 7.21/9.00점으로 높게 나타났다. 성별에 따른 차이에서 쿠키의 향에 대한 기호도가 남자보다 여자가 유의적(p<0.05)으로 높았으며 색, 질감, 맛, 전반적인 기호도등 다른 관능 특성에 대한 기호도 점수도 여자가 남자보다 높았으나 유의적인 차이는 없었다. 연령에 따른 차이에서 질감에 대한 기호도는 29세 이하보다 30세 이상이 관능점수가 유의적(p<0.05)으로 높게 나타났으며, 색, 외관, 맛, 바삭거리는 정도, 딱딱한 정도에서도 30세 이상이 더 높은 기호도를 보였으나 유의적인차이는 없었다. 4. 대조군과 최적 톳 분말 첨가 쿠키의 물리적인 특성을 비교한 결과, 퍼짐성과 경도는 유의적인 차이가 없었으며, 최적 톳 분말 첨가 쿠키의 명도와 적색도는 대조군보다 유의적(p<0.01)으로 낮았고, 황색도는 유의적(p<0.01)으로 높게 나타났다. 이와 같은 연구결과 최적 혼합비율로 톳 쿠키를 제조하여 대중화함으로써 해조류를 이용한 다양한 제품 개발이 가능 할 것으로 기대된다.
감자 껍질을 재활용하는 효율적인 이용과 감자에 함유된 기능성물질을 기능성식품의 신소재로서 개발하기 위하여, 감자 껍질을 밀가루 무게의 대해서 $0\%,\;10\%,\;15\%,\;20\%$를 각각 첨가한 쿠키를 제조하여 바람직한 감자 껍질의 첨가량을 알고자 감자 껍질 첨가 쿠키의 색도, 텍스쳐, 관능검사에 의한 기호도를 측정한 결과는 다음과 같다. 감자 껍질의 첨가량이 증가할수록 쿠키 반죽의 수분함량이 증가되어 퍼짐성은 증가하였다. 감자껍질 첨가 쿠키의 텍스쳐 측정에서 경도(hardness)는 감자 껍질의 첨가량이 증가할수록 낮게 나타났다. 응집성(cohesiveness), 탄력성, 파쇄성 모두 대조구에 비해 $10\%$ 첨가 쿠키가 높은 증가를 보였고 $15\%,\;20\%$ 첨가 쿠키는 대조구에 비해 낮아져 밀가루 량에 비해 감자 껍질의 수분양이 증가할수록 쿠키의 경도, 응집성, 탄력성 모두 저하되나 감자 껍질 $10\%$ 첨가 쿠키는 대조구에 비해 경도는 낮아졌으나 응집성, 탄력성은 대조구에 비해 증가되었고 파쇄성은 유사한 결과를 나타내었다. 감자쿠키 100g 중의 총 glycoalkaloid 함량은 6.27mg, 9.40mg, 12.54mg으로 모두 USDA Guide line 기준으로 안전한 수치이면서 기능성 쿠키로서 개발이 가능한 효능의 수치였다. 관능검사에서는 감자 껍질을 $10\%$ 첨가한 쿠키는 맛, 색, 향기, 질감, 종합적인 평가의 모든 항목에서 높은 평가를 보였다. 이상의 결과들을 종합해 볼 때 본 연구에서는 감자 껍질을 첨가한 쿠키를 만들 경우 감자 껍질의 량은 밀가루의 $10\%$를 첨가하는 것이 가장 좋은 결과로 나타났다.
