Studies on Processing Techniques in Barley II. The Processing and Cooking Quality of Cut-polished Barley in Naked Barley (보리의 가공기술 개선연구 II. 쌀보리의 할맥가공특성과 취반성)

  • These studies were carried out to find out the polishing properties and cooking quality of the cut-polished barley. Naked barley, Youngsanbori which was produced in Chonnam province, Korea in 1981, was applied for this experiment. Polished barley was produced by the conventional method and cut-barley was manufactured by the method established by Wheat and Barley Research Institute. The yield of cut-polished barley was 68.2% and that of conventionally polished barley was 70.1 %. The ratio of length to width was 2.88 in cut-polished barley and that of conventionally polished barley was 1.36. And weight of 1,000 kernel was 9.5g in cut-polished barley and 18.5g in conventionally polished barley. Energy consumption was found to be 91.1kW/1,000kg in conventionally polished barley and 105kW/1,000kg in cut-polished barley. Whiteness, water uptake ratio and expanded volume of cooked barley were 45.5, 225.7 and 283% in conventionally polished barley and 49.5, 312.7 and 318% in cut-polished barley, respectively.

  • The mushroom production is rapidly growing worldwide and mushroom present a great potential in agricultural promotion in Korea. Many researches have been done on the cultivation, disease control and breeding of mushrooms over last 20 years. The researches, on the other hand, on the utilization and processing of mushrooms and comparatively poor. A survey on consumer behavior of Korean, Chinese and Japanese consumers on mushrooms procurement and consumption was carried out. The main purchasing place for mushrooms by Korean and Japanese consumers was mart while the conventional market was the main purchasing place for Chinese consumers. Chinese and Japanese consumers had better recognition on processed mushroom products compared to Korean consumers. Chinese and Japanese consumers bought pickled mushrooms while Korean consumers were experienced in tea products made of mushrooms. The most popular method for cooking mushrooms by all the three country's consumers is saute.

Effects of Dietary Lycopene Supplementation and Packaging on Quality Traits in Longissimus Muscle of Korean Native Pigs during Storage (라이코펜 급여와 포장방법이 재래돼지 등심육의 저장 중 품질 특성에 미치는 영향)

  • The objective of this study was to evaluate the effect of dietary lycopene supplementation on meat quality in Longissimus Muscle of Korean native pigs. Meat samples were obtained from pigs which had been fed with finishing pig diets containing basal diets(C), 200 ppm lycopene (T1), 400 ppm lycopene (T2), and 800 ppm lycopene(T3). Longissimus muslce pH was not influenced by feeding lycopene. Total microbial counts of treatments were significantly lower than those of control at 0 day of storage (p<0.05). Counts of lactic acid bacteria and coliform of T2 and T3 were significantly lower than those of control and T1 at 0 day of storage(p<0.05). Regardless of packaging, microbial counts increased as the storage period increased(p<0.05). While water-holding capacity (WHC) values of the treatments were lower than those of control, cooking losses values of treatments were higher than those of control (p<0.05). Therefore, it can be concluded that Korean native pigs fed lycopene supplemented diets affect the microbial counts and meat quality (volatile basic nitrogen, WHC and cooking loss) compared with conventional ones. These results may show a fundamental data on production of Korean native pork.

Comparison of Physicochemical Properties between Conventional and High-Yielding Rice Varieties (일반 쌀과 다수확 쌀의 물리화학적 특성 비교)

  • This study invesigated the physicochemical properties of rice flours from conventional and high-yielding rice varieties in order to enhance usability processing of high-yielding rice varieties. Moisture content was not remarkably different among rice flours by cultivar. The highest content of total free sugars was detected in Hopum rice. Apparent amylose content of Anda was higher than that of other rice varieties. The total amount of amino acids was highest in Anda rice among the rice cultivars. Contents of vitamin $B_1$ in Hanarum were highest among the rice cultivars. Initial pasting temperature was lowest in Anda rice ($60.10^{\circ}C$). Hanarum rice showed the lowest setback values among the rice flours. Therefore, Anda and Hanarum rice cultivars were suggesting the possibility of a processed rice food source.

Cooking Properties of Waxy Varieties of Rice (통일(統一) 찹쌀의 가공(加工) 및 조리특성(調理特性)에 관한 연구(硏究))

  • The physiochemical properties of eight different cultivars or newly bred lines of glutionous rice were investigated and obtained following results; (1) The gelatinizing temperature, blue value and alkali number of starch separated from the sample cultivars or lines were similar to those of starch from conventional cultivar Olchal. The expansive power of three newly bred lines were somewhat weaker than that of starch from conventional cultivar, but the expansive power of other four lines were similar to that of conventional cultivar. (2) pH of cooked rice of the ten sample cultivars or breeding lines showed no discernible differences rangeing from 6.54 to 6.60. (3) The degree of gelatinization of cooked rice of newly bred lines were rather lower than that of conventional ones, but the degree of their retrogradation were somewhat higher than that of conventional cultivars. (4) In order to improve the palatability of cooked rice of Tongil (common rice), glutinous rice were mixed in different rate. The results showed that a mix ratio of six per cent glutinous rice was most favourable. The acceptability of common Tongil rice was improved when it was cooked with four to six per cent of glutinous rice mixed, and it showed no significant difference from that of Akibare alone cooked rice. Also no difference was noticed among newly bred glutinous lines in the acceptability when they cooked with common Tongil rice mixed. (5) Injolmi, Yaksik, Misitgaru, Twipap and Yugwa were prepared from glutinous rice of sample cultivars and or breeding lines to study their characteristics in processing and their acceptability. The results indicated that the acceptability score of newly bred lines were lower than that of conventional cultivar in cases of Twipap and Yugwa, but in cases of Injolmi, Yaksik and Misitgaru, identical score was obtained from both of newly bred lines and conventional cultivars.

Effect of Different Tumbling Marination Treatments on the Quality Characteristics of Prepared Pork Chops

  • The effect of different tumbling marination treatments (control group, CG; conventional static marination, SM; vacuum continuous tumbling marination, CT; vacuum intermittent tumbling marination, IT) on the quality characteristics of prepared pork chops was investigated under simulated commercial conditions. The CT treatment increased (p<0.05) the pH value, $b^*$ value, product yield, tenderness, overall flavor, sensory juiciness and overall acceptability in comparison to other treatments for prepared boneless pork chops. The CT treatment decreased (p<0.05) cooking loss, shear force value, hardness, gumminess and chewiness compared with other treatments. In addition, CT treatment effectively improved springiness and sensory color more than other treatments. However, IT treatment achieved the numerically highest (p<0.05) $L^*$ and $a^*$ values. These results suggested that CT treatment obtained the best quality characteristics of prepared pork chops and should be adopted as the optimal commercial processing method for this prepared boneless pork chops.

An Experimental Study on the Combustion and Emission Characteristics of Blends of GTL / Biodiesel in Diesel Engine (GTL/바이오디젤 혼합 연료의 연소 및 배기배출물 특성에 관한 실험적 연구)

  • An experimental research with 2.0 liter 4-cylinder turbocharged diesel engine was carried out to investigate the combustion and emission characteristics for various alternative fuels. The conventional diesel fuel, neat GTL, blends of 80% of GTL and 20% of biodiesel derived from waste cooking oil are utilized without any modification of engine hardware and ECU data. For GTL and blends of GTL/biodiesel fuel, the ignition delay decreased at the same operating conditions, and overall combustion duration increased slightly. Also, the peak cylinder pressure increased for blends of GTL/biodiesel compared to diesel and GTL fuel. THC and CO emissions with blends of GTL/biodiesel compared to other fuels decreased for the low and middle load conditions. But NOx emission increased due to oxygen content in biodiesel. The number concentrations of PM are higher for blends of GTL/biodiesel than other test fuels in the nucleation mode, while it had an opposite tendency in the accumulation mode, which implies more reduction of PM for blends of GTL/biodiesel on the base of mass concentration.

Influence of Probiotics-Friendly Pig Production on Meat Quality and Physicochemical Characteristics

  • In this study, the dietary effects of probiotics with a liquid application system on meat quality and physicochemical characteristics of pigs were evaluated. A total of 80 Landrace${\times}$Yorkshire${\times}$Duroc (LYD) 3-way crossbred pigs (average age $175{\pm}5d$) were assigned to a conventional farm and a probiotics farm equipped with a liquid probiotics application system (40 pigs in each farm). The two treatments were: CON (diet without probiotics) and PRO (diet with probiotics). Dietary probiotics decreased shear force in the longissimus muscle compared to the control group (p<0.05). The treatment diet did not affect backfat thickness, carcass weight, meat color, cooking loss, water holding capacity (WHC), and drip loss. Dietary probiotics significantly reduced ash, salinity, and pH (at 5 and 15 d) (p<0.05). There was no significant effect on thiobarbituric acid reactive substance (TBARS) values. Polyunsaturated fatty acid (PUFA) and omega fatty acids (${\omega}3$ and ${\omega}6$) were significantly (p<0.05) higher in the PRO group, whereas monounsaturated fatty acid (MUFA) was decreased. The free amino acid composition, serine, lysine, histidine, and arginine levels were significantly lower in the PRO than in the control group. The treatment group exhibited higher nucleotide compounds (hypoxanthine, inosine, GMP, IMP) than the controls. Also, levels of ascorbic acid and thiamin were significantly different (p<0.05), while minerals were not significantly different between the groups. In conclusion, feeding of probiotics had effects on shear force, ash, salinity, pH, PUFA, and some amino acids which related to taste and flavor without any negative effects on the pigs' carcass traits.

The Development of Standard and Disposition for Effective Job Performance of School Food Service Dietician (학교급식 전담직원의 표준 직무모델 개발에 관한 연구)

  • It is not stipulated concretely in the Food Sanitation Act what the standardized school food service dieticians indices and the dietician's duties and task elements should be. Therefore, this study was required. The specific purposes of this study were : a) to define the school food service dietician's duties and task elements, b) to estimate the performance frequency and work hours of the dietician's duties and task elements c) to investigate the job specification of the dietician over school food services, d) to develop the standardized indices of the dietician needed in school food service operation. For this study, school food service dietician's work functions were defined in 10 duties and 60 task elements based on the studies precedented and literature review and pilot test process. This study was conducted in school food service systems nationwide using written questionnaire and interview with the official in charge and delphi technique. The questionnaires were mailed to the dieticians of three types of school food service systems. Of the 660 schools that participated in this study, the 624 responses were selected for analysis. Statistical analyses were performed with SAS/Win 6.12 program so as to provide a descriptive statistics, T-test, ANOVA. The main results of this study could be summarized as follows: A characteristic common to all the school food service systems was that 'cooking and distribution management' took the longest hours of work, while 'nutrition education' took the shortest hours of work. The standardized index of dietician over school food service was one person in conventional system independently of the number of meals per day. In the commissary system, according to the numbers of meals served per day, it was 0.95-1.38 persons and 1.27-1.55 persons and 1.40-1.91 persons. In joint management system, the standardized index was 1.03-1.42 persons in case of serving less than 700 meals per day.

A Comparison of Meat Characteristics between Duck and Chicken Breast

  • Twenty four broilers (Ross) and 24 ducklings (Cherry berry) aged 45days were stunned and killed by conventional neck cut to evaluate the meat characteristics and fatty acid composition of breast meat. Breast meats were removed from each carcass at different post-mortem times. After complete processing, the breast meats were then placed in a polythene bag and kept in a cold storage room at $4^{\circ}C$ for 7 days. The pH of meat samples at different post-mortem times, and meat characteristics and fatty composition at different storage times were evaluated. No significant differences were found in pH at different post-mortem times except at 30 min postmortem, where duck breast showed significantly lower pH than chicken breast. As expected, duck breast meat had significantly higher redness (a*), but lower lightness (L*) value compared to chicken breast. During whole storage time, the a* value remained constant in duck breast. Cooking loss (%) was higher in duck breast compared to chicken breast during the whole storage time. Shear force decreased with increasing storage time in both chicken and duck breast meat, moreover, it decreased rapidly in duck breast compared to chicken breast. The TBARS values increased with increasing storage time in both duck breast and chicken breast meat and was significantly higher in duck breast. The fatty acids (%) C14:0, C16:0, C16:1, C18:2 and C18:3 were significantly higher while C18:0 was significantly lower in duck breast compared to chicken. SFA was increased, while USFA and MUSFA decreased only in duck breast during the 7 day storage time.
