죽 가공성 평가를 위한 원료 쌀의 품질지표 (A Study on Quality Index of Raw Rice for Porridge Processability Evaluation)

  • When producing rice products, it is very important to select suitable raw materials. Therefore, in this study, the quality characteristics of 16 rice cultivars were quantified to determine the criteria for evaluating the machinability of raw rice. The L value, which can affect the color of porridge prepared from rice, was the greatest for Hwaseonchalbyeo (84.17). The water-binding capacity, related to water interaction, was high in Hyangcheola (113.2%), and water solubility was high in Shingil (22.3%). Dodamssal (42.3%, 70.7 RVU) and Hwaseonchalbyeo (4.7%, 27.8 RVU) showed lower final viscosity compared to the cultivars in which the amylose content was medium groups (16.4~21.2%, 173.6~277.2 RVU). Specifically, cultivars with high or low amylose content had a low viscosity. The characteristics of the distribution of raw rice quality data were confirmed through 11 histograms. Furthermore, amylose content vs. water solubility, water solubility vs. peak viscosity, and peak viscosity vs. final viscosity showed high correlations (r=0.542, -0.569, and 0.836 respectively, p<0.01), and clear cultivar discrimination by the standard error of the mean (0.765~10.811). In conclusion, amylose content, water solubility, and peak viscosity were considered the most suitable characteristics for the quality evaluation of raw rice.

반응표면분석에 의한 옥수수유 유래 monoacylglycerol과 diacylglycerol 합성 조건의 최적화 (Optimization for the Production of Mono- and Di-acylglycerols from Corn Oil by Enzymic Glycerolysis Using Response Surface Methodology)

  • Lipozyme RM IM 효소적 촉매를 사용한 glycerolysis에 의한 옥수수유로부터 $1,3-DAG(Y_1),\;1,2-DAG(Y_2)$, 총 $DAG(Y_3),\;MAG (Y_4)$, 및 총 DAG + MAG 의 합성 양$(Y_5)$의 생성 최적화를 반응 표면분석을 이용하여 모니터링 하였으며 반응온도$(35-75^{\circ}C,\;X_1)$, 반응시간$(1-11시간,\;X_2)$ 및 hexane 의 혼합 양$(0-2mL,\;X_3)$을 변수로 한 중심합성계획으로 최적화 실험하였다. 1,3-DAG는 반응온도$(44.92^{\circ}C)$, 반응시간(10.24시간) 및 hexane 첨가량(1.16mL) 조건에서 20.43 area%로 최대값을 나타내었으며 1,2-DAG는 $56.32^{\circ}C$, 6.95시간 및 1.04mL 조건에서 26.78 area% 로 최대값을 예측할 수 있었다. 총 DAC는 $53.82^{\circ}C$, 8.03시간 및 1.08mL 실험 조건에서 45.09 area% 최대값을 보였다. 또한 MAG 생산 최적조건은 $64.14^{\circ}C$, 7.00시간 및 0.13mL에서 최대값 9.57 area%로 예측되었으며 총 DAG+MAG 생산 최적조건은 $54.07^{\circ}C$, 7.98시간, 1.02mL이었으며 이때 예측된 값은 53.54 area%이었다.

모유중 미량금속함량에 관한 조사연구 (A study on the Trace Metal Content in Breast Milk of Korean Lactating Women)

  • This study was carried out to investigate the levels of copper, zinc, manganese, nickel, cadmium and mercury content in breast milk among urban, rural and industrial lactating women in Korea. A total of 59 samples, which were collected from 17 in urban, 20 in rural and 22 in industrial area, and from 21-38 years-old healthy lactating women, were analyzed by Rigaku Mercury Analyzer for mercury, and by atomic absorption apectrophotometry for the other metals. The results are summarized as follows : The mean trace metal contents in breast milk were determined to be 0.34$\pm$0.14 ppm for copper, 2.01$\pm$1.43 ppm for zinc, 8.49$\pm$5.11 ppb for manganese, 7.75$\pm$5.73 ppb for nickel, 1.65$\pm$2.42 ppm for cadmium, 34.45$\pm$26.71 ppb for lead and 0.90$\pm$0.68 ppb for mercury. For the trace metal content in breast milk by area, the highest of copper, zinc, cadmium and mercury content were in urban, the highest of manganese content was in industrial, and the highest of nickel and lesd content were in rural. For copper, zinc, manganese and lead content in breast milk by lactation period, the highest levels were found in under 4 weeks after lactating, and subsequently the levels declined as lactation progressed, but the levels of zinc and manganese content increased from over 25 weeks after lactating. For cadmium and mercury content in breast milk by lactation period, the lowest levels were found in under 4 weeks after lactating, the highest levels were found in 5-12 weeks after lactating, and subsequently the levels declined as lactation progressed.For nickel content in breast milk by lactation period, the highest level was in 13-24 weeks after lactating, the lowest level was in 5-12 weeks after lactating.

'캠벨얼리' 포도의 수체관리와 내한성 (Cold Hardiness in Relation to Vine Management in 'Campbell Early' Grapevines)

  • 포도나무의 수체관리와 수량이 과실품질과 내한성에 미치는 영향을 구명하기 위하여, 화성지역과 수원지역에서 '캠벨얼리' 품종을 이용하여 시험을 수행하였다. 동해 상습지역인 화성지역은 수원지역에 비해 동계 최저기온 극값이 낮았고, 재식거리가 좁아 과다결실을 하고 있었으며, 수확시기도 7일 가량 늦은 경향이었다. 또한 포도나무의 결과모지내 탄수화물 함량도 1.2~1.7% 정도 낮았으며, $-15^{\circ}C$의 저온처리에 의해 발아율도 현저히 낮았다. 수원지역에서 포도 착과량별 과실품질과 결과모지의 발아정도를 보면, 착과량이 많아질수록 과방 및 과립의 크기는 차이가 없었으나, 당도가 떨어지고, 착색이 나빠지는 것을 알 수 있었다. 착과량이 많아지면 결과모지의 탄수화물 함량이 적어지는 경향인데, 특히, $-15^{\circ}C$ 이하의 저온 처리에 의해 발아율이 현저히 낮아졌다. 과실품질을 고려한 적정 수량은 2.3~2.6MT/10a이 적합하였다.

현미 품종별 에탄올 추출물의 항산화 성분 및 항산화 활성 (Antioxidant Compounds and Antioxidant Activities of Ethanolic Extracts from Brown Rice Cultivars)

  • This study investigated chemical components, antioxidant compounds, and activity of brown rice cultivars, to select good cultivar to be used for processing of mixed-rice in the food industry. Proximate compositions, phytic acid, phenolic compounds, and antioxidant activity of brown rice were significantly different among cultivars. Moisture, crude ash, fat, protein, and carbohydrate contents of brown rice were 9.51~12.82, 1.05~1.93, 1.84~6.24, 5.90~9.60 and 71.75~80.34 g/100 g, respectively. Phytic acid content of brown rice cultivars was 7.39~0.87 mg/g. Total polyphenol content of Joeunheukmi and Geonganghongmi cultivars, were 615.25 and $311.14{\mu}g\;GAE/g$, total flavonoid content was 267.75 and $100.67{\mu}g\;CE/g$, respectively. DPPH radical scavenging activity of Geonganghongmi, Joeunheukmi and Hyeugkwang cultivars was 89.17, 87.94 and 43.17%, ABTS radical scavenging activity was 113.57, 113.34, and $93.53{\mu}mol\;TE/g$, and ferric reducing antioxidant potential was 951.67, 1,075.75, and $508.33{\mu}M/g$, respectively. As a result, phenolic compounds and antioxidant activities of pigmented brown rice were high, and it could be used as a functional material.

  • A new parallel test algorithm and a built-in self test (BIST) architecture are developed to test various types of functional faults efficiently in content addressable memories (CAMs). In test mode, the read oepratin is replaced by one parallel content addressable search operation and the writing operating is performed parallely with small peripheral circuit modificatins. The results whow that an efficient and practical testing with very low complexity and area overhead can be achieved.

탄수화물 가수분해효소 처리가 옥수수 가루의 페놀산과 항산화활성에 미치는 영향 (Effect of carbohydrase treatments on phenolics content and antioxidant activity of maize flour)

  • 본 연구에서는 탄수화물 가수분해효소가 옥수수 가루의 페놀 화합물 및 항산화성에 미치는 영향을 조사하였다. 옥수수 가루는 빵, 과자 등 다양한 가공 식품 뿐만 아니라 가축용 사료로도 이용되고 있으며, 이에 대한 기능성의 증가는 국민 및 반려동물의 건강성 증진에 기여할 수 있을 것이다. 본 실험에서 탄수화물 가수분해효소 처리는 옥수수 가루의 유리 페놀산 및 총 페놀 화합물 함량을 유의적으로 증가시켰으며, 이는 효소 처리가 세포벽 구성성분과 강하게 결합하고 있는 불용성 페놀산을 유리화하기 때문이다. 또한 옥수수 가루의 항산화활성 또한 효소처리에 의해 유의적으로 증가하였는데, 이는 강한 항산화활성을 가진 유리 페놀산이 탄수화물 가수분해효소에 의해 증가하였기 때문이다. 상용 탄수화물 가수분해효소 처리는 친환경적일 뿐만 아니라 공정이 단순하여 상업적으로 이용하기 쉬울 것이라 생각된다. 하지만 아직 탄수화물 가수분해효소 처리가 옥수수 가루의 가공 적성에 미치는 영향 및 생산법 최적화에 대한 연구가 이루어져 있지 않으며 이에 대한 추가적인 연구가 필요할 것이다.

Bi-S 쾌삭강의 칩생성특성 (Chip Forming Characteristics of Bi-S Free Machining Steel)

  • In this study the characteristics of chip formation of the cold drawn Bi-S free machining steels were assessed. And for comparison those of the cold drawn Pb-S free machining steel the hot rolled low carbon steel which has MnS as free machining inclusions and the conventional steels were also investigated. During chip formation the cold drawn free machining steels show relatively little change in thickness and width of chip compare to those of the conventional carbon steels. And a single parameter which indicates the degree of deformation during chip formation chip cross-section area ratio is introduced. The chip cross-section area ratio is defined as chip cross-section area is divided by undeformed chip cross-section area. The variational patters of the chip cross-section area ratio of the materials cut are similar to those of the shear strain values. The shear stress however seems to be dependent on the carbon content of the materials. The cold drawn Bi-S and Pb-S steels show nearly the same chip forming behaviors and the energy consumed during chip formation is almost same. A low carbon steel without free machining aids shows poor chip breakability due to its high ductility. By introducing a small amount of free machining inclusions such as MnS Bi, Pb or merely increasing carbon content the chip breakability improves significantly.
