Influence of Relative Air Humidity on the Color Change of Fish Meat during Drying (어육건조중 변색에 미치는 상대습도의 영향)

  • A study on the color changes of fish meat during drying was conducted using fishes with different lipid contents, such as Alaska pollack as lean fish, conger eel as white fleshed fatty fish, and sardine as dark fleshed fatty fish. The fish meat was dried in a forced air dryer for 20 hours at 40, 55 and $70^{\circ}C$, The air velocity was 0.4 m/sec and the relative humidity of air was controlled to a constant value in the range of 10 to $50\%$. The color changes were evaluated with the brown color densities developed by lipid oxidation and Maillard reaction. The predominant reaction for the brown color developed during drying was lipid oxidation, The more the lipid content of fish and the higher the drying temperature were, the more violent the oxidative reaction of Lipid was. The rate of lipid oxidation during drying at 40 and $55^{\circ}C$ was affected by the relative humidity of air and was the slowest around $30\%$. But no remarkable influence of relative humidity on the rate of lipid oxidation could be confirmed during drying at $70^{\circ}C$. It seemed that the rate of lipid oxidation at higher temperature was more sensitive to the temperature than the relative humidity of air. Maillard reaction showed not so significant influence on the color changes of fish meat during drying. The rate of reaction was increased with increasing relative humidity of air in the range of 10 to $50\%$.

Changes in Aroma Characteristics of Neungee (Sarcodon aspratus) during Drying Period (능이버섯의 건조과정 중 향기성분의 변화)

  • Optimum condition of the drying process and the changes in aroma components during dehydration were determined for Sarcodon aspratus. The drying curve of mushrooms consisted of short constant rate period followed by long falling rate period. The drying rate increased with increasing drying temperature and air velocity. Results showed that mushrooms dried at $50^{\circ}C$ and air velocity of 1.5 m/sec had the greatest peak area of aroma compound. The aromatic components of the dried mushrooms were 1-octen-3-one, 1-octen-3-ol, 3-octanone, 1-octanol, 2-octen-1-ol, 3-octanol, 3-octanone, 1-octanol, 2-octen-1-ol, and 3-octanol. Peak areas of mushroom alcohol and aromatic compounds of mushrooms including 1-octen-3-ol, 1-octanol, 2-octen-1-ol, 3-octanol decreased significantly, whereas those of 1-octen-3-one and 3-octane increased during the drying period. New unfavorable compounds including butyric acid, propanoic acid, and 3-methyl thiopropanol were formed during the drying period.

The effect of crosslinking and dry for the adsorption rate on the chitosan bead (키토산 비드의 교차결합(crosslinking)과 건조공정이 흡착속도에 미치는 영향)

  • Chitosan, natural organic polymer, has been applied in water treatment as adsorbent due to non-toxic for human being. The amino group as functional group, can interacts with cation and anion at the same time. The prepared chitosan bead (HCB) was crosslinked to increase chemical stability (HCB-G) and both HCB and HCB-G were prepared to increase physical strength by drying referred to DCB and DCB-G, respectively. The adsorption effect for crosslinking and drying for four types of chitosan bead was tested using pseudo fist order (PFO), pseudo second order (PSO), and intraparticle diffusion model (ID). Regardless of PFO and PSO, the order of K, rate constant, is as followed: HCB > HCB-G > DCB > DCB-G for Cu(II) and phosphate. Drying leading to contraction of bead significantly reduced adsorption rate due to reduce the porosity of chitosan. In addition, crosslingking also negatively effect on adsorption rate. When compared with Cu(II) using hydrogel bead, phosphate showed higher value than Cu(II) for PFO and PSO. The application of ID showed that both hydrogel beads (HCB and HCB-G) obtained a very low R2 ranging to 0.37 to 0.81, while R2 can be obtained to over 0.9 for DCB and DCB-G, indicting ID is appropriate for low adsorption rate.

  • Square slices of sea tangle was dried in constant condition of thickness (1.54mm), air temperature $(50^{\circ}C)$, relative humidity $(30\%)$ and air velocity (0.4m/s). The shrunk surface area and the shrinking rate were investigated. The results obtained are summarized as follows : 1) Comparing the shrinking of transverse section with that of vertical section, the transverse section was proceeded more double shrinkage than vertical section. 2) The shrunk surface area curve showed nearly a linear shrinkage up to 90min of drying time. 3) The shrinking rate was rapidly increased in first falling rate period, and was largest in the early period of second falling rate period.

UTILIZATION OF ENGINE-WASTE HEAT FOR GRAIN DRYING IN RURAL AREAS

  • An attempt was made to measure the availability of waste heat, released from the cooling system of a small engine, which can be utilized for grain drying. An engine powered flat-bed rough rice dryer was constructed and the performance of the dryer with available engine-waste heat was analyzed for 10 , 20, 30 and 40 cm rough rice bulk depths with a constant dryer base area of 0.81$m^2$/min. The waste heat was sufficient to increase the drying air temperature 7 to 12$^{\circ}C$ at an air flow rate of 8.8 to 5.7㎥/min, while the average ambient temperature and relative humidity were 24$^{\circ}C$ and 70%. The minimum energy requirement was 3.26 MJ/kg of water removed in drying a 40 cm deep grain bed in 14h. A forty to fifty centimeter deep grained seems to be optimum in order to avoid over-drying in the top layers. On the basis of minimum energy requirement (3.26 MJ/kg ) , an estimation was made that the waste heat harvest from an engine of a power range of 1 to 10.5PS can dry about 0.1 to 1 metric on of rough rice from 23% to 15% m.c. (w.b) in 12 h at an average ambient temperature and relative humidity of $25^{\circ}C$ and 80%, respectively. The engine-waste heated grain dryer can be used in the rural areas of non industrialized countries where electricity is not available.

Changes in Rheological Properties of Neungee(Sarcodon aspratus) during Dehydration (능이버섯의 건조과정 중 물성의 변화)

  • This study was conducted to investigate the changes in physical properties of the Neungee (Sarcodon aspratus) during dehydration and rehydration. The drying of the sample was completed within 4 hours at 5$0^{\circ}C$ with the air velocity of 1.5 m/s. The reduction in the thickness of the sample were two-fold compared with those in the surface area of the sample. During the drying period, the values of compression distance, break down, deformation rate, distortion, alleviation rate and softness decreased, whereas the values of hardness and alleviation time increased. However, the values of surrender were not changed. The color of the sample during the drying was changed to black with decreased L, a, and b values. The rehydration rate increased rapidly during first 60 min and remained constant after that. The recovery ratio after rehydration of the dried sample was about 30% and the rheological properties recovered about 44%.

  • In conventional heat and vent dryer, both sensible and latent heat could not be recovered from the exhaust air, but this problem could be solved by introducing a heat pump to a conventional dryer, having a connection with cooling, dehumidifying and heating of heat pump. In this work, HFC134a as a substitute refrigerant of CFC12 adopted in heat pump and a batch type is also introduced. The variables affected on the system performance are holding temperature of a drying chamber, bypass air ratio, degree of superheat and refrigerant flowrate, etc. The moisture contents were decreased curvilinearly in the range of $86{\sim}75%$ on the wet basis. Under the constant drying temperature, the face velocity plays an important role to the drying performance. The COPs are increased in accordance with the air velocity, on the other hand the SMERs are gradually decreased.

  • In this study, PLZT ceramics were fabricated by the freeze-drying and normal sintering method. The composition rate of the specimen was selected 9/65/35(La/Zr/Ti) which had good optical and dielectric properties, sintering time was varied 1, 10, 30, 50, 55, 60 and 65(hr) at 1250(.deg.C). After sintering, the optical and dielectric properties were investigated with the grain size. As the result of the experiment, the particle size of the powder prepared by freeze-drying method was less than 1(um). The relative dielectric constant was increased linearly with the sintering time and specimen sintered for 65(hr) had the highest value, 5780. Grain was grown with increasing time, in the case of specimen sintered for 60(hr), the grain size was 8.4(um). Transmittance was increased with the grain size. In the case of 8.4(um) grain size, the transmittance was 56(%). Curie temperature was decreased linearly by the surface-layer effect of space-charge. In the case of grain size, 1.8(um), 8.4(um), curie temperatures were appeared at 100(.deg.C) and 80(.deg.C), respectively.

Strength Variation of Cemented Sand Due to Wetting (수침이 고결모래의 강도에 미치는 영향)

  • In this study, weakly cemented sand was cured at air dry condition with different periods (3, 7, 14, 21, 28 days) and its unconfined compressive strength was evaluated. As a result, the strength of specimens with low cement ratios such as 4 and 8% increases until 7 days curing but, after 7 days, their strength continuously decreases. The strength of specimens with relatively high cement ratios such as 12 and 16% increases up to 7 days curing and then stays almost constant until 21 days. After 21 days curing, their strength suddenly dropped down, which is much lower than the strength of 3 days curing specimen. A cemented sand and gravel called CSG, which is highly permeable, could be exposed to repetitive drying and wetting conditions due to rainfall or groundwater table change during curing. In this study, the weakly cemented sand is exposed to repetitive drying and wetting and then its unconfined compressive strength was evaluated. As a result, the strength of a specimen with 27 days drying condition following 1 day wetting was at maximum 35% lower than the one cured under 28 days drying. The strength degradation due to wetting decreases as a cement ratio increases. However, the strength of a specimen with repetitive drying and wetting increases as the number of wetting increases until 3 cycles. After 3 cycles of drying and wetting, the rate of strength increase decreases due to an insufficient water for hydration or stays constant. If the sufficient water supply is provided to cemented sand during curing, the target or design strength increase can be achieved. Otherwise, the strength degradation due to wetting should be considered at the design stage.

Kinetics of Drying Shiitake Mushroom, Lentinus edodes sanryun No. 1 (표고버섯의 열풍건조속도론(熱風乾燥速度論)에 관한 연구(硏究))

  • Dehydration phenomena has been studied for the shiitake mushroom Lentinus edodes sanryun No.1, through which examine the effect of temperature and air velocity and derivation of its kinetics. Temperature effect for the dehydration rate constant were examined under the constant air velocity (1.5m/sec) with the variation of temperature from $40^{\circ}C$ to $55^{\circ}C$. Water content were reduced exponentially with the course of time and calculated dehydration rate constant values varies with temperature with an Arrhenius-type relationship, which had been expected in the chemical reaction kinetics. Influence of air velocity for the dehydration rate constant under the constant temperature $(45^{\circ}C)$ showed interesting results. For the range 1.0m/sec to 2.0m/sec, dehydration rate constant values are increased with the air velocity, but for the 2.0 to 3.1m/sec, dehydration rate constant values are decreased which were caused by case hardening. One of the selected conditions in the optimal dehydration range, temperature $50^{\circ}C$, air velocity 2m/see, and its measured humidity 38-41%, mathematical model of dehydration curve and dehydration rate equations were developed and the resulting kinetic models were X=6.94 $e^{-0.345t}$ and dx/dt = -2.39 $e^{-0.345t}$
