The Study of Serum lipid Profile and Food Behaviors in Healthy Offsprings of Korean NIDDM Patients (인슐린 비의존형 당뇨병의 가족력을 가진 정상 자녀의 혈청 지질 및 식습관에 관한 연구)

  • This study was to investigate the risk factors for the development of diabetes mellitus on healthy offsprings of Korea non-insulin dependent diabetes mellitus(NIDDM) patients. Forty four offsprings who have at least 1 parent with NIDDM and age, sex and body mass index(BMI) matched forty four healthy control subjects were collected for this study. BMI, skinfold thickness, waist/hip circumference ratio(WHR), fasting blood glucose, serum insulin, serum lipid profile, nutrient intakes and food behaviors were measured. There were no significant difference in BMI, WHR, fasting blood glucose, insulin, total cholesterol, triglyceride and daily nutrients intake between offsprings and controls. But skinfold thickness, LDL-cholesterol level and sweety food eating frequency were significantly higher in male offsprings than in male controls. And HDL-cholesterol was significantly lower in male offsprings than in male controls. Although there were no significant difference, offsprings had a overeating habit and ate more confectionery and greasy food than controls.

Phygicochemical Properties of Bread Dough Added with Jujube Extracts (대추 추출액을 첨가한 빵반죽의 이화학적 특성)

  • Effects of jujube extract on physicochemical properties of dough were evaluated. Moisture, protein, and ash contents of jujube extract were 92.5, 0.5, and 0.37%, respectively at pH 4.65. Sucrose content was the highest (4,340 mg%) among free sugars of jujube extract, followed by glucose and fructose. Absorption rate increased as observed through farinogram with increasing amount of jujube extract added. Dough development time and stability decreased, whereas degree of weakness increased. Degree of extension decreased as shown in extensograph with increasing content of jujube extract, whereas degree of resistance and resistance/extensibility increased. Amylogram showed, when amount of jujube extract increased, no difference in gelatinization temperature, whereas peak viscosity decreased.

Survey on Wheat Flour Utilization in Korea (우리나라의 밀가루 이용실태 조사)

  • The use of wheat flour in Korea in 1986 and 1987 was surveyed. A brief outline of wheat flour milling industry was also included. Since the overall trend in flour usage in 1986 and 1987 was similar, the data in 1986 were presented. Total sales volume of wheat flour was 1,556,891M/T, of which 51.1% was sold to wholesale agents and the remainder to commercial users. The main usages of flour were noodle-making, baking, brewing and common use including home use, retailer and supermarket. The first and second class of all-purpose flour were used for noodle-making and brewing. Bread was produced with the first class of strong flour. For confectionery the first class of all-purpose flour was mainly used.

Strategies for activation of the domestic chocolate culture and development of new chocolate market: Activation of chocolate market through fusion with Herbal Bio-industry

  • The aims of this study recognize the limitations of the domestic chocolate market compared to domestic and foreign chocolate market and investigate the strategies for activation of the domestic chocolate culture and development of new chocolate market throughout pointing out the various problems. We analyzed the trends for the food market and confectionery market, main market for chocolate, and also compared domestic and foreign cases for market of chocolate as food or non-food. We sought for solutions and implications for diversification of domestic chocolate market through prospects for the future. Domestic chocolate market is not enough to be competitive compared with overseas market, yet. However, we speculated that domestic chocolate market would gradually develop through fusion with herbal bio-industry as rapid economic development. Besides, we demonstrated a few ways which derive larger development through combination of chocolate market and herbal bio-industry. For these sakes, we suggest that at first, if paradigm which is considered oriental medicinal characters and back innovative and differentiated ideas should be present, the activation of markets of chocolate and herbal bio-industry as well as the diversities of market may be obtained.

  • Sodium is a component of salt and naturally taken in the process of taking in table salt. For food processing, salt is very important. In general, salt adds flavor and taste including a salty taste and rheologically, it plays an important role in forming tissues. Also, it helps in improving preservability of food by controling growth of microorganisms. But excessive intake of salt has been blamed for outbreak of high blood pressure, heart disease, stroke, osteoporosis, kidney stone, stomach cancer and others. For this reason, there are active efforts to reduce sodium of processed foods all around the world. In Korea, a guideline for sodium reduction in 27 items and 44 kinds of foods including confectionery was suggested as part of the 'processed food sodium reduction guideline development project', which has been conducted since 2012.

Effects of Work Value on the Life Satisfaction of Culinary Arts Majors

  • The purpose of this study is to analyze the work value factors regarded as important by the culinary-related graduates in their 20s, and also to analyze the effects of work value factors on the life satisfaction. To achieve this purpose, this study analyzed the data of 155 graduates from departments including 'culinary arts', 'foodservice', and 'confectionery' among the college graduates in their 20s who participated in GOMS 2018. The results of analysis are as follows. First, the new generation majors in culinary arts showed the high importance of their aptitude and interest, employment stability, earned income. Second, in relation to the major field, the male graduates majored in culinary arts more highly perceived the importance than the female graduates majored in culinary arts. On the other hand, regarding the social reputation of job and work duty, the female graduates majored in culinary arts more highly perceived the importance than the male graduates majored in culinary arts. Third, the developmental value factor of work value had positive effects on the life satisfaction. Thus, the career-related staffs or professors of college should provide the career guidance by considering gender when the majors in culinary arts transit to the labor market after graduation.

An Analysis of the Behavior of Malaysian Consumers for Expanding the Export of Food and Agricultural Products

  • Purpose - This paper aims to examines the various factors influencing the purchase decisions of Malaysian consumers for halal food and based on this analysis, to present some measures by which Korea's food industry could expand exports to the Malaysian market. Design/methodology - This research used SPSS 12.0 for descriptive analysis, ANOVA, t-tests, factor analysis, cluster analysis, and reliability analysis based on a total of 571 responses were included as the final data in the 600 surveys administered. Findings - Malaysian consumers had high trust and confidence in products that had obtained halal certifications. This reflects the cultural situation where 61% of the Malaysian population consist of Muslims. In terms of the consumption of Korean foods, items such as ramyeon, confectionery, and kimchi were found to enjoy high awareness and strong preference among local consumers, thus suggesting their competitiveness. Originality/value - This paper attempts to examine consumer characteristics - an aspect that had received insufficient treatment in previous studies on halal certifications in Muslim countries. This study found the purchase practices and influencing factors behind Malaysian consumers' purchases of imported foods and Korean foods. Therefore, it is expected that this result can give Korean food industry an insights and strategies for exporting Korean food to Malaysia.

Trends in Canadian Dietary Supplements Enhanced with Female Hormones Required in Response to the COVID-19 Pandemic (코로나19 (COVID-19) 팬데믹에 대응하여 요구되는 여성호르몬이 강화된 캐나다산 식이 보충제의 동향)

  • As one of the post-COVID-19 response strategies, representative processed products derived from the natural plant material flaxseed and a dietary supplement fortified with female hormones (estrogens) were developed in Canada, an eco-friendly country was introduced. These products were: 1) flaxseed oil to help maintain cognitive and immune function, 2) Lignan50, a substance with effects similar to estrogen, a female hormone, 3) XanFlax, a thickener for confectionery/baking and egg substitute, 4) MediFlax, a constipation reliever, 5) SesaFlax, which has a fragrance similar to sesame, 6) Linusorb, which is effective for its pharmaceutical anti-inflammatory/anti-oxidation and anti-aging properties, and 7) LinuLyte, a water/electrolyte supplement containing high dietary fiber. It is expected that these dietary products will help maintain and promote health as part of a response to the COVID-19 pandemic.

Physicochemical Properties of Low-calorie Yanggaeng Containing Palatinose (팔라티노스를 함유한 저칼로리 양갱의 물리화학적 특성)

  • In order to examine the pre-industrial application product quality characteristics of yanggang (a type of traditional Korean confectionery) with varying levels of Palatinose, this study conducted multiple preliminary experiments. By applying different amounts of Palatinose (1%, 2%, 3%, 4%) and adhering to a recipe suitable for commercial products, the yanggang was produced under controlled manufacturing conditions. While the moisture content of the manufactured yanggang adhered to the established manufacturing standard, showing minimal variations, there were statistically significant differences observed with an increase in the Palatinose proportion, exhibiting a trend akin to findings from other yanggang studies. Similarly, there were slight but statistically significant differences observed in soluble solids content and pH, though these differences were not found to have a significant impact. The addition of Palatinose did not induce changes in the elasticity (springiness) and firmness (gumminess) of the yanggang, nor in its chewiness, as the Palatinose content increased. Despite a reduction in calorie content, the addition of Palatinose did not influence the appearance and taste of the yanggang.

Quality characteristics of cookies that contain different amounts of chlorella powder (클로렐라 분말을 첨가한 쿠키의 품질 특성)

  • Chlorella is an attractive potential food source because it is high in protein and other essential nutrients; when dried, it is about 45% protein, 20% fat, 20% carbohydrate, 5% fibre, and 10% minerals and vitamins. It has been widely used as a well-being food. We investigated the quality characteristics of cookies prepared after addition of various concentrations of chlorella powder (0%, 1%, 3%, and 5%, all w/w) as a substitute for flour. In this study, as chlorella powder concentration rose, decreases in the moisture content, pH, L, a and b value became evident. The spread factor and hardness of the cookies slightly increased after the addition of chlorella powder. Sensory evaluation scores in terms of color, flavor, and texture were statistically very similar, but taste and overall acceptability scores were lower than those of the control. The result of this study showed that the quality of the cookies with the addition of 1% chlorella powder was the best in terms of its taste, flavor, texture, and sensory properties.
