Utilization of Faba Bean (Ficia faba) By-Products as Feed Ingredients for Lactating Cows

  • Sixteen Friesian Cows were allocated equally into 4 groups in a $4{\times}4$ Latin square design to evaluate the effects of utilizing bean by-products on the feed intake and milk production. Cows were fed on 4.5% of their body weight fresh alfalfa; the remainder of their requirements were covered by one of 4 experimental concentrate treatments: 1) commercial concentrate (CC), 2) 70% CC + 30% bean hulls (BH), 3) 70% CC + 30% Polished bean (PB) and 4) 70% CC+ 15% BH + 15% PB. Results showed that the inclusion of bean hulls at 30% improved (p<0.05) milk yield, 4% fat corrected milk yield, feed conversion ratio and fat percent of the milk over the other treatments. Feeding cows on a commercial concentrate plus 30% BH or 30% PB or 15% from each of BH and PB decreased the cost of feed per kg milk by 13.6, 2.5 and 1.3 %, respectively, lower than those fed on the commercial concentrate.

Quality Characteristics of Commercial Oiji, Korean Cucumber Pickle (시판 오이지의 품질 특성)

  • Physicochemical and sensory characteristics of commercial Oiji, Korean pickled cucumbers (six commercial and three traditionally made products) were investigated. Saltiness values for commercial and traditionally made products were 3.424-4.47 and 3.92-7,23%, and acidity and pH were 3.43-3.85 and 0.39-0.75%, respectively, Commercial products showed lower L and higher b values than traditionally made products. Redness of both products ranged from -1.47 to -3.71. Numbers of total microbial, lactic acid bacteria, and yeast in traditionally made products ($1{\times}10^{7}-1.3{\times}10^{9},\;4{\times}10^{6}-4.7{\times}10^{8},\;and\;1.3{\times}10^{6}-3{\times}10^{8}\;cfu/mL,\;respectively$), were higher than those of commercial products ($1{\times}10^{4}-2{\times}10^{7},\;1{\times}10^{4}-6{\times}10^{6},\;and\;1{\times}10^{4}-6{\times}10^{6}cfu/mL\;respectively$). Texture analysis revealed fracturability (2,103-3,010 g) and hardness (409-890 g) varied among the products above. Overall acceptability scores of commercial products C1 and C2 were highest at 7.6-8.0 compared to other products (p<0.05). From the principal component analysis, the first principal component (PC1, 79.94%) and the second principal component (PC2, 19.94%) could describe the majority of the variability. Commercial product C1, C2, C3, and C7 having high negative loadings on the PC2 axis are closely related to over-all acceptability, over-all taste, savory taste and hardness. From Pearson correlation analysis, hardness and chewiness correlated positively with saltiness, whereas over-all acceptability, positively correlated with savory and overall taste, respectively (p<0.05).

Anti-Obesity Effect of Commercial Kochujang and Fermented Wheat Grain Products in Sprague-Dawley Rats (흰쥐에서 개량식 고추장과 발효 밀쌀의 항비만 효과)

  • The antiobesity effect of commercial kochujang and fermented wheat grains in Sprague-Dawley (SD) rats was studied. The experiment was consisted of 6 groups. Normal, high fat diet (HFD), HFD+raw wheat grains, HFD+first fermented wheat grains (FFWG, with Aspergillus oryzae) HFD+final fermented wheat grains (FiFWG, fermented more for 30~40 days), and HFD+ commercial kochujang. The results showed that final body weight, weight gain, food efficiency ratio, and adipose tissue weight were markedly decreased by the commercial kochujang and the fermented wheat grains, whereas non-fermented raw wheat grains had no such effect. Lipid contents such as total lipid, total triglyceride and total cholesterol decreased in the serum and organs of liver and adipose tissues by the commercial kochujang and the fermented wheat grains as well. These results also indicated that fermented wheat grains exhibited more suppressive effects on high fat induced-obesity than raw wheat grains. Increased fermentation time and adding the red pepper powder resulted in increased the anti-obesity effect. Especially, commercial kochujang showed higher antiobestic effects than fermented wheat grains. These in vivo findings suggested that well-fermented end products of the wheat grains and red pepper powder in kochujang could be useful in the prevention of obesity.

Natural Occurring Levels of Citrinin and Monacolin K in Korean Monascus Fermentation Products

  • The levels of citrinin and monacolin K in ten commercial Korean Monascus fermentation products were determined. The products contained citrinin at levels ranging from 0.64 to $112.27\;{\mu}/kg$, with only 2 exceeding the limit of $50\;{\mu}g/kg$ set by the Korea Food and Drug Administration (KFDA). The levels of monacolin K ranged from 0.87 to 1,030 mg/kg, however 6 products contained monacolin K at levels lower than 500 mg/kg, the level required by KFDA to be claimed as a functional food. Therefore, many commercial Korean Monascus fermentation products should be considered safe, however many need to be improved before being considered as functional dietary supplements.

Chemical Characterization of Commercial Dark-fleshed Fishes (Mackerel Scomber japonicus, Japanese Spanish mackerel Scomberomorus niphonius, Pacific herring Clupea pallasii) as a Raw Material for Seafood Products (수산식품가공소재로서 시판 적색육 어류[고등어(Scomber japonicus), 삼치(Scomberomorus niphonius), 청어(Clupea pallasii)]의 화학적 위생특성)

  • This study examined chemical characterization in commercial dark-fleshed fish (mackerel Scomber japonicus, Japanese Spanish mackerel Scomberomorus niphonius, and Pacific herring Clupea pallasii) to determine their suitability for use as raw materials for seafood products. The volatile basic nitrogen (VBN), heavy metal, radioactivity, polychlorinated biphenyl (PCBs), benzo[a]pyrene, and histamine concentrations were measured. The VBN in all of the dark-fleshed fish was less than 20 mg/100 g, which is the limit for raw materials for seafood processing. Except for mackerel based on the lead (Pb) standards of the European Union (EU), Taiwan, and CODEX, and all fish based on the cadmium (Cd) standards for China and the EU, the commercial dark-fleshed fish were free from total mercury (Hg), Pb, and Cd based on domestic and foreign standards. The radioactivity, polychlorinated biphenyl (PCB), benzo[a]pyrene, and histamine concentrations of the commercial dark-fleshed fish all adhered to the domestic and foreign standards. The commercial dark-fleshed fish tested could all be used as raw materials for seafood products, except for some exported products.

Study on the Potential Hazard Analysis by Physicochemical Quality and Microbiological Safety Comparison of Commercial Sauces in South Korea (시판 소스의 이화학적, 미생물적 품질 특성 조사를 통한 잠재적 위해도 연구)

  • The quality of commercial sauce products was evaluated through pH, soluble solid content, salinity, water activity and microbial analyses. The pH of sauces was 2.38~5.30, soluble solids were between 6.03 and 71.67, and distributions of salt were 0.23~5.00% in 32 commercial sauce products. In addition, water activity of vinegar red pepper sauce and spicy soft tofu stew stock were determined 0.773 and 0.988, respectively. Yeast, mold, Staphylococcus aureus, E. coli and coliform were not detected in any sauces. Higher level of total viable cells (TVC) resulted in pH over 4.2. TVC of shelf-stable sauces was 1.0~3.6 log CFU/g. TVC of seven sauce products was classified as non-potentially hazardous foods by temperature controlled for safety standard (TCS), even though levels were over acceptable guidelines of the USDA (3 log CFU/g). These results indicate that the standard and classification of commercial sauce products should be modified and controlled strictly.

Analysis of Charcoal from Quercus phillyraeoides (졸가시나무 탄화물 분석)

  • In this work, charcoal making characteristics of Quercus phyllyaeoides (which has been known as one of best raw materials for charcoals) was investigated. Charcoal from Quercus phyllyaeoides had more than 85% of fixed carbon, which is 5~25% higher fixed carbon content than other charcoals. Also specific gravity of this charcoal was more than 1.0, which is quite higher than other black charcoals (average of commercial products: 0.52) or white charcoals (average of commercial products: 0.73). Methylene blue adsorption, pH, and adsorption of water vapour was lower than other commercial charcoals. Carolic value of this charcoal was similar to other commercial products. Far infrared ray's emission from this charcoal was higher than others. Application of charcoal from Quercus phyllyaeoides should be consider the characteristics of this product.

  • We assessed the sanitary quality of fish jerky based on domestic standards (Korean FDA, Standards on Quality of Seafood and Seafood Products, KS) and compared the characteristics of fish jerky with those of other commercial animal jerky products. The standards encompassed sensory properties (form, flavor, color, texture, and foreign matter), moisture, and microbial properties (Escherichia coli and Staphylococcus aureus). Based on the standards, some fish jerkies did not meet standards on sensory form (code 5) and color (code 11), moisture content (code 7 and 12), E. coli (code 2, 4, 5, 9, 10 and 14) and S. Aureus (code 5). These results suggest that commercial fish jerky should be monitored and controlled on safety to ensure the distribution of high-quality products.

  • This study was conducted to investigate the high-value added new products from spent hens. Spent hens were randomly designed to one of the four dietary treatments: 1) Control (commercial feed),2) T1 (commercial feed supplemented with 100 lU ${\alpha}$-tocopherol, 3) T2 (commercial feed with 10% squid liver oil and 4) T3 (commercial feed with 100 IU ${\alpha}$-tocopherol plus 10 % squid liver oil). They were fed one of the experimental diets for 15 days and slaughtered. And, also, somking of spent hens as follows : digestion in sources, boiling and somking.

Tendency of Residual Pesticides in Commercial Agricultural Products in Gyeongsangbuk-Do Area (the year 2004~2008) (경상북도 내 유통 농산물 중의 잔류농약 동향 (2004~2008년))

  • The content of residual pesticides in commercial agricultural products in Gyeongsangbuk-Do area was investigated for 5 years extending the year 2004 through 2008. The detection rates of residual pesticides in agricultural products by year were similar in range of 11.6~16.4%. But the violation rates showed lower values in the last years from 4.5% of the year 2004 to 0% of the year 2007. The highest residual concentration of each pesticide detected in commercial agricultural products was investigated by year. That is, in the year 2004 and 2005, chlorpyrifos, chlorothalonil, diazinon, endosulfan, ethoprophos, fenarimol and procymidone were detected over the tolerance in kale, parsley, celery, chard and lettuce, and in the year 2006, permethrin in the soybean and peanut. The detection rate and violation rate of pesticides were highly increased in the order of the endosulfan, chlorpyrifos, procymidone, chlorfenapyr, fenitrothion, imazalil, isoprothiolane, methidathion and permethrin. The detection rate and violation rate of pesticides were increased after August every year.
