Control of Softening of Long-Term Stored 'Fuji' Apples at Low Temperature and Subsequent Shelf-life by Combination Treatment of 1-MCP and Ethylene (1-MCP와 에틸렌 혼용처리가 장기간 저온저장 후 상온에 보관된 '후지' 사과의 연화 억제에 미치는 영향)

  • The effect of 1-methylcyclopropene (1-MCP) at $1.0{\mu}L{\cdot}L^{-1}$ was compared with control and $10{\mu}L{\cdot}L^{-1}$ ethylene treatment to evaluate softening control of apple (Malus ${\times}$ domestica Borkh.) fruit for 180 days at $0.5^{\circ}C$ in the air, followed for 28 days at a room temperature. 1-MCP or 1-MCP+ethylene treatment maintained high fruit titratable acidity and firmness after 120 days during the cold storage, which was similarly observed for 28 days at a room temperature. 1-MCP treatment maintained fruit firmness more than 14 N during the cold storage and shelf-life at room temperature. Fruit surface red color was not consistently affected by the treatments during the cold storage but enhanced more than 4.0 by 1-MCP at 21- and 28-days of room temperature. Control or ethylene treatment advanced overall preceeding of fruit softening as rapid ethylene production and respiration rates at 90 days during the cold storage increased to a climacteric maximum. Therefore, pre 1-MCP-treated fruit maintained high fresh condition at a long-term low storage + approximately one month room temperature-storage under $10{\mu}L{\cdot}L^{-1}$ ethylene treatment.

Effect of Addition of Enzyme-Resistant Rice RS3 on Quality and Textural Characteristics of Madeleine (효소저항성 쌀전분의 첨가가 마들렌의 품질 및 텍스처 특성에 미치는 영향)

  • This study attempted to examine the application of retrograded starch (RS3) isolated from rice flour into Madeleine which is easy to make, supply enough energy and micro nutrients with adequate drinks, and prevent an adult disease. This could be a popular food to anyone regardless of age and gender who avoid rice and become high value-added, processed rice foods. For this, control Madeleine was made from wheat flour and an experimental one was made from 5 or 10% rice RS3 addition as well as wheat flour. Four different types of rice were produced from Premium Ho-Pyong Rice, that is, dry milled rice flour(RFD), soaked for 8 hours and milled, followed by air-dried rice flour(RFW), rice starch(RST), and retrograded rice starch or enzyme-resistant starch(RS3). The results found were as follows: Proximate compositions were decreased with soaking to make RFW, RST and RS3, compared to RFD. RS3 had the highest L, +a and ${\Delta}E$ with the lowest +b, changing it to a dark color, explaining the need for heat control during processing. At $80^{\circ}C$, the swelling power was shown in the order of RST>RFW>RFD>RS3 and the solubility of RS3 was the highest. There were significant differences in viscosities of peak, trough, cold, breakdown and total setback of all rice samples using RVA (p<0.001). Due to the pH of RS3, the Madeleine batter became acidic (p<.01) and expanded, resulting in more air cells and open texture. With an increasing RS3 level in Madeleine, several textural attributes among 'fresh' and 'stored at room temperature' Madeleine samples were significantly different by using Texture Analyzer. While the addition of RS3 in Madeleine did not significantly affect the sensory evaluation, indicating RS3 isolated from rice as a beneficial ingredient for processed rice products.

Influence of New Town Development on the Urban Heat Islands - ln the Case of Pan-Gyo Area and Bun-Dang New Town - (신도시 개발이 도시열섬 형성에 미치는 영향 - 분당신도시와 판교지역을 중심으로 -)

  • The main purpose of this research is to discuss the urban heat island which will be caused by urbanization, especially by the construction of new town on a wide green zone. Over the last ten years, five new towns have been developed around the Seoul metropolitan area. However these new towns become bedroom communities and create traffic problems between Seoul and its surrounding areas because of an increase in population and a lack of roads and other infrastructures. The construction of another such new town is under consideration in the Pan-gyo area. But it is important that Pan-gyo remains a wide green zone. Many studies show that green space can play an important role in improving urban eco-meteorological, ameliorative capability and air hygiene. The objective of this study is to analyze the urban heat islands of Bund-Dang Si which was constructed in 1996 and of the Pan-Gyo area planned as new town. To investigate the local thermal environment and its negative effects caused by change of the land use type and urbanization we used LANDSAT TM images for extraction of urban surface temperature according to change of land use over 15 years. These data were analyzed together with digital land use and topographic data. As a study result, we found that the thermal island of this area from 1985 to 1999 rapidly increased with a difference of mean temperature of more than 12'E. Before construction of Bun-Dang Si the temperature of this area was the same as the forest, but during the new town construction in 1991, an urban heat island developed. The temperature of forest with a size of over 50% of the investigation area was lowest, which leads us to conclude that the forest cools the urban and its surroundings. The mean temperature of the residential and commercial area is more than +4.5$^{\circ}C$ higher then forest, so this method of land use is the main factor increasing the urban heat island. Urban heat islands and green space play an important role in urban wind systems, i.e. Thermal Induced Air Exchange and Structural Wind Circulation, because of their special properties with regard to energy balance between constructed urban and land. The skill to allocate land use types in urban areas is a very important planning device to reduce air pollution and induce the fresh cold air from green space. An urban climatic experiment featuring a numerical wind simulation study to show the air corridor will be published in a following research paper.

A Study on the Characteristics of Summer Water Temperature Fluctuations by Spectral Analysis in Coast of Korea in 2016 (스펙트럼 분석을 통한 2016년 하계 한국연안의 수온변동 특성에 관한 연구)

  • In this study, spectral analysis was conducted to identify environmental factors af ecting short-term changes in water temperature in the East, West and South coasts of Korea. The data used in the spectrum analysis is the 2016 summer water temperature, air temperature, tide level and wind data provided by Korea Hydrographic & Oceanographic Agency. In power spectrum results, peaks of water temperature and tide level were observed at same periods in West Sea (Incheon, Pyeungteak, Gunsan and Mokpo) and South Sea (Wando, Goheung, Yeosu, Tongyeong and Masan) where mean tidal range was more than 100 cm. On the other hand, periodicity of water temperature did not appear in East Sea and Busan where the mean tidal range was small. Coherence analysis showed that water temperature was highly correlated with tide in West Sea and three stations(Wando, Goheung and Tongyeong) of South Sea. Especially, correlation between water temperature and tide level in Wando and Tongyeong presented 0.96 at semi-diurnal period. Water temperature in Yeosu seems to have influenced by tide and inflow of fresh water. In Masan, water temperature is influenced by south wind, tide and inflow of fresh water. In East Sea, influence of tide on water temperature is small due to current and small tidal range. As a result of comparing the time series graph, stations where the correlation between water temperature and tide is high show that relatively cold water was inputted at flood tide and flow out at ebb tide. short-term variation of water temperature was affected by tide, but long-term variation over a month was affected by air temperature.

Determination of Salable Shelf-life for Wrap-packaged Dry-aged Beef during Cold Storage

  • We investigated microbial and quality changes in wrap-packaged dry-aged beef after completion of aging and subsequent storage in a refrigerator. After 28 days of dry aging (temperature, $4^{\circ}C$; RH, approximately 75%; air flow velocity, 2.5 m/s), sirloins were trimmed, wrap-packaged, and stored at $4^{\circ}C$ for 7 days. Analyses of microbial growth, pH, volatile basic nitrogen (VBN), 2-thiobarbituric acid-reactive substance (TABRS), and instrumental color, myoglobin, and sensory evaluation were conducted on days 0, 3, 5, and 7. The results show that the number of total aerobic bacteria (TAB), yeast, and lactic acid bacteria increased with an increase in storage days, whereas no change in the growth of mold was observed during 7 days of storage. Based on the legal standard for TAB count, the estimated shelf-life of wrap-packaged dry-aged beef was predicted to be less than 12.2 days. However, the shelflife should be less than 6.3 days, considering the result of sensory quality (odor, taste, and overall acceptance). No significant change in visible appearance was also observed during 7 days of storage. The results suggest that the present quality indicators for meat spoilage (pH, VBN, and TBARS) should be re-considered for dry-aged beef, as its characteristics are different from those of fresh and/or wet-aged beef.

Improvement of Shelf-life and Quality in Fresh-Cut Tomato Slices:

  • Quality of fresh-cut tomato slices was compared during cold storage under various modified atmosphere packaging conditions. Chilling injury of slices in containers sealed with Film A was higher than with Film B; these films had oxygen transmission rates of 87.4 and 60.0 ml $h^{-1}\;m^{-2}\;atm^{-1}$ at $5^{\circ}C\;and\;99\%$ RH, respectively. While slices in containers with an initial atmospheric composition of air, $4\%\;CO_2+1\;or\;20\%\;O_2,\;8\%\;CO_2+1\;or\;20\%\;O_2,\;or\;12\%\;CO_2+20\%\;O_2$ showed fungal growth, slices in containers with $12\%\;CO_2+1\%\;O_2$ did not. Low ethylene in containers enhanced chilling injury. Modified atmosphere packaging provided good quality tomato slices with a shelf-life of 2 weeks or more at $5^{\circ}C$. Experiments were conducted to compare changes in quality of slices of red tomato (Lycopersicon esculentum Mill. 'Sunbeam') fruit from plants grown using black polyethylene or hairy vetch mulches under various foliar disease management systems including: no fungicide applications (NF), a disease forecasting model (Tom-Cast), and weekly fungicide applications (WF), during storage at $5^{\circ}C$ under a modified atmosphere. Slices were analyzed for firmness, soluble solids content (SSC), titratable acidity (TA), pH, electrolyte leakage, fungi, yeasts, and chilling injury. With both NF and Tom-Cast fungicide treatments, slices from tomato fruit grown with hairy vetch (Vicia villosa Roth) mulch were firmer than those from tomato fruit grown with black polyethylene mulch after 12 days storage. Ethylene production of slices from fruit grown using hairy vetch mulch under Tom-Cast was about 1.5- and 5-fold higher than that of slices from WF and NF fungicide treatments after 12 days, respectively. The percentage of water-soaked areas (chilling injury) for slices from tomato fruit grown using black polyethylene mulch under NF was over 7-fold that of slices from tomato fruit grown using hairy vetch under Tom-Cast. When stored at $20^{\circ}C$, slices from light-red tomato fruit grown with black polyethylene or hairy vetch mulches both showed a rapid increase in electrolyte leakage beginning 6 hours after slicing. However, slices from tomato fruit grown using the hairy vetch mulch tended to have lower electrolyte leakage than those grown with black polyethylene mulch. These results suggest that tomato fruit from plants grown using hairy vetch mulch may be more suitable for fresh-cut slices than those grown using black polyethylene mulch. Also, use of the disease forecasting model Tom-Cast, which can result in lower fungicide application than is currently used commercially, resulted in high quality fruit for fresh-cut processing. Experiments were conducted to determine if ethylene influences chilling injury, as measured by percentage of slices exhibiting water-soaked areas in fresh-cut tomato slices of 'Mountain Pride' and 'Sunbeam' tomato (Lycopersicon esculentum Mill.). Ethylene concentration in containers without ventilation significantly increased during storage at $5^{\circ}C$, whereas little or no accumulation of ethylene occurred in containers with one or six perforations. Chilling injury was greatest for slices in containers with six perforations, compared to slices in containers with one perforation, and was over 13-fold greater than that of slices in control containers with no perforations. An experiment was also performed to investigate the effectiveness of including an ethylene absorbent pad in containers on subsequent ethylene accumulation and chilling injury. While ethylene in the no-pad controls increased continually during storage of both 'Mountain Pride' and 'Sunbeam' tomatoes at $5^{\circ}C$ under modified atmosphere conditions, no increase in accumulation of ethylene was observed in containers containing ethylene absorbent pads throughout storage. The ethylene absorbent pad treatment resulted in a significantly higher percentage of chilling injury compared with the no-pad control. In studies aimed at inhibiting ethylene production using AVG during storage of slices, the concentration of ethylene in control containers (no AVG) remained at elevated levels throughout storage, compared to containers with slices treated with AVG. Chilling injury in slices treated with AVG was 5-fold greater than that of controls. Further, we tested the effect of ethylene pretreatment of slices on subsequent slice shelf-life and quality. In slices treated with ethylene (0, 0.1, 1, or $10\;{mu}L\;L^{-1}$) immediately after slicing, ethylene production in non-treated controls was greater than that of all other ethylene pre-treatments. However, pretreatment of slices 3 days after slicing resulted in a different pattern of ethylene production during storage. Ihe rate of ethylene production by slices treated with 1 L $L^{-1}$ ethylene 3 days after slicing was greater during storage than any of the other ethylene treatments. With slices pre-treated with ethylene, both immediately and 3 days after slicing, the rate of ethylene production tended to show an negative correlation with chilling injury. Sounding Observation with Wind Profiler and Radiometer of the Yeongdong Thundersnow on 20 January 2017 (2017년 1월 20일 영동 뇌설 사례에 대한 연직바람관측장비와 라디오미터 관측 자료의 분석)

  • On 20 January 2017, the fresh snow cover which is more than 20 cm, accompaning with lightning occurred over Yeongdong coastal region for the first 3-hour of the heavy snowfall event. This study analyzed sounding observations in the heavy snow period which were including the measurements of wind profiler, radiometer and rawinsonde. The features examined from the vertical wind and temperature data at the two adjacent stations, Bukgangneung and Gangneung-Wonju National University, are summarized as follows: 1) The strong (30-40 kts) north-east winds were observed in the level from 2 to 6 km. The Strong atmospheric instability was found from 4 to 6 km, in which the lapse rate of temperature was about $-18^{\circ}C\;km^{-1}$. These features indicate that the deep convective cloud develops up to the height of 6 km in the heavy snowfall period, which is shown in the satellite infrared images. 2) The cooling was observed in the level below 1 km. At this time, the surface air temperature at Bukgangneung station decreased by $4^{\circ}C$. The narrow cooling zone estimated from AWS and buoy data was located in east-west direction. These are the features observed in the cold front of extratropical cyclone. The distributions of radar echo and lightning also show the same shape in east-west direction. Therefore, the results indicate that the Yeongdong thundersnow event was the combined precipitation system of deep convective cloud and cold frontal precipitation.

Effect of Heating by Nano-Carbon Fiber Infrared Lamps on Growth and Vase Life of Cut Roses and Heating Cost (나노탄소섬유 적외선등 난방이 절화장미의 생육과 수명 및 난방비에 미치는 영향)

  • The greatest and major cost for cut rose production during winter seasons in Korea is cost of heating the greenhouse. A study was conducted on a cost-efficient heating system to reduce expenses of cut rose growers in times of high energy prices. An infrared heating system utilizing radiant energy has an obvious advantage over other heating methods in that the energy is first used to raise temperatures of plants and other objects and subsequently that of the atmosphere, resulting in faster reaching to desired plant temperatures at a reduced heating cost. In this study the heating effect and heating cost saving of a nano-carbon fiber infrared heating system (NCFIHS) installed in cut rose greenhouses in Gimhae, Gyeongnam Province were analyzed comparatively. In addition growth, quality, and vase life of 'Orange Fresh' roses grown in greenhouses heated by NCFIHS against those grown in greenhouses heated by so called an electrical heating system. In greenhouses with a NCFlHS with a set point air temperature of $20^{\circ}C$, plant temperature was maintained at $1{\sim}2^{\circ}C$ higher than the air temperature, and temperatures of growing bed surface and root zone were maintained at $17{\sim}19^{\circ}C$ throughout cold winter nights. The cost for heating in NCFIHS was about 25 and 51% of that of an electrical heating system and a hot water heating system heated by petroleum, respectively. Growth of roses harvested in greenhouses with a NCFIHS was similar to those grown in greenhouses with an electrical heating system. However, cut roses with more intense petal and leaf colors and a longer vase life (fresh weight and amount of water uptake) were harvested in greenhouses with a NCFIHS as compared to those harvested in greenhouses with an electrical heating system.

Ventilation Corridor Characteristics Analysis and Management Strategy to Improve Urban Thermal Environment - A Case Study of the Busan, South Korea - (도시 열환경 개선을 위한 바람길 특성 분석 및 관리 전략 - 부산광역시를 사례로 -)

  • The purpose of this study is to propose a ventilation corridor management plan to improve the thermal environment for Busan Metropolitan City. To this end, the characteristics of hot and cool spots in Busan were identified by conducting spatial statistical analysis, and thermal image data from Landsat-7 satellites and major ventilation corridors were analyzed through WRF meteorological simulation. The results showed the areas requiring thermal environment improvement among hot spot areas were Busanjin-gu, Dongnae-gu, industrial areas in Yeonje-gu and Sasang-gu, and Busan Port piers in large-scale facilities. The main ventilation corridor was identified as Geumjeongsan Mountain-Baekyangsan Mountain-Gudeoksan Mountain Valley. Based on the results, the ventilation corridor management strategy is suggested as follows. Industrial facilities and the Busan Port area are factors that increase the air temperature and worsen the thermal environment of the surrounding area. Therefore, urban and architectural plans are required to reduce the facility's temperature and consider the ventilation corridor. Areas requiring ventilation corridor management were Mandeok-dong and Sajik-dong, and they should be managed to prevent further damage to the forests. Since large-scale, high-rise apartment complexes in areas adjacent to forests interfere with the flow of cold and fresh air generated by forests, the construction of high-rise apartment complexes near Geumjeongsan Mountain with the new redevelopment of Type 3 general residential area should be avoided. It is expected that the results of this study can be used as basic data for urban planning and environmental planning in response to climate change in Busan Metropolitan City.

Volatile Flavor Components and Free Radical Scavenging Activity of Cnidium officinale (천궁(Cnidium officinale)의 휘발성 향기성분 및 유리기 소거활성)

  • This study was performed to develop natural spices and functional foods using Cheongung (Cnidium officinale) which is one of the Korean medicinal plants. The volatile flavor patterns of Cnidium officinale were detected by electronic nose with 6 metal oxide sensors, and the principal component analysis was carried out. The volatile flavor components of Cnidium officinale were isolated by simultaneous steam-distillation extraction with pentane and diethylether (1 : 1), and essential oils were analyzed by capillary GC and GC/MS. The free radical scavenging activity of ethanol and methanol extracts from Cnidium officinale was measured by using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and compared with ${\alpha}-tocopherol$ as reference. The principal component analysis showed the difference of principal components between fresh and drying samples. Eighty-five volatile flavor components (643.64 ppm) from fresh Cnidium officinale were identified and the major components were butyl phthalide, sabinene, neocnidilide. Sixty-four volatile flavor components (218.15 ppm) from hot air dried one were identified and the major components were butyl phthalide, sabinene, 3-N-butyl phthalide. And 73 volatile flavor components (784.15 ppm) from freeze dried one were identified and the major components were butyl phthalide, sabinene, ${\beta}-selinene$. The free radical scavenging activity of methanol cold extract (500 ppm) of freeze dried Cnidium officinale was higher than other samples. And methanol and ethanol cold extracts (above 250 ppm) of freeze dried sample were higher than ${\alpha}-tocopherol$ $25\;{\mu}M$ (22.34%).
