Assessment of the Stability of Fresh Beef Patties with the Addition of Clove Extract during Frozen Storage

  • The study assessed the stability for fresh beef patties with the inclusion of clove extract (CE) as a natural antioxidant in comparison to butylated hydroxytoluene (BHT) and ascorbic acid (AA) at frozen storage. Four different patties were made dependent on the added antioxidants: control (added no antioxidants), added with 0.02% BHT, 0.05% AA, and 0.1% CE. Inclusion of BHT, AA, and CE resulted in a significant reduction of thiobarbituric acid reactive substances (TBARS) and hue angle (h°) value and increase of redness (CIE a*) and chroma (C*) values (p<0.05). BHT, AA, and CE were observed effectively to retard lipid oxidation and increase color stability. BHT and AA revealed significantly (p<0.05) higher thiol content than the control and CE. However, the reduction percentage for thiol content in CE treated patties was lower than the control and AA-treated patties from first to last time of storage. Moreover, inclusion of AA and CE led to significantly (p<0.05) increased heme iron content when compared to BHT and the control. In conclusion, CE can replace the application of AA and BHT while improving lipid stability, heme iron content, and color stableness of fresh beef patties throughout frozen storage.

Xanthophylls의 급여가 계육의 항산화와 육색에 미치는 영향 (Effect of Dietary Xanthophylls Supplementation on the Antioxidant and Color Properties of Broiler Meat)

  • 브로일러에 xanthophylls 급여가 계육의 색깔과 항산화력에 미치는 효과를 구명하기 위하여 본 연구를 실시하였다. 30 ppm의 lutein, canthaxanthin, astasanthin, capsanthin을 생후6주 동안 브로일러에게 급여한 후 도계 처리하였다. 도계후 24시간에 가슴육과 다리육으로 발골하고 정육을 3$^{\circ}C$에 9일 동안 저장하였다. 저장기간 동안 모든 처리구의 pH는 증가하였다. 다리육의 pH는 가슴육에 비해 높은 값을 나타내었으나 처리구간의 차이는 없었다. Xanthophyll을 급여한 브로일러육은 대조구에 비해 저장기간중에 TBARS와 POV가 낮았고, 저장 9일에는 대조구와 비교하여 모든 xnathophylls 급여구에서 유의적으로 낮은 값을 나타내었다(P<0.05). Xanthophyll을 급여하면 육색의 L(명도)값이 감소하고 a(적색도)값이 증가하였다. Astaxanthin을 급여한 브로일러의 가슴육이 저장중 항산화 효과가 있었고, canthaxanthin을 급여한 브로일러의 육이 착색효과가 높았다. 이상의 결과를 종합해 볼 때 육계에 Xanthophylls를 급여하면 일반육에 비해 육색이 농후해지며 저장 중 지방산화가 억제되는 것으로 나타났다.

  • Increasing ash content of the paper is one of the most effective methods for saving raw materials and steam consumption and improving optical properties and better print quality. However, the increase of filler loading or filler content using a conventional wet end system is limited due to severe loss in strength properties, affecting runnability and product quality. This is because the filler has no ability to make bonding with cellulosic fibers. Therefore, if the technology to give filler the bonding ability is developed, the ash content of the paper can be increased more than ever. This study was carried out to modify PCC by coating its surface with starch contributing to better bonding with fibers. To prepare the modified PCC, cationic starch was selected as a polymer and then pretreatment was done by mixing PCC and cationic starch. Consequently, the pretreated PCC contributed to higher tensile strength, stiffness and opacity than the conventional filler, such as GCC and untreated PCC. However, CIE whiteness and ISO brightness decreased slightly compared to conventional fillers.

BaO-ZnO-B2O3-SiO2계 유리에서 TiO2의 첨가가 색변환 유리의 광특성에 미치는 영향 (Effect of Titanium Dioxide in BaO-ZnO-B2O3-SiO2 Glasses on the Optical Properties of Color Conversion Glass)

  • The effect of titanium dioxide ($TiO_2$) on the properties of color conversion glasses was examined for glasses based on $BaO-ZnO-B_2O_3-SiO_2$. One glass sample, containing 25 mol% of each component, was used as a reference; the other three glass samples contained 1, 3, and 5 mol% $TiO_2$, respectively. The four color conversion glass samples were prepared by sintering a mixture of glass frits and a $YAG:Ce^+$ phosphor. The characteristics of the color conversion glass samples, such as luminous efficacy, luminance, CIE (Commission International de I'Eclairage) chromaticity, CCT (Correlated Color Temperature), and CRI (Color Rendering Index) were analyzed according to the PL spectrum. The refractive index of the glass samples was found to increase with the titanium dioxide content. In conclusion, luminous efficacy of color conversion glasses increased as the content of $TiO_2$ was raised in the glass matrix.

V2O5가 고용된 Karrooite계의 Brown색 안료합성과 특성 (Synthesis and Characterization of V2O - Doped Karrooite Brown Pigments)

  • [ $V_2O_5$ ]doped Karrooite pigments were synthesized by the solid state method to get stabilized brown pigment in oxidation and reduction atmosphere. Optimum substitution condition and limited dopant with $V_2O_5$ for Karrooite pigment was investigated. With calcination at $1250^{\circ}C{\sim}1400^{\circ}C$, compositions were designed varying $V_2O_5$ molar ratio by increasing 0.02mole to the formula $Mg_1-xTi_2-xM_{2x}O_5$(x = 0.01~0.09 mole). Synthesized pigments were analyzed by XRD, Raman spectroscopy and UV-vis. When $V_2O_5$ was doped from 0.01 to 0.05 mole, single phase of Karrooite was observed at temperature $1300^{\circ}C$ and soaking time 4h by Raman spectroscopy. However, it was found that excess $VO_2$ peak appeared with 0.07 and 0.09 mole of $V_2O_5$ doped to $MgTi_2O_5$. This result indicated that the maximum limit of solid solution is 0.05 mole $V_2O_5$. Karrooite pigments were applied as a ceramic pigment to achieve brown colors in lime magnesia glaze and lime barium graze at both of oxidation and reduction atmosphere. CIE color coordinates are $L^*$ = 40.34, $a^*$ = 9.94, $b^*$ = 21.40 in lime magnesia glaze.

  • Fe-based pigments have attracted much interest owing to their eco-friendliness. In particular, the color of nanosized pigments can be tuned by controlling their size and morphology. This study reports on the effect of length on the coloration of ${\beta}$-FeOOH pigments prepared using an $NH_4OH$ solution. First, rod-type ${\beta}$-FeOOH is prepared by the hydrolysis of $FeCl_3{\cdot}6H_2O$ and $NH_4OH$. When the amount of $NH_4OH$ is increased, the length of the rods decreases. Thus, the length of the nanorods can be adjusted from 10 nm to 300 nm. The color of ${\beta}$-FeOOH changes from orangered to yellow depending on the length of ${\beta}$-FeOOH. The color and phase structure of ${\beta}$-FeOOH is characterized by UV-vis spectroscopy, CIE Lab color parameter measurements, transmission electron microscopy (TEM), scanning electron microscopy (SEM), and powder X-ray diffraction (XRD).

Effects of Tethering and Loose Housing on the Meat Quality of Hanwoo Bulls

  • This study was carried out to investigate the effects of housing system on the carcass and meat qualities of Hanwoo (Korean cattle) bulls. Fourteen 6 months-old male calves were randomly divided into two groups. The first group was individually tethered using double neck-bar tethers. The second group was collectively loose-housed in the pen. They were raised for 15 months prior to slaughter. At 24 h post-slaughter chilling, the carcasses were weighed and evaluated by official grader for carcass traits. At 48 h post-slaughter chilling, the M. longissimus at the $12-13^{th}$ thoracic vertebra from each carcass was collected and stored at $4{\pm}0.2^{\circ}C$ for 7 days for meat quality analysis. There were no significant differences in dressing percentage and carcass yield index between groups. Meat from loose bulls had lower marbling score (p<0.05) and fat content (p<0.01) but higher PUFA concentration (p<0.001) than that from tethered bulls. There were no significant differences physical and sensory properties, aroma pattern, TBARS value, metmyoglobin concentration and CIE color values during refrigerated storage between groups. Compared to tethering, loose-housing bulls produced lower fat content and healthier meat without different physical properties, acceptability, and lipid and color stabilities.

디스플레이 장치에서 인쇄원고의 컬러 재현특성에 관한 연구 (A Study on the Color Reproduction Characteristic of Original Copy in Display Device)

  • An accurate characterization of the display device is essential for better color matching. The calibration and characterization process in display device is needed to transform the device dependent color to the device independent color. The process of characterization performs a linearization and transforms the linearized values into the CIE XYZ tristimulus values. The purposes of this paper is to propose optimal color transformation method for accurate reproduction of original copy in display device and to explain the propriety of transformation method using specific variable for the power of gradation expression.

CVD법을 이용한 적색 인조진주 코팅 및 제조 (Preparation and Coating of Red Colored Artificial Pearl by CVD Method)

  • 현대인의 눈높이에 맞는 친환경적인 고급품질의 인조진주 제품개발이 세계의 악세사리 및 생활용품 시장에서 요구되고 있다. 본 연구는 고품질의 인조진주 제품을 경제적으로 대량생산하기 위한 방법으로 유기안료를 인조진주 제조용 친환경 무기안료로 대체하고 기존 제조 방식에서 사용하는 주재료였던 니트로셀룰로오스를 우레탄 바인더로 대체하여 광택도가 73.4%에서 86.7%로 증가하였으며 CVD 마감처리 후에는 96%의 높은 광택도를 가졌다. 색차분석 결과 CVD 코팅으로 인하여 빛의 간섭효과 때문에 a*와 b*값이 각각 +37.7에서 +31.9로, +24.5에서 +14.2로 감소하면서 다양한 색을 발현하여 영롱한 빛깔의 인조진주가 제조되었다. 마감 증착된 고품질의 인조진주의 내화학성, 광택도, 색차계, 표면 거칠기, 내마모성, 중금속함량검사, 염수분무테스트 등을 분석하여 품질향상 및 인체 무해성을 확인하였다.

Effects on Growth Performance and Meat Quality Parameters by Restricted Diet during Finishing Days

  • The objective of the present study was to investigate the effects on growth performance, meat quality parameters and fatty acids of meat by restricted diet amount on finishing Berkshires. A total of 180 pigs (Berkshire, initially 52 kg BW) at 100 days of age were allotted in arrangement in a completely randomized design (10 pigs per pen), blocked arrangement of treatments with 3 replications. The variables were market ages (180, 200 and 220 days) and in which was also included sex (gilts and barrow). All the pigs were restrictively fed so that day could be marked at 103 kg. Pork quality was evaluated from 4 pigs of each treatment. Average daily gain (ADG) and average daily feed intake (ADFI) were decreased (p<0.05) with age increase. The ratio of feed to gain was increased (p<0.05) at 200 and 220 days compared to that of 180 days. Moisture and crude protein of longissimus dorsi muscle (LM) at 180 days were increased (p<0.05) compared to 200 and 220 days. Crude fat was increased (p<0.05) by age and crude ash was lower (p<0.05) at 180 days than at 220 days. Red to green meat color scale (CIE a$^{*}$) increased (p<0.05) at 200 and 220 days more than at 180 days. Regarding fatty acid composition in meat, saturated fatty acids (SFA) was increased more (p<0.05) at 220 days than at 180 and 200 days. The results indicate that even with a restricted diet of low nutrient supplement, there was an improvement in Berkshire meat quality parameters.
