  • This study was performed to investigate the effects of green tea on fat metabolism of rats and prevention to cardiovascular disease in drinking green tea. Male Spague-Dawley rats were divided into seven groups consisting of the control, lard and cholestrol, aqueous green tea at the level of 1% and 3%. After 4 weeks of feeding serum lipid levels were measured for experimental rats, and analyzed the total cholesterol (TC), HDL-cholesterol (HDL-C), triglyceride (TG), phospholipid (PL). And total lipid (TL) to Folch method, lipid deposition to oil red O staining on liver tissue. The results are as follows: Total cholesterol (TC) decreased by administration of 1% aqueous green tea group and increased addition to lard and cholesterol (LC) group as compared to each groups (p<0.05). HDL-cholestrol in serum increased by administration of la aqueous green tea group (1G) and decreased to the control group, 1% aqueous green tea (L-1G) added lard group (p<0.05). Triglyceride (TG) decreased by administration of 3% aqueous green tea groups (L-3G, LC-3G) and increased by lard and cholesterol group (LC) (p<0.01). Phospholipid(PL) decreased by administration of 3% aqueous green tea added lard and cholesterol group (LC-3G) and increased by control group, lard and cholestrol group (LC) (p<0.05). Total lipid of liver decreased by administration of aqueous green tea at the level of 1% group and increased by LC group (p<0.01). The fat deposition of liver was increased in fat diet groups and decrease in the drink green tea of some but did not showed significant differences from concentration of the green tea.

  • The effect of cooking(boiling, steaming and baking0and drying on the cholesterol content and formation of oxidized cholesterols in quid(Japanese flying squid, Todarodes pacificus) was studied. Cholesterol content of live squid meat varied with the portion sampled, and results from spectrophotometric assay ranged from 263.2mg/1..g(mantle) to 315.8mg/100g(tentacle). The cholesterol levels analyzed by gas chromatography(GC) for squid samples were lower by 7% of total cholesterol for live squid meat and 24% for processed meat than those results by spectrophotometric assay. Cooking resulted in the decrease of the initial total cholesterol content of raw meat from 10%(boiling for 5min.) to 25%(steaming for 5min.) The amounts of cholesterol remaining after baking were 68% for microwave oven samples and 64% for convection oven samples. Drying of raw tissue caused the greater reduction in cholesterol content than cooking but showed no significant difference in samples stored for 6 weeks at 4$^{\circ}C$ and 2$0^{\circ}C$. Raw squid meats contained essentially no oxidized cholesterols, while the 22-hydroxychoesterol was detected in frozen meats. The additional oxidized cholesterols as cholestane-triol was indentified with 22-hydroxycholesterols in cooked samples. Sun dried meat stored at 4一 and 2$0^{\circ}C$ for 6 weeks had the three kinds of oxidized cholesterols such as 22-hydroxycholesterol, cholesta-3,5-dien-7-one and cholestane-triol.

  • The effect of capsaicin on the toxicity of ethanol in mice were studied. Capsaicin was administered i.p. every other day for 4 weeks and 5% ethanol was provided ad libitum by tap water for 4 weeks. The administration of capsaicin 3.0 mg/kg showed the increase of body weight gain, ratio of liver wt./body wt., s-GPT. s-triglyceride and s-cholesterol, and showed the decrease of BUN as compared to control group. Capsaicin administered 3.0 mg/kg showed severe moth eaten appearance. eosinophilic necrosis and cholangitis in mouse liver The administration of 5% ethanol showed the decrease of body weight gain, ratios of liver, kidney and spleen wt./body wt., s-tryglyceride and s-cholestrol. Ethanol administered 5% solution showed little fatty change, moth eaten appearance, Kupffer cell proliferation, spotty necrosis and nuclear regeneration. The administration of capsaicin and ethanol together decreased the influence of ethanol on body weight gain, ratios of liver, kidney and spleen wt./body wt., s-triglyceride and s-cholesterol, and showed the less severe moth eaten appearance, eosinophilic necrosis and cholangitis. It might be concluded that the administration of capsaicin and ethanol together decreased the toxicity caused by capsaicin or ethanol respectively.

  • Chrominum(cr) plays an important role in carbohydrate and lipid metabolism and Cr deficiency impairs glucose tolerance and increase serum cholestrol and triglyceride. The relationships of serum Cr with serum glucose and lipids was examined in 79 female college students in Choong-Nam ares. Subjects were devided into underweight. normal and overweight groups according to their BM11. The average age, weight, height and BMI were 21.9yr, 55.89kg, 158.54cm and $22.62kg/m^2$, respectively. Height were not di fferent between groups. Serum Cr and glucose concentrations were not signi ficantly different between groups. However, there were tendency of increasing serum Cr level with increasing body weight. Serum cholesterol and LDL-cholesterol concentrations were significantly lower in underweight group than other groups. BM! had positive corelations wi th LDL-cholesterol, Al and LPH, and negative corelations with HDL-cholesterolltotal cholesterol ratio. Serum Cr concentration had positive corelation with serum glucose concentration and negative corelation with LDL-chloestrol and LPH.nd LPH.

  • The serum total cholesterol levels were measured by Rosenthal modified method for the insured persons who had passed the medical examination in a life insurance company, Seoul. The sera were obtained from 1,878 adults, 626 males and 1,252 fermales, from sep 1980 to Dec. 1981. The results obtained in the measurement were as follows; 1. The mean and standard deviation of serum cholesterol level in the healthy insured persons were $163{\pm}$ in male, and $157{\pm}24mg%$ in female. The difference of the values between male and female showed statistical signifi- (p<0.01). With regard to sex and age differences, female were significantly higher than male in the 10's, and male were higher than female in the 20's and 50's between both sexes. 2. The cholesteol of male was gradully increased about 12mg% according to the increase of every 10-year interval, but no increase was observed from the 40's to the 50's. The cholesterol level of female was higher in the 10's than in the 20's, and was increased gradually from the 20's to the 50's. 3. No significant difference in serum total cholesterol levels between the insured persons and other normal Korean groups was observed; the frequency distribution of the cholestrol level for the population showed normal distribution.

  • The present study was conducted to investigate the effects of dietary supplemental dry powder of chinese medicine refuse (CMR) on the growth performance and physiological status of broiler chicks. The treatments consisted of corn-soybean meal control diet, CMR 4 and 8% diets. A total of 120 Arbor Acre broiler chicks were randomly allotted to 12 pens ; four pens per treatment and 10 birds per pen. The body weight gain and feed intake did not show ant differences among the treatment groups, but feed conversion was significantly higher (P〈0.05) in CMR 8% group than that of the control group. Hunt L and b did not show ant differences among the treatment groups, but hunt a was darker (P〈0.05) in CMR 4 and 8% group than that of the control group. The blood concentrations of total protein, sugar, glutamic-oxaloacetic-transaminase (GOT), glutamic-pyruvic-transaminase (GPT) Hemogloben were not different among the treatment groups. The pH of thigh muscle were lower in CMR 4 and 8% groups than that of the control group, but crude fat, crude ash of thigh muscle and bone hardness in brolier chicks did not show ant differences among the treatment groups. The saturated fatty acid content of the thigh muscle tende to decrease dietary CMR increased.

  • Casein or soybean protein was subjected to there action with caffeic acidtyrosinase system at 30-35$\circ$C, pH 6.8 with aeration for 5hr. The resulting brown proteins were washed with acetone until the washings were on longer colored. However, modified protein still retained a light brown. The effects of the modified proteins and brown compounds on male Wistar strain rats were studied by pair-feeding of a cholesterol-free diet for 14days. Significant decrease in protein digestibility for the rats fed with the modified proteins were observed. Weight gain and protein digestibility were not influenced by feeding brown compounds, but the feeding of brown compound from casein caused an enlargement of caecum. The concentrations of serum cholesterol and triglyceride in the rats fed with modified proteins and brown compounds were mostly unchanged against the rats fed with untreated proteins. These results suggest that the decrease in protein digestibility induced by enzymic browning-reaction did not cause the decrease in concentration of serum cholesterol.

  • As reported previously, it was found that glucomannan, contains a potent cholesterol-lowering material. This study was designed to characterize this material further. Both the water sluble and the alcohol soluble extracts of glucomannan were prepared, and each of these extracts were capable of reducing serum and liver cholestrol levels of rats: This finding indicates that a potent cholesterol-lowering material contained in glucomannan is an organic compound with hydrophilic groups.
