Disease Incidences in Radish and Chinese Cabbage. I. Major Diseases in Radish and Chinese Cabbage grown in Alpine Areas in Jeonbug Province (고냉지단경기채소(무우. 배추) 및 평야지 추작채소단지에 발생하는 주요병해조사 I. 전북고냉지단경기 무우, 배추 주요병해)

  • Vegetables including Chinese cabbage and radish have been grown in alpine areas such as Muju, Namweon, Jinan and Jangsu during the shortage period of vegetables. The incidence of various diseases, environmental factors such as temperatures and rainfalls, and aphid populations as virus vector were observed at 10-day intervals from July to September in those areas. Disease incidence showed no significant difference among locations. Major diseases in Chin ese cabbage were bacterial soft rot, white spot, downy mildew, mosaic virus, Alternaria leaf spot and Fusarium seedling blight. Major diseases in radish were virus, white rust, black rot, root rot, leaf spot and Fusarium seedling blight. Disease incidence reached peak on Aug. 20 with $27\%$ infection in radish and with $20\%$ infection in Chinese cabbage during the growing season, and declined thereafter. Percentage of infection in each growth stage showed $25\%$ at root thickening stage and $26\%$ at the harvest time in radish; and the head formation stage, $24\%$ at the harvest time. The data indicate that disease incidence in radish increased rapidly at late growing stage and progressively increased in Chinese cabbage Seedling blight caused by Fusarium sp. and root rot caused by Aphanomyces sp. were also observed in those areas. Cool and wet weather appeared to be favorable for disease incidences during the rainy period of growing season although average temperature was about $25^{\circ}C$. Populations of aphids were lower in the alpine vegetable growing area than that of flat areas. Aphids as virus vectors from total aphids collected were $73.5\%$ or 289 virus vectors /993 total aphids in Namweon and $18.1\%$ or 31 virus vectors/171 total aphids in Muju. The most prerevalent species of aphids was Myzus persicae Sulz.

  • Occurrence and distribution of weeds were surveyed in autumn vegetable crops(Chinese cabbage, radish, cucumber and Welsh onion) in 16 cities or counties of Chungnam area during October and November 1995. Thirty weed species were occurred, and Rorippa globosa, Alopecurus aequalis var. amurensis, Stellaria media, Portulaca oleracea, Digitaria sanguinalis and Chenopodium album var. centrorubrum showed higher importance values among them. S. media, P. oleracea and A, aequalis var. amurensis were dominant in northwest coastal area, R globosa, D. sanguinalis and S. media in southwest coastal area, R globosa, A. aegualis var. amurensis and D. sanguinalis in northern area, and R globosa, A. aequalis var. amurensis and P. oleracea in southern area. S. media, R globosa and P. oleracea were dominant in Chinese cabbage fields, R globosa, Amaranthus retroflexus and S. media in radish fields, A. retroflexus, S. media and D. sanguinalis in cucumber fields, and R. globosa and P. oleracea in Welsh onion fields.

Nondestructive Vigor Test of Seed (비파괴적 방법에 의한 종자의 활력 검정)

  • Experiments were conducted to obtain information on separation of nonviable seeds from seed lots of rape, Chinese cabbage and radish, by nondestrutive ways. Seeds were artificially aged at 90% relative humidity(RH) and 45$^{\circ}C$ to get different seed qualities. Large amounts of amino acids, proteins and sinapine were leaked from the dead seeds into water in the course of 4~8 hours soaking, while high quality seeds did not leak in all crops. Percentage of normal seedlings from nonfluorescent cellulose coated seeds of rape, Chinese cabbage and radish under ultraviolet light was 96, 96 and 74%, while that of fluorescent seeds was 8, 9 and 1%, respectively. Cellulose coating and storage of Chinese cabbage and rape seeds at 60 and 75% RH for 3 months and 90% RH for 2 months did not deteriorate seed quality. But percentage of normal seedlings from nonfluorescent radish seeds stored at 60, 75 and 90% RHs for 3 months was 63, 64 and 2%, respectively.

Colonizing Aphid Species and Their Seasonal Fluctuations in Some Vegetable Crops (주요 채소에서 발생하는 진딧물의 종류와 발생소장에 관한 연구)

  • Colonizing aphid species on Chinese cabbage, radish, red pepper and cucumber and their seasonal fluctuations were investigated without insecticide treatment during $1982{\sim}1984$ at an experimental farm in Suweon. The major species among the colonizing aphids in each crops were Myzus persicae (Sulzer) and Lipaphis erysimi (Kaltenbach) on Chinese cabbage and radish; M. persicae (Sulzer) and Aphis gossipii Glaver on red pepper; and A. gossipii Glover on cucumber, respectively. Over 200mm of rainfalls within a 10-day period reduced the aphid populations drastically. Relative abundance of the two major aphids on Chinese cabbage and radish, and on red pepper showed inverse relationships between the spring and autumn densities within the same year.

Effect of Using Vegetable Powders as Nitrite/Nitrate Sources on the Physicochemical Characteristics of Cooked Pork Products

  • This study investigated the potential for using vegetable powders as a natural replacement for sodium nitrite and their effects on the physicochemical characteristics of alternatively cured pork products. We analyzed pork products subjected to four treatments: control (0.015% sodium nitrite), Chinese cabbabe powder (CCP) treatment (0.4% Chinese cabbage powder), radish powder (RP) treatment (0.4% radish powder), and spinach powder (SP) treatment (0.4% spinach powder). Among the vegetable powders prepared in this study, SP had the highest (p<0.05) nitrate content, while CCP had the lowest (p<0.05). The cooking yields from these treatments were not significantly different from each other. However, the products with vegetable powders had higher (p<0.05) pH and thiobarbituric acid reactive substances values than the control. Pork products with vegetable powders also showed lower CIE L values and higher CIE b values than the nitrite-added control. RP treatment had similar (p>0.05) CIE a values to the control, while SP treatment had the lowest (p<0.05) CIE a values. The residual nitrite content was lower (p<0.05) in the vegetable powder added pork products than in the control, although nitrosyl hemochrome and total pigment contents in the CCP and RP treatments were similar (p>0.05) to those in the control. The control, CCP, and RP treatments showed curing efficiencies greater than 80%, indicating that CCP and RP would be promising potential replacements for sodium nitrite. The results of this study suggest that RP may be a suitable natural replacement for sodium nitrite to produce alternatively cured meat products, compared to other leafy vegetable powders.

Pectin-degrading Enzymes of Kimchi Ingredients (김치재료의 펙틴 가수분해 효소활성)

  • Pectic substances are important to sustain the textural properties of kimchi during fermentation and distribution. Therefore proper control of pectin degrading enzyme activity is critical on quality control in kimchi industry. Pectin degrading enzymes of kimchi ingredients were assayed to improve the product quality. Among pectin degrading enzymes, polygalacturonase and pectinesterase were selected. The specific activity of polygalacturonase was the highest in salted and fermented anchovy, followed by chinese radish. Considering the amount of protein contents, salted and fermented anchovy and dried red pepper showed higher polygalacturonase activity than other ingredients. In terms of specific activity, chinese radish showed the highest pectinesterase activity, followed by salted and fermented anchovy. However, the total activity of salted and fermented anchovy was the highest. Chinese radish showed higher pectinesterase activity than any other ingredients.

Virulence Differentiation of Eight Turnip mosaic virus Isolates Infecting Cruciferous Crops

  • Turnip mosaic virus (TuMV) is an infectious viral pathogen on the cruciferous crops, predominantly Chinese cabbage (Brassica campestris subsp. pekinensis) and radish (Raphanus sativus). On the basis of the symptom development in selective differential hosts from indicator host species, Chinese cabbage and Korean radish inbred lines, the representative eight isolates of TuMV were divided into two major groups/or six types. Group I includes Th 1, Ca-ad7, and Cj-ca2-1 isolates, while group II includes the other isolates (rg-pfl, r 9-10, Rhcql-2, Stock and Mustard). According to the molecular phylogenetic analysis, these isolates, however, divided into two groups and two independent isolates. Phylogenetic analysis indicated that four isolates (Tu 1, r9-10, Stock and Rh-cql-2) formed a distinct phylogenetic group, and the other two isolates (Ca-ad7 and Cj-ca2-1) also formed another group. Mustard and rg-pfl isolates did not seem to have any relationship with these two groups. Taken together, these results indicated that virulence differentiation on host plants, molecular phylogenetic analysis of the nucleotide and the deduced amino acid of TuMV coat proteins did not show any relationship. The multi-resistant lines, Wonyae 20026 and BP058 in Chinese cabbage represent valuable genetic materials that can be used for crucifer breeding programs on TuMV resistance, but not in Korean radish.

Changes in Physical Properties of Dongchimi during Fermentation (동치미의 발효 중 물리적 성질의 변화)

  • The physicochemical properties of dongchimi, a Korean fermented Chinese radish, were investigated for their changes during fermentation in 7% NaCl brining solution at $4{\sim}35^{\circ}C$, The results showed that the relative viscosity of brining solution were initially decreased before steady increase there after. The Hunter L value increased and a value decreased and the turbidity also showed a similar increase as L value as affected more significantly by high fermentation temperature. The hardness of Chinese radish decreased initially followed by a little increase and then slowly decreased at later stage of fermentation. A linear relationship was found with decrease in salt concentration in brining solution and logarithmic value of brining time and activation energy was calculated for temperature range of $4{\sim}35^{\circ}C$ from the relationship.

Occurrence of Clubroot in Cruciferous Vegetable Crops and Races of the Pathogen in Korea

  • Cruciferous vegetable crops grown in several locations in Korea were surveyed from 1996 to 2000. Clubroot severely occurred up to a maximum of 100% in Chinese cabbage fields in 15 out of 42 locations, and in cabbage fields in 5 out of 13 locations surveyed. The disease also severely occurred up to a maximum of 40% in radish fields in 6 out of 35 locations, and up to a maximum of 40% and 100% in turnip and brown mustard fields in one each out of the few locations surveyed, respectively. The disease occurred less than l% in one kale field in one out of two locations surveyed. A total of 268 isolates of Plasmodiophora brassicae was obtained from six cruciferous vegetable crops. The isolates were classified into 13 races based on their pathogenicity to the differential varieties of cabbage and rutabaga. There were 13 races found in isolates from Chinese cabbage, while 6 races each were found in isolates from cabbage and radish. There were five and three races found in turnip and brown mustard isolates, respectively. One isolate from kale was identified as race 8. Race 8 was the most frequently isolated from five cruciferous vegetable crops, except brown mustard. Races 3 and 14 were isolated only from Chinese cabbage.
