The Development of HACCP-Based Standardized Recipe and the Quality Assessment of Cook/Chilled Soy Sauce Glazed Mackerel (쿡췰(Cook/Chill)시스템을 이용한 고등어조림의 HACCP 레시피 개발 및 생산과정의 품질평가)

  • The purposes of this study were to develop Hazard Analysis Critical Control Point-based standardized recipe applicable to cook/chilled soy sauceglazed mackerel and to evaluate the qualities related to the product flow of this item. After conducting experimental cooking, preliminary test, and analysis of recipes, critical control points were identified, control methods were determined, and HACCP-based recipe was standardized. At each critical control point, time-temperature profile was recorded and microbiological analysis (total aerobic plate counts, psychrotrophic plate count, coliform, and fecal coliform count), chemical analysis (pH, acid value and volatile based nitrogen (VBN)) and sensory evaluation of the item were done. Time-temperature data showed that the time the menu item had passed through temperature danger zone (5∼60C) during all phases was 60 min. At rapid cooling, but after cooling at room temperature, the temperature of this menu item did not drop below the ambient temperature. The results of microbiological test were negative throughout all phases following cooking and the results of chemical analysis did not change significantly in terms of storage periods except for VBN which increased on 7th day significantly(p<0.05). After steam/convection oven reheating and microwave oven reheating, the sensory score of the only appearance decreased significantly related to the storage time of overall quality profiles. But significant differences were not detected according to two reheating methods. In conclusion, this HACCP-based recipe was considered as an effective tool for assuring microbial as well as sensory quality of this cook/chilled item.

Study and Survey of Operating Efficiency with Cool Storage System (빙축열냉방시스템의 운전효율에 관한 조사연구)

  • The purpose of this study is to maintain high efficiency and reasonable use of cool thermal storage systems operated in the domestic building sector. As the result of efficiency test from the five types of operated cool storage systems on the condition that COP ranges are 2.6 to 3.4 during the day time and 2.1 to 3.0 during the night time and it decreased by more than 30% of rated COP given 3.8 to 3.0. The Analysis of cool storage rate shows that only 3 (21.4%) systems out of 15 buildings hold to over 40% capacity for its total capacity. To prevent the decrease in operating efficiency, it should correct the malfunction of 3-way valve and expansion valve and the mistake of control values for schedule program and increase cooling tower capacity. In order to improve piping line, it needs bypass brine line off refrigerator, separation of chilled water line with Ice Slurry system at day and night time and speed control of chilled and warm water pumps. This study does require the more studies on improving difficulty of increasing cooling load with Ice on Coil system, waterproofing with Ice Ball system, COP drop during the night time with Ice Lens, low operating temperature during the day time with Ice Slurry and increasing of Power loss due to hot gas de-icing with Ice Harvest in the future.

Quality and Shelf-life of Chilled Smoked Pork Belly Depending on Packaging Methods (포장방법에 따른 냉장 훈제삼겹살의 품질과 저장성)

  • The changes in quality and shelf life of smoked pork belly according to packaging methods were investigated during storage at 5±1C up to 12 days. Three packaging treatments including air-containing packaging (AC), vacuum packaging (VP), and packaging incorporated with oxygen scavenger (OS) were applied in this experiment. In all treatments, the initial total aerobic plate count (TPC) was 2.4 log cfu/g which was increased with storage period. The rapidest increase of TPC was observed in the AC samples, followed by OS and VP. The VP samples showed inhibiting effects on the growth of Pseudomonas spp. and coliforms over the storage. The TBA values were increased in the order of AC-OS-VP. The VBN values of the VP and OS samples tended to be increased slower than the AC samples during the storage. According to the sensory evaluations, the point of losing marketability in the raw AC, OS, and VP samples was determined to be the day 8, 10, and 12, respectively. However, the evaluations for the cooked samples showed the AC and OS samples preserved the marketing value until the day 10 and 12, while the VP samples until the day 12 except in the parameter of texture. In conclusion, it was found that the most appropriate packaging method for preserving the quality and extending the shelf life of chilled smoked pork belly is vacuum packaging.

Effect of Boning Time and Storage Temperature on Meat Qualify of Duck Breast (오리 가슴육의 발골시간과 저장온도가 육질 특성에 미치는 영향)

  • To investigate the effect of boning time and storage temperature on meat quality of duck breast, a total of thirty duck breasts were designed in frozen-thawed, chilled-storage, and cold-boning samples. No significant differences were found among pH of all samples. However, cold-boning samples showed significantly (p<0.05) lower cooking loss than the other samples. Frozen-thawed samples showed significantly (p<0.05) higher lightness (L) and yellowness(b), shorter sarcomere length and higher shear force values compared to the other samples. The result speculated that muscle shortening was affected by lower temperature (frozen) hence tenderness was decreased. Sarcoplasmic protein solubility showed no significant differences among samples, whereas cold-boning samples showed significantly (p<0.05) higher myofibrillar and total protein solubility than the other samples. The result of sodium dodecyl sulphate-polyacrylamide gel electrophoresis (SDS-PAGE) patterns, chilled-storage and cold-boning samples showed degradation at high molecular protein (nebulin), which was not observed in frozen-thawed samples. Therefore, this data suggested that muscle shortening, tenderness and protein degradation are not affected by boning time rather affected by rapid change of temperature in frozen-thawed samples.

Establishment of the Preparation Method on Quality Changes of Seasoned Perilla Leaves during Storage (깻잎절임의 조리조건 확립 및 품질변화)

  • Process development and standardization are necessary in maintaining high hygienicquality of side dishes. Seasoned perilla leaves are a typical side dish needing process development. In this study the optimum condition for preparing seasoned perilla leaves was investigated experimentally. The best sensory quality was established by response surface methodology. The rinsing and washing method of preparing fresh perilla leaves was optimized to decontaminate the raw material and preserve the product in chilled storage. Washing and rising with 3% salt water reduced the aerobic bacterial count of perilla leaves to 0.55 (log CFU/g), while rinsing reduced the load from 8.08 to 4.27 (log CFU/g). The effect of rinsing method was maintained during subsequent storage of the prepared seasoned leaves at 10C. There was no significant quality change in the product during chilled storage at 10C. Soaking in 3% salt water for 1 min, followed by rinsing with tap water, contributed positively to the microbial quality, and is proposed as the optimal preparation method.

  • The present study has been conducted economic analysis of heat storage type ground source heat pump system(HSGSHP) and normal ground source heat pump (GSHP) and central boiler system with individual air conditioning facility which are installed at the same building in the shared an apartment house. Cost items, such as initial construction cost, annual energy cost and maintenance cost of each system are considered to analyze life cycle cost (LCC) and simple payback period (SPP) with initial cost different are compared. The initial cost is a rule to the Government basic unit cost of production. LCC applied present value method is used to assess economical profit of both of them. Variables used to LCC analysis are prices escalation rate and interest rate mean values of during latest 10 years. The LCC result shows that HSGSHP (1,351,000,000won) is more profitable than central boiler system with individual air conditioning facility by 86.7% initial cost. And SPP appeared 8.0 year overcome the different initial cost by different annual energy cost.

  • To meet the demand for high quality of foods with the expanded implementation of foodservice into kindergarten, and to make the efficient use of resources, the necessity of introducing central production unit with cook/chill system into kindergarten foodservice is getting increased. The purpose of this study were to develop standardized recipe applicable to cook/chill system for kindergarten foodservice and to evaluate the microbial and sensory quality. For quantitty production of cook/chill system in kindergarten foodservice, Various Bulkogis were selected as menu items. The followings are summary of the results: 1. Standard recipes to produce Various Bulkogis(Broiled Sliced Meat with Sauce) for cook/chill system have been developed. 2. The microbial quality of Various Bulkogis during 10 days chilled storage was very good. And in this experiment, the stability of storage of standard recipes of Various Bulkogis at cook/chill system was proved for 10 days. 3. All of the items of sensory evaluation of Bulkogis has no significance between the first day and the third day of storage, except the color of Pork Bulkogi (P<0.05).

Changes in Physicochemical Properties of Packaged Backsulgi during Storage (포장한 백설기의 저장과정 중 이화학적 변화)

  • Packaged Backsulgi cooked by steam/convection oven and then rapidly chilled was examined by research of microbiological test and sensory evaluation while storing them at the temperatures of 3C and 30C for 0, 2, 4, 6, 10 days . The pH and reducing sugar content were seemed to change little at 3C. However the pH was rapidly reduced until 4 days and then decreased a little at 30C, the reducing sugar content was inclosed little by little. In the microbiological test, any microbial growth in total aerobic, psychrophilic, anaerobic, spore forming bacteria, yeast and molds was not observed until 10 days at 3C, but microbial changes of aerobic, psychrophilic and anaerobic bacteria increased to 6 logCFU/g until 10 days at 30C. However microbial changes of them decreased from 6 logCFU/g to 5 logCFU/g. As a result of the sensory evaluation, appearance, taste, color, softness, chewiness and overall Quality were significantly decreased during storage times(p<0.05), but scores of taste and overall quality on 6th days were 7.38±1.06, 7.00±0.93. Therefore we concluded that there was no problem about stability of storage 6 days at 3C.

Optimal Cooling Operation of a Single Family House Model Equipped with Renewable Energy Facility by Linear Programming (신재생에너지 단독주택 모델 냉방운전의 선형계획법 기반 운전 최적화 연구)

  • Optimal cooling operation algorithm was developed based on a simulation case of a single family house model equipped with renewable energy facility. EnergyPlus simulation results were used as virtual test data. The model contained three energy storage elements: thermal heat capacity of the living room, chilled water storage tank, and battery. Their charging and discharging schedules were optimized so that daily electricity bill became minimal. As an optimization tool, linear programming was considered because it was possible to obtain results in real time. For its adoption, EnergyPlus-based house model had to be linearly approximated. Results of this study revealed that dynamic cooling load of the living room could be approximated by a linear RC model. Scheduling based on the linear programming was then compared to that by a nonlinear optimization algorithm which was made using GenOpt developed by a national lab in USA. They showed quite similar performances. Therefore, linear programming can be a practical solution to optimal operation scheduling if linear dynamic models are tuned to simulate their real equivalents with reasonable accuracy.

Effects of Different Feeding Regimes on Deer Meat (Venison) Quality Following Chilled Storage Condition

  • This study was conducted to investigate the effect of different feeding regimes on the quality of deer meat (venison) following storage at 4C for various durations. Twelve 5-year-old elk stags about 350 kg were stratified by weight and randomly assigned to one of four dietary treatments (three elk stags per treatment). The dietary treatments consisted of a feeding concentrate of 1.5% of body weight (T1), feeding concentrate of 1.8% of body weight (T2), feeding concentrate ad libitum (T3), or a home-mixed ration ad libitum (T4). The pH values of deer meat were not significantly different among treatment groups but were affected by duration of storage. Cooking loss increased under T4 treatment with increasing storage time at 4C (p<0.05). Increased storage time also resulted in significant decreases in shear force under T2 and T3 treatment compared to that under other dietary treatments (p<0.05). Lightness (L), redness (a), and yellowness (b) parameters were not significantly different among treatment groups, but lower values of a and b were observed under T1 and T4 treatment with increasing durations of storage (p<0.05). The chemical and fatty acid composition had no significantly different among treatments. Therefore, meat quality was most affected by increased storage time at 4C. These results may serve as the basis for further study of deer meat (venison) from Korea.
