Is Whole Cereal Grain a Functional Food? What is the Functional Food Concept Trying to Accomplish?

  • The relatively new concept of functional foods is supportive of sales of food products that deliver isolated 'nutrient' or 'food compound' substances, much as is done by dietary supplements. Whether such isolated substances have benefit must be investigated in each instance; such investigations can be complex. At the same time, simply prepared natural plant foods contain a myriad of substances that, in accord with the concept of food synergy, are beneficial for health. Whole grain foods are an example of such healthy fare, based on strong epidemiologic and experimental evidence. If the concept of functional foods is to be of use for the public health, it should support the consumption of healthy traditional foods as well as promoting 'novel' foods; in this sense, whole grain foods, which have great functionality, should be regarded as functional foods.

진주조의 영양과 이용 및 생산성 (Nutrition, Utilization and Productivity of Pearl Millet Hybrids Developed in Korea)

  • Pearl millet is a $C_4$ plant and summer crop originated from west Africa, and the sixth most important cereal in the world and the most widely cultivated millet in the semi-arid tropics as a major staple food crop. Its grain of higher quality protein is used to make unleavened bread chapatis and prepared as gruel, dumplings, couscous and beer. It is also used as animal feed and forage in both temperate and tropical regions because it has a capability to grow well not only in the fertile soil, but also in the poor and dry soil. Most of the current breeding procedures used in pearl millet are aimed at maximum exploitation of hybrid vigor for both grain and forage yields in Korea. Pearl millet is ideally suited for exploitation of heterosis using cytoplasmic male sterile lines as seed parent, and fertile inbred lines and open-pollinated cultivars as pollen parent. Pearl millet hybrids developed in Korea produced 3 to 7 tons of grain and 100 to 150 tons of green fodder per hectare.

벼 중만생 고품질 복합내병충성 신품종 '다청' (A New Mid-late Maturing Rice Cultivar with High-Quality and Multiple Resistance to Diseases and Insects, 'Dacheong')

  • '다청'은 국립식량과학원 벼맥류부에서 2008년도에 육성한 중만생 고품질 복합내병충성 품종으로 주요특성과 수량성을 요약하면 다음과 같다. 1. 남서해안지, 호남 및 영남평야지 보통기 보비재배에서 평균 출수기가 8월 19일로 '남평벼'보다 2일 늦은 중만생종이다. 2. 간장은 87 cm로 '남평벼'보다 크며, 수당립수는 많고 등숙비율이 다소 낮은 중립종에 속한다. 3. 위조현상은 나타나지 않았으며 성숙기 하엽노화가 늦고 수발아는 '남평벼'보다 잘 되는 편이다. 내냉성은 보통이다 4. '다청'은 도열병, 벼흰잎마름병($K_1-K_3$), 줄무늬잎마름병, 벼멸구에 저항성 반응을 보였다. 5. 입형은 현미장폭비가 1.73으로 단원형이며 복백이 약간 있으나 맑고 투명하다. 아밀로스함량 및 단백질함량은 '남평벼'에 비해 낮고 밥맛은 매우 양호하다. 6. 쌀수량은 보통기 표준재배에서 5.91 MT/ha로 '남평벼' 보다 6% 많은 편이다.

Harvesting Performance of the Prototype Small Combine for Buckwheat and Adlay

  • Purpose: The aim of this study was to investigate the harvesting performance of a prototype small combine for buckwheat and adlay. Methods: The prototype small combine was designed and constructed. Its ratio of grain loss, ratio of output components in the grain outlet, and field capacity for harvesting buckwheat and adlay were analyzed through field tests. Results: The prototype small combine required a working width of about 0.6 to 0.7 m to harvest buckwheat. The maximum travel speed was about 0.36 m/. The total ratio of grain loss was about 21.6%, which consisted of 8.8% at the header and 12.8% at the dust outlet. The grain and the material other than grain (MOG) ratios at the grain outlet were 94.1% and 5.9% respectively. In the case of adlay harvest, the maximum working width was about 1.2 m, that is, two rows. The range of maximum travel speed was about 0.45 to 0.46 m/s. When adlay was harvested in one row, the total ratio of grain loss ranged from 36.3 to 42.8% according to the cutting height. The cutting height of 30 cm resulted in a higher total ratio of grain loss than 60 cm and 90 cm. When the cutting height was 60 cm, there was no significant change in the total ratio of grain loss according to the number of working rows and the stage of the primary transmission shift. The total ratio of grain loss ranged from 35.2 to 37.7%. The grain and the MOG ratios at the grain outlet ranged from 93.1 to 95.8% and from 4.2 to 6.9%, respectively. No significant difference was observed in relation to cutting height, number of working rows, and the stage of the primary transmission shift. Conclusions: The prototype small combine for harvesting miscellaneous cereal crops showed good potential for the efficient harvesting of buckwheat and adlay. However, to improve the harvesting performance, there seems to be a need to develop new crop varieties suitable for machine-based harvesting and improve the transmissions, reels, separation/cleaning systems.

한국인의 전곡류 섭취와 인구사회적 요인 및 일부 식행동 특성 간의 연관성: 2007-2008 국민건강영양조사 자료를 이용하여 (Association of Whole Grain Consumption with Socio-Demographic and Eating Behavior Factors in a Korean Population: Based on 2007-2008 Korea National Health and Nutrition Examination Survey)

  • The objective of the current study was to examine associations of whole grain consumption with socio-demographic (i.e.: sex, age, household income, education, marriage status) and certain eating behavior factors (i.e.: dish source, eating place, meal type) among a generally healthy Korean population. Using twenty-four hour recall data from the 2007-2008 National Health and Nutrition Examination Surveys, whole grain intake (g/day) was calculated for a total of 8,836 generally healthy Koreans aged 6 years and higher. The study subjects had very low whole grain intake. Specifically approximately 60% of the subjects reported no whole grain consumption on the survey day, and mean daily intake ranged from 8.0 g to 15.1 g in different gender and age groups. Living with a spouse was found to be a positive environment factor for whole grain consumption, especially among men. As household income levels increased, whole grain consumption status also improved. The proportion of non-consumer was lowest in a 6-19 year group, and mean intake amount was highest in middle-aged adults. Major dish sources for whole grain consumption included boiled rice with mixed grains, corn, boiled rice with brown rice, cereal products, and other types of boiled rice. It was found that whole grain consumption was highly affected by eating places rather than meal types. The best contributing eating place was home in each age and gender group. The study findings may be useful in planning nutrition education strategy and formulating dietary behavior guidelines for whole grain consumption improvement.

헤어리베치와 부분경운에 의한 잡초발생과 수수의 생육 및 수량 (Weed Occurrences, Growth and Yield of Sorghum (Sorghum bicolor) by Hairy Vetch and Partial-Width Tillage)

  • 본 연구는 유기농업을 위한 중경제초기 개발로 제초날 형상 등 제초기 본체와 헤어리베치 파종시기 및 경운방법별 잡초발생 양상과 수량을 분석하였다. 헤어리베치의 건물량은 추파가 $6,730g\;ha^{-1}$로 춘파 $1,690g\;ha^{-1}$보다 3배 이상 높았다. 파종시기에 따른 헤어리베치의 식물체 분석을 보면, 전 질소는 추파가 5.4 kg으로 춘파 2.0 kg에 비해 2배 이상 높았다. 관행 비닐멀칭구에 비해 헤어리베치 처리구가 초장, 경태, 그리고 엽수가 다소 작았고, 출수기도 추파구는 8일, 춘파구는 12일 지연되었다. 잡초방제가는 무피복 대비 각각 피복비닐구, 부분경운구가 각각 88%, 71% 순이었다. 수량은 단작 비닐멀칭구가 $2,310kg\;ha^{-1}$, 추파 부분 경운구가 $2,130kg\;ha^{-1}$이었다.

Response of Millet and Sorghum to Water Stress in Converted Poorly Drained Paddy Soil

  • Millet and sorghum are major dryland cereal crops, however their growth and productivity is limited by soil water stress with varying intensity. The major objective of this study was to evaluate water stress of millet and sorghum yield under drainage classes of poorly drained soil and to test the effect of the installed pipe drainage in poorly drained paddy soil to minimize crop stress. The research was carried out in poorly drained paddy fields located at alluvial slopping area resulting in non-uniform water content distribution by the inflow of ground water from the upper part of the field. Stress Day Index (SDI) was determined from a stress day factor (SD) and a crop susceptibility factor (CS). SD is a degree of measurement by calculating the daily sum of excess water in the profile above 30cm soil depth ($SEW_{30}$). CS depends on a given excess water on crop stage. The results showed that sum of excess water day ($SWD_{30}$) used to represent the moisture stress index was lower on somewhat poorly drained soil compared with poorly drained soil on 117 days. CS values for sorghum were 57% on $3^{rd}$ leaf stage, 44% on $5^{th}$ leaf stage, 37% on panicle initiation, 23% on boot stage, and 16% on soft dough stage. For proso millet CS values were 84% on $3^{rd}$ leaf stage, 70% on $5^{th}$ leaf Stage, 65% on panicle initiation, 53% on boot stage, and 28% on soft dough stage. And for foxtail millet the values were 73% on $3^{rd}$ leaf stage, 61% on $5^{th}$ leaf stage, 50% on panicle initiation, 29% on boot stage, and 15% on soft dough stage. SDI of sorghum and millet was more susceptible to excess soil water during panicle initation stage more poorly drained soil than somewhat poorly drained soil. Grain yield was reduced especially in proso millet and Foxtail millet compared to Sorghum.

  • '중모1012호'는 국립식량과학원 상주출장소에서 2010년도에 육성한 조생 고품질 고식미 내수발아성 중간모본으로 주요 특성과 수량성을 요약하면 다음과 같다. 1. 남부중산간지, 북부평야지 및 중산간지, 남부고냉지 및 동북부해안지 보통기 보비재배에서 평균 출수기가 7월 31일로 '오대벼'보다 2일 늦은 조생종이다. 2. 간장은 78 cm로 '오대벼'보다 크며, 수당립수는 많고 등 숙비율이 높은 중립종에 속한다. 3. 위조현상은 나타나지 않았으며 성숙기 하엽노화가 늦고 수발아는 '오대벼'보다 안되는 내수발아성이다. 내냉성은 보통이다. 4. '중모1012호'는 도열병에 저항성 반응을 보였다. 5. 입형은 현미장폭비가 1.85로 단원형이며 심복백이 약간있으나 맑고 투명하다. '오대벼'에 비해 아밀로스함량은 낮고 단백질함량은 약간 높으며 밥맛은 매우 양호하다. 6. 쌀수량은 보통기 표준재배에서 5.55 MT/ha로 '오대벼'보다 3% 많은 편이다.

  • "만나"는 국립식량과학원 벼맥류부에서 2005년도에 육성한 조생 고품질 소득작물 후작품종으로 주요특성은 다음과 같다. 1. 만나는 중부 및 남부평야지 만기재배에서 평균 출수기가 8월 31일로 금오벼보다 일 늦은 조생종이다. 2. 간장은 70 cm로 금오벼 보다 4 cm 작으며 주당수수 및 수당립수는 금오벼와 비슷하나 등숙비율은 다소 떨어진다. 정조 및 현미 천립중은 금오벼보다 다소 무거운 중소립종이다. 3. 위조현상은 나타나지 않았으며 불시출수는 금오벼에 비해 적게 나타나며 수발아는 금오벼보다 잘되는 편이다. 유묘기 내냉성은 금오벼와 비슷하나 출수지연일수가 짧으며 임실율은 금오벼보다 높아 내냉성이 강한 편이다. 4. 잎도열병에 강한 저항성을 보였으나 흰잎마름병($K_1{\sim}K_3$), 줄무늬잎마름병 및 기타 바이러스병(오갈병, 검은줄 오갈병)에는 이병성이며 벼멸구에 저항성이 없다. 5. 쌀은 단원형으로 투명도가 양호하며 외관품위는 금오벼보다 좋다 단백질 함량은 금오벼보다 낮으며 밥맛이 매우 양호하다. 제현율, 현백율, 도정율, 백미완전립율 및 완전미도정수율은 금오벼보다 높다. 6. 만기재배에서 평균 쌀수량이 472 kg/10a으로 금오벼 대비 11% 증수하였다.

태안 마도1·2호선 해양 유물로 본 고려시대의 음식 문화 (Food Culture of Koryo Dynasty from the Viewpoint of Marine relics of Taean Mado shipwrecks No. 1 and No. 2)

  • This study examined the food culture of the Koryo Dynasty during the early 13th century based on the records of wooden tablets and marine relics from the 1st and 2nd ships of Mado wrecked at sea off Taean while sailing for Gaegyeong containing various types of grain paid as taxes and tributes. The recipients of the cargo on the 1st ship of Mado were bureaucrats living in Gaegyeong during the period of the military regime of the Koryo Dynasty, and the place of embarkation was the inlet around Haenam (Juksan Prefecture) and Naju (Hoijin Prefecture) in Jolla-do. On wooden tablets were recorded 37 items of rice, cereal, and fermented foods. The measures used in the records were seok [石-20 du (斗)] for cereal, seok [15 du, 20 du] for fermented soybean paste, and pot (缸) and volume (斗) for salted fish. The places of embarkation on the 2nd ship of Mado were Jeongeup (Gobu Prefecture), Gochang (Jangsa Prefecture, Musong Prefecture), etc. On wooden tablets were recorded 29 items of rice, cereal, fermented foods, seasame oil, and honey. The volume measure for yeast guk (麴), the fermentative organism for rice wine, was nang [囊-geun (斤)], and the measure for sesame oil and honey, which were materials of oil-and-honey pastries and confections, was joon (樽-seong, 盛). Honey and sesame oil were luxury foods for the upper-class people of the Koryo Dynasty, and they were carried in high-quality inlaid celadon vases in Meibyung style. Food names and measures written on wooden tablets and actual artifacts found in the 1st and 2nd ships of Mado are valuable materials for research into agriculture, cereal, and fermented foods of the Koryo Dynasty in the early 13th century. Besides, relics such as grains and bones of fish and animals from the Koryo Dynasty are expected to provide crucial information usable in studies on food history of the Korean Peninsula.
