한우 도체형질의 환경효과 및 유전모수의 추정 (Estimation of Environmental Effect and Genetic Parameters for The Carcass Traits in Hanwoo (Korean Cattle))

  • 2007년 한․미 FTA 협상 체결로 미국산 쇠고기 수입이 재개된 현재 육질과 가격면에서 우수한 수입육이 늘어나고 있는 상황에서 한우의 경쟁력강화를 위해 많은 노력이 이루어지고 있다. 한우개량농가는 송아지 생산량의 빠른 증가와 송아지 폐사율의 감소로 사육기술이 향상되어지고 있으며, 1993년 이후부터 한우 경쟁력강화를 위해 육질개량에 중점을 두고 거세를 통한 장기 비육으로 1등급이상의 출현율이 점차 증가하는 추세를 보이고 있다. 소비자의 식육패턴도 양적인 측면에서 질적인 측면으로 변화하고 있다. 고급육의 생산은 품종(Course 등, 1989), 성별, 연령(Hunsley 등, 1971) 등에 의하여 결정될 수가 있다. 한우 도체형질에 관한 연구는 국내에서도 최근 박과 박(2002)과 노 등(2004)이 연구 보고하였으나 이는 후대검정우와 후대축들의 도체형질에 관한 연구였으며, 일반 한우 사육농가의 도체형질에 관한 연구는 이루어 지지 않고 있다. 환경효과의 경우 대부분의 연구가 출생년도-계절, 출생지역의 효과를 추정하였으며, 도축년도, 도축계절, 도축지역에 관한 연구는 이루어 지지 않고 있다. 본 연구에서는 일반 한우사육농가에서 출하하여 도축한 축산물등급판정소의 등급판정결과를 이용하여 도축년도, 도축계절, 성, 도축지역이 도체형질에 어떠한 영향을 미치는지 추정하고, 도체형질에 대해 REML(Restricted Maximum Likelihood) 방법으로 유전력 및 유전모수를 추정하여 일반 한우사육농가에서 출하한 개체의 도체형질에 관해 알아봄으로써 후대검정우나 후대축이 아닌 우리나라 전체 도축우에 대한 기초자료를 제공하고자 한다.

  • To further investigate the regions on porcine chromosome 7 that are responsible for economically important traits, phenotypic data from a total of 287 F2 individuals were collected and analyzed from 1998 to 2000. All animals were genotyped for eight microsatellite loci spanning the length of chromosome 7. QTL analysis was performed using interval mapping under the line-cross model. A permutation test was used to establish significance levels associated with QTL effects. Observed QTL effects were (chromosomewide significance, position of maximum significance in centimorgans): Birth weight (<0.01, 3); Carcass length (<0.05, 80); Longissimus muscle area (<0.01, 69); Skin percentage (<0.01, 69); Bone percentage (<0.01, 74); Fat depths at shoulder (<0.05, 54);Mean fat depth (<0.05, 81); Moisture in m. Longissimus Dorsi (<0.05, 88). Additional evidence was also found which suggested QTL for dressing percentage and fat depths at buttock. This study offers confirmation of several QTL affecting growth and carcass traits on SSC7 and provides an important step in the search for the actual major genes involved in the traits of economic interest.

Evaluation of crude protein levels in White Pekin duck diet for 21 days after hatching

  • In poultry diets, a requirement of crude protein is one of the most important factors in poultry productivity. Besides, the Pekin duck requirement of crude protein is still not clear. This experiment was conducted to determine the crude protein requirement of Pekin duck on diet formulation by investigation of growth performance, carcass trait, and analysis of blood parameter for a hatch to 21-day (d) of age. A total of 432 male White Pekin ducks were randomly allocated to six levels of crude protein (i.e., 15%, 17%, 19%, 21%, 23%, and 25%) to give six replicate pens per treatment with 12 ducklings per each pen. Body weight and feed intake were measured weekly by calculating feed conversion ratio and protein intake. Two ducklings each pen was euthanized via cervical dislocation for analysis of carcass trait and plasma blood on 21-d of age. Data were applied on both prediction linear-plateau and quadratic-plateau models by estimation of the crude protein requirements. The level of crude protein requirements of Pekin ducks for 21 days after the hatch was estimated to be 20.63% and 23.25% diet for maximum daily gain, and minimum feed conversion ratio, respectively.

  • This study was performed to determine the influence of pig breed and gender on the ultimate pH and physicochemical properties of pork. The correlations between pH and pork quality traits directly related to carcass grade, and consumer's preference were also evaluated. The pH and meat grading scores for cold carcasses of 215 purebred pigs (Duroc, Landrace, and Yorkshire) from four different farms were obtained. Meat quality parameters of the pork loin were analyzed. Duroc and female animals were more affected compared to other breeds and male pigs. Duroc animals had the highest ultimate pH, carcass back fat thickness, marbling scores, yellowness, and fat content (p<0.05). Landrace pigs had the highest color lightness and cooking loss values (p<0.05). Among all trait parameters, marbling scores showed the highest significant differences when evaluating the impact of breed and gender on meat quality characteristics (p<0.001). Ultimate pH was positively correlated with carcass weight (0.20), back fat thickness (0.19), marbling score (0.17), and color score (0.16) while negatively correlated with cooking loss (-0.24) and shear force (-0.20). Therefore, pork samples with lower ultimate pH had lower cooking loss, higher lightness, and higher shear force values irrespective of breed.

한우 거세우의 적정 출하월령 추정 (Estimation of Resonable Market Month of Age for Hanwoo Steer)

  • 본 연구는 도체월령별 도체형질의 변화를 분석하여 적정 도축시기를 결정하는 데 필요한 정보를 얻기 위한 목적으로 실시하였으며, 2005년 10월부터 2011년 9월 사이에 도축된 거세우 17,249두의 도체형질자료를 이용하였다. 각 도체형질의 평균과 표준편차는 도축일령, 도체중, 등지방두께, 등심면적, 근내지방도, 육량지수, 도체단가 및 도체 총가격에서 각각 $940.4{\pm}73.00$, $437.0{\pm}48.70$ kg, $12.1{\pm}4.32$ mm, $90.3{\pm}9.51cm^2$, $5.7{\pm}1.86$, $65.13{\pm}3.23$, $14.150{\pm}1.77$천원 및 $6181.18{\pm}1009.46$천 원으로 나타났다. 도체월령별 회귀계수에서 조기 도축그룹에서는 도체 단가를 제외한 전체 형질들에서, 만기 도축그룹에서는 근내지방도를 제외한 전체 형질들에서 월령별 회귀계수가 유의성이 인정되었다. 수익을 얻기 위해서는 28개월령 이전으로 도축시기를 결정해야 할 것으로 판단된다.

Genetic Parameter Estimation of Carcass Traits of Duroc Predicted Using Ultrasound Scanning Modes

  • A total of 6,804 records for Duroc breed were collected from three farms registered at the Korean Animal Improvement Association (KAIA) from 1998 to 2004 of which both records from two ultrasound modes (A and B) were analyzed to estimate the variance components of carcass traits. Three carcass traits backfat thickness (bf), loin eye muscle area (lma) and lean meat percentage (lmp) were measured. These traits were analyzed separately as bf1, lma1 and lmp1 for ultrasound mode A and bf2, lma2 and lmp2 for ultrasound mode B with multiple trait animal model by using MTDFREML (Boldman et al., 1993). All the traits revealed medium heritability values. Estimated heritabilities for bf1, bf2, lma1, lma2, lmp1 and lmp2 were 0.45, 0.39, 0.32, 0.25, 0.28 and 0.39, respectively. Estimated genetic correlations for traits bf1 and bf2, lma1 and lma2, lmp1 and lmp2 were positive but low. Specifically, genetic correlations between bf1 and bf2 was 0.30 while the estimates for lean traits between lma1 and lma2 and between lmp1 and lmp2 were 0.15 and 0.18, respectively. Conversely, high negative genetic correlations existed between bf1 and the lean traits lma2, lmp2. Likewise, the estimated genetic correlations between lma1 and lma2 and lmp1 and lmp2 were low.

Evaluation of BTA1 and BTA5 QTL Regions for Growth and Carcass Traits in American and Korean Cattle

  • Previously identified QTL regions on BTA1 and BTA5 were investigated to validate the QTL regions and to identify candidate genes for growth and carcass traits in commercial cattle populations from the USA and Korea. Initially, a total of 8 polymorphic microsatellite (MS) markers in the BTA1 and 5 QTL regions were used for Chi-square tests to compare the frequencies of individual alleles between high and low phenotypic groups for the US (Michigan Cattleman's Association/Michigan State University; MCA/MSU) cattle. For a subsequent study, 24 candidate genes containing missense mutations and located within the QTL regions based on bovine genome sequence data were analyzed for genotyping in the two commercial cattle populations. Re-sequencing analyses confirmed 18 public missense SNPs and identified 9 new SNPs. Seventeen of these SNPs were used for genotyping of the MCA/MSU cattle (n = 98) and Korean native cattle (n = 323). On BTA1, UPK1B, HRG, and MAGEF1 polymorphisms residing between BM1312 and BMS4048 were significantly associated with growth and carcass traits in one or both of the MCA/MSU and Korean populations. On BTA5, ABCD2, IL22 and SNRPF polymorphisms residing between BL4 and BR2936 were associated with marbling and backfat traits in one or both of the MCA/MSU and Korean cattle populations. These results suggested that BTA 1 and 5 QTL regions may be segregating in both Korean Hanwoo and USA commercial cattle populations and DNA markers tested in this study may contribute to the identification of positional candidate genes for marker-assisted selection programs.

Effect of Methionine Source and Dietary Crude Protein Level on Growth Performance, Carcass Traits and Nutrient Retention in Chinese Color-feathered Chicks

  • A total of 1,200 LinNan Chinese color-feathered chicks were used to study the effects of methionine source [DL-2-hydroxy-4-methylthio-butanoic acid (HMTBa) or DL-methionine (DLM)] and dietary crude protein (CP) level on growth performance, carcass traits, and whole-body nitrogen and fat retention. The trial was designed as a $2{\times}2$ factorial arrangement, including two CP levels (adequate and low) and two methionine sources (HMTBa and DL-methionine). Diets were formulated for three phases, starter (0-21 d), grower (21-42 d), and finisher (42-63 d). Chicks fed HMTBa had higher daily gain and improved feed efficiency than DLM during the grower phase (p<0.05). A significant two-way interaction was observed for growth performance during the finisher phase and overall (0-63 d). Growth performance was greater for chicks fed HMTBa than DLM on adequate-CP diets (p<0.05), but this was not observed at low-CP level (p>0.05). Chicks fed low-CP diets grew slower, used feed less efficiently during the grower, finisher phase and overall. On d 42, regardless of dietary CP levels, birds fed HMTBa had higher carcass weights, breast and thigh weights than DLM-fed birds (p<0.04). Birds fed low-CP diet had lighter carcass weights and less breast muscle, thigh muscle, and dressing percentage at the end of starter, grower and finisher phases (p<0.05). Whole body composition analyses found that birds fed HMTBa tended to contain more protein and less fat compared to those chicks fed DLM at the end of the starter phase (p<0.10). Low-CP diets increased CP concentration in the whole body at the end of the finisher phase (p = 0.05). HMTBa supplementation increased whole-body N retention rate during the finisher phase and overall (p<0.01), and low-CP diets reduced N intake and whole-body fat retention during the finisher phase and overall (p<0.05). In summary, HMTBa was better than DLM on an equimolar basis for growth performance, carcass traits, and N retention in Chinese color-feathered chicks. Low-CP diets lowered growth performance as well as carcass traits in color-feathered birds, probably due to imbalanced AA profiles.

사육농가의 효과가 한우 암소의 도체형질 유전 평가에 미치는 영향 (Effects of Raising Farm on Genetic Evaluation for Carcass Traits in Hanwoo Cows)

  • 본 연구는 도체 평가형질인 도체중, 등지방두께, 등심면적 및 근내지방도에 대한 유전모수 및 한우 암소 번식우의 육종가 추정에서 사육농가가 미치는 영향력을 파악하기 위하여 실시하였다. 자료는 강원도 평창군내 한우 사육농가에서 비육 출하한 거세우의 도체성적과 거세우의 혈통 자료를 이용하였으며 유전분석은 다음과 같은 3개의 모델을 적용하여 실시하였다. 모델 1은 도축장소-도축년도-도축월을 동기우 그룹으로 형성한 고정효과로 그리고 상가적 개체 유전 효과를 임의 효과로 포함시켰고, 모델 2는 모델 1에 사육농가의 효과를 임의 효과로 추가하였으며, 모델 3은 모델 1에 사육농가의 효과를 고정효과로 추가하였다. 각 모델을 적용해서 실시한 분석결과를 비교해보면 모델 1에 비해 사육농가의 효과를 포함한 모델 2나 모델 3에서 모든 형질의 유전력 추정치가 작았는데 특히 도체중의 경우 모델 1에서의 유전력이 0.23, 모델 2에서의 유전력이 0.15, 모델 3에서의 유전력이 0.18로 사육농가효과를 포함한 모델에서 유전력 크기의 감소가 더 심했으며, 사육농가를 포함한 모델 2나 모델 3의 최대우도 값(maximum log Likelihood)은 도체중에서 각각 -44629.70과 -43956.12, 등지방두께에서 각각 -22939.43과 22687.18, 등심 면적에서 각각 29370.39와 29016.19, 근내지방도에서 각각 -11678.12와 -11591.64로 사육농가를 포함하지 않은 모델 1에서 각각의 우도함수 값 -44900.86 (도체중), -23055.71 (등지방두께), -29438.26 (등심면적), -11750.38 (근내지방도) 보다 더 컸고, 사육농가의 효과를 임의효과로 적합시킨 모델 2에서 사육농가의 분산은 형질에 따라 최대 18% (도체중)에서 최하 4% (등심면적)의 범위로 추정되었다. 그리고 거세우 어미 전체의 육종가를 이용하여 추정한 육종가의 모델 간 순위 상관 계수와 모델 1로 추정한 육종가에 근거하여 상위 10%와 하위 10%에 해당하는 암소를 각각 선발하고 선발된 집단 내에서 추정된 각 형질들의 모델 간 순위 상관계수를 추정한 결과 상위 10% 그룹내에서 형질별로 모델간 상관 계수는 0.57에서 0.95의 범위였고, 하위 10% 그룹 내에서 0.68에서 0.95의 범위였는데 이것은 육종가 추정에 적용된 모델에 따라 육종가 순위에 차이가 발생할 수 있음을 보여준다. 이러한 결과들은 한우 암소의 도체형질 개량을 위한 목적으로 육종가를 추정할 때 분석모형에 사육농가의 효과를 포함시켜야 함을 시사한다.

Identification of Quantitative Traits Loci (QTL) Affecting Growth Traits in Pigs

  • Molecular genetic markers were used to detect chromosomal regions which contain economically important traits such as growth, carcass, and meat quality traits in pigs. A three generation resource population was constructed from a cross between Korean native boars and Landrace sows. A total of 240 F2 animals from intercross of F1 was produced. Phenotypic data on 17 traits, birth weight, body weights at 3, 5, 12, and 30 weeks of age, teat number, carcass weight, backfat thickness, body fat, backbone number, muscle pH, meat color, drip loss, cooking loss, water holding capacity, shear force, and intramuscular fat content were collected for F2 animals. Animals including grandparents (F0), parents (F1), and offspring (F2) were genotyped for 80 microsatellite markers covering from chromosome 1 to 10. Least squares regression interval mapping was used for quantitative trait loci (QTL) identification. Significance thresholds were determined by permutation tests. A total of 10 QTL were detected at 5% chromosome-wide significance levels for growth traits on SSCs 2, 4, 5, 6, and 8.
