Effect of Aging Time and Cooking Temperature on Physicochemical and Sensory Characteristics of Pork Neck (숙성기간과 조리온도가 돼지 목심육의 이화학적.관능적 특성에 미치는 영향)

  • The effects of aging time (1, 8 and 15 days) and endpoints cooking temperature (70, 75 and $80^{\circ}C$) on the physicochemical and sensory characteristics of pork neck were evaluated. Pork neck was obtained from the carcass (live weight, 105~110 kg ; grade B) chilled for 24 hours after slaughter. As a aging period became longer, the pH, L value and drip loss became higher while its a value and shear force value (SFV) of raw meat became lower. As a aging period became longer, the cooking loss, hardness, chewiness, SFV became lower, and its tenderness, juiciness and taste became better. However, no difference was observed in the aroma, and the one aged for 8 days in the cooked meat showed the best palatability. Increasing endpoint cooking temperature from 70 to $80^{\circ}C$ increased hardness, SFV and taste, and decreased chewiness, sensory tenderness and juiceness (p<0.05). However, it had no effect on the cohesiveness. Also, the one for which the endpoint cooking temperature became $75^{\circ}C$ in the cooked meat showed the best springiness, aroma and palatability.

Evaluation of Meat Color and Physiochemical Characteristics in Forequarter Muscles of Holstein Steers

  • The beef forequarter muscle comprises approximately 52% of carcass weight. The objective of this study was to evaluate the physiochemical characteristics and meat color from forequarter muscle of Holstein steers. Fifteen forequarter muscles were trimmed of external connective tissue and fat. An experimental group of eight Holstein steers was assessed using meat color, water-holding capacity, drip loss, and Warner-Bratzler shear force value at the same quality grade. The M. omotransversarius (0.45 kg) had the highest (p<0.05) lightness (L*) value, whereas the M. teres major (0.4 kg) and M. triceps brachii (caput laterale) (0.52 kg) had the lowest (p<0.05) values. The M. semispanitus capitus (1.48 kg), which is a neck muscle, had the highest values for both redness (a*) and yellowness (b*), whereas the lowest (p<0.05) values were for the M. teres major. The M. omotransversarius, M. latissimus dorsi (1.68 kg), and M. rhomboideus (1.2 kg) were ranked high (p<0.05) in water-holding capacity. The drip loss value was the highest for the M. longissimus dorsi thoracis (p<0.05; 1.86 kg), while the M. infraspinatus (2.28 kg), M. supraspinatus (1.38 kg), M. brachiocephalicus (1.01 kg), and M. pectoralis superficialis (1.18 kg) had the lowest (p<0.05). The Warner-Bratzler shear force value indicated that the M. pectoralis profundus (3.39 kg), M. omotransversarius, and M. brachiocephalicus were the toughest (p<0.05), whereas the M. subscapularis (0.86 kg), M. longissimus dorsi thoracis, M. teres major, and M. infraspinatus were the most tender cuts (p<0.05). Here, muscle type explained most of the variability in the forequarter physiochemical characteristics. Thus, our findings suggest that these muscle profile data will allow for more informed decisions when selecting individual muscles to produce value-added products from Holstein steers.

Comparison on genomic prediction using pedigree BLUP and single step GBLUP through the Hanwoo full-sib family

  • Objective: When evaluating individuals with the same parent and no phenotype by pedigree best linear unbiased prediction (BLUP), it is difficult to explain carcass grade difference and select individuals because they have the same value in pedigree BLUP (PBLUP). However, single step GBLUP (ssGBLUP), which can estimate the breeding value suitable for the individual by adding genotype, is more accurate than the existing method. Methods: The breeding value and accuracy were estimated with pedigree BLUP and ssGBLUP using pedigree and genotype of 408 Hanwoo cattle from 16 families with the same parent among siblings produced by fertilized egg transplantation. A total of 14,225 Hanwoo cattle with pedigree, genotype and phenotype were used as the reference population. PBLUP obtained estimated breeding value (EBV) using the pedigree of the test and reference populations, and ssGBLUP obtained genomic EBV (GEBV) after constructing and H-matrix by integrating the pedigree and genotype of the test and reference populations. Results: For all traits, the accuracy of GEBV using ssGBLUP is 0.18 to 0.20 higher than the accuracy of EBV obtained with PBLUP. Comparison of EBV and GEBV of individuals without phenotype, since the value of EBV is estimated based on expected values of alleles passed down from common ancestors. It does not take Mendelian sampling into consideration, so the EBV of all individuals within the same family is estimated to be the same value. However, GEBV makes estimating true kinship coefficient based on different genotypes of individuals possible, so GEBV that corresponds to each individual is estimated rather than a uniform GEBV for each individual. Conclusion: Since Hanwoo cows bred through embryo transfer have a high possibility of having the same parent, if ssGBLUP after adding genotype is used, estimating true kinship coefficient corresponding to each individual becomes possible, allowing for more accurate estimation of breeding value.

Effects of Supplementary Rice Bran and Roasted Soybean in the Diets on Carcass Characteristics and Composition of CLA in Hanwoo Steers (사료 내 미강과 볶은 대두 첨가가 거세한우의 도체특성과 CLA 함량에 미치는 영향)

  • This study investigated the carcass characteristics and conjugated linoleic acid (CLA) content in Hanwoo steers that received supplementary rice bran (Rice bran group) and roasted soybeans (Roasted soybean group) into their finishing concentrates. The final body weight was 754.58, 783.33, and 755.67 kg, and the average daily gain was 0.50, 0.57, and 0.50 kg for the Control, Rice bran, and Roasted soybean group, respectively, showing no statistical differences. Feed requirements for the Rice bran group were 14.5% higher than the Control and 12.8% higher than the Roasted soybean group. No statistical differences were found in indices for carcass yield and quality grade between the groups. The composition of c9, t11 CLA in perirenal fats was significantly higher in the Roasted soybean group (0.21%) compared to the Rice bran group (0.15%) and Control (0.16%) groups (p<0.05). The composition of c9, t11 CLA in the M. Longissimus dorsi was also higher in the Roasted soybean group (0.21%) compared to the Control (0.16%) group. The composition of t10, c12 CLA in the M. Longissimus dorsi was statistically lower in the Roasted soybean group compared to the Control group (p<0.05). In perirenal fats, the composition of t11 trans-vaccenic acid (TVA) was significantly (p<0.05) higher in the Roasted soybean group compared to the control group. The TVA composition in the Roasted soybean group increased to 15.09 and 6.92%, respectively, in subcutaneous and M. Longissimus dorsi fats comparing to the Control group, without statistical differences between the treatment groups. In conclusion, rice bran is beneficial for improving feed efficiencies, while roasted soybeans are effective for increasing CLA in the M. Longissimus dorsi of Hanwoo steers.

Effect of Dietary Cracked Whole Barley on the Carcass Characteristics and Meat Composition in Hanwoo Steers (마쇄보리 사료 급여가 비육후기 거세 한우의 도체 및 식육 특성에 미치는 효과)

  • This study was carried out to investigate the effects of the level of cracked whole barley on daily feed intake, daily body weight gain, carcass characteristics and meat composition of finishing Hanwoo steers (feeding from 24 months to 30 months of age). The dietary treatments were consisted of five types (C; normal concentrate as a basal diet, T1; 10% addition of cracked whole barley, T2; 20% addition of cracked whole barley, T3; 30% addition of cracked whole barley, T4; 40% addition of cracked whole barley). A total 30 Hanwoo steers (588.6${\pm}$11.8kg) were allocated to 5 feeding groups. The daily feed intake and daily body weight gain were high in the order of T2 > T3 >T4 > T1 > C. The back fat thickness and longissmus muscle area were highest in C and T1, respectively (P<0.05) than other treatments. The meat yield index decreased with increased back fat thickness. The marbling score and meat quality were highest in T1 (P<0.01, 0.05, respectively), but maturity, fat color and meat color were not significantly different among treatments. The crude fat was highest in T1 (17.59%), while in T4 (7.47%) it was lowest (P<0.05). The crude protein and crude ash were not significantly different among treatments. The energy value of cracked whole barley treatments (T1, T2, T3, T4) was higher than C (P<0.05). The contents of Ca, Cu, K, Mg, Mo, Na and Zn were higher in C than the other treatments (P<0.01), but Co was higher in T2 (P<0.01). The CIE $L^*$ value of whole cracked barley treatments (T1, T2, T3, T4) was higher than C, however there were not differences among the treatments. The CIE $a^*$ value was highest in T1(P<0.05) than others. The CIE $b^*$ value was highest in C and it was decreased with increased feeding of cracked whole barley. Based on the above results, T1 treatment compared to other treatments improved the carcass quality parameters like loin muscle area, marbling score, meat quality, and CIE $L^*$ value.

Effects of the Energy Level of the Finisher Diet on Growth Efficiency and Carcass Traits of 'High'-Market Weight Pigs (비육후기 사료의 에너지 수준이 '고체중' 출하돈의 성장효율 및 도체특성에 미치는 영향)

  • The aim of the present study was to determine the effects of a low-energy finisher diet on feed and growth efficiencies and carcass traits of ‘high’-market weight (MW) finishing pigs and thereby to extrapolate optimal dietary energy level for the high-MW swine. A total of 160 (Yorkshire × Landrace) × Duroc-crossbred finishing gilts and barrows weighing approximately 90 kg were fed a low-energy (3,200 kcal DE/kg) diet (LE) or control (3,400 kcal) diet (CON) ad libitum in 16 pens up to 135- and 125-kg live weights, respectively, at which the animals were slaughtered and their carcasses were analyzed [2 (sex) × 2 (diet) factorial experimental design]. Average daily gain, average daily feed intake and feed efficiency did not differ between the two sex or diet groups. Backfat thickness was less (P<0.05) in LE (22.4 mm) than in CON group (24.3 mm) in gilts, but not in barrows (24.4 ± 0.4 mm). The percentage of C- & D-grade carcasses was over 90% because of the ‘over-weight’ problem in gilts, whereas in barrows, percentages of A plus B grades and C plus D grades were 79% and 21%, respectively. The yield percentage of each trimmed primal cut per total trimmed cuts (w/w) did not differ between the two sex or diet groups. Physicochemical characteristics of longissimus muscle including color (lightness and redness), pH, drip loss and chemical composition, which overally were within the range of normal carcass, also did not differ between the two sex or diet groups. In conclusion, both LE and CON are judged to be adequate for the high-MW swine during the latter finishing period. If fat deposition of a given herd of high-MW pigs needs to be suppressed by a dietary treatment, the energy content of the diet will have to be reduced to a level lower than 3,200 kcal DE/kg.

Effects of Supplementation Period and Levels of Fermented Mineral Feed(Power-Mix(R)) on the Growth and Carcass Characteristics of Hanwoo Steer (무기물 사료(Power-Mix(R))첨가 급여 기간과 수준이 거세한우의 육량 및 육질에 미치는 영향)

  • This study was carried out investigate the effects of the period of dietary supplementation and the level of fermented mineral feed on daily body weight gain and carcass characteristics of Hanwoo steer. The dietary treatments were compared during two supplementation periods (T1:Feeding Hanwoo steers from 18 months to 25 months, T2: feeding Hanwoo steers from 7 months to 25 months), and the diets tested were of four types (0%: normal concentrate as a basal diet, 1%: 1% addition of fermented mineral feed, 2%: 2% addition of fermented mineral feed, and 3%: 3% addition of fermented mineral feed). A Total of 35 Hanwoo steers were allocated into 7 feeding groups. The daily gain of the 0% fermented mineral feed group was lower (0.64 kg) than that of the other groups (1%: 1.08 kg, 2%: 0.90 kg, 3% treatment: 0.75 kg) for the T1 period, and for the T2 period the order was 1% (0.98 kg) > 0% (0.75 kg) > 1% (0.89 kg). The amount of back fat in decreasing order was as follows: 0% (12.0) > 1% (10.8) > 2% (10.2) > 3% fermented mineral feed (7.8 mm) for the T1 period, and for the T2 period the order was C (16 mm) > T1 (13.8 mm) > T3 treatment (12.6 mm). Eye muscle area increased with increased fermented mineral feed levels. The marbling score of the T1 groups was highest with 3% fermented mineral feed (4.2), and of the T2 groups, the highest score was seen with 1% fermented mineral feed (5.6). Meat color and meat maturity were not different among all groups. The grade of meat quantity and meat quality of both the T1 and T2 groups were highest with the addition of 3% fermented mineral feed. The daily income ranged from 2,062 won to 5,265 won in the T1 groups, which were ordered as follows: 1% > 2% > 3% > 0% fermented mineral feed, and of the T2 groups, the 1% group was highest at 6,098 Won, while the 3% group was lowest at 4,590 Won.

Effect of Garlic Stalk Silage on Performance and Carcass Characteristics of Hanwoo Steers (마늘대 사일리지 급여가 한우거세우의 성장 및 도체특성에 미치는 영향)

  • This study was conducted to investigate the effect of feeding of garlic stalk silage on performance and carcass characteristics of Hanwoo steers. Feeding trial was conducted with 27 heads of Hanwoo steers and these animals were divided into two groups of control(rice straw) and garlic stalk silage. Animals consuming rice straw were fed concentrates and rice straw for 22 months from the 5 months of age and animals consuming garlic stalk silage were fed concentrates, rice straw and garlic stalk silage for 22 months from the 5 months of age. Animals fed rice straw and garlic stalk silage were fed 1.34 and 1.47, 1.69 and 1.74, 1.65 and 1.66% concentrates to body weight for the growing period, fattening period and finishing period, respectively. Animals fed rice straw and garlic stalk silage as roughage sources were fed 1.37 and 1.38, 0.65 and 0.63, 0.43 and 0.43% roughages to body weight for the growing period, fattening period and finishing period, respectively. Also, animals fed garlic stalk silage were offered 0.22 and 0.33% garlic stalk silage to body weight for the fattening and finishing period, respectively. Animals fed rice straw and garlic stalk silage as a roughage sources did not differ in average daily gain during the whole feeding periods. Animals of control group consumed less concentrates and roughage than those fed garlic stalk silage during the whole feeding periods. However, feed efficiency was not significantly different between both treatments. Beef yield including backfat thickness, eye muscle area and carcass weight was slightly lower in the animals fed garlic stalk silage than in the animals fed rice straw even though there were no differences between both treatments. However, beef quality including beef color, fat color, texture, maturity and marbling score was slightly higher in the garlic stalk silage-fed animals than in the animals fed rice straw although there were not statistically different between both treatments. Animals consuming garlic stalk silage was significantly(p<0.05) lower in shear value than those fed rice straw. Amino acid composition including essential amino acid and non-essential amino acid was not different between animals fed rice straw and garlic stalk silage. Eye muscle area of animals fed garlic stalk silage contained slightly higher oleic acid, less linoleic acid and arachidonic acid and more linolenic acid than that of animals fed rice straw only as a roughage sources. So eye muscle area of animals fed garlic stalk silage contained more mono-unsaturated fatty acid than that of animals fed rice straw and $\omega$6/$\omega$3 ratio was narrower in the animals fed garlic stalk silage than in the animals fed rice straw. Economic income was higher by 20% in the animals fed garlic stalk silage than in the animals fed rice straw. Therefore, It may be concluded that feeding of garlic stalk silage as a roughage sources to steers during the fattening period seems to improve meat quality, fatty acid composition and economic income.

The effect of suspension method on meat quality of Hanwoo (현수방법이 한우육질에 미치는 영향)

  • The current study was conducted to determine the effect of suspension method on satisfaction level of Korean consumers and objective meat quality traits in Hanwoo longissimus dorsi(LD), triceps brachii(TB) and semimembranosus(SM) muscles. Eighteen Hanwoo steers were slaughtered and alternative sides were hung either by pelvic bone(TS) or Achilles tendon(Al). Sensory characteristics, WB-shear force, sarcomere length, water-holding capacity, saroomere length and cooking loss were determined after a 7-d chiller ageing. Higher carcass quality grade received significantly(p < 0.05) greater eating quality for LD, but the grade did not affect eating quality for both TB and SM. TS did not influence objective and subjective meat quality for TB, but that significantly(P < 0.05) improved eating quality for LD and SM. The most noticeable result was that when SM was tenderstretehed, eating quality was equivalent to that of nonna1ly hung LD. In relationship between objective and subjective meat quality assessments, eating qualty for LD had a significant(P < 0.05) relationship with intramuscular fat content, while that for SM was greatly(P < 0.05) related to saroomere length. The current study indicated that pelvic hanging was an effective way to improve eating quality both LD and SM, and carcass quality grades did not greatly reflect eating quality of SM and TB. The data also implied that instnunental measurements poorly estimated the satisfaction level of Korean conswners.

Effects of Dietary Biotite Powder on Physico-chemical Characteristics of Pork (흑운모 분말 급여 돈육의 이화학적 특성)

  • This study was carried out to analyze the physico-chemical characteristics of the loin from pigs fed biotite. Control was fed diet for piglets and growing pigs, and treatments were fed diet supplemented 1.25% and 1.75% biotite to piglet diet and to growing pigs, respectively. Ratio of carcass grade A was shown as 27.8% and 50% in control group and treatment, respectively. And that of carcass grade A and B was appeared as 52.8% in control and 80% in treatment. The control group showed higher value of water and protein content than treatment. However, fat and ash content of treatment were higher than those of control. Treatment showed lower value than control in shear force and cooking loss, and was higher than control in pH value(p<0.05). L*, a* and b* value of control in meat color were lower than those of treatments. Treatments group was shown lower value than control group in textural gumminess and brittleness. In the sensory test of fresh meat, there was no significant difference between control and treatment group. However, intramuscular fat content and overall acceptability of control were more or less lower than its of treatment. In cooked meat, the meat color of control was lower than those of treatments. Control group was shown higher saturated fatty acid value than treatment group. However, the poly unsaturated fatty acid, essential fatty acid, and the ratio of unsaturated fatty acid/saturated fatty acid and essential fatty acid/saturated fatty acid were low.
