A population segregating for the naked neck (Na) gene was used to evaluate its effect on fast growing broilers at heat stress. An experimental stock comparable to those of modern broilers was established by backcrossing to colour synthetic male and female lines. Matings between heterozygous (Na/na) males and females produced normally feathered (na/na), heterozygous (Na/na) and homozygous (Na/Na) chicks for the present study. Day old to seven week old coloured broilers of three genotypes viz. normally feathered (na/na), heterozygous naked neck (Na/na) and homozygous naked neck (Na/Na) were compared for heat dissipation, growth performance, body conformation traits, blood biochemical parameters and carcass traits in tropical climate. In hot climate, naked neck broilers had significantly less body temperature and better heat dissipation capabilities as compared to normal broilers. The naked neck broilers had significantly higher body weight and better feed conversion ratio than na/na broilers. The Na/Na or Na/na broilers exhibited higher giblet yield, blood loss and lower feather mass compared to na/na broilers. The results indicated that the reduction in feather coverage in Na/Na and Na/na broilers facilitates better heat dissipation with lower body temperature, more body weight gain, better FCR and carcass traits compared to normal broilers.
This study examined carcass and meat quality parameters in growing/finishing pigs fed unconventionally versus the concentrate-based system. Ninety-six, 12 wk old pigs ($34{\pm}SD0.3kg$) were randomly divided into three groups, assigned to one of the three dietary treatments: standard complete concentrate mixture, conventional (C diet); unconventional, steamed potato-green forage-concentrate based diet (U diet), and unconventional basal diet+herbage mix (UH diet). Pigs fed U diet showed lower dressing percentage, meatiness, loin eye area, and weight of pork neck ($p{\leq}0.05$), but their carcasses were significantly ($p{\leq}0.05$) longer and had increased backfat depth ($p{\leq}0.05$). There was no impact of the diet on the meat content of dry matter, crude ash, acidity, and colour parameters of m. longissimus. Unconventional feeding significantly ($p{\leq}0.05$) elevated water the holding capacity of m. longissimus and slightly improved the sensory attributes analysis of meat. The addition of herbs resulted in increased loin eye area ($p{\leq}0.05$), decreased fat content ($p{\leq}0.05$) in m. longissimus, and tended to improve some sensory attributes of meat. There were significant gender differences in response to all diets. There were significant diet${\times}$sex interactions for some measured variables, but there were no clearly identifiable trends with regard to any specific carcass or meat parameters. Feeding unconventional diet to pigs may offer better culinary attributes of the meat, and improve some technologically important characteristics of pig carcass, but may negatively affect some carcass or meat parameters.
To investigate the effects of immunization against somatostatin (SRIF) on growth rate, feed efficiency and carcass quality; forth-eight Yorkshire gilts ($age=37.5{\pm}4.3d,\;wt=8.2{\pm}1.6kg$) were randomly assigned to one of the following three treatments (1) control, (2) bovine serum albumin (BSA) and (3) SRIF. Cyclic SRIF was conjugated to BSA as the antigen containing 1 mg of SRIF diluted in 3 ml of saline. The conjugate was injected subsutaneously together with bacterial cell protein (BP) adjuvant on both sides of the neck of each gilt as the initial injection with three subsequent booster injections. Throughout the experiment all pigs were fed ad libitum a corn-soy diet containing 20% protein. Body weight and feed intake were measured on a weekly basis. All pigs in the experiment were slaughtered when they approached 101 kg body weight on the weekly weigh day. After slaughter, carcass parameters were analyzed to assess carcass quality. Results revealed that there were no differences among SRIF, BSA and control treatments for average daily gain, feed efficiency and feed intake during the first 5 wk of the experiment and from 6 wk to slaughter. The results for carcass analysis indicated that active immunization against SRIF had no effect on fat content, lean yield, water content and Canadian carcass index These data, collectively, suggest that the protocol employed in the present investigation for active immunization against SRIF is not an effective method for the enhancement of pig growth and improvement of feed efficiency and carcass quality.
Objective: This study aimed to estimate the genetic parameters and genetic correlations for related feed efficiency, growth, and carcass traits in Hanwoo cattle. Methods: Phenotypic data from 15,279 animals born between 1989 and 2015 were considered. The related feed efficiency traits considered were Kleiber ratio (KR) and relative growth rate (RGR). Carcass traits analyzed were backfat thickness (BT), carcass weight, eye muscle area, and marbling score. Growth traits were assessed by the average daily gain (ADG), metabolic body weight (MBW) at mid-test age from 6 to 24 months, and yearling weight (YW). Variance and covariance components were estimated using restricted maximum likelihood using nine multi-trait animal models. Results: The heritability estimates for related feed efficiency (0.28±0.04 for KR and RGR) and growth traits (0.26±0.02 to 0.33±0.04) were moderate, but the carcass traits tended to be higher (0.38±0.04 to 0.61±0.06). The related feed efficiency traits were positively genetically correlated with all the carcass traits (0.37±0.09 to 0.47±0.07 for KR, and 0.14±0.09 to 0.37±0.09 for RGR), except for BT, which showed null to weak correlation. Conversely, the genetic correlations of RGR with MBW (-0.36±0.08) and YW (-0.30±0.08) were negative, and those of KR with MBW and YW were close to zero, whereas the genetic correlations of ADG with RGR (0.40±0.08) and KR (0.70±0.05) were positive and relatively moderate to high. The genetic (0.92±0.02) correlations between KR and RGR were very high. Conclusion: Sufficient genetic variability and heritability were observed for traits of interest. Moreover, the inclusion of KR and/or RGR in Hanwoo cattle breeding programs could improve the feed efficiency without producing any unfavorable effects on the carcass traits.

The effects of castration time on growth and carcass traits of elk bulls were investigated. Twelve bulls at 5 years old were raised and fed on concentrate with ad libitum hay. All animals were allocated randomly to each of four treatment groups (3 heads/group). Groups of each treatment were castrated surgically in March, April or June and managed together with non-castration (entire) treatment. All elk bulls in the trial were slaughtered at same time. Growth parameters, carcass yield and composition were recorded. The total gain and average daily gain was higher when castrated in April (p < 0.05). The entire elk produced heaviest and highest in saddle and brisket portions (p < 0.05). It is apparent that the castrate animals carried more total fat weight and percentages than the entire males (p < 0.05). It was found that loin muscles from non-castrated elk, in comparison with those from castrated one, had higher content of moisture and lower content of fat (p < 0.05). In this study, growth parameters, carcass yields and chemical composition were greatly affected by castration time.
This study aimed to estimate genetic correlation between carcass grading and retail productivity traits and to estimate the correlated response on retail productivity traits through selection for carcass grading traits in order to assess the efficacy of indirect selection. Genetic parameters were estimated with the data from 4240 Hanwoo steers using mixed models, and phenotypes included carcass weight (CWT), back fat thickness (BFT), eye muscle area (EMA), marbling (MAR), and estimated lean yield percentage (ELP) as the carcass grading traits, and weight and portion of retail cuts (RCW and RCP), trimmed fats (TFW and TFP) and trimmed bones (TBW and TBP) as the lean productivity traits. The CWT had positive genetic correlations with RCW (0.95) and TFW (0.73), but its genetic correlation with RCP was negligible (0.02). The BFT was negatively correlated with RCP (-0.63), but positively correlated with TFW and TFP (0.77 and 0.70). Genetic correlations of MAR with TFW and TFP were low. Among the carcass grading traits, only EMA was positively correlated with both RCW (0.60) and RCP (0.72). The EMA had a relatively strong negative genetic correlation with TFW (-0.64). The genetic correlation coefficients of ELP with RCP, TFW, and TFP were 0.76, -0.90, and -0.82, respectively. These correlation coefficients suggested that the ELP and EMA might be favorable traits in regulating lean productivity of carcass.
Real time ultrasonic measurements for 13th rib fat thickness (LBF), longissimus muscle area (LEMA) and marbling score (LMS) of live animal at pre-harvest and subsequent carcass measurements for fat thickness (BF), longissimus muscle area (EMA), marbling score (MS) as well as body weight of live animal, carcass weight (CW), dressing percentage (DP), and total merit index (TMI) on 755 Korean beef steers were analyzed to estimate genetic parameters. Data were analyzed using multivariate animal models with an EM-REML algorithm. Models included fixed effects for year-season of birth, location of birth, test station, age of dam, linear and quadratic covariates for age or body weight at slaughter and random animal and residual effects. The heritability estimates for LEMA, LBF and LMS on RTU scans were 0.17, 0.41 and 0.55 in the age-adjusted model (Model 1) and 0.20, 0.52 and 0.55 in the weight-adjusted model (Model 2), respectively. The Heritability estimates for subsequent traits on carcass measures were 0.20, 0.38 and 0.54 in Model 1 and 0.23, 0.46 and 0.55 in Model 2, respectively. Genetic correlation estimate between LEMA and EMA was 0.81 and 0.79 in Model 1 and Model 2, respectively. Genetic correlation estimate between LBF and BF were high as 0.97 in Model 1 and 0.98 in Model 2. Real time ultrasonic marbling score were highly genetically correlated to carcass MS of 0.89 in Model 1 and 0.92 in Model 2. These results indicate that RTU scans would be alterative to carcass measurement for genetic evaluation of meat quality in a designed progeny-testing program in Korean beef cattle.
An experiment was conducted to evaluate the effect of form and particle size of feed supplemented with L-threonine on growth performance, carcass characteristic and blood biochemical parameters of broiler chickens. The experimental design was a $2{\times}2{\times}2$ factorial arrangement of treatments evaluating two feed forms (pellet or mash), two feed particle sizes (fine or course), and two inclusion rates of dietary L-threonine (with or without) which adopted from 7 to 42 days of age. In this experiment, 360 a day old chicks in two sexes were assigned in each treatment and each experimental unit was included 15 chicks. Feed consumption and weight gain were measured weekly. At 35 days of age, blood samples were taken to analysis blood biochemical parameters. At the end of the experimental period, two birds were slaughtered in each treatment and carcass analysis was carried out. The results showed that the effect of feed form on body weight gain and feed intake in whole of experimental period was significant (P < 0.05). Broilers fed pelleted diets had more weight gain than the mash group. Growth performance parameters were not affected by feed particle size and dietary L-threonine supplementation in whole of experimental period (P > 0.05). The results of carcass analysis showed that liver and gizzard relative weights were influenced by feed form (P < 0.05). However, pancreas and liver relative weights were affected by feed particle size and dietary L-threonine supplementation, respectively (P < 0.05). Triglyceride and VLDL levels were affected by feed form and dietary L-threonine supplementation (P < 0.05). The effect of feed particle size on blood biochemical parameters was not significant (P > 0.05). In conclusion, the experimental results indicated that feed form increased feed consumption and weight gain in whole of experimental period (1 to 42 days of age) while feed particle size and dietary L-threonine had no effect on broiler performance.

Objective: Pork belly is a cut of meat with high worldwide demand. However, although the belly is comprised of multiple muscles and fat, unlike the loin muscle, research on their genetic parameters has yet to focus on a representative cut. To use swine breeding, it is necessary to estimate heritability against pork belly traits. Moreover, estimating genetic correlations is needed to identify genetic relationship among the traditional carcass and meat quality traits. This study sought to estimate the heritability of the carcass, belly, and their component traits, as well as the genetic correlations among them, to confirm whether these traits can be improved. Methods: A total of 543 Yorkshire pigs (406 castrated males and 137 females) from 49 sires and 244 dam were used in this study. To estimate genetic parameters, a total of 12 traits such as lean meat production ability, meat quality and pork belly traits were chosen. The heritabilities were estimated by using genome-wide efficient mixed model association software. The statistical model was selected so that farm, carcass weight, sex, and slaughter season were fixed effects. In addition, its genetic parameters were calculated via MTG2 software. Results: The heritability estimates for the 7th belly slice along the whole plate and its components were low to moderate (0.07±0.07 to 0.33±0.07). Moreover, the genetic correlations among the carcass and belly traits were moderate to high (0.28±0.20 to 0.99±0.31). Particularly, the rectus abdominis muscle exhibited a high absolute genetic correlation with the belly and meat quality (0.73±52 to 0.93±0.43). Conclusion: A moderate to high correlation coefficient was obtained based on the genetic parameters. The belly could be genetically improved to contain a larger proportion of muscle regardless of lean meat production ability.

In this study, chemical characteristics of groundwater around carcass burial areas and those in agricultural and livestock-farming complex areas in South Korea were monitored. Groundwater samples were collected from 166 wells around carcass burial sites and 466 wells around the agricultural areas where carcass burial sites are absent. The chemical parameters (pH, electrical conductivity, dissolved oxygen, oxidation reduction potential, $NO_3$-N, $NH_4$-N, and $Cl^-$) in carcass burial areas and agricultural areas were similar. The $NO_3$-N concentrations exhibited minimal seasonal fluctuations below $30mg\;L^{-1}$ in most of the wells, even in the wells located close to the carcass burial sites; and $Cl^-$ concentrations also showed similar patterns. The chemical characteristics of groundwater monitored in this study indicated that groundwater was widely contaminated by agricultural activities and livestock farming, but probably not by leachates derived from nearby carcass burial sites.
