Fish-frames are processing byproducts, which are left after obtaining fillets or muscle during fish processing. The fish-frame generally consists of muscle, collagen, calcium, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). We used fish-frame powder (FFP) of chum salmon and skipjack tuna to prepare and characterize snacks for human consumption with different proportions of FFP. The crude protein and lipid contents of fish-frames were 16.3 and 9.4% for chum salmon and 18.6 and 8.3% for skipjack tuna, respectively. The volatile basic nitrogen (30.6 mg/100 g) and browning index (0.393) of FFP from chum salmon were lower than those of FFP from skipjack tuna. Thus, the FFP of chum salmon was better for making snacks than that of skipjack tuna. Five snacks were prepared with 0, 10, 20, 30, and 40% (w/w) substitution ratios of FFP from chum salmon. The moisture content of the snacks decreased (33.6 to 11.5%) with increasing FFP substitution ratio, whereas crude ash (2.9 to 7.5%), protein (11.4 to 18.4%) and lipid (13.7 to 35.1%) increased. Sensory scores for the texture and taste of the snack with 30% FFP were significantly higher (p<0.05) than those for other snacks; the color and flavor scores of all snacks did not differ significantly. The major fatty acids in the snacks were 16:0 and 18:0 as saturates, 18:1n-9 as monoenes, and 18:2n-6 and 18:3n-3 as polyenes. Snacks with FFP contained small amounts of EPA (0.5 to 0.8%) and DHA (1.3 to 1.8%) in the total lipid composition. The total amino acid content (16.08 g/100 g) of the snack with 30% FFP was higher than that of the snack without FFP (11.18 g/100 g), and the major amino acids were aspartic acid, glutamic acid, glycine, leucine, and lysine. The calcium and phosphorus contents of the snack with 30% FFP were 1,272 mg/100 g and 854 mg/100 g, respectively, and their ratio was the optimal range (2:1 to 1:2) for body absorption efficiency.
Experiments were conducted to investigate the synthesis characteristics of Precipitated Calcium Carbonate(for short PCC) in Ca(OH)$_2-CO_2-H_2O$ system by the continuous drop method of Ca(OH)$_2$ slurry into the solution containing $CO_2$(aq). When the flow rate of $CO_2$(g) increases and the concentration of Ca(OH)$_2$ slurry become low, the absorption rate of $CO_2$(g) become faster than the dissolution rate of Ca(OH)$_2$. Consequently, the growth of the calcite crystal plane is facilitated resulting in synthesis of $1.0{\mu}m$ of rhombohedral calcite. On the other hand, when the flow rate of $CO_2$(g) decreases and the concentration of Ca(OH)$_2-CO_2-H_2O$ slurry become high, new nuclei is created along with the crystal growth resulting in synthesis of $0.1{\mu}m$ of prismatic calcite. Maintaining 1.0wt% of Ca(OH)$_2-CO_2-H_2O$ slurry, 120 drops/min of drop rate and $25^{circ}C$ of temperature, the shape of PCC shows colloidal and spherical agglomerate at 100 mL/min of the flow rate of $CO_2$(g); the mixture of rhombohedral and plate-shaped calcite, at 200∼500 mL/min. Therefore, as the flow rate of $CO_2$(g) increases, the shape of PCC changes from colloidal and rhombohedral calcite to plate-shaped calcite. Maintaining 500 mL/min of the flow rate of $CO_2$(g), 120 drops/min of the drop rate of Ca(OH)$_2$ slurry, and $25^{circ}C$ of temperature, the shape of PCC shows the plate-shaped calcite at 1.0∼3.0 wt% of Ca(OH)$_2$ slurry; the hexagonal plate-shape calcite of the thickness of $0.1{\mu}m$ and the width of $1.0{\mu}m$, at 4.0 wt%.
As a part of a study on the effective use of cultured oyster, oyster powder-added soybean pastes were prepared and its characteristics were examined. As the concentration of oyster powder added to commercial soybean paste was increased, the moisture level decreased, the crude and amino nitrogen content increased with no change in the salinity and titratable acidities. Also, the color of the soybean paste changed to a darker color as the concentration of oyster powder added to commercial soybean paste increased. Judging from the results of the above experiment and sensory evaluation, the optimal additive concentration of oyster powder to commercial soybean paste was revealed as 9%. The total amino acid content of oyster powder-added soybean paste was 2% higher than that of commercial soybean paste. The ratio of calcium and phosphorus of oyster powder-added soybean paste was about 1:2-2:1, an improvement in calcium absorption as compared to commercial soybean paste. Functional fatty acids, such as 20:5n-3 and 22:6n-3, were not detected in commercial soybean paste but detected in oyster powder-added soybean paste. The major free amino acids in oyster powder-added soybean paste were glutamic acid and aspartic acids. According to the above results, the nutritional, functional and taste properties of commercial soybean paste were improved while reducing preparation time of the housewife.
These studies were carried out for the elucidation of liming effect on the growth of rice seedlings and the chemical characteristics of an acid sulphate paddy that shows not only extremely high acidity of soil but also poor growth of rice plants, consequently low yield. Thus the liming effect on the changes of acidity, oxidation-reduction potential, and the contents of iron, aluminium, sulphate, and phosphorus fractions in the soil was investigated under the waterlogging and drying condition. The reclaimable or inhibitory effect of phosphorus, iron and aluminium on the growth of rice seedlings was also investigated under liming. The results are summarized as follows: 1. After liming, the pH of the acid sulphate subsoil decreased again on drying. 2. The oxidation-reduction potential reached a minimum after 5 days of flooding and greatly decreased on liming but increased after drying. 3. The contents of ferrous iron soluble in water-and Morgan's solution reached a maximum after 15 days of flooding and only the content of water soluble ferrous iron was greatly decreased. 4. The content of aluminium soluble in water-and Morgan's solution decreased by flooding and liming, and showed a tendency to increase on drying. 5. In the limed acid sulphate soil, the content of water soluble calcium showed a highly significant negative correlation with the content of sulphate and liming decreased sulphate content in the soil. 6. The contents of total phosphorus was 496.3 ppm in the acid sulphate topsoil and 387.5 ppm in the subsoil. The content of each phosphorus fraction was in the order of Fe-P>Occ. Fe-P>Ca-P>Occ. Al-P>Al-P and Fe-P content in the soil was the highest fraction among them. 7. Lime application increased greatly Ca-P and Al-P, and Occ. Fe-P and Occ. Al-P only slightly, but decreased Fe-P differently in each soil. 8. Effect of phosphorus on the dry matter yield of rice seedlings was great. The optimum amount of phosphorus to produce maximum dry matter yield of rice seedlings appeared to be 6.8% of maximum absorption (absorption coefficient) without liming and 10.0% with liming. 9. In rice seedlings liming increased the content and uptake of calcium and silica but decreased those of iron and aluminium. Phosphorus application increased the content and uptake of phosphorus and decreased iron while the application of iron and aluminium increased their contents and uptake but decreased those of phosphorus. 10. Liming greatly alleviated such toxicity of iron and aluminium. 11. When phosphorus was applied, the dry matter yield of rice seedlings showed highly significant positive correlations with uptake of phosphorus, calcium and silica each. When iron and aluminium were applied, dry matter yields indicated significant positive correlations with the contents or uptake of calcium and silica each, but significant negative correlations with the content or uptake of iron and aluminium. 12. Under the application of phosphorus and lime, dry matter yields showed significant positive correlations with pH and Morgan's extractable calcium each of the soil samples after harvest. Under the application of lime, iron and aluminium, dry matter yields showed significant positive correlations with pH, calcium and silica each, but negative correlations with iron and aluminium contents each of the soil samples after harvest.
Contents of inorganic compounds in various cereals (Rice: 62, Barley: 39, Soybean: 58, Unhulled barley: 59) collected from Youngnam Districts in 1989 were determined by the atomic absorption spectophotometer. The results abtained as follows: The ranges of zinc level in rice, barley, soybean and unhulled barley were 46.91-76.28 ppm, 42.24-77.06 ppm, 73.39-103.69 ppm and 48.08-272.49 ppm, and those of manganes in each samples were 4.96-14.75 ppm, 20.62-16.28 ppm, 23.31-42.488 ppm and 23.52-30.15 ppm respectively. The ranges of iron level in rice, barley, soybean and unhulled barley were 65.38-141.33 ppm, 52.22-133.25 ppm, 106.32-240.20 ppm and 66.44-108.64 ppm, and those of calcium in each samples were 10.25-33.67 ppm, 68.94-136.62 ppm, 492.20-967.84 ppm and 75.30-165.85 ppm respectively. Meanwhile, contents of sodium in rice, barley, soybean and unhulled barley were 291.60-453.60 ppm, 462.25-773.60 ppm, 463.83-792.67 ppm and 777.90-950.90 ppm and those of potassium in above samples were 716.00-1180.60 ppm, 1363.60-1686.00 ppm, 2233.84-2792.67 ppm and 2042.10-2141.46 ppm respectively.
Backgrounds: Deficiency or excess of trace elements can induce body metabolic disorders and cellular growth disturbance, even mutation and cancerization. Since there are few studies of the effect of trace elements in bladder carcinoma in China, the aim of this study was thus to assess variation using a case control approach. Methods: To determine this, 81 patients with bladder carcinoma chosen as a study group and 130 healthy persons chosen as a control group were all assayed for urinary and serum trace elements (calcium [Ca], zinc [Zn], copper [Cu], selenium [Se]) using an atomic absorption spectrophotometer, and the results were analyzed by independent sample t tests. The correlative factors on questionnaires answered by all persons were analyzed by logistic regression. Results: The results showed urinary Ca, Zn and serum Cu levels of the study group to be significantly higher (P<0.05) than those of he control group. Serum Ca and Se levels of study group were significantly lower (P<0.05) than those of control group. Conclusion: There were higher urinary Zn and serum Cu concentrations in bladder carcinoma cases. Bladder carcinoma may be associated with Ca metabolic disorder, leading to higher urinary Ca and lower serum Ca. Low serum Se and smoking appear to be other risk factors for bladder carcinoma in China.
Four different levels of nitrogen were applied to 3 naked barley cultivars (Hordeum vulgare L.) Yonezawa, Baekdong and Yeongsanbori. Changes in physico-chemical properties were examined upon these treatments. Total protein content as well as glutelin increased as N level increased. Baekdong contained the highest protein content (13.7%) at N$_2$. Yonezawa and Baekdong contained more lysine than Yeongsanbori. Increased lysine was measured in all cultivars by increased nitrogen application. Among all amino acids proline was the highest in all cultivars, and its increase was paralled to the N levels. Magnesium and potassium were declined and calcium was increased with increased levels of nitrogen fertilizer. Ash content was decreased as nitrogen increased and as the plants have become matured. Three minutes pearling in Yonezawa was not sufficient in terms of water absorption ratio and whiteness. Sixty percent pearling rate in Yonezawa showed a higher absorption ratio and cooking whiteness than non-waxy Baekdong and Yeongsanbori. Gelatinization temperature was lower but maximum viscosity was higher in waxy than non-waxy barley.

This paper presents an investigation of the mechanical properties on non-sintered cement pastes immersed in sea waters at three different temperatures. The non-sintered cement pastes were synthesized using blended binder(Class F fly ash; FA and ground granulated blast furnace slag; GGBFS) and alkali activator(sodium hydroxide and sodium silicate). Binders were prepared by mixing the FA and GGBFS in different blend weight ratios of 6:4, 7:3 and 8:2. The alkali activators were used 5wt% of blended binder, respectively. Calcium carbonate was used as an chemical additive. The compressive strength, bulk density and absorption of alkali-activated FA-GGBFS blends pastes were measured at 3 and 28 days after immersed in sea waters at three different temperatures($5^{\circ}C$, $15^{\circ}C$ and $25^{\circ}C$). The XRD and SEM tests of the pastes were conducted at 28 days. Water-soluble chloride(free chloride) and acid-soluble chloride(total chloride) contents in the pastes were also measured after 28 days immersion in sea water. The experimental results showed that increasing the content of FA in alkali-activated FA-GGBFS blends pastes immersed in sea water increases the absorption, water-soluble chloride content and acid-soluble chloride content, and reduces the compressive strength and bulk density. And it was found that there was a variation of strength change for the alkali-activated FA-GGBFS blends pastes immersed in sea waters at three different temperatures that depends on the blending ratio of FA and GGBFS.
This experiment was undertaken to investigate the effect of root zone temperature during the night on absorption of mineral nutrients, growth, and fruit yield of the truss-limited hydroponic tomatoes in winter. The root zone temperature was either controlled to 10, 15, 20, $25^{\circ}C$, or left uncontrolled at ambient temperatures. Temperature of the covered beds rose as root zone temperature was raised, but it in all treatments was less than 3$^{\circ}C$ higher than that in the control. Raising root zone temperature, except $25^{\circ}C$, showed positive effect on plant height, leaf length, stem diameter, and plant fresh and dry weight, but not on T/R ratio which was the greatest in the control. Root activity in all treatments except $25^{\circ}C$ increased as compared to the control. Mean fruit weight, fruit count per plant, and fruit yield were the greatest in 2$0^{\circ}C$ treatment. Root zone temperature did not significantly affect the contents of total nitrate and magnesium in leaves, stems and roots. Concentrations of phosphate and calcium increased in leaves and stems, but decreased in roots as root zone temperature increased. Overall, 2$0^{\circ}C$ treatment gave the greatest growth and energy efficiency.

As the consumption of wheat has increased recently, the number of people who have digestive problems resulting from gluten in wheat has also increased. Teff has an attractive nutritional profile, as it not only gluten-free but also high in dietary fiber, protein, iron, and calcium. Seven samples were prepared for this study. The quality characteristics of gluten-free noodles were evaluated based on pH, salinity, water absorption, turbidity, color, texture properties, tensile strength, and SEM. The pH value was the highest in TF100 with a pH of 6.66 and the lowest in the control with a pH of 6.42. Salinity showed no significant difference among all samples, and it ranged from 0.02~0.04% (p<0.05). Water absorption was the highest in TFX with a value of 66.11%, and the lowest in the control with a value of 44.81%. Turbidity showed no significant difference among all samples, and it ranged from 0.14~0.21 O.D. (p<0.05). While the lightness and yellowness values decreased with an increase in teff flour content, the redness value tended to decrease. The color difference value was the highest in the sample group without gluten. Based on the texture profile analysis, the hardness was highest in the control with a value of 46.74 N and lowest in TF100 with a value of 18.34 N. The springiness showed no significant difference among all samples. The cohesiveness was highest in the control with a value of 0.92 N. The chewiness decreased with an increase in teff flour content. Although the control with gluten had the highest tensile strength at $3.42kg/cm^2$, TFX had considerable tensile strength at $2.30kg/cm^2$. This study demonstrated the processability of gluten-free noodles using teff flour.
