An Assessment of Dietary Fiber Intake in Preschool Children in Busan (부산지역 학령전 아동의 식이섬유섭취 상태평가)

  • To assess the dietary fiber intake of preschool children in Busan and to evaluate the relationship between of the intake of dietary fiber and nutrient intake. Nutrient intake using 24 hour recall, and total dietary fiber (TDF) intake based on tables of TDF of common Korean floods developed by the modified Prosky Method, were estimated for 176 preschool children. The mean daily intakes of TDF, and TDF after adjusting energy intake, were 10.20 g and 7.69 g/1,000 kcal, respectively. The mean daily intakes of TDF for children aged 1-3 and 4-6 years were 9.20 g and 11.08 g, respectively. The range of TDF intake was 1.86 to 22.16 g. The major sources of TDF were cereals (31.0%), vegetables (18.9%) and fruits (11.9%). The TDF intake showed positive correlations with nutrient adequacy ratios (NAR) of iron and Vitamin $B_1$, (p < 0.05, p < 0.05). The TDF intake per 1,000 kcal showed negative correlations with the NARs of protein, calcium, phosphate, iron, Vitamin A, vitamin $B_1$, Vitamin $B_2$, and niacin (p < 0.001, p < 0.001, p < 0.001, p < 0.05, p < 0.001, p < 0.001, p < 0.001, p < 0.001) and with the mean adequacy ratio (MAR, p < 0.001). When children were stratified into quartiles ($Q_1-Q_4$) on the basis of their fiber intake per 1,000 kcal, their NARs for calcium, phosphate, iron, Vitamin A, Vitamin $B_1, Vitamin $B_2$ and niacin (p < 0.05, p < 0.05, p < 0.001, p < 0.05, p < 0.05, p < 0.001, p < 0.001), and their MAR (p < 0.001) were significantly lower in the children with higher fiber intake per 1,000 kcal (the upper quartile). The NARs fur calcium (0.63), iron (0.60), Vitamin A (0.66), Vitamin $B_2$(0.74), niacin (0.64), Vitamin C (0.65) and the MAR (0.74) were lower than 0.75 in the children with fiber intakes of more than 9.25 g per 1,000 local (0,), the highest fiber intake per 1,000 kcal. Based on these results, the mean TDF intake of children was higher than the age (yr)+5g , the minimum recommended level for American children. Meals with a fiber intake of more than 9.25 g per 1,000 local ($Q_4$) could cause a decreased nutritional status for minerals and vitamins. The result of this study could contribute to the establishment of Recommended Dietary Allowances (RDA) for dietary fiber for Korean Preschool children.

Characteristics of Gaeryangmerou Wine deacidified by Calcium Carbonate (탄산칼슘 처리에 의한 개량머루주의 감산 특성)

  • We investigated the effect of calcium carbonate on the quality of wine obtained from Gaeryangmerou (Vitis. spp.), grapes, which are commonly used in wine making in Korea. Alcoholic fermentation was carried out at $25^{\circ}C$, for 7 days in the presence of 0.1%, 0.2%, and 0.3% calcium carbonate. As calcium carbonate concentration increased, the pH of wine increased, while its total acid content and redness decreased. Calcium carbonate treatment during precipitation and aging is more effective than during fermentation. Concentrations of alcohol, total anthocyanin, polyphenol, and tannin showed no significant differences between controls and deacidified groups. Tartaric and malic acids were found to be the major acids in Gaeryangmerou wine. Calcium carbonate reduced total acidity by precipitating tartaric acid. In the sensory evaluation of the acidity, and overall acceptability, wine treated with 0.1% calcium carbonate was the best. Higher calcium carbonate concentration, was associated with greater reduction in total wine acidity. However, it is necessary to maintain the calcium carbonate concentration within 0.1% since excessive amounts of calcium carbonate can have a negative effect on wine quality.

Evaluation of Food Habits, Nutrient Intake, and Dietary Variety in Female College Students

  • This study was intended to investigate food habits, dietary variety and the effects of nutrient intake of female college students. Food habits such as regularity of meal time, repast of breakfast, lunch, and supper, and duration of meal were assessed via a self reporting questionnaire, 24 hrs recall method for nutrient intake was obtained from 155 female college students in Yangju-si. Dietary variety was assessed by dietary diversity score(DDS). The mean height and weight of the subjects were $161.25{\pm}3.52cm$ and $52.26{\pm}4.52kg$, respectively. The dietary habits of female college students was generally inadequate. In the survey of dietary habits, the ratio of skipping breakfast 3~6 days a week in total subjects was 87.09%, showing a rather higher ratio of skipping breakfast. In the evaluation of nutrient intakes by DDS, subjects who had higher DDS had significantly higher nutrient intakes of energy, protein, carbohydrate, fiber, calcium, phosphate, iron, vitamin A, vitamin C, and cholesterol(p<0.05). There was a great difference in nutrient intakes, suggesting the risk of nutritional imbalance. These findings suggest that nutritional education based on female college students' eating variety and dietary habits(regularity of meal time, skipping breakfast and night snacks per week, and duration of meal) may be required to improve dietary variety. it is considered that the improvement in dietary habits will contribute to the improvement of nutrition.

A Study on the Dietary Habit and Nutritional State to Obesity Index of Adults Living in Daejeon (대전 지역 일부 성인 남녀의 비만도에 따른 식습관 및 영양소 섭취실태)

  • The purpose of this study was to investigate dietary habit and to evaluate nutritional status and obesity index about adults living in Daejon area. This study was conducted with 250 subjects (male 130, female 120) who visited periodically a periodic health center in a general hospital from May to June in 2002. Questionaries were used for studying of dietary habit and food frequency method. Dietary intake was assessed by food frequency method and consumption of foods and nutrients was analyzed. The relationship between dietary habit and obesity were also analyzed. Dietary habit was better in female than mail. There was no significant difference in mean of Broca's index between female ($110.6\pm16.6\%$) and male ($110.0\pm13.7\%$). The obesity group showed low dietary habit score in irregular eating behavior, frequent eating out and over-intake of salty foods. Especially mean intakes of energy were lower than Korean RDA in all groups. All groups except obesity group were deficiency of vitamin A and vitamin $B_{1}$ and calcium.

A Study of the Dietary Attitude, Dietary Self-Efficacy and Nutrient Intake among Middle School Students with Different Obesity Indices in Gyeong-Nam (경남지역 중학생의 체형에 따른 식생활태도, 식이자기효능감 및 영양소 섭취상태에 관한 연구)

  • This study was carried out to investigate the perception of body image, the dietary attitude, the nutrient intake and the dietary self-efficacy of middle school students in Kyoung-Nam. The survey was conducted from April 8 to April 22 in 2002. The results are summarized as follows. Twenty three point nine percents of the underweight group,24.5% of the normal weight group, 57.1% of the overweight group and 62.5% of the obese group had correct perception about their body image. Most of the students were concerned about their body image and weight control. The obesity of the parents correlated significantly with the obesity of the subjects. The higher the obesity rate, the lower the dietary attitude and dietary self-efficacy. There was a significant positive correlation between the education level of their mothers and the dietary attitude of the subjects and a significant negative correlation between the obesity rate of the subjects and their. dietary attitudes. Dietary attitude scores showed no significant difference among the groups. Intakes of calories, protein, calcium and iron were lower than those of the Korean recommended dietary allowances (RDAs). Effect of Ovariectomy and Dietary Calcium Levels on Bone Metabolism in Rats Fed Low Calcium Diet during Growing Period (성장기 동안 저칼슘식이를 섭취한 흰쥐에서 난소절제 및 칼슘 섭취량이 골격대사에 미치는영향)

  • This study explored the effect of calcium levels and/or ovariectomy on bone metabolism using female Sprague-Dawley weanling rats as a model . Rats received a low (0.1%) calcium diet for 8 weeks. The rats were then divided into three subgroups that were fed 0.1% ,0.5% and 1.5% calcium diets for 8 weeks after operation. The results of this experiment indicate that body weight gin was higher in ovariectomy groups than in sham groups regardless of calcium level and food intake. Serum Ca and P concentrations were of normal level regardless of calcium level and ovariectomy. Estrogen concentration was low in the ovariectomized group. Serum alkaline phophatase activity and urinary hydroxyproline have been used as markers of bone formation and resorption. These values were increased in ovariectomized groups. The weight, length and breaking force of femur were not significantly different between the groups. Ash, Ca, P and total lipid contents in femur and lumbar were decreased in the groups fed low calcium . Mg content was decreased in the ovariectomy and total protein content was not affected by calcium level and ovariectomy. The effect groups of ovarectomy on calcium contents of bone was more prominent in lumbar than in femur. In conclusion, though low calcium intakes during growth period may retard the attainment of peak bone mass, calcium supplementation after this period increased bone growth and mineral contents, but not significant effect in three calcium levels. Furthermore, calcium intake was shown to have a greater influence on the mineral contents of femur than of lumbar, and removal of endogenous estrogen production by ovariectomy was shown to be more deleterious on the ash and calcium contents of the lumbar than of femur.

Effect of Dietary Calcium Levels on the Reduction of Calcium Availability in Ovariectomized Osteoporosis Model Rats (난소절제 골다공증 모델 흰쥐의 체내 칼슘 이용성 저하에 대한 칼슘 섭취 수준의 효과)

  • To investigate the effects of dietary calcium levels on the Ca metabolism in a rat model of ovariectomized osteoporosis, two studies were conducted. In Expt. I, five week-old femalc rats ovariectomized and fed a low Ca diet(0.06% Ca) for four weeks were compared with rats fed a normal (0.53% Ca) or low Ca diet under the sham-operated condition. Ovariectomized rats showed a significant increase in body weight and food intake. In rats fed the low Ca diet, a remarkable decrease was shown regardless of ovariectomy in serum Ca concentration, breaking force of bones, Ca and phopsphrus contents of bones, and apparent absorption and retention of Ca. Furthermore hte decrease of Ca contents of serum and bones in rats ovariectomized and fed the low Ca diet was similar to that in rats model of postmenopausal osteoporosis. In Expt. II, rats ovariectomized and fed on the low Ca diet for four weeks were divided into three groups, those given low Ca diet, normal Ca diet and high Ca diet(1.06%) respectively. The results indicated that supplementations of Ca at the intake level of 0.53% and 1.06% for 4 weeks tend to improve the relative Ca deficiency shown in experimental rat model of ovariectomized osteoporosis.

Influence of Phytate and Low Dietary Calcium on Calcium, Phosphate and Zinc Metabolism by Growing Rats (Phytate와 저 Ca 섭취가 흰쥐의 성장기간 동안 Ca, P, Zn 대사에 미치는 영향)

  • A factorial experiment was conducted to determine the influence of phytate(0 or 10g/kg diet) and calcium (Ca)(3 or 10g/kg diet) intakes on Ca, P and Zn metabolism by growing female rats. Food intake and weight were similar for the all groups, however, phytate ingestion for six weeks depressed femur growth. The low Ca plus phytate group showed the lowest Ca content of total femur and this was related to a significant decrease of Ca retention. Phytate intake depressed zinc(Zn) absorption in the first metabolic collection. This inhibitory effect of phytate on Zn absorption was improved in the low Ca plus phytate group after several weeks. Impared Zn absorption however remained in the high Ca plus phytate group which was reflected in the lowest Zn content of femur, phytate intake with high Ca also depressed phosphorous(P) absorption and serum and urinary P. These adverse effects of phytate on Zn and P absorption when the dietary Ca was high could explain reduced femur weight despite the highest concentration of femur Ca(mg/g ash) in this group. Results suggest that phytate can adversely affect not only Ca metabolism but Zn and P utilization. Thus, for the normal bone growth when phytate intake is high, the ingesion of Ca, P, Zn and other minerals should be enhanced.

Investigation of Risk Factors of Low Serum 25-hydroxyvitamin D Levels in Korean Menopausal Women (혈청 25-hydroxyvitamin D 수준이 낮은 폐경 후 여성에서 나타난 위험 인자 분석)

  • To define the risk facots of subclinical vitamin D deficiency in postmenopausal women, circulating serum 25-hydroxyvitamin D levels, known to be the indicator of vitamin D status, were measured and risk faxtors affecting it were investigated in 27 women with low 25-hydoxyvitamin d level(ie, the study group : serum 25-hydroxyvitamin D<10ng/ml) by comparing to 55 age-matched control(the control group) were analyzed. The serum level of 25-hydorxyvitamin D was analyzed by HPLC(High Pressure Liquid Chor-matography) and analyzed biochemical parameter. The following information was obtained by interviews : sociodemographic charateristics, the intake of food containing vitamin D, proxy measure of sunlight exposure(time spent outdoors), and reprocuctive histpry of the subjects. The study group had significantly lower levels of serum calcium, increased levels of iPTH and alkaline phosphatase, Among the dietary determents, energy, protein, fat, calcium, phophorus, and vitamin D intakes were lower in the study group than the normal group. The time spent outdoors in a day was not significantly different between the two groups. However, during the day, a specific time of time spent out doors between 12:00 and 14:00 was significantly lower in the study group. Logistic analysis revealed that vitamin D and calcium intake were more important affecting factors than the time spent outdoors in post menopausal women.

Salting of Chinese Cabbage under Sub-atmosphere (감압하에서 배추의 소금절임)

  • The aim of this study is to elevate the efficiency of salting with low salt concentration in order to improve the quality of salted Chinese cabbage. The efficiency of salting was tested with various sub-atmosphere(760mmHg to 0mmHg), temperature(20$^{\circ}C$ and 30$^{\circ}C$), and concentration of salt(3%, 5% and 10%). The salting efficiency was estimated by amounts of juice, calcium elution, sodium penetration and the state of tissue. The amunts of juice eleuted from Chinese cabbage was increased significantly with the decrease of atmosphere and the time to reach the highest amounts was reduced. This tendency was promoted, with increase of salinigy(from 3% to 10%)and the increase of temperature(more juice at 30$^{\circ}C$ than 20$^{\circ}C$). The amounts of eluted calcium from Chinese cabbage tissue during salting under sub-atmosphere was directly proportional to amounts of juice and was inversely proportional to penetrated sodium. The salting time was reduced with elevation of sub-atmosphere. It was desirable to take between 5.5 and 9 hours to salt under the condition of 3% of salting, 20$^{\circ}C$, and 560-0mmHg. It took between 4.4 and 5 hours under 5% of salt and between 4 and 4.5 hours under 10% of salt. However, it was undesirable because the drying phenomenon and the transparency of tissue appeared under 30$^{\circ}C$ and 160-0mmHg.
