Processing of anchovy based powder for instant soup packed in tea bag and the taste compound of its extractives (Tea bag 포장한 멸치 복합 분말의 가공 및 그 추출물의 정미성분)

  • This study was carried out to prepare anchovy based powder for instant soup packed in tea bag which can be used handily as a extractives, and to determine the taste compounds of extractives of anchovy based powder for instant soup. The anchovy based powder for instant soup was made by adding of 72% in the redried anchovy, 14% in the sea tangle, 7% in the mushroom and 7% in the katsuobushi to the total mixtures. And the anchovy based powder for instant soup was packed in tea bag. The desirable extraction time are 5 min in package in tea bag with air permeability $100\;m^3/m^2/min$ and over 20 min in package in tea bag with air permeability $65\;m^3/m^2/min$, respectively. Judging from the result of extraction rate of total nitrogen, color and sensory evaluation in extractives of anchovy based powder for instant soup extracted by optimal extraction time, the quality in extractives of instant soup packed in tea bag with air permeability $100\;m^3/m^2/min$ was superior to those of instant soup unpacked in tea bag and of instant soup packed in tea bag of air permeability $65\;m^3/m^2/min$. The principal taste compounds of extractives of anchovy based powder for instant soup packed in tea bag with air permeability $100\;m^3/m^2/min$ were IMP (9.26 mg/100ml in 5% solution) and free amino acids (24.30 mg/100 ml in 5% solution) such as histidine, proline, lysine and taurine. Total creatinine, betaine and TMAO were seemed to act an auxiliary role in taste of extracives of anchovy based powder for instant soup packed in tea bag with air permeability $100\;m^3/m^2/min$.

Incidence of Rice stripe virus during 2002 to 2004 in Korea and Chemical Control of Small Brown Plant Hopper (2002-2004년의 벼줄무늬잎마름병 발생상황 및 약제처리에 의한 애멸구의 화학적 방제)

  • Incidence of rice stripe disease, caused by Rice stripe tenuivirus (RSV), was surveyed during 2002 to 2004. The incidence area and ratio of diseased fields were decreased gradually during those period. Rate of diseased plants were 45.8%, 45.0% and 43.7% in the susceptible cultivars Chucheong, Saechucheong and Ilpum, respectively. However, the rate was 4.4% in resistant cultivar Hwaseong. In addition, breakdown rate was also significantly high in the susceptible cultivars in Chucheong, Saechucheong and Ilpum showing 33.6, 33.2 and 31.9%, respectively. In Hwaseong, the breakdown rate was 0.8%. Collection efficiency was compared between two insect vector collection methods. Insect-sucking machine method was much more efficient than sweeping net method in collecting small brown plant hopper (SBPH). According to the survey of the population density of the insect vector during 2002 to 2004, the national average population density was gradually decreased year by year, 3.6, 2.3, and 1.3%, respectively. This result was significantly related with the decrease of the incidence of rice stripe disease. Control efficiency of rice stripe disease by treating several seedling box and water surface with insecticides against SBPH resulted that imidacloprid GR, Fipronil FG, Clothianidin+Probenazole GR and Thiamethoxam GR showed over 80% of control efficiency at 28 days after treatment at the early stage in nursery.

The Expression of Oncogenes on the Radiation-induced Apoptosis in SCK Mammary Adenocarcinoma Cell Line (SCK 선암세포주에서 방사선 조사에 의해 유도되는 Apoptosis에 미치는 암유전자의 발현)

  • Purpose : The expression of p53, P211WAF/CIP, Bcl-2, and Bax underlying the radiation-induced apoptosis in different pH environments using SCK mammary adenocarcinoma cell line was investigated. Materials and Methods Mammary adenocarcinoma cells of hi) mice (SCK cells) in exponential growth phase were irradiated with a linear accelerator at room temperature. The cells were irradiated with 12 Gy and one hour later, the media was replaced with fresh media at a different pHs. After Incubation at 37Microbioiogy, College of Medicine Dong A University for 0$\~$48 h, the extort of apoptosis was determined using agarose gel electrophoresis and flow cytometry. The progression of cells through the cell cycle after irradiation in different pHs was also determined with flow cytometry. Western blot analysis was used to monitor p53, p211WAFfCIP, Bcl-2, and Bu protein levels. Results : The induction of apoptosis by irradiation in pH 6.6 medium was markedly less than that in pH 7.5 medium. The radiation-induced G2IM arrest in pH 6.6 medium lasted markedly longer than that in pH 7.5 medium. Considerable amounts of p53 and p21 proteins already existed at pH 7.5 and increased the level of p53 and p21 significantly after 12 Gy X-irradiation. An incubation at pH 6.6 after 12 Gy X-irradiation did not change the level of p53 and p21 protein levels significantly. Bcl-2 proteins were not significantly affected by radiation and showed no correlation with cell susceptibility to radiation-induced apoptosis in different pHs. An exposure to 12 Gy of X-rays increased the level of Bax protein at pH 7.5 but at pH 6.6, it was slight. Conclusions : The molecular mechanism underlying radiation-induced apoptosis in dinerent pH environments using SCK mammary adenocarcinoma cell line was dependent of the expression p53 and P211YVAF/CIP proteins. We may propose following hypothesis that an acidic stress augments the radiation-induced G2iM arrest, which inhibiting the irradiated cells undergo post-mitotic apoptosis. The effects of environmental acidity on anti-apoptotic and pro-apoptotic function of Bcl-2 family was unclear in SCK mammary adenocarcinoma cell line.

Improvement of Shelf-life and Quality in Fresh-Cut Tomato Slices:

  • Quality of fresh-cut tomato slices was compared during cold storage under various modified atmosphere packaging conditions. Chilling injury of slices in containers sealed with Film A was higher than with Film B; these films had oxygen transmission rates of 87.4 and 60.0 ml $h^{-1}\;m^{-2}\;atm^{-1}$ at $5^{\circ}C\;and\;99\%$ RH, respectively. While slices in containers with an initial atmospheric composition of air, $4\%\;CO_2+1\;or\;20\%\;O_2,\;8\%\;CO_2+1\;or\;20\%\;O_2,\;or\;12\%\;CO_2+20\%\;O_2$ showed fungal growth, slices in containers with $12\%\;CO_2+1\%\;O_2$ did not. Low ethylene in containers enhanced chilling injury. Modified atmosphere packaging provided good quality tomato slices with a shelf-life of 2 weeks or more at $5^{\circ}C$. Experiments were conducted to compare changes in quality of slices of red tomato (Lycopersicon esculentum Mill. 'Sunbeam') fruit from plants grown using black polyethylene or hairy vetch mulches under various foliar disease management systems including: no fungicide applications (NF), a disease forecasting model (Tom-Cast), and weekly fungicide applications (WF), during storage at $5^{\circ}C$ under a modified atmosphere. Slices were analyzed for firmness, soluble solids content (SSC), titratable acidity (TA), pH, electrolyte leakage, fungi, yeasts, and chilling injury. With both NF and Tom-Cast fungicide treatments, slices from tomato fruit grown with hairy vetch (Vicia villosa Roth) mulch were firmer than those from tomato fruit grown with black polyethylene mulch after 12 days storage. Ethylene production of slices from fruit grown using hairy vetch mulch under Tom-Cast was about 1.5- and 5-fold higher than that of slices from WF and NF fungicide treatments after 12 days, respectively. The percentage of water-soaked areas (chilling injury) for slices from tomato fruit grown using black polyethylene mulch under NF was over 7-fold that of slices from tomato fruit grown using hairy vetch under Tom-Cast. When stored at $20^{\circ}C$, slices from light-red tomato fruit grown with black polyethylene or hairy vetch mulches both showed a rapid increase in electrolyte leakage beginning 6 hours after slicing. However, slices from tomato fruit grown using the hairy vetch mulch tended to have lower electrolyte leakage than those grown with black polyethylene mulch. These results suggest that tomato fruit from plants grown using hairy vetch mulch may be more suitable for fresh-cut slices than those grown using black polyethylene mulch. Also, use of the disease forecasting model Tom-Cast, which can result in lower fungicide application than is currently used commercially, resulted in high quality fruit for fresh-cut processing. Experiments were conducted to determine if ethylene influences chilling injury, as measured by percentage of slices exhibiting water-soaked areas in fresh-cut tomato slices of 'Mountain Pride' and 'Sunbeam' tomato (Lycopersicon esculentum Mill.). Ethylene concentration in containers without ventilation significantly increased during storage at $5^{\circ}C$, whereas little or no accumulation of ethylene occurred in containers with one or six perforations. Chilling injury was greatest for slices in containers with six perforations, compared to slices in containers with one perforation, and was over 13-fold greater than that of slices in control containers with no perforations. An experiment was also performed to investigate the effectiveness of including an ethylene absorbent pad in containers on subsequent ethylene accumulation and chilling injury. While ethylene in the no-pad controls increased continually during storage of both 'Mountain Pride' and 'Sunbeam' tomatoes at $5^{\circ}C$ under modified atmosphere conditions, no increase in accumulation of ethylene was observed in containers containing ethylene absorbent pads throughout storage. The ethylene absorbent pad treatment resulted in a significantly higher percentage of chilling injury compared with the no-pad control. In studies aimed at inhibiting ethylene production using AVG during storage of slices, the concentration of ethylene in control containers (no AVG) remained at elevated levels throughout storage, compared to containers with slices treated with AVG. Chilling injury in slices treated with AVG was 5-fold greater than that of controls. Further, we tested the effect of ethylene pretreatment of slices on subsequent slice shelf-life and quality. In slices treated with ethylene (0, 0.1, 1, or $10\;{mu}L\;L^{-1}$) immediately after slicing, ethylene production in non-treated controls was greater than that of all other ethylene pre-treatments. However, pretreatment of slices 3 days after slicing resulted in a different pattern of ethylene production during storage. Ihe rate of ethylene production by slices treated with 1 L $L^{-1}$ ethylene 3 days after slicing was greater during storage than any of the other ethylene treatments. With slices pre-treated with ethylene, both immediately and 3 days after slicing, the rate of ethylene production tended to show an negative correlation with chilling injury. Characteristics of Heavy Minerals in the South East Yellow Sea Mud (SEYSM) and South West Cheju Island Mud (SWCIM) (황해남동니질대와 제주남서니질대 표층퇴적물의 중광물 특성 비교 연구)

  • Heavy mineral provide an important information for sediment provenance as well as a potential submarine mineral resources. We compared the heavy mineral characteristics between Southeastern Yellow Sea Mud (SEYSM) and Southwestern Cheju Island Mud (SWCIM) surface sediments. We separated heavy minerals from 28 surface sediments in each mudbelt, and then carried out stereo-microscopic, field-emission scanning electron microscopic, energy dispersive spectroscopic and electron probe microanalysis to characterize the type, abundance, mineralogical properties and distribution pattern of heavy mineral. Amphibole and epidote, which are two major heavy minerals, account for more than 70% of total heavy minerals. Zircon and sphene contents are more abundant in SEYSM, whereas apatite and rutile contents are more abundant in SWCIM. Monazite only occurs in some area of SEYSM. Sphene and monazite content decrease to the south in SEYSM. Both garnet-zircon index (GZi) and rutile-zircon index (RuZi) are low in SEYSM but high in SWCIM. Amphiboles in SEYSM primarily correspond to hornblende, however those in SWCIM represent variable composition from pargasite, tshermakite, hornblende to tremolite. Garnets in SEYSM have high Mg and low Ca, but those in SWCIM have low Mg with variable Ca. Different heavy mineral characteristics between SEYSM and SWCIM suggests that sediments in each mudbelt have different provenances. Although this study implies that SEYSM sediment may mostly come from nearby Korean western rivers such as the Keum and Han rivers, this study does not suggest any idea of the source area of SWCIM sediment. Further study is needed to interpret the provenance and transportation mechanism of mudbelt sediments through the heavy mineral research for the river sediments flowing into the Yellow Sea and much more marine sediments.

Effects of anatase-rutile phase transition and grain growth with WO3 on thermal stability for TiO2 SCR catalyst (WO3 첨가에 의한 TiO2계 SCR 촉매의 상전이 및 입자성장이 고온안정성에 미치는 영향)

  • Thermal stability of the $TiO_2$ SCR catalyst with W03 loading was investigated in terms of structural and morphological analyses. The $TiO_2$ catalysts with 10 w% $WO_3$ content and without $WO_3$ were prepared. which were heat-treated at $800^{\circ}C$ for 5 h. It was found that the catalytic acidity was decreased by thermal degradation in the $WO_3-TiO_2$ specimen that relatively less than the $TiO_2$ specimen from FT-IR analysis. The phase transition of the $TiO_2$ catalyst from anatase to rutile was increased by heal-treatment, and the percentage of the rutile phase was 28.4 % in the $WO_3-TiO_2$ and 22.9 % in the $TiO_2$. A shell region of $WO_3$ distinguished from a $TiO_2$ particle was also observed in the grain boundary region, and the $WO_3$ led to the suppression of grain growth. It could be confirmed that the suppression of grain growth can contribute to the improvement of catalytic properties for thermal stability more than the increase of anatase-rutile phase transformation which cause the reduction of the catalytic activity in the $TiO_2$ SCR catalyst by the presence of $WO_3$.

Management of the Development of Insecticide Resistance by Sensible Use of Insecticide, Operational Methods (실행방식 측면에서 살충제의 신중한 사용에 의한 저항성 발달의 관리)

  • An attempt was made to stimulate future research by providing exemplary information, which would integrate published knowledge to solve specific pest problem caused by resistance. This review was directed to find a way for delaying resistance development with consideration of chemical(s) nature, of mixture, rotation, or mosaics, and of insecticide(s) compatible with the biological agents in integrated pest management (IPM). The application frequency, related to the resistance development, was influenced by insecticide activity from potentiation, residual period, and the vulnerability to resistance development of chemical, with secondary pest. Chemical affected feeding, locomotion, flight, mating, and predator avoidance. Insecticides with negative cross-resistance by the difference of target sites and mode of action would be adapted to mixture, rotation and mosaic. Mixtures for delaying resistance depend on each component killing very high percentage of the insects, considering allele dominance, cross-resistance, and immigration and fitness disadvantage. Potential disadvantages associated with mixtures include disruption of biological control, resistance in secondary pests, selecting very resistant population, and extending cross-resistance range. The rotation would use insecticides in high and low doses, or with different metabolic mechanisms. Mosaic apply insecticides to the different sectors of a grid for highly mobile insects, spray unrelated insecticides to sedentary aphids in different areas, or mix plots of insecticide-treated and untreated rows. On the evolution of pest resistance, selectivity and resistance of parasitoids and predator decreased the number of generations in which pesticide treatment is required and they could be complementary to refuges from pesticides To enhance the viability of parasitoids, the terms on the insecticides selectivity and factors affecting to the selectivity in field were examined. For establishment of resistant parasitoid, migration, survivorship, refuge, alternative pesticides were considered. To use parasitoids under the pressure of pesticides, resistant or tolerant parasitoids were tested, collected, and/or selected. A parasitoid parasitized more successfully in the susceptible host than the resistant. Factors affecting to selective toxicity of predator are mixing mineral oil, application method, insecticide contaminated prey, trait of individual insecticide, sub-lethal doses, and the developmental stage of predators. To improve the predator/prey ratio in field, application time, method, and formulation of pesticide, reducing dose rate, using mulches and weeds, multicropping and managing of surroundings are suggested. Plant resistance, predator activity, selective insect growth regulator, and alternative prey positively contributed to the increase of the ratio. Using selective insecticides or insecticide resistant predator controlled its phytophagous prey mites, kept them below an economic level, increased yield, and reduced the spray number and fruits damaged.

The Estimation of Monthly Average Solar Radiation using Sunshine Duration and Precipitation Observation Data in Gangneung Region (강릉지역의 일조시간과 강수량 관측자료를 이용한 월평균 일사량 추정)

  • In this study, we estimated solar radiation by multiple regression analysis using sunshine duration and precipitation data, which are highly correlated to solar radiation. We found the regression equation using data obtained from GROM (Gangwon Regional Office of Metrology, station 105, 1980-2007) located in Gangneung, South Korea and validated the equation by applying data obtained from new GROM (newly relocated, station 104, 2009-2014) and data obtained from GWNU (Gangneung-Wonju National University, 2013-2014) located between stations 104 and 105. By using sunshine duration data alone, the estimation using data from station 104 resulted in a correlation coefficient of 0.96 and a standard error of $1.16MJm^{-2}$, which was similar to the previous results; the estimation using data from GWNU yielded better results with a correlation coefficient of 0.99 and a standard error of $0.57MJm^{-2}$. By using sunshine duration and precipitation data, the estimation (using data from station 104) yielded a correlation coefficient of 0.96 and a standard error of $0.99MJm^{-2}$, resulting in a lower standard error compared to what was obtained using sunshine duration data alone. The maximum solar radiation bias increased from -26.6% (March 2013) to -31.0% (February 2011) when both sunshine duration and precipitation data were incorporated into the estimation rather than when sunshine duration data alone was incorporated. This was attributed to the concentrated precipitation found during May and July-September, which resulted in negative coefficients of the estimating equation in other months. Therefore, the monthly average solar radiation should be estimated carefully when employing the monthly average precipitation for those places where precipitation is concentrated during summer, such as the Korean peninsula.

Management Efficiency of Chestnut-Cultivating Households in Chungnam Province (충남지역 밤나무 재배 임가의 경영 효율성 분석)

  • The study, utilizing a data envelopment analysis (DEA) which is one of the nonparametric estimation methods, aims to evaluate the management efficiency of chestnut tree cultivators in such provinces in Chungchungnam-do as Cheong-yang, Gong-ju, Bu-yeo and so on. The analysis data of this study is based on inputs and outputs of 20 forestry households surveyed in the 2012 survey titled 'A Study on Current Level and Condition of Chestnut Cultivation and Management', which was conducted from March 2012 to October 2012. The elements of inputs are composed of management cost, harvesting cost, material cost, non-operation expenses and cultivation area, while the element of output is a gross margin only. Then the study analyzes a technical efficiency, a puretechnical efficiency and a scale efficiency using CCR and BCC model among DEA methods. Based on that, it also provides improvement methods for forestry households that turned out to be inefficient. In order to verify the result of DEA analysis, the study additionally compares a result of this efficiency study with that of chestnuts management standard diagnostic table. According to the result, the average value of technical efficiency analyzed was 0.667, proving to be inefficient in general. Given that the average value of pure-technical efficiency was 0.944 and that of scale efficiency was 0.703, it can be inferred that inefficiency exists in the field of scale, not in the field of cultivation techniques. As for forestry households with the efficiency score of 1, it is shown that there were 6 households that recorded 1 in the technical efficiency field and 13 households that recorded 1 in the pure technical efficiency. Meanwhile, there were 6 households that recorded 1 in all of the three aspects. In the comparison with the scores from chestnuts management standard diagnostic table, there were 5 households made a high score of over 80, among which are 3 households with score 1 in the technical efficiency. Also, the results of this study and the chestnuts management standard diagnostic table are proved to have the same result, both of them showing the same households that recorded the highest score and the lowest score. This means the management efficiency evaluation using DEA can be applied to the fieldwork along with the chestnuts management standard diagnostic table.

Keeping Quality and Taste Compounds in the Extracts from Rapid Fermented Anchovy Sauce (속성 멸치간장 엑기스분의 저장 안정성 및 정미성분)

  • As a part of investigation for utilizing anchovy more effectively as a food source, this work was undertaken the changes in keeping quality and taste compounds in the extracts from rapid fermented anchovy sauce during storage at room temperature. Rapid fermented products was made of chopped anchovy, water, koji and soybean protein isolate (20:10:2:1, w/w) thorough hydroxazine for 6 hours at $50^{\circ}C$. The liquified anchovy sauce extracts, contained 15% salt(w/w), were stored for 60 days at room temperature. The changes in pH, acidity, amino nitrogen and contents of taste compounds of the products were negligible during storage. The viable cell counts and histamines of the products were less than 30(colony/e extracts), 7.2-21.8(mg/100g extracts) during storage predominant free amino acids showed in the extracts from products were alanine, glutamic acid, histidine, lysine, leucine, valine and the total contents of those free amino acids were 60.4-64.3% of total free amino acids at final stage of storage. The major nucleotides and their related compounds of the products were revealed hypoxanthine, which were 69% over the total nucleotides and their related compounds. Using the omission test, the major taste compounds in the products were revealed free amino acids, nucleotides and their related compounds. The non-volatile organic acids, total creatinine, betaine, and TMAO were seemed to act an auxiliary role in taste of the extracts from rapid fermented anchovy sauce.
