잣 부산물의 급여가 육계의 생산성, 혈청 콜레스테롤, 도체특성 및 육의 지방산과 콜레스테롤 함량에 미치는 영향 (Effects of Dietary Pine Cone Meal on Growth Performance, Serum Cholesterol, Carcass Quality and Fatty Acid Composition and Cholesterol Content of Meat in Broiler Chickens)

  • 본 연구는 잣 부산물의 급여가 육계의 생산성, 혈청 콜레스테롤, 도체특성 및 육의 지방산과 콜레스테롤 함량에 미치는 영향을 알아보기 위하여 시험을 실시하였다. 사양시험은 2일령 Arbor Acre Broiler(♂) 480수를 공시하였으며, 5주간 사양시험을 실시하였다. 시험설계는 1) CS(미루나무톱밥 1%), 2) PCM0.5(잣 부산물 0.5%+미루나무톱밥 0.5%) 및 3) PCM1.0(잣 부산물 1%)로 3개 처리를 하여 처리당 8반복, 반복당 20수씩 완전임의 배치하였다. 전체 시험 기간 동안 생산성은 처리구간에 유의적인 차이가 없었으며(P>0.05), 또한, 혈청 콜레스테롤 및 도체비율도 처리구간에 유의적인 차이가 없었다(P>0.05). 다리살과 가슴살의 TBARS는 PCM1.0처리구가 CS처리구와 비교하여 유의적으로 높았다(P<0.05). 다리살의 arachidate는 PCM0.5 처리구가 PCM1.0 처리구와 비교하여 유의적으로 높게 나타났으며, linolenate는 PCM1.0 처리구가 다른 처리구와 비교하여 가장 낮게 나타났다(P<0.05). 다리살, 가슴살 및 복강지방의 콜레스테롤 함량은 처리구간에 유의적인 차이가 없었다(P>0.05). 결론적으로 본 시험의 결과 육계에 잣 부산물의 급여는 TBARS에 영향을 미치는 것으로 사료된다.

Addition of Capsicum oleoresin, Carvacrol, Cinnamaldehyde and their mixtures to the broiler diet II: Effects on meat quality

  • Background: In recent years, with the prohibition of antibiotics used as growth stimulants in the nutrition of farm animals, researchers have searched for alternative natural and reliable products in order to be able to sustain the developments experienced during the use of antibiotics and to overcome the possible inconveniences. In this context, studies on evaluation of essential oils in poultry nutrition have been reported to improve the utilization of feed, stimulate the release of digestive enzymes, increase absorption in the stomach and intestines, antimicrobial and anti-parasitic effects and thus, can be an alternative to antibiotics and improve meat quality as well. Indeed, this study has been carried out to explore the effects of the addition of 150 mg/kg capsicum oleoresin (CAP), carvacrol (CAR), cinnamaldehyde (CIN) or their mixture (CAP+CAR+CIN) into the broilers' ration over sensory, physical and chemical properties in breast meat and leg meat. Methods: Experiments were conducted over 400 male and female broiler chicks (Ross-308) in 5 groups (1 control group and 4 treatment groups), each composed of 80 chicks. The control group was fed without feed additives while the second, third, fourth and the fifth groups were fed with 150 mg CAP/kg feed, 150 mg CAR/kg feed, 150 mg CIN/kg feed, and 150 mg CAP+CAR+CIN/kg feed, respectively. Results: Addition of CAP, CAR, CIN or CAP+CAR+CIN had effects on the sensory (of taste, tenderness, juiciness and overall acceptability); physical properties (of $L^*$ value and toughness), the chemical properties (of DM, CF, CP, linoleic, EPA, behenic, MUFA, PUFA and ${\Sigma}n-6$ of the leg meat), the physical characteristics (of toughness and firmness), and the chemical properties (of CF, CP, linoleic, ecosenic, EPA, lignoseric, MUFA and ${\Sigma}n-3$) of the breast meat in comparison to control group. Furthermore, while the treatments had positive impacts on thawing loss, cooking loss and water holding capacity in both breast and leg meat; no effect was observed on pH value and lipid oxidation on day 1, day 4 and day 8. Conclusion: The results strongly suggested that the addition of CAP, CAR, CIN or CAP+CAR+CIN to the rations of the broiler chicks changed the sensory, physical and chemical properties of breast and leg meat. It was also observed that these compounds were more effective when they were added to the ratio as a mixture rather than adding them individually.

Carcass traits, meat quality, and fatty acid profiles of broiler chickens fed diets with increasing inclusion levels of microwave-dried black soldier fly (Hermetia illucens) larvae meal

  • The present study investigates the effects of different inclusion levels of a microwave-dried black soldier fly (Hermetia illucens) larvae meal (HILM) on the carcass characteristics, breast meat quality, and fatty acid profiles of leg meat in broiler chickens. A total of 150 male broilers were randomly assigned to three dietary treatment groups (10 replicates·treatment-1 and 5 birds·replicate-1). HILM was included at increasing levels (0, 2, and 4%; CON, 2HILM, and 4HILM, respectively) in diets formulated for three feeding phases: starter (1 - 7 d), grower (7 - 21 d), and finisher (21 - 35 d). One bird per replicate was slaughtered at d 35; the carcasses and organs were weighed, and breast and leg meats were excised for a meat analysis. A linear decrease (p < 0.01) was observed for live and carcass weights for the whole period of the experiment, with no difference between the CON and 2HILM groups. Broilers fed HILM showed no significant differences in meat quality parameters, except for an increase in yellowness (b*) in the 2HILM and 4HILM groups compared to the CON group (p < 0.01). With an increase in the HILM inclusion level, the proportion of saturated fatty acids (SFAs) such as lauric, myristic, stearic, arachidic, and heneicosylic acids showed a linear increase (p < 0.01); however, total SFA, monounsaturated fatty acid, and polyunsaturated fatty acid did not differ among the dietary treatments. Thus, microwave-dried HILM can be considered as a possible alternative ingredient to soybean meal in broiler diets up to a 2% inclusion level.

한국 토종 닭고기의 정미 성분 중 유리아미노산과 핵산관련물질에 대한 연구 (Studies on Components Related to Taste such as Free Amino Acids and Nucleotides in Korean Native Chicken Meat)

  • 토종닭과 broiler의 고기 맛에 관계하는 정미성분의 함량을 측정하여 다음과 같은 결과를 얻었다. 두 종 모두에서 유리아미노산 중 고기 특유의 풍미를 나타내는 carnosine의 함량이 가장 많았고 정미에 크게 영향을 미치는 glutamic acid함량도 많은 것으로 나타났다. Carnosine은 가슴살 그리고 28주령의 토종 닭고기에서 가장 많았으며, 다리살에 있어서는 6주령 이상의 토종 닭고기에 많았다. Glutamic acid함량은 다리살 그리고 11주령 이상의 토종 닭고기에서 많았고, 가슴살에 있어서는 6주령 이상의 토종 닭고기에 더 많은 것으로 나타났다. 도살 후 4$^{\circ}C$에서 48시간 저장한 경우 유리아미노산은 carnosine을 제외하고 대부분 증가했으며, carnosine은 도살 직후와 동일하게 가슴살에서는 28주령의 토종 닭고기에, 다리 살에서는 11주령 이상의 토종 닭고기에 더 많았다. Glutamic aicd는 가슴살에 있어서는 11주령 이상의 토종 닭고기에, 다리살에는 6주령 이상의 토종 닭고기에 더 많았다. 또한 좋지 않은 맛을 나타내는 아미노산의 합에 대한 좋은 맛을 나타내는 아미노산의 합의 비에 있어서도 11주령 이상의 토종 닭고기에 더 높게 나타났으며 , IMP의 경우 전반적으로 15주령 이상의 토종 닭고기 에 많은 것으로 나타났다. 따라서 유리아미노산 및 핵산관련물질의 결과로 미루어 11주령이상의 토종 닭고기가 육용의 broiler고기보다 정미성분이 많아 맛에 있어 우수함을 나타내고 있다.

브로일러와 주령이 다른 산란 성계육의 육질 및 가공적성 (Meat Qualities and Functional Properties of Broiler and Spent Layers Slaughtered at Different Ages)

  • 본 연구는 6주령 브로일러(Arbor Acre)와 함께 70, 95주령 산란 성계(Hy-line)의 가슴육과 다리육을 이용해 주령에 따른 산란 성계육의 육질특성 및 가공적성을 브로일러와 비교 평가하여 원료육으로서의 가치를 구명하고자 실시하였다. 브로일러는 생육과 유화물에서 우수한 보수력 및 유화안정성을 보였으며, 관능평가에 있어서 높은 점수를 받았다. 성계육 내에서 연령이 증가할수록 조직감이 질긴 특성을 보였으나, PUFA/SFA 및 n-6/n-3 지방산 조성이 유사하고, 가열육에 대한 관능검사 결과, 연령에 따른 차이를 나타내지 않았으며, 생육과 유화물에서의 가열감량과 수분손실이 유사하여 가공육의 원료로서 95주령 성계육이 70주령의 성계육과 동등한 수준의 이용성을 지닌 것으로 판단할 수 있었다.

육계 도축시 전기실신 방법이 육질에 미치는 영향 (The Effect of Different Electrical Stunning Method§ on Meat Quality in Broilers)

  • 본 연구는 도계과정 중 전압의 차이가 육계의 육색에 미치는 영향을 조사하기 위하여 육계 180수를 50과 65V,그리고 90V, 255 Hz, 5 초 조건으로 각각 60수씩 배치하여 실신시킨 후 pH, 보수력, 가열감량, 육색(껍질, 가슴육, 다리육, 날개육)과 혈반(Blood spot) 출현율을 조사하였다. 전기자극에 의한 기절시 전압의 차이에 의한 pH, 보수력과 가열감량에 대한 영향에서 저전압(50V, 255 Hz, 5 초)에 의한 전기자극은 고전압(90V, 255 Hz, 5 초)에 비하여 높은 pH와 보수력 그리고 낮은 가열감량을 보이는 것으로 나타났으나 유의적 차이는 없었다(p>0.05). 50V, 255 Hz, 5초에서 90V, 255 Hz, 5초 동안의 전압의 변화는 부분육별 육색에 있어서는 닭의 껍질, 가슴육과 날개육에는 큰 영향을 미치지는 않았다. 그러나 다리육에 있어서 전압의 증가는 명도와 황색도를 유의적으로 증가시켜 주는 것으로 나타났다(p<0.05). 혈반의 발생율은 미지선(50.56%)과 날개(54.77%)에서 높은 발생율을 보였으며, 다리(8.89%)와 가슴(4.44%)의 표면에서는 낮은 발생율을 보였지만 전압의 변화에 따른 일정한 경향은 보이지 않았다. 본 실험의 결과 도계시 전압의 변화는 닭고기의 pH, 보수력, 육색과 혈반 발생율에 유의적 차이는 없었지만, 다소간에는 영향이 있는 것으로 나타났다. 따라서 전압의 세기, 자극시간, 전류의 세기 등의 복합적 요인을 고려한 다각적 분석이 필요할 것으로 사료되었다.

Evaluation of Growth Performance, Meat Quality and Sensory Attributes of the Broiler Fed a Diet supplemented with Curry Leaves (Murraya koenigii)

  • An experiment was conducted to evaluate the growth performance and meat quality traits of broilers fed a diet supplemented with dry-ground curry leaves (Murraya koenigii). A total of 750 one-day-old broiler chicks (Cobbs 500) were arranged in the experiment with a completely randomized design and allotted to one of five treatments, with $T_1-Control$ and $T_2-T_5$ curry leaves powder levels (i.e., 0.3%, 0.6%, 0.9% and 1.2%, respectively). The initial body weights, final body weights and daily feed intake were measured over an experimental period of 32 days. At the conclusion of the experiment, the carcass weights and meat quality parameters were measured. The birds fed diets supplemented with curry leaves powder had a higher weight gain (P<0.05; ADG), improved feed conversion ratio (P<0.05; FCR) and lower mortality (P<0.05) rates compared to the birds in the control group. Nonetheless, there was no difference (P>0.05) in feed intake among the dietary treatments. Similarly, supplementation of curry leaves powder had no effect (P>0.05) on the proportions of the carcass, leg meat and drumstick. No differences were (P>0.05) observed in cooking loss or the pH of meat from broilers fed the curry leaves supplemented diet. However, curry leaf supplementation affected (P<0.05) the meat water holding capacity. A sensory evaluation showed higher levels of taste and tenderness in meat from broilers fed with curry leaves powder. In conclusion, our results suggested that curry leaves powder improved the growth performance of broilers, with a lower incidence of mortality and improvement of some meat qualities.

Evaluation of black soldier fly larvae oil as a dietary fat source in broiler chicken diets

  • The present study was conducted to evaluate the effects of black soldier fly larvae oil (BSFLO) from the black soldier fly larvae (BSFL) as a partial or total replacement of soybean oil (SBO) on growth performance, fatty acid (FA) profile, and meat quality of broiler chickens from 1 to 5 wk of age. A total of 210 male broiler chickens (Ross 308) at one-day of age were randomly allotted to 3 dietary treatments (10 replicates and 7 birds/group): a basal control diet (CON), the basal diet in which the SBO was replaced by 50% (50 BSFLO) or 100% (100 BSFLO) of BSFLO. The growth performance, physical measurements and chemical traits of leg meat, and sensory analysis of breast meat were not influenced by diets. However, the relative weight (g/kg) of gizzard of CON was significantly higher (14.85, 12.52, and 13.02 for CON, 50 BSFLO, and 100 BSFLO; p < 0.05) than that of other treatments. As expected, the FA profile of breast meat was affected by BSFLO inclusion. The proportion (%) of saturated fatty acid (SFA) was increased (27.16, 27.58, and 28.72 for CON, 50 BSFLO, and 100 BSFLO; p < 0.05) by BSFLO inclusion and the percentage (%) of MUFA was also increased (43.36, 44.58, and 48.55 for CON, 50 BSFLO, and 100 BSFLO; p < 0.01). On the contrary, the proportion (%) of PUFA was decreased (29.49, 27.84, and 22.74 for CON, 50 BSFLO, and 100 BSFLO; p < 0.01). In conclusion, the present study suggests that the replacement of BSFLO did not show an adverse effect on growth performance and it could be an ingredient as a dietary fat source for a broiler diet.

Effect of Probiotic Inclusion in the Diet of Broiler Chickens on Performance, Feed Efficiency and Carcass Quality

  • An experiment was conducted with three hundred and twenty broiler chickens to evaluate the influence of supplementation of probiotic on growth, microbiological status and carcass quality of chickens. The probiotic contained similar proportions of six strains of variable organisms namely Lactobacillus acidophilus, Lactobacillus casei, Bifidobacterium bifidum, Aspergillus oryzae, Streptococcus faecium and Torulopsis sps and was fed at 100 mg/kg diet. The body weight and feed conversion of probiotic fed groups were superior (p<0.05) compared to the control group in the 4th, 5th and 6th weeks. The chickens fed the diet with probiotic had lower (p<0.05) numbers of coliforms and Campylobacter than chickens fed the control diet. All chickens' carcasses on the control diet were positive for Salmonella while only 16 of the 40 carcasses were positive from chickens fed diets containing probiotic. The leg and breast meat of probiotic fed chickens were higher (p<0.05) in moisture, protein and ash, and lower in fat as compared to the leg and breast meat of control chickens.

Comparison of Physicochemical Characteristics of Hot-boned Chicken Breast and Leg Muscles during Storage at 20℃

  • The aim of this study was to compare the physicochemical changes of hot-boned chicken breast and leg muscles. Chicken breast and leg muscles from 56 broilers were excised within a 15 min post-mortem (PM) and stored at $20^{\circ}C$. Physicochemical traits were determined at 0.5, 6, 12, and 24 h PM. The ultimate pH of leg muscle was higher than that of breast muscle (p<0.05). The content of glycogen in the breast muscle was relatively higher than that in the leg muscle until 6 h PM (p<0.05). R-values showing rigor mortis of breast and leg muscles were completed after or before 6 h PM. Breast muscle had less cooking loss than leg muscle (p<0.05). Drip loss did not significantly differ between breast and leg muscles with the exception of that at 6 h PM. The sarcomere length of leg muscle was relatively longer than that of breast muscle (p<0.05). The MFI of leg muscle was significantly lower than that of breast muscle (p<0.05). The shear force of leg muscle was lower than that of breast muscle at 6 and 12 h PM (p<0.05); however, that of both muscles did not significantly differ at 24 h PM.
