누룩 투입시기에 따른 막걸리의 품질특성 (The Quality Characteristics of Makgeolli Based on Input Timing of Nuruk)

  • 본 연구와 실험은 막걸리의 양조 과정에서 1단계·2단계 담금으로 밑술을 만들고, 3단계 담금으로 막걸리를 만들고, 누룩의 물리·화학적 특성에 따른 막걸리의 최적 조건을 위하여 설정하였으며, 물리·화학적 특성의 변화를 확인하고 누룩 입력 시점을 기준으로 전통적 막걸리의 특성 검사를 시행하였다. 1단계·2단계 밑술의 물리·화학적 특성을 시험한 결과, pH와 산도는 step-1 담금으로 배양 한 날에 크게 감소하였고 배양 2 일까지는 추세가 지속되었다. 또한 아로마, 산도, 단맛 및 입안에서의 감촉 정도를 분석하기 위하여 관능검사를 실시하였으며, 그 결과로서 아로마는 M3단계에서 4.47로 가장 높았고, 산도는 M3단계에서 3.65로 가장 높았으며, 단맛은 M1단계에서 3.88, 입안에서의 감촉으로는 M1단계에서 3.59으로 가장 높았으며. 아로마와 맛을 포함한 전반적인 선호도는 M3에서 3.71로 가장 높게 나타났다.

누룩 사용 발효주로 제조한 증류주의 숙성 용기 및 기간에 따른 특성 (Quality Characteristics of Fermented Wine Using Nuruk by Aging Container and Period of Distilled Liquor)

  • 본 연구에서는 누룩 사용 발효주로 제조한 증류주를 국내에서 일반적으로 사용하고 있는 항아리와 스테인리스 용기에 숙성시키며 숙성시간별 증류주의 특성을 검토하였다. 알코올 분석 결과 알코올은 40.4~39.3%로 시작하였으며 숙성기간이 증가함에 따라 항아리와 스테인리스 용기의 알코올은 조금씩 감소하는 경향을 나타냈다. 휘발 산도는 감압증류 항아리 및 스테인리스 용기 숙성에서 약간 상승하였다. Acetic acid의 함량은 숙성기간이 증가함에 따라 항아리와 스테인리스 용기 모두에서 변화하지 않았다. 2-Thiobarbituric acid(TBA)는 증류 직후 감압증류가 상압증류보다 낮았으며 숙성기간이 증가함에 따라 TBA 값은 항아리와 스테인리스 용기 모두 큰 변화가 없었다. 숙성에 따른 증류주의 fusel alcohol 중 n-propanol은 숙성기간이 증가함에 따라 상승하지 않았으며 iso-butanol은 항아리 숙성의 경우 측정값이 감소하였으나 스테인리스 용기는 변화가 없었다. 향기 성분의 경우 항아리 보관에서 증류 직후보다 180일에서 좀더 다양한 향기 성분이 측정되었으며 특히 고비점의 향기 성분들이 많아졌다. 스테인리스 용기 역시 0일차보다 180일에 좀 더 다양한 향기 성분이 나타났으나 그 양은 상대적으로 항아리보다 적었다. 항아리 숙성 관능 결과 180일에는 감압 50 cmHg의 관능점수가 가장 높았으며 상압 $80^{\circ}C$ 증류주는 0일에 비해 180일의 관능이 가장 많이 향상되었다.

다수성 벼 품종의 양조 특성 연구 (Brewing and Fermenting Characteristics of Makgeolli Produced from High-yielding Rice Varieties)

  • 국내 육성 가공품종 중 다수성 벼를 원료로 한 양조적성 확인을 위해 인디카계통인 안다와 다산 1호 자포니카계통인 드래찬과 보람찬을 사용하여 원료쌀 품종에 따른 양조 적성 확인을 연구하였다. 또 국균과 효모의 증식을 촉진하는 것으로 알려진 K의 함량은 드래찬과 보람찬에서 높게 나타났다. 쌀의 일반성분 분석 결과는 단백질 함량은 안다벼가 $7.5{\pm}0.2%$로 다른 쌀에 비해 높았으며 아밀로스 함량은 자포니카계통 드래찬과 보람찬 쌀이 $18.9{\pm}0.7%$, $18.9{\pm}1.4%$으로 낮은 함량을 보였다. 전분가는 자포니카계통인 드래찬 보람찬이 $78.6{\pm}0.2$, $77.2{\pm}0.4%$으로 낮은 값을 나타내었으며 인디카계통인 안다와 다산 1호는 $86.2{\pm}0.3$, $82.0{\pm}0.5%$을 나타내었다. 호화특성으로는 전분의 열과 전달력에 대한 저항의 척도인 강화점도(breakdown)는 안다와 다산 1호가 $120.92{\pm}2.5$ cp 이상으로 높게 나타났다. 품종별 발효적성을 실험한 결과 먼저 입국법 막걸리의 경우 다산 1호를 제외한 모든 시료에서 발효 완료시 16.6-17.4% 사이의 알코올이 생성 되었다. 다산 1호만 14.3%의 알코올이 생성 되었으며 또한 관능결과에서는 다산 1호가 다른 품종의 막걸리와 유의적인 차이를 나타내며 종합적인 기호도가 좋았다. 무증자법 막걸리의 경우 인디카계통인 안다와 다산 1호가 발효 완료시에 알코올이 17.2%, 17.0%로 다른 품종에 비해 낮게 생성되었다. 총산의 경우 안다와 다산 1호는 총산이 0.33, 0.31%로 드래찬과 보람의 0.28%보다 높게 생성되었다. 관능결과에서는 향기, 목넘김, 종합적 기호도의 경우에서 안다와 다산 1호가 다른 품종의 막걸리와 유의적인 차이를 나타내며 기호도가 좋았다. 입국과 무증자 막걸리 제조에서 다산 1호가 가장 우수한 관능 값을 보였으나 입국 제조시 알코올 생산량이 낮은 문제를 해결한다면 다수확 품종 중 다산 1호가 막걸리 생산에 적합한 품종으로 사료된다.

장미, 동백 및 맨드라미꽃 첨가 약주의 품질 특성 및 항산화효과 (Quality Characteristics and Antioxidant Effects of Yakju Added with Rose, Camellia and Cockscomb Flower)

  • Purpose: This study investigated the quality characteristics and antioxidant effects of Yakju added with rose, camellia, or cockscomb flower during fermentation. Methods: The quality characteristics and antioxidant effects were estimated including pH, amino acidity, total acid, ethanol content, color value, sensory test, electric donating ability, nitrite-scavenging ability, and ferrous ion chelating effect. Results: The pH values of Yakjus added with rose, camellia, or cockscomb flower were decreased after 2 days of fermentation and then increased after 4 days of fermentation, with final pH ranging from 4.15 to 4.27. Total acid content and amino acidity were increased during fermentation. The ethanol content in Yakjus fermented with rose, camellia, or cockscomb flower was rapidly increased after 2 days of fermentation, reaching the maximum content of 19.1% after 8 days of fermentation. In color evaluation, the L values of Yakjus added with rose, camellia, or cockscomb flower did not changes during fermentation, whereas values of a and b were increased. Total phenolic compound contents in Yakjus added with rose, camellia, or cockscomb flower were 0.67, 0.59, and 0.52 mg/mL, respectively. Total flavonoid contents in Yakjus added with rose, camellia, or cockscomb flower were 0.20, 0.09, and 0.26 mg/mL, respectively. In sensory test, the overall acceptability of Yakjus added with cockscomb flower was higher than that of Yakju added with rose or camellia flower. However, the difference was not statistically significant (p<0.05). Electron donating ability and nitrite-scavenging abilities were the highest in Yakjus added with rose flower, whereas ferrous ion chelating effect was the highest in Yakjus added with cockscomb flower. Conclusion: These results indicated that Yakjus added with rose, camellia, or cockscomb flower might have valuable functional properties due to their antioxidant effects.

Influence of the Kilning Conditions on Enzymatic Activity of Rice (Oryza sativa) Malt

  • This study investigated the effect of kilning condfition on the diastatic power and activities of protease, $\alpha$-amylase, and $\beta$-amylase in rice malt. Common rice (Oryza sativa) was steeped at $30^{\circ}C$ for 50 h, germinated at $30^{\circ}C$ for 7 days, and kilned at $50^{\circ}C$ for 24 h. The moisture content and enzymatic activities were determined under various kilning times. As a result, the moisture content was reduced from 42.1 % to 3.9% after 24 h of kilning at $50^{\circ}C$. The protease activity of rice malt showed lower value than that of barley malt. All enzymatic activities were decreased during the kilning stage. Results indicated that after prolonged kilning at $50^{\circ}C$, the inactivation of hydrolytic enzymes might be occurred. Even though the amylolytic activity of malted rice showed low value, the rice malt shows the potential characteristics as ingredient for the brewing and cereal industries.

천일염과 감마선이 막걸리의 미생물 생장 억제에 미치는 효과 (Growth-inhibitory Effect of the Sun-dried Salts and Gamma rays on Microorganisms Isolated from Korean Traditional Raw Rice Wine)

  • This study was carried out to investigate the changes in the storage characteristics of the Korean traditional raw rice wine (RRW) treated with Korean sun-dried salts and gamma rays. Nowadays, RRWs have received attention because they are a nutritious food with health-stimulating properties. But the rapid deterioration of the fermented RRW is one of the serious problems for brewing and marketing in the world. Actually, the expiry date of the RRW is around a week and this has been a biggest disadvantage of the RRW. The goal of this study was to make it of high quality and extend the period of circulation of the RRW. A lactic acid bacterium was isolated from the RRW. The 16S rRNA sequences of isolates showed 98% homology with the Lactobacillus fermentum. These results suggested that could be manageable improve the shelf life with addition of the sun-dried salts and irradiation with gamma rays.

나양시대(奈良時代)의 식생활(食生活) (A study on dietary culture in Nara Dynasty in JAPAN)

  • The Nara Dynasty of Japan lasted from 710 to 784 A.D, which corresponds to the period of the Unified Shilla Kingdom of Korea. The Nara Dynasty enacted the 'Daiho Law and Ordinance' by referring to those of Tang Dynasty of China. Under these legal systems, the Ministries were defined, and foods were used for paying taxes or as currency. The characteristics of the dietary culture in Nara Dynasty were as follows. 1) They obtained food from rice and other grain farming, hunting and fishery. Rice was their main staple and was also used for preparing porridge and brewing wine. 2) Under the influence of Buddhism, meat was prohibited, and milks or dairy products were supplemented for improving malnutritional status. 3) They also used seasonings, spices and sweeteners to enhance the taste and produced medicines by extracting plants, animals and minerals. 4) While chopsticks were made of bamboo, willow, silver, shell, tree or bronze, such utensils as pan earthenware steamer, or charcoal pots were used for preparing meals. 5) Highly qualified utensils, made of porcelains painted with lacguetr, metal, glass, horn and stone, were produced as handcraft art wad developed. 6) Chinese style cousines and cooking methods were popular and various types of preserving techniques like drying or salting were used. Processed cookies were also developed. 7) Although flour was used mainly among noble class people, ordinary people also used it. The royal families ate milk products a lot and even fried foods. 8) One can say that Buddism exerted an influence on Vegetarianism from this era.

Distiller's Yeast Discovery for Industrial Application

  • There are many yeast strains have been discovered for industrial usage in global scale. In the point of view for the alcoholic fermentation performance and producing alcoholic beverage products, recently many countries have known about the importance of microorganisms as a valuable resource. Discovered with well performed yeasts have potential industrial application in diverse ways such as foods, beverages, cosmetics, pharmaceutical functions, and so on. In Korea, the yeast research has not been sufficiently performed especially for distilled spirits industry. As a result, not so little manufacturers use exotic yeasts from overseas even included the expensive royalties. Besides of those, to produce distilled spirits, many manufacturers do not use specialized yeast for distilled spirits. Distiller's characterized yeasts such as whisky, brandy, vodka, Japanese shochu and awamori, are all well-known industrialized. For decades, the distillers, except us, have selected, developed, and practised yeasts in accordance with distilled spirits characters. This study is about selection and industrial application of yeasts for the Korean pot distilled spirits. Finally 7 yeast strains were selected among over 1,000 yeasts from the traditional Nuruks, through the essential related tests based on brewing and distilling science. The selected yeasts show the appropriate characteristics of distilled spirits. The result of this study could help our distilled spirits industry be activated and stand independent from the exotic microbes.

Development of “Hanaomoi”: An Original Variety of Aomori Rice Suitable for Japanese Sake Production

  • In order to develop a new variety of rice that adapts to the climate of Aomori prefecture and possesses characteristics suitable for production of high quality Japanese sake, artificial cross experiments were executed between Yamadanishiki, which is widely used nationwide as an authentic variety of rice for sake production, and Hanafubuki, which was peviously developed by Aomori prefecture. An excellent hybrid, named Hanaomoi, was selected and fixed by a series of selection experiments and systematic cultivation. Unpolished Hanaomoi rice contained less amount of protein than Yamadanishiki and Hanafubuki. Unpolished rice of Hanaomoi was harder than Yamadanishiri and Hanafubuki, therefore polishing treatment was done in high yield and one could obtain a high degree of polish on the rice(namely 40% polishing). These features are advantageous to production of high quality of sake.Test brewing using 40% polished Hanaomoi gave rise to a characteristic sake that contained a slightly higher amount of alcohol and flavor components than Yamadanishiki and Hanafubuki. Sensory tests concluded that sake from Hanaomoi was as superior as the one from authentic Yamadanishiki. Hanaomoi is a promising variety of rice suitable for production of a high quality sake exclusive to Aomori prefecture.

한국산 Aspergilli에 관한 분류학적 연구 (Taxonomical studies of Korean aspergilli)

  • Intensive taxonomical studies of the Aspergilli have long been made. Altogether 132 species and 18 varieties are recognized in the book "The Genus Aspergillus" written by Raper and Fennell (1965), in contrast to 77 species, 8 varieties and 4 mutations in " A Manual of Aspergilli" written 20 years earlier by Thom and Raper (1945). Classification of the Asperilli by Thom and Raper (1945) and by Raper and Fenell (1965). Classification of the Aspergilli by Thom and Raper (1945) and by Rapher and Fenell (1965) have been based mainly upon morphological and cultural detail both physiological and biochemical activities. In Korean there are many kinds of foods fermented natrually without the employment of selected microorganisms, and there are, of course, many different microorganisms serving in the fermentation fermented foods than other countries, the distribution and biological properties of the Asperigilli, in Korea are more variable. Taxonominical studies with 36 strains of Asperilli were based upon the examinations of morphological, cultural, and physiological characteristics. nineteen strains indigenous to Korea were selected from a lot of strains which had been isolated from meju and kokja and one strain from soil. They were identified according to the group key of Raper and Fennell. Ten strains were donated by Dr.Hesseltine of the Northern Utilization Research and Development Division in the U.S.A. From the Asp. japonicus supplied by Dr.Hesseltine, a white mutant was isolated and also studied. Two strains were donated by Dr. Murakami of the Research Institute of Brewing in Japan, and four strains came from Korean industrial companies.ndustrial companies.
