After the virtual eradication of cattle during World War II, Papua New Guinea herds were rebuilt with Shorthorn and Aberdeen Angus cattle from Australia. These, and Red Sindhi and Sahiwal, imported in 1952, were considered unsuitable breeds. In 1954, Department of Agriculture, Stock and Fisheries imported three Brahman bulls and three heifers from Texas and in 1960 began importations of Afrikaner from Queensland. In Central Province, Brahmans were crossed with Angus and at Erap (Morobe) the hottest place in Papua New Guinea, Shorthorns were crossed with Afrikaners. In 1965, Brahman and Brahman-cross were sent to Erap. Records of breeding and growth rates were collected for use in upgrading in cattle of the basis of performance, not pedigree. The data are not ideal for genetic analysis, since no control groups were maintained. Birth weights (BWT), weaning weights (WWT) and calving intervals (CI) were analysed for the period 1969-1978. After exclusion of unsatisfactory data, 2,514 calf records were used, including both breeds from 1969 to 1973, but only Brahman-cross subsequently. Breed mean BWT ranged only from 30.6 to 33.8 kg. As Brahman content increased, BWT decreased and WWT increased; within a genotype, there was a negative maternal effect of high Brahman content on BWT and a positive effect on WWT which ranged from 138 to 174 kg. Afrikaner calves had heavier BWT but lighter WWT. As expected, bulls were heaviest, heifers lightest and mature cows bore and reared heavier calves. Calving interval (405 days, equivalent to 90% calving) was unaffected by breed but 4-year old cows averaged 423 days. Breed differences in BWT and WWT are consistent with the body of literature on performance of Brahmans and Afrikaners. Since cattle tick are not present and internal parasites are insignificant at Erap, the superiority of Brahmans indicates that they were better at utilizing the mediocre quality grazing of the Markham Valley or were more heat tolerant. Performance selection over ten years resulted in the virtual elimination of Afrikaners, with the final genotype approximately 9/16 Brahman, 3/8 Shorthorn and 1/16 Afrikaner.
The effects of four types of tropical protein-rich trees on nutrient digestibility, nitrogen (N) balance, urinary purine derivative (PD) excretion and blood metabolites in four Thai Brahman cattle (290${\pm}$2.5 kg) were studied. The animals were fed twice daily, with each feeding consisting of 1 kg (fresh weight) rice straw and one of the four dietary supplements: i) 1.98 kg oven-dried rain tree pods (RTP) and 20 g premix (RTPP), ii) 980 g RTP and 1 kg sun-dried leucaena leaves and 20 g premix (LLRT), iii) 980 g RTP and 1 kg sun-dried cassia leaves and 20 g premix (CLRT) and iv) 980 g RTP and 1 kg sun-dried mulberry leaves and 20 g premix (MLRT). The apparent dry matter (DM) and organic matter (OM) digestibilities were higher (p<0.05) in cattle fed the CLRT supplement than in those fed the other supplements, whilst the apparent digestibility of neutral detergent fibre (NDF) was higher (p<0.05) in cattle fed the CLRT and MLRT supplements than in those fed the other supplements. The N-balance of cattle fed LLRT and CLRT supplements was higher (p<0.05) than in cattle fed RTPP and MLRT supplements, whilst the apparent digestibility of N was highest (p<0.05) in cattle fed RTPP supplement, compared to the other supplements. Allantoin and PD excretion in the urine, and the ratios of allantoin/DOMI and PD/DOMI were higher (p<0.05) in cattle fed RTPP and MLRT than for those fed LLRT and CLRT supplements. Plasma ${\beta}$-hydroxy butyrate (${\beta}$-HBA) and insulin concentrations were higher (p<0.05) in cattle fed RTPP supplement than in those fed the other supplements. The study demonstrated the value of using local multipurpose trees (MPTs) to improve Brahman cattle feeding systems in the tropics.
Steers and heifers (N=490) were produced between 1991 and 1996 by reciprocal fiillsib backcross and $F_1$ crosses from Angus and Brahman to compare characteristics of carcass and palatability traits between Bos indicus and Bos taurus inheritance. Carcasses of 3/4Angus were heavier, fatter (p<0.05), more tender and higher in other palatability attributes (p<0.01) than those of 3/4Brahman. Reciprocal effects of parental cross breeds were found on some traits. Within 3/4Brahman inheritance group, Brahman sired progeny produced heavier and fatter carcasses with better palatability (p<0.05) than progeny with Brahman as a dam breed. Estimates of heritability were intermediate to high in most carcass and palatability traits. Genetic correlations of tenderness with marbling score (MARB), sarcomere length (SARC), fragmentation index (FRAG) and calpastatin activity (CALP) were moderate to high, suggesting potential use of the tenderness-influencing factors as indirect selection criteria to improve palatability attributes. MARB and SARC that were best predictors of tenderness explained 3.07 to 5.85% and 4.32 to 8.24% of variation in tenderness, respectively. However, there was no tenderness-influencing factor to dominantly explain large portion of variation in tenderness.
Pedigree data were used to predict the performance of 1,166 imported Americas Brahman breeder cattle, composed of 104 bulls and 1,062 heifers with an average age of 24.4 months (range of 17 to 40 months). A total of 13 full sib, 10 maternal half sib, and 228 paternal half sib groups were identified, each with average group size of 2.08, 2.00, and 4.49, respectively. Only 758 (64.9% of total) imported cattle were found to have at least one ancestor with expected progeny differences (EPDs) reported in the Spring 1995 Brahman Sire Summary. Moderate average accuracy values of .71, .69, .52, and .52 for birth weight, weaning weight, yearling weight, and maternal milk, respectively, were noted for EPDs of the ancestors. Prediction equations were derived by multiple regression analysis of available EPDs of sire, paternal grand sire, and maternal grand sire. Based on pedigree indexes that involve various combinations of available ancestral information, the average predicted EPDs (lbs) for imported cattle were $1.76{\pm}0.54$, $14.93{\pm}4.86$, $25.10{\pm}9.50$, and $5.86{\pm}2.08$ for birth weight, weaning weight, yearling weight, and maternal milk, respectively. Significant correlations (p < .05) were also found between sire and son EPDs (+.27) for yearling weight; and between sire and paternal grand sire EPDs for birth weight (+.34), weaning weight (+.51), yearling weight (+.49), and maternal milk (+.55).
Postweaning performances of steer from 11 to 18 months of age under intensive feedlot condition were examined in Brahman and Santa Gertudis cattle breeds which have been established in Paraguay. Fitting of growth data in each breed to an empirical growth model with non-linear least square analysis resulted in the following age(t; months) - weight(w; kg) function made out each breed: w=638.26($1-2.341e^{-0.010965t}$) for Brahman and w=716.38($1-2.365e^{-0.10741t}$) for Santa Gertrudis. The estimated mature size of Brahman steers(638 kg) was 11% lower than that of Santa Gertrudis steers(716 kg). However, slightly larger k value (rate of maturing) of Brahman steer in the mechanistic model suggested relatively earlier maturing tendency in the breed. No significant differences in dressing percentage (Brahman, 59.3%; Santa Gertrudis, 58.8%) of chilled carcass weight to live-weight were observed between breed.

Objective: Marbling or intramuscular fat (IMF) has been widely reported to directly impact the sensory acceptance of meat. This study was carried out to determine the physical and sensory characteristics of ribeye, Longissimus dorsi steaks obtained from four different cattle breeds namely Wagyu, Angus, Brahman, and Malaysian local beef, the Kedah-Kelantan (KK). Methods: The degree of marbling was determined by using an established combined camera-image analysis technique while instrumental texture determination was carried out by using Warner-Bratzler shear force analysis. Sensory evaluation of the beef steaks was performed following a quantitative descriptive analysis incorporating 10 trained consumer panelists. Results: Wagyu was found to possess the highest (p<0.05) percentage of IMF at 33.90% and the lowest shear force (raw = 5.61 N/㎟; cooked = 14.72 N/㎟) followed by Angus (20.87%), Brahman (12.17%), and KK (p<0.05, 6.86%). The difference in sensory properties of the four steaks was evident, with Wagyu appearing to be highly correlated with most sensory attributes measured namely sustained buttery, tooth-packing, chewiness, juiciness, tenderness, mouthfeel, oiliness, and overall acceptability. The Malaysian local beef, KK was found to be less acceptable (p<0.05), although most of its sensory attributes were found similar (p>0.05) in appearance, aroma, texture, juiciness, and flavour to the cooked steak from Angus and Brahman. Conclusion: This present study demonstrated the role of IMF in determining the quality and sensory acceptance of beef from different cattle breeds. These data have provided new information and further understanding on the physical and sensory quality of Malaysian local beef.

Twelve swamp buffaloes and Brahman cattle heifers (6 animals each) were randomly assigned to two treatments, control (grazing only) and supplementation of cassava hay (CH) at 1-kg dry matter per head per day (DM/hd/d), in a $2{\times}2$ factorial arrangement according to a cross-over design. The cassava hay contained a high level of protein (19.5% of DM) and a strategic amount of condensed tannins (4.0% of DM). As a result it was revealed that supplementation of CH at 1-kg DM/hd/d significantly (p<0.05) improved the nutrition of both swamp buffaloes and Brahman cattle in terms of DM, organic matter (OM), protein and energy intake and digestibility, ruminal NH3-N and rumen ecology. Supplementation significantly (p<0.05) reduced weight losses in both species and improved the health, in terms of reduced number of parasite eggs in feces (p<0.05), of both buffaloes and cattle. There tended to be a difference in term of response to CH between the two species. The DM, OM, protein intake and digestibility and total digestible energy intake tended to be higher for buffaloes as compared to cattle. Moreover, the percentage reduction of parasite eggs tended to be higher for buffaloes as compared to cattle (57.6 and 45.0%, respectively). However, there were no significant interactions between species and treatments.

Reproduction and growth to weaning were compared for Brahman crossbred (BX) and a local strain of South-East Asian cattle, "Javanese Zebu" (JZ) and their reciprocal crosses at "Erap" in the humid equatorial lowlands of Papua New Guinea. Forty heifers of each breed were mated continuously, half to bulls of each breed, for five years. BX calved first at 35 months while JZ calved at 31 months. Subsequent calving intervals were very short, at 370 and 341 days. JZ cows weighed about two thirds of the BX cattle at each stage of reproduction. Birth weights and growth to weaning were : BX 35 kg and 0.68 kg/d ; BX male $\times$ JZ female 29.3 kg and 0.53 kg/d ; JZ male $\times$ BX female 30.8 kg and 0.61 kg/d ; JZ 25 kg and 0.50 kg/d. The combination of small cow size, short calving interval and rapid calf growth resulted in the BX male $\times$ JZ female being the most efficient producer, in kg of calf weaned per cow mated per year while the reciprocal cross was the least efficient ; both straight-breds were equal and intermediate. These data show that indigenous equatorial cattle may not be inferior under good grazing conditions. For all traits, breed interactions (heterosis) was small and non-significant.
Effects of soybean oil or whole cotton seed addition on conjugated linoleic acid (CLA) and performance of fattening Brahman$\times$Thai-Native cattle were studied. Eighteen fattening cattle averaging $241{\pm}24kg$ body weight and approximately 1 year old were stratified by live weight into three groups and randomly assigned by group to one of three dietary treatments. The treatments were control (concentrated 14% crude protein), control and supplemented with 170 g/d soybean oil, control plus 170 g/d of oil from whole cotton seed. All animals were weighed before and after the experimental period and 4 cattle per treatment were randomly slaughtered then carcass measurements were obtained. There were no statistically significantly differences in the final body weight, average daily gain and dry matter intake among treatments. However, the crude protein intake was significantly decreased (p<0.01) when whole cotton seed was fed compared with control and soybean oil treatments. The carcass composition and carcass characteristics were not significantly different in Longissimus and Semimembranosus muscle by feeding soybean oil and whole cotton seed compared with the control treatment. Supplementation of soybean oil increased (p<0.01) cis-9, trans-11 CLA by 116% in Longissimus muscle and by 240% in Semimembranosus muscle. However, whole cotton seed did not increase cis-9, trans-11 CLA in both muscles. The present study successfully increased cis-9, trans-11 CLA content of muscle lipids by soybean oil but not by whole cotton seed.

Muscle fiber characteristics and their relationship to water-holding capacity of longissimus dorsi (ld) muscle were studied in Brahman (BRA) and Charolais (CHA) crossbred bulls fattened under practical farm conditions. Thirty-four BRA and 34 CHA bulls were randomly selected and slaughtered at 500, 550 and 600 kg live weight. Parameters of water-holding capacity such as drip, ageing, thawing, cooking and grilling loss were determined. Muscle fiber characteristics were conducted for muscle fiber type percentage and cross-sectional areas of slow- and fast-twitch fiber types, and correlation coefficients to water-holding capacity parameters were calculated. Results showed that CHA meat had a better water-holding capacity (less ageing, thawing and grilling loss) when compared with BRA, whereas slaughter weights had no significant effects on these parameters. Furthermore, there were no significant differences between genotypes and slaughter weights in muscle fiber type percentage and cross-sectional areas of ld muscle. Slow- and fast-twitch fiber types of all experimental groups averaged 24.4 and 75.6%, respectively. Cross-sectional areas of fast-twitch fibers had almost twice the size of slow-twitch fibers (6,721 and 3,713 ${\mu}m^2$, respectively). The correlation between muscle fiber area and water-holding capacity indicated that muscles with larger fiber areas had a lower drip and ageing loss but a higher cooking and grilling loss.
