녹미채 첨가가 김치의 숙성중 품질에 미치는 영향 (Changes in Kimchi Quality as Affected by the Addition of Boiled-Dried Fusiforme)

  • 칼슘함량이 높은 녹미채를 넣은 김치를 만들고 1$0^{\circ}C$에서 숙성하면서 pH, 적정산도, 환원당, 총균수, 유산균수 및 관능 검사를 실시한 결과는 다음과 같았다. 녹미채의 첨가량이 많을수록 pH가 높은 것은 김치의 숙성 5일에서 15일 사이였으며, 그 이후로는 시험구간에 차이가 크지 않았다. 녹미채를 첨가한 김치의 적정산도는 대조구보다 낮았으며, 0.1%를 첨가한 시험구가 가장 낮은 값을 보였다. 김치의 적숙기로 생각하는 적정산도 0.6~0.8%를 기준으로 본다면 0.1% 첨가구는 2~3일 정도 적숙기를 연장하는 효과가 있을 것이다. 또한 이 시험구는 숙성 10일부터 다른 시험구에 비하여 높은 환원당 함량을 유지하였는데, 이는 적정산도의 증가가 다른 시험구에 비하여 낮았기 때문으로 보인다. 김치를 담근 직후부터 숙성 2일째까지 녹미채를 첨가한 김치의 유산균수가 대조구에 비하여 현저히 낮았으나 10일 이후에는 큰 차이를 보이지는 않았다. 숙성 5일째인 김치의 색, 냄새 및 맛을 평가한 결과 대조구가 가장 높은 점수를 얻었으며, 녹미채를 0.1% 첨가한 시험구는 대조구보다 점수는 낮았으나 유의적인 차이는 없었다.

녹각김치에 관한 연구 (A Study on Overgrown Antler Kimchi)

  • 열수로 한시간 추출한 녹각, 생녹각, 유산으로 추출한 녹각을 2% 가해서 배추김치를 담그고 $11^{\circ}C$에서 15일간 발효시키면서 발효 기간중의 여러 변화를 분석하였다. 15일 발효 후, 열수추출 녹각김치의 pH는 3.82, 생녹각 김치는 4.07, 유산처리 녹각김치는 3.98, 대조김치는 3.86을 나타냈고, 산도는 열수추출 녹각김치 7.2, 생녹각김치 10.1, 유산처리 녹각김치 8.6, 대조김치 6.9를 나타냈다. 총당은 열수추출 녹각김치 1.20%, 생녹각김치 0.46%, 유산처리 녹각김치 1.15%, 대조김치 1.46%를 나타냈고, 환원당은 열수추출 녹각김치 0.47%, 생녹각김치 0.09%, 유산처리 녹각김치 0.58%, 대조김치 0.39%를 나타냈다. 아미노산은 열수추출 녹각김치 16.35$\mu$mol/m1, 생녹각김치 20.83$\mu$mol/m1, 유산처리 녹각김치 15.06$\mu$mol/m1, 대조김치 17.60$\mu$mol/m1를 나타냈고, 단백질은 열수추출 녹각김치 1.830%, 생녹각김치 2.011%, 유산처리 녹각김치 2.101%, 대조김치 2.011%를 나타냈다. 유기산 중 유산은 생녹각김치 2.036%, 열수추출 녹각김치 0.954%, 유산처리 녹각김치 1.485%, 대조김치 1.200%를 나타냈다. 숙신산은 유산처리 녹각김치가 가장 많아서 0.153%, 아세트산도 유산처리 녹각김치가 가장 많아서 0.188%이었다. 아세트산 함량이 가장 적은 것은 열수추출 녹각김치로 0.059%이었다. (Table 1) 균체수는 0.96$\times$$10^{8}$ g ~ 3.05$\times$$10^{8}$ g 분포를 나타냈으며, 생녹각김치, 유산처리 녹각김치, 대조김치, 열수추출 녹각김치의 순으로 많았다. 녹각 김치를 사람들에게 맛보게 하여 짠맛, 신맛, 향기, 색, 조직감을 평가시킨 결과 열수추출 녹각김치와 생녹각김치가 가장 높은 값을 나타냈고 이어서 대조김치와 유산처리 녹각김치의 순을 나타냈다.

산 및 열처리에 따른 오징어의 이화학적 특성변화 (Changes in Physicochemical Characteristics of Squid upon Acid and Heat Treatment)

  • 본 연구는 오징어 가공식품개발의 기초자료확보를 위하여 산(acetic acid, 0~5%) 처리와 예비가열($55^{\circ}C$, $80^{\circ}C$) 후 열처리($100^{\circ}C$)에 따른 오징어의 이화학적 성분 변화를 조사하였다. 일반성분 함량은 수분이 약 73~78%, 조단백이 약 19~24%였으며 자숙 오징어의 일반성분 함량은 산 농도에 따라서 유의적인 차이가 있었다. 자숙 오징어의 모든 시료에서 주요 유리당은 ribose와 glucose이었으며, $55^{\circ}C$ 예비가열 시료는 다른 시료보다 glucose 함량이 낮은 것으로 나타났다. 총 유리당 함량은 표피 무제거 시료와 $80^{\circ}C$ 예비가열 시료순으로 높았고 $55^{\circ}C$ 예비가열 시료가 상대적으로 매우 낮았다. 모든 시료들의 유리아미노산 함량은 proline 함량이 가장 높았고 taurine, histidine 순으로 많이 함유되어 있었으며, 모든 자숙 오징어군에서 산 용액 처리농도에 따른 유의적인 영향을 보였다(p<0.05). 총 유리아미노산 함량은 $55^{\circ}C$ 예비가열 시료가 가장 높았고 $80^{\circ}C$ 예비가열, 표피 무제거 시료순으로 나타났다. 핵산관련물질은 모든 시료에서 inosine이 검출되지 않았고 ATP 함량이 가장 낮았다. $55^{\circ}C$$80^{\circ}C$ 예비가열 시료는 hypoxanthine 함량이 가장 높고 AMP와 IMP 함량이 비슷한 수치를 보였으나 표피 무제거 시료는 IMP 함량이 표피제거 시료보다 높았다. 지방산은 포화지방산이 약 40%로 palmitic acid 함량이 매우 높았고 불포화지방산은 약 60%로 EPA와 DHA 함량이 높았다. 지방산중 DHA 함량이 가장 높고 palmitic acid, EPA 순으로 나타났으며 이 세 가지가 총 지방산의 약 85%를 차지하고 있었다. 지방산은 산 처리와 가열 방법에 따른 뚜렷한 차이가 나타나지 않았다. 무기질의 함량은 인의 함량이 가장 높았고 칼륨, 나트륨, 마그네슘, 칼슘 순이었으며 예비가열 온도 또는 산 용액 농도에 따른 유의적인 영향을 받았다. 그리고 중금속류인 카드뮴, 납, 비소는 미량으로 나타나 식품 기준치보다 낮은 수준이었다.

쑥인절미의 제조방법에 따른 텍스쳐 특성 (Sensory and Mechanical Characteristics of Ssuck-injulmi Supplemented by Mugworts)

  • "Suck-injulmi" is one of the Korean traditional rice cake made from glutinous rice and mugworts. The optimun conditions for the preparation of "Ssuck-injulmi" were investigated. The best recipe of "Ssuck-injulmi" was 1) adding 240 g (80%) glutinous rice flour and 60 g (20%) raw or boiled mugworts by hand milling, or boiled mugworts after steaming glutinous rice by hand milling. 2) adding 210 g (70%) glutinous rice and 90 g (30%) boiled mugworts by mechanical method. The Moisture of "Ssuck-injulmi" was 43.39%-51.33%. The Hardness of "Ssuck-injulmi" was high in the order of 54,53, 52, 51 and The Cohesiveness was 53, 54,51,52 and The Elasticity was 51,53,54,52 and The Gumminess and The Chewiness were 54, 53, 51, 52 and The Adhesiveness was 52, 53, 51, 54. The value of ′L′ was high in the 52, the value of ′a′ was 54 and the value of ′b′ was 53.

전남 여수.여천지역을 중심으로 한 농촌주부들의 전통 일상식의 기호도 조사 (A Study on Korean Traditional Food for Housewives Living in the Rural Area of Chunnam, Yosu)

  • The housewives living in the rural area of Chunnam, Yosu were asked by using the questionaires about Korean traditional food habits. The results are obtained as follows: 43. l% of the respondents were 50 to 59 years old, 38.1% of them had primary school education and 57.5% of them lived with husbands and children. 40.6% of them had 3∼4 family members. 30% of them earned 5 to 8 million won yearly; 99% of them liked boiled rice, especially plain boiled rice (63.1%) and mixed boiled rice (36.9%). The most liked food was Doenjangkuk (59.4%), Doenjangchigae (61.9%), Kimgui (30.1%), Pugochim (15.6%), Hobakchon (26.2%), Kongiaban (25.6%), Kongnamul (50.6%), Raw fish (23.7%); and They enjoyed Shirudock (16.9%) and Sickhae (60.6%) as dessert.

당의 종류 및 가열방법에 따른 당침밤 제품의 품질 변화 (The Changes in Quality of Sugars Chestnuts by Sugars and Heating Methods)

  • The effects of sugars and heating methods on the sugar infilteration, hardness, color and organoleptic characteristics were investigated for quality improvement of sugared chestnuts. Among the tested sugars, isomaltooligosugar was the most effective on the rate of sugar infilteration. High temperature increased the rate of sugar infilteration during sugaring process, but color and flavor were deteriorated at 9$0^{\circ}C$. The most suitable temperature for sugaring process was 7$0^{\circ}C$. The product sugared with fructooligosugar recoreded the highest score in hardness, odor and preference than any other sugars tested and increased the rate of sugar infilteration when mixed with sugar at same amount. The changes of soluble solids in chestnuts boiled with microwave oven were ranged from 18。Brix to 32。Brix, while chestnuts heated in general were from 18。Brix to 28。Brix. Chestnuts boiled with microwave heating were sugared rapidly. The hardness of boiled and sugared chestnuts was lower when treated with microwave than with general heating. Hunter's L and b value of sugared chestnut treated with microwave decreased during processing but a value somewhat increased.

감마선 조사가 건멸치의 이화학적 품질안정성에 미치는 영향 (Physicochemical Quality of Boiled-Dried Anchovies during Post-Irradiation Period)

  • Physicochemical changes were determined for the boiled-dried anchovies packaged in a laminated film(nylon 15${\mu}{\textrm}{m}$/polyethylene 100${\mu}{\textrm}{m}$) and stored for one year at ambient and cooling(5~1$0^{\circ}C$) temperatures after gamma irradiation. Lipophilic and hydrophilic browning pigments increased with storage time particularly at ambient temperature, even though initial 5 kGy irradiation did not affect the formation of pigments significantly. This results were confirmed by the instrumental color determinations, Hunter color L, a, b and ΔE. With respect to changes in relative fatty acid compositions, storage period and temperature were more influential factors than gamma irradiation. Irradiation at 5 kGy induced insignificant changes in the total flavor profiles of stored anchovies, which were mainly composed of n-dodecanal(26.7%), n-pentadecane(22.2%), n-octanal(4.9%) and 2-pentylfuran(3.4%).

토끼의 피부진균증에 대한 제충국화자비액의 도포치료효과 (Effects of Boiled Solution from Chrysanthemum Cineriaefolium Visiani Inunction Therapy on Dermatomycosis in Rabbits)

  • This study was carried out to investigate the anti-fungal effect of Pyrethri Flos Boiled Solution (PFBS) from Chrysanthemum Cinerariaefolium Visiani on Microsporum canis, Microsporum gypseum and Trichophyton Mentagrophytes with 0.5 ml, 1ml, 2 ml. In comparative drugs, on Sabouraud's glucose agar medium to 2 ml respectively and PFBS on the rabbit skin lesions, in vivo experiments, were observed. The results obtained were as follows : PFBS slightly suppresed the growth of the fungi in 0.5 ml and markedly it in 1 ml and 2 ml. In comparative drugs, benzylbenzoate represented similar anti-fungal action in 2 ml compared with PFBS. While, salicylic acid and boric acid represented less suppression of growth of the fungi than PFBS in 0.5 ml. The effects of PFBS on the rabbit skin lesions inoculation with dermatophytes was almost normally recorved about Microsporum gypseum, Trichophyton mentagrophytes except Microsporum canis after 8 days.

가열 처리한 미꾸라지 단백질의 품질 (Protein Qualities of Loach as Affected by Cooking Methods)

  • To explore the possibility of using freeze dried loach for instant choo o tang(Korean traditional loach soup), protein qualities and fatty acid composition were evaluated on boiled and steamed loach. Total lipid and ash content were lowered in both heated(boiled and steamed) loaches due to deboning and eviscerating during cooked meat preparation. Profiles of total amino acids were not changed seriously by the type of cooking, but the amount of essential amino acids were comparable in all samples. Two times more free amino acids were quantified in cooked samples compared to raw meat. Available lysine was marginally decreased by cooking, and that caused some measurable change in typsin indigestible substrate(TI) in streamed whole loach. In vitro protein digestibility of the heated loaches was not altered drastically and the protein quality determined as computed protein efficiency ratio(C PER) was similar for the raw, boiled and steamed loach. The ratios of unsaturated to saturated fatty acids changed measurably in heated whole loach. The results shows that heating caused apparent oxidative deterioration of the polyunsaturated fatty acids.

Comparative study on the bioactive compound contents and antioxidant activity of broccoli cooked with different methods

  • To compare the cooking methods (boling, steaming) for broccoli, the extracts from water or 80% ethanol were used to determine total polyphenols, total flavonoids, and antioxidant activities. The total polyphenol and flavonoid contents of both fresh and boiled or steamed broccoli were found to be higher in the 80% ethanol extract compared to the water extract. Nine glucosinolates were identified in broccoli using high-performance liquid chromatography. The glucosinolate content was found to be higher in steamed broccoli compared to fresh broccoli; however, in boiled broccoli, the glucosinolate content decreased by 5.74-18.64% compared with fresh broccoli. It was confirmed that antioxidant activity decreased through heat treatment such as boiling or steaming compared to unheated broccoli. In particular, the decrease in antioxidant activity was higher in boiled broccoli than in steamed broccoli. The results suggested that it would be preferable to use raw or steamed broccoli rather than boiling it in water to minimize the loss of bioactive substances when consuming broccoli.
