경기도 일부 도시 및 농촌지역 여고생의 영양섭취, 식행동, 체형인식 및 철분영양상태 비교연구 (Comparison of Nutrient Intake, Dietary Behavior, Perception of Body Image and Iron Nutritional Status among Female High School Students of Urban and Rural Areas in Kyunggi-do)

  • This study was undertaken to investigate the nutrient intake, dietary behavior, perception of body image and iron deficiency of high school adolescent girls. The subjects were 463 high school girls in Inchon. This cross-sectional survey was conducted by questionnaires and data were analysed by SAS program. Nutrient intakes collected from 3 day-retails were analyzed by the Computer Aided Nutritional Analysis Program. The following anthropometric measurements were made on all participants height, weight, body fat (%), skinfold thirkness, subscapular skinfold thickness, mid-upper arm circumference and waist-hip circumference. Blood samples were obtained and analyzed for iron nutritional status. The mean obesity index of rural students were highest among students. However, over 18% of the urban and rural students belonged to the low-weight group. Proportions of skipping meals were most high in urban vocational students and the main reason was lack of time for meal. Most nutrient intakes of the students were below the RDA, in particular calcium, iron, vitamin A and vitamin B$_2$. Most of the students were concerned with body image and weight control. Also they were not satisfied with their body image. The mean fell hemoglobin and transferrin saturation of rural students were lowest among students. The total binding capacity of urban vocational student\ulcorner were Invest among students. Prevalence of iron deficiency was most high in urban general students when judged by Hb, MCV and serum ferritin. In conclusion, this study indicates that nutrient intake in the female high school students was considerably lower than RDA. They should also be notified that severe weight control is very harmful for health. And they had lower self -satisfaction for their body image and undesirable flood habits. Therefore, prefer nutrition education is required to maintain desirable flood habits and improve their iron status in female high school students.

임신부와 신생아의 철분 영양상태에 관한 연구 (Iron Status in Pregnant Women and Their Newborn Infants)

  • The purposes of this study are to assess iron status in mothers and their newborn infants at birth and to analyze the influence of maternal iron status on their newborn babies. Venous bloods samples were drawn from 144 pregnant women just before delivery and cord bloods of their newborn babies were collected immediately after birth for measurement of hemoglobin, hematocrit, serum iron, ferritin, total binding capacity and transferrin saturation. The values of hemoglobin and hematocrit were significantly lower in the mothers(10.9$\pm$1.43g/dl and 33.7$\pm$3.67%) than in their newborn infants(14.7$\pm$1.43g/dl and 45.3$\pm$4.76%)(p<0.0001). At delivery, serum iron levels in cord blood were about twice as high as those in the maternal blood, and serum ferritin levels in the cord blood were about four times higher than those in the maternal blood. The serum ferritin levels of multigravidas were higher than those of primigravidas,. but there was no difference between the serum ferritin levels of their infants. The serum ferritin levels of the mothers and their infants were higher in maternal group with iron supplement regularly than in other maternal group without iron supplement during pregnancy. Among the mothers, 26.4% had a serum ferritin levels below 12ng/ml(i.e. depleted iron stores)and 78.9% had a hemoglobin below 12g/dl(i.e.iron deficient anemia). When the maternal group was classified according to their serum ferritin levels by 9ng/ml, 12ng/dl or 20ng/ml, there was no significant difference in the iron status of their newborn infants among the three groups. The hemoglobin and serum ferritin levels of the mothers were well correlated with those of their babies. The maternal hemoglobin values negatively correlated with infant birth weight. It is possible that the demands of iron of the mother might be increased in the case of a newborn infant of greater size. The results of this study provide useful information regarding establishment of RDA for iron in pregnant women and guidance about the need for iron supplement during pregnancy.

식품영양 전공 및 비전공 여대생 영양섭취상태 및 혈액성상에 관한 비교 연구 - 혈청 철분을 중심으로 - (A Comparison between Food and Nutrition Major, and Non-major, Female University Students in terms of their Nutrient Intakes and Hematological Status, with an Emphasis on Serum Iron)

  • The purpose of this study was to compare nutrient intakes and the serum iron status of 74 Food and Nutrition major, and 45 non-major, female students at a university in Incheon. This cross-sectional survey was conducted using a self-administered questionnaire and the data were analyzed by the SPSS 10.0 program. The nutrient intake data collected from three-day dietary recalls were analyzed by the Computer Aided Nutritional Analysis Program. Anthropometric data and hematological indices of iron in the blood were measured. Average heights, weights, body fat and mid-upper arm circumference of Food and Nutrition major and non-major female students were 160.3 cm, 53.5kg, 25.8%, 23.7cm and 159.8cm, 55.5kg, 28.9%, 24.8cm, respectively. There were significant differences in body fat percentage and mid-upper arm circumference between the major and non-major students. In all subjects, daily dietary intakes of nutrients- except protein, vitarrlin B1, vitamin C and phosphorus - were lower than the Korean RDA. In particular, calcium and iron intakes of all subjects were under 60% of the Korean RDA. Values of RBC (red blood cell) count, Hb (hemoglobin), Hct (hematocrit), MCV (mean cell volume), MCH (mean cell hemoglobin), and MCHC (mean corpuscular hemoglobin concentration) of the non-major students were significantly higher compared to those of the major students. The diastolic blood pressure of the major students was negatively correlated with MCV, MCH, TS, and serum iron levels. Triceps skinfold thickness, mid-upper arm circumference and waist-to-hip ratios of the non-major students were negatively correlated with TIBC. Fat intake was positively correlated with RBC, Hb, Hct, and TIBC (total iron binding capacity) in the major students. Vitamin C intake was positively correlated with serum iron in the major students. Carbohydrate intake was positively correlated with Hb, Hct, and MCHC in the non-major students. Niacin and iron intakes were positively correlated with Hb and Hct in the non-major students. Therefore, nutrition education is necessary for female university students to improve nutritional status and to practice optimal nutrition strategies. (Korean J Nutrition 35(9) : 952~961, 2002)

보리 Isogenic Lines의 이화학적 품질과 취반특성 (The Physico-Chemical Properties and Cooking Qualities of Barley Isogenic Lines)

  • 찰성, 부정형, plump endosperm 등의 유전자를 결합시킨 보리 isogenic lines의 이화학적 품질특성과 취반특성에 대한 제 특성을 조사하였다. 종실의 천립중은 입도가 2.5 mm 이상의 것이 가장 많은 Betzes가 가장 높았으며, 정맥율은 Franubet과 Wafranubet이 높았고, 보리쌀의 백도는 품종에 따라 큰 차이를 보였다. 배유가 부정형 전분 유전자로 구성된 Franubet이 전분함량이 가장 높았으며, 제분율도 높았다. 보리전분의 팽윤력과 물결합능력은 찰성 및 부정형 유전자를 갖는 품종이 높았다. Amylogram 특성에서 찰성의 보리는 메성에 비하여 호화 온도는 낮았고 최고점도는 높았다. ${\beta}-Glucan\;viscosity$는 품종에 따라 큰 차이를 보였는데, 특히 찰보리의 ${\beta}-glucan\;viscosity$가 가장 높았다. 취반특성중 흡수율, 용출고형물 및 퍼짐성은 찰성과 부정형 전분을 포함한 보리 품종이 Wafranubet이 가장 높았으며, 밥의 백도는 품종간에 차이가 없었다.

각종 전분으로 만든 교질상 식품의 특성에 관한 연구 - 녹두 전분의 이화학적 특성 - (Characterization of Mungbean (Phaseolus aureus L.) Starch)

  • 광학 현미경 및 Scanning electron microscopy로 관찰한 녹두 전분 입자는 타원형 및 구형으로서 너비는 $8{\sim}13{\mu}m$, 길이는 $18{\sim}30{\mu}$이었다. X-ray 회절도는 $2{\theta}$$16.9^{\circ}$에서 약간의 결정성을 보였다. 전분의 blue value는 0.36, 아밀로스 함량은 22.7%, 알카리 수는 8.52, ferricyanide 수는 1.06물 결함 능력은 81.6%이었다. 전분의 팽윤은 $50^{\circ}C$까지는 큰 변화가 없었고, 이후 급격히 증가하였다. 전분 현탁액(0.3%)의 광 투과도는 $65^{\circ}C$ 이후 급격히 증가하였으며, $65{\sim}90^{\circ}C$에서는 Single stage의 호화 양상을 보였다. 아밀로그래프에 의한 전분의 호화는 농도(건물중으로 6,7 및 8%)에 관계없이 최고 점도는 나타나지 않았다. 전분 gel(건물중으로 40% 농도)의 retrogradation시 시간상수는 $21^{\circ}C$에서 1.99일이었다.

Iron and vitamin D status in breastfed infants and their mothers

  • Purpose: We assessed the relationships between iron and vitamin D statuses in breastfed infants and their mothers and evaluated the determinants of iron and vitamin D deficiencies in breastfed infants. Methods: Seventy breastfed infants aged 4-24 months and their mothers participated in this study from February 2012 to May 2013. Complete blood counts, total iron binding capacity, and levels of C-reactive protein, iron, ferritin, calcium, phosphate, alkaline phosphatase, and 25-hydroxyvitamin D (25(OH)D) in infants and their mothers were measured. Results: A history of maternal prepregnancy anemia was associated with lower ferritin and 25(OH)D levels in both infants and their mothers. The 25(OH)D level of infants correlated with maternal 25(OH) D levels. The independent risk factors for iron deficiency in breastfed infants were the duration of breastfeeding (odds ratio [OR], 6.54; 95% confidence interval [CI], 1.09-39.2; P=0.04) and infant body weight (OR, 2.65; 95% CI, 1.07-6.56; P=0.04). The determinants for vitamin D deficiency were the infant's age (OR, 0.15; 95% CI, 0.02-0.97; P=0.046) and maternal 25(OH)D level (OR, 0.74; 95% CI, 0.59-0.92; P=0.01). Conclusion: A maternal history of prepregnancy anemia requiring iron therapy was associated with lower current ferritin and 25(OH)D levels in both infants and their mothers. Therefore, physicians should monitor not only iron but also vitamin D levels in infants who are breastfed by mothers who had prepregnancy anemia.

Effect of Expression of Genes in the Sphingolipid Synthesis Pathway on the Biosynthesis of Ceramide in Saccharomyces cerevisiae

  • Ceramide is important not only for the maintenance of the barrier function of the skin but also for the water-binding capacity of the stratum corneum. Although the exact role of ceramide in the human skin is not fully understood, ceramide has become a widely used ingredient in cosmetic and pharmaceutical industries. Compared with other microorganisms, yeast is more suitable for the production of ceramide because yeast grows fast and is non-toxic. However, production of ceramide from yeast has not been widely studied and most work in this area has been carried out using Saccharomyces cerevisiae. Regulating the genes that are involved in sphingolipid synthesis is necessary to increase ceramide production. In this study, we investigated the effect of the genes involved in the synthesis of ceramide, lcb1, lcb2, tsc10, lac1, lag1, and sur2, on ceramide production levels. The genes were cloned into pYES2 high copy number vectors. S. cerevisiae was cultivated on YPDG medium at $30^{\circ}C$. Ceramide was purified from the cell extracts by solvent extraction and the ceramide content was analyzed by HPLC using ELSD. The maximum production of ceramide (9.8 mg ceramide/g cell) was obtained when the tsc10 gene was amplified by the pYES2 vector. Real-time RT-PCR analysis showed that the increase in ceramide content was proportional to the increase in the tsc10 gene expression level, which was 4.56 times higher than that of the control strain.

공유결합을 이용한 무기질 섬유와 제올라이트의 결합 (Binding of Zeolites to Inorganic Fiber using Covalent Linkers)

  • 휘발성 유기화합물을 제거하는 허니콤 흡착제의 제조 성분인 무기질 섬유에 흡착력이 뛰어난 제올라이트를 화학 결합시켰다. 무기질 섬유를 염산, 황산 또는 플루오르화 수소산 등으로 처리하여 표면의 불순물을 제거하여 제올라이트의 접합 능력을 향상시켰다. 무기질 섬유와 제올라이트의 표면에 매달은 클로로프로필, 아미노프로필 또는 에폭시기 등을 서로 반응시켜 두 물질을 화학 결합시켰으며, 연결 화합물로 고분자 폴리에틸렌이민을 사용하기도 하였다. 결합상태는 전자현미경으로 관찰하였고, BET 표면적 분석을 통하여 제올라이트 접합량을 유추하였다. 폴리에틸렌이민을 사용하면 제올라이트를 무기질 섬유에 많이 결합시킬 수 있었다.

감잎분말을 첨가한 냉면의 품질 특성 (Quality Characteristics of Naengmyon Added with Persimmon (Diospyos kaki L. folium) Leaf Powder)

  • 본 연구는 국내에 널리 분포되어 있는 감잎을 냉풍건조시켜 분말화하여 첨가한 냉면의 반죽과 숙면의 품질특성을 분석하였다. 수분결합능력은 무첨가구와 감잎 분말첨가구간의 차이는 없었으며, 아밀로그래프 상에서 호화개시온도와 최고점도 도달시간은 감잎분말 첨가량이 늘어날수록 증가하였고, 최고점도와 최종점도는 첨가량이 늘어날수록 감소하였다. 면의 조리적성에서 조리 후의 무게는 무첨가구가 가장 낮았으며 감잎분말 첨가량이 늘어날수록 증가하였고, 감잎분말 첨가량에 따른 부피 차이는 나타나지 않았다. 조리 손실율과 탁도는 무첨가구가 가장 낮았으며, 감잎분말 첨가량이 늘어날수록 감소하였다. 숙면의 색도는 무첨가구의 L값과 a, b값이 가장 높고, 감잎분말 첨가량이 늘어날수록 낮아졌다. 색차는 감잎분말 첨가량이 늘어날수록 증가하였으나 6, 8, 10%에서의 색차는 변화가 없었다. 조리면의 조직감은 측정한 결과 hardness, adhesiveness, cohesiveness, springess, gumminess의 값은 감잎 첨가량이 증가할수록 갈이 감소하였다. 관능 검사결과는 color, flavor, texture, taste, overall acceptance 모두 무첨가구가 가장 낮은 점수를 받았으며 4% 첨가구가 가장 높은 점수를 받았다. 이화학적, 관능적 품질 특성을 종합한 결과 산업화를 위한 냉면에 감잎을 첨가한 4%가 가장 우수한 결과를 나타내었다.

Hydroxypropyl화 밤 전분의 이화학적 특성 (Physicochemical Properties of Hydroxypropylated Chestnut Starch)

  • 밤에서 추출한 천연 밤전분(NCS)과 이에 propylene oxide를 반응시켜 제조한 hydroxypro-pyl화 밤전분(HCS)의 이화학적 특성을 비교 검토하였다. 색도는 NCS와 HCS 사이에 별 차이가 없었고, 물결합 능력은 NCS가 233.8%, HCS가 244.5%를 나타내어 HCS의 물결합 능력이 증가하는 양상을 보였다. Hydroxypropylation에 의해 HCS의 청가 및 amylose 함량이 다소 감소하여 전분의 구조가 변형됨을 알 수 있었고 팽화력과 용해도에서도 증가하였다. 0.2% 전분 현탁액으로 광투과도를 측정한 결과 역시 HCS가 NCS에 비해 증가함을 알 수 있었다. DSC와 amylogram을 이용하여 호화 양상을 측정한 결과 hydroxypropylation에 의해 HCS의 호화 온도 및 호화 엔탈피가 감소하여 HCS를 식품가공에 이용할 경우 전분이 호화되는데 필요한 열량이 감소하여 경제적인 잇점이 있을 것으로 생각된다.
