Effect of Bicarbonate and Phosphate Buffer Treatments on the Structure and Thermal Stability of Spent Layer Meat (중 탄산 및 인산염 완층액 처리가 노계육의 조직구조 및 열안정성에 미치는 영향)

  • Spent layer breast meat and leg meat samples washed with 0.05 M sodium bicarbonate solution and 0.04 M phosphate buffer(pH 8.3) showed decreases in heat denaturation temperature indicating the destabilization of myofibrillar proteins. The destabilization was attributed to the solubilization of 95 Kdalton and 55 kdalton proteins from the myofibrils observed in gel-electrophoretograms. Transmission electron microscopy further indicated the breakage of Z-lines.

Physical Properties and Optimization of Tangsuyuk Batter Ingredients (탕수육 배터의 물리적 특성 및 최적화)

  • Physical properties were investigated in tangsuyuk batter containing different amounts of ingredients, such as wheat flour, corn starch, sodium bicarbonate, alum and water. For the response surface methodology (RSM) central composite design was used to determine the optimal ingredient ratios for viscosity, color properties(lightness, redness, yellowness, color differences) and cutting forces. There were significant differences(p<0.05) between the different batter mixtures. The lightness(L) of batter was in proportion to the increased amount of wheat flour and corn starch. Higher redness was recorded with increasing corn starch. Higher yellowness was observed with increasing wheat flour and sodium bicarbonate. Color differences were higher with increasing wheat flour, corn starch, and/or alum and decreasing water. Cutting forces were linearly increased with increasing sodium bicarbonate. From these results, it is possible to monitor the effects of ingredients on physical properties of tangsuyuk batter, and to predict their optimal ratios.

  • The purpose of this study was to investigate the physicochemical properties of Su Ri Chwi (Synurus Palmatopinnonatifidus var. indivisus KiTAM.) cooked in different solution (distilled water, 1%, salt and 1% sodium bicarbonate added water) and time. The content of crude fiber showed the highest percentage among the alcohol-insoluble solids of cooked Su Ri Chwi. The contents of Ca and Mg were decreased by the addition of 1% sodium bicarbonate. The main neutral sugars of alcohol insoluble solids were arabinose, galactose, and glucose. The content of glucose was increased regardless of method used. The main neutral sugars of crude pectins were rhamnose, arabinose and glucose. Galactose was increased by the cooking. The gel chromatography on Sepharose CL-4B indicated that the pectin extracted from cooked Su Ri Chwi had lower molecular weight distribution than that of the raw Su Ri Chwi. Total pectin was decreased by the cooking method used. The amounts of soluble pectins of Su Ri Chwi cooked in 1% sodium bicarbonate added water were lower than those of raw material.

  • Powdery mildew on strawberry plants, caused by Spherotheca aphanis (Wallr.) U. Braun var. aphanis, is the most serious disease for strawberry production. There is a demand to develop the substitutes for chemicals which are more environment friendly materials. Control of powdery mildew was evaluated on Akihime, Sachinoka, Dochiodome, Noyho and Redpearl varieties grown in the greenhouse. Applications of 1%, 0.5%, and 0.25% of sodium bicarbonate (NaHCO3Nyoho in greenhouse experiments. Non-phytotoxicity was revealed on the leaves and fruits of strawberry at these concentrations. This$.$result indicates that a mixture of sodium bicarbonate and tween 20 is a useful substitute for fungicides to control powdery mildew of strawberry.

Development and Quality Evaluation of Hypo-Allergenic Bakery Products using Homegrown Wheat (항원성이 저감화 처리된 국내산 밀을 이용한 발효빵의 제조 및 품질 특성)

  • As an alternative of yeast, various concentrations to prepare hypo-allergenic bread (HAB). Addition of sodium bicarbonate increased $CO_2$ emission, but at higher than 2.0% caused bitter taste compared to other mixtures. Addition of sucrose significantly increased $CO_2$ emission. HABs 7 ($NaHCO_3$ 2.0g+sucrose 0.63 g) and 8 ($NaHCO_3$ 2.0g+sucrose 1.0g) showed higher grain and color scores. HAB 5 ($NaHCO_3$ 1.5g+sucrose 1.0g) and 6 ($NaHCO_3$ 1.5g+sucrose 2.0g) gave higher aroma and taste scores. HAB 5 showed significantly higher overall acceptability (p<0.05) score than others, whereas HABs 7 and 8, regardless of high external sensory qualities, showed lower overall acceptabilities than HAB 5 due to bitter taste. Prototypical HAB was obtained using wheat flour (100g) and water (62mL) incubated at $37^{\circ}C$ for 4 hr for treatment of b.p pretense (100mg) before adding sodium bicarbonate (1.5%), sucrose (1.0%), NaCl (1.0%), and citric acid (1.0%).

  • We investigate the availability of $CO_2$ ocean storage by means of chemical conversion of $CO_2$ to the dissolved inorganic carbon (mainly the bicarbonate ion) in seawater. The accelerated weathering of limestone (AWL) technique, which is accelerating the natural $CO_2$ uptake process through the chemical conversion using limestone and seawater, was proposed as an alternative method for reducing energy-related $CO_2$ emission. The method presented in this paper is slightly different from the AWL method. It involves reacting $CO_2$ with seawater and quicklime obtained from alkaline wastes to produce the bicarbonate-rich solution over 100 times more than seawater, which could be released and diluted into the ocean. The released dense bicarbonate-enriched water mass could subside into the deeper layer because of the density flow, and could be sequestrated stably in the ocean.

A CLINICAL STUDY OF ANESTHETIC EFFICACY OF ALKALINIZING LIDOCAINE IN INFERIOR ALVEOLAR NERVE BLOCKS (하치조신경 전달 마취 시 알칼리화 된 리도카인의 마취 효능에 관한 임상적 연구)

  • Inferior alveolar nerve block using lidocaine is the most frequent local anesthetic method in the dental treatment, but clinically it is not always successful. The 2% lidocaine cartridge has been used commonly in dental anesthesia. It contains vasoconstrictor and antioxidant, which presents low pH which provides chemical stability and longer shelf life. But alkalinized local anesthetics has less tissue trauma, easier dissociation of the non-ionized base which penetrates nerve sheath, rapid onset and more intensity. In this study, in inferior alveolar nerve block, alkalinized lidocaine using sodium bicarbonate (experimental group) is compared with plain lidocaine (control group) about injection pain, anesthetic onset, duration and postinjection discomfort. In inferior alveolar nerve block, alkalinized lidocaine using sodium bicarbonate showed lower injection pain. There was significant difference statistically from plain lidocaine(p=0.019). Comparing with plain lidocaine, alkalinized lidocaine produced more rapid onset (lip & pulp anesthetic onset), there was no significant difference(p>0.05). but there was boundary significance (0.050.05). These results suggest that addition of sodium bicarbonate to 2% lidocaine(1:100,000 epinephrine) for inferior alveolar nerve block is more effective for reduction of injection pain and onset time.

Dissolution Test to Optimize Liquid Formulations for Enteric Coated Tablets and Capsules Containing Enteric Coated Granules of Omeprazole (장용정 Omeprazole정제와 캅셀제의 액제화 투여 방법의 용출시험)

  • Omeprazole is usually administered as encapsulated enteric-coated granules and enteric-coated tablets because of its acid-labile nature. For children and patients who can not swallow, it can be mixed with water or other liquid after a capsule is opened or a tablet is crushed. This study was performed to compare omeprazole liquid formulations of tablet and capsule Omeprazole 20 mg capsule containing enteric coated granules was opened and 20 mg entric-coated tablet was ground to be mixed with sodium bicarbonate solution, orange juice or water. Each liquid formulation was poured into dissolution tester, mixed with first solution (artificial gastric juice; pH 1.2) for two hours, then with second solution (artifical enteric juice; pH 6.8) for thirty minutes. pH was measured periodically for two and half hours. Samples were drawn periodically, mixed with lansoprazole as an internal standard, and injected to HPLC. As results, pH of sodium bicarbonate solution of omeprazole was significantly higher than that of orange juice or water in first solution (6.2-7.4 vs. 1.2, p<0.005). At 150 min, concentrations of omeprazole in three diluents with granules and in sodium bicarbonate solution of tablet powder sustained significantly higher than in other solution of tablet powder (p<0.001). In conclusion, enteric-coated granules from capsule with three diluents and powder from tablet in sodium bicarbonate solution was stable during dissolution test, which would be appropriate and recommended for patient who can not swallow solid preparations.

Manganese removal by KMnO4: Effects of bicarbonate and the optimum conditions (과망간산칼륨을 이용한 용해성 망간 제거: 중탄산염 영향 및 최적조건)

  • This study is focused on manganese (Mn(II)) removal by potassium permanganate ($KMnO_4$) in surface water. The effects of bicarbonate on Mn(II) indicated that bicarbonate could remove Mn(II), but it was not effectively. When 0.5 mg/L of Mn(II) was dissolved in tap water, the addition of $KMnO_4$ as much as $KMnO_4$ to Mn(II) ratio is 0.67 satisfied the drinking water regulation for Mn (i.e. 0.05 mg/L), and the main mechanism was oxidation. On the other hand, when the same Mn(II) concentration was dissolved in surface water, the addition of $KMnO_4$, which was the molar ratio of $KMnO_4/Mn(II)$ ranged 0.67 to 0.84 was needed for the regulation satisfaction, and the dominant mechanisms were both oxidation and adsorption. Unlike Mn(II) in tap water, the increasing the reaction time increased Mn(II) removal when $KMnO_4$ was overdosed. Finally, the optimum conditions for the removals of 0.5 - 2.0 mg/L Mn(II) in surface water were both $KMnO_4$ to Mn(II) ratio is 0.67 - 0.84 and the reaction time of 15 min. This indicated that the addition of $KMnO_4$ was the one of convenient and effective methods to remove Mn(II).

A Study on the Use of Oyster Shells for Phosphorus Removal (인 제거를 위한 패각의 활용법에 관한 연구)

  • In our country, limiting nutrient is known as phosphorus in the most lakes. Therefore, the removal of phosphorus is a very important process in sewage treatment. However, many of the sewage treatment plants employ the conventional activated sludge process, known to remove $10{\sim}30%$ of phosphorus. Thus, additional phosphorous removal process will be needed. Oyster shells have been known to remove phosphorus in water. The removal efficiency of phosphorus was highest at smallest size of oyster shells and at the highest pH for batch test. The phosphorous removal rate with various calcium concentrations was increased by increasing calcium concentration. At the 20 mg/l of calcium, more than 90% of phosphorous was removed in two hours. The removal efficiency of phosphorous was increased greatly at 300% of recirculation rate. With 300% of recirculation rate, the removal efficiency reached 80% at pH 11. The negative effects of bicarbonate on crystallization were observed in oyster shells. The effects of bicarbonate on rate constant were also investigated by applying these results to experimental equation. The rate constant was decreased at the inverse logarithm bicarbonate concentration.
