Comparison between Berkshire and crossbreed on meat quality, and investigation of the relationship with fatty acid composition and meat quality

  • This study aimed to compare meat quality traits between Berkshire and crossbreed (Landrace × Yorkshire × Duroc), and to investigate the relationship between meat quality traits and fatty acid composition. 20 Berkshire and 20 crossbreed pigs were used to compare pork loin quality and to determine the relationship between measured variables. 23 variables were measured including proximate composition, pH, drip loss and cooking loss, Warner-Bratzler shear force, and fatty acid composition. Berkshire had higher moisture content, pH, water-holding capacity, saturated fatty acids, and redness than the crossbreed pig (p < 0.05). The fat content and polyunsaturated fatty acid were low (p < 0.05) in Berkshire. Correlation analysis showed a negatively correlation between moisture and fat content, and a positively correlation between saturated fatty acid and fat content. Moreover, saturated fatty acid and polyunsaturated fatty acid were negatively correlated. As a result of factor analysis and partial least square regression, saturated fatty acid and polyunsaturated fatty acid were estimated to be the main factors affecting quality characteristics of pork. Pig breed is associated with differences in meat quality, and fatty acid composition can have an effect on meat quality parameters.

Effects on Growth Performance and Meat Quality Parameters by Restricted Diet during Finishing Days

  • The objective of the present study was to investigate the effects on growth performance, meat quality parameters and fatty acids of meat by restricted diet amount on finishing Berkshires. A total of 180 pigs (Berkshire, initially 52 kg BW) at 100 days of age were allotted in arrangement in a completely randomized design (10 pigs per pen), blocked arrangement of treatments with 3 replications. The variables were market ages (180, 200 and 220 days) and in which was also included sex (gilts and barrow). All the pigs were restrictively fed so that day could be marked at 103 kg. Pork quality was evaluated from 4 pigs of each treatment. Average daily gain (ADG) and average daily feed intake (ADFI) were decreased (p<0.05) with age increase. The ratio of feed to gain was increased (p<0.05) at 200 and 220 days compared to that of 180 days. Moisture and crude protein of longissimus dorsi muscle (LM) at 180 days were increased (p<0.05) compared to 200 and 220 days. Crude fat was increased (p<0.05) by age and crude ash was lower (p<0.05) at 180 days than at 220 days. Red to green meat color scale (CIE a$^{*}$) increased (p<0.05) at 200 and 220 days more than at 180 days. Regarding fatty acid composition in meat, saturated fatty acids (SFA) was increased more (p<0.05) at 220 days than at 180 and 200 days. The results indicate that even with a restricted diet of low nutrient supplement, there was an improvement in Berkshire meat quality parameters.

Comparison of genomic predictions for carcass and reproduction traits in Berkshire, Duroc and Yorkshire populations in Korea

  • Objective: A genome-based best linear unbiased prediction (GBLUP) method was applied to evaluate accuracies of genomic estimated breeding value (GEBV) of carcass and reproductive traits in Berkshire, Duroc and Yorkshire populations in Korean swine breeding farms. Methods: The data comprised a total of 1,870, 696, and 1,723 genotyped pigs belonging to Berkshire, Duroc and Yorkshire breeds, respectively. Reference populations for carcass traits consisted of 888 Berkshire, 466 Duroc, and 1,208 Yorkshire pigs, and those for reproductive traits comprised 210, 154, and 890 dams for the respective breeds. The carcass traits analyzed were backfat thickness (BFT) and carcass weight (CWT), and the reproductive traits were total number born (TNB) and number born alive (NBA). For each trait, GEBV accuracies were evaluated with a GEBV BLUP model and realized GEBVs. Results: The accuracies under the GBLUP model for BFT and CWT ranged from 0.33-0.72 and 0.33-0.63, respectively. For NBA and TNB, the model accuracies ranged 0.32 to 0.54 and 0.39 to 0.56, respectively. The realized accuracy estimates for BFT and CWT ranged 0.30 to 0.46 and 0.09 to 0.27, respectively, and 0.50 to 0.70 and 0.70 to 0.87 for NBA and TNB, respectively. For the carcass traits, the GEBV accuracies under the GBLUP model were higher than the realized GEBV accuracies across the breed populations, while for reproductive traits the realized accuracies were higher than the model based GEBV accuracies. Conclusion: The genomic prediction accuracy increased with reference population size and heritability of the trait. The GEBV accuracies were also influenced by GEBV estimation method, such that careful selection of animals based on the estimated GEBVs is needed. GEBV accuracy will increase with a larger sized reference population, which would be more beneficial for traits with low heritability such as reproductive traits.

Characterization of the Prolactin Receptor 3 (PRLR3) and Retinol-Binding Protein 4 (RBP4) Genes in the Birth Weight and Early Growth of Berkshire Pigs

  • To investigate the influences of candidate genes on the birth weight and the early stages of life, genotyping of the prolactin receptor 3 (PRLR3) and retinol-binding protein 4 (RBP4) genes was performed in 156 and 141 Berkshire pigs, respectively. The frequency of both PRLR3 alleles A and a was 0.50. The frequencies of the RBP4 alleles B and b were 0.42 and 0.58, respectively. Neither locus was in Hardy-Weinberg equilibrium. No significant associations of the PRLR3 alleles with birth or weaning weights and of the RBP4 alleles with birth weight were observed. The proportions of the phenotype variances due to the genotypes of PRLR3 in the feeder weights was 4.0% and those of RBP4 in the weaning and feeder weights were 11.9 and 3.3%, respectively (P < 0.05). The dominance effect of PRLR3 and RBP4 on feeder weights was 2.40 and -1.86 kg, respectively (P < 0.01). The additive and dominance effects of RBP4 on weaning weights were 0.332 and -0.682 kg, respectively (P < 0.01). Even if no significant epistasis of PRLR3 and RBP4 was detected, a considerable trend of consistent positive epistasis estimates of AA/BB and Aa/Bb was observed for all traits. The results of this study may have a considerable impact on early-stage growth by both loci, and a selection strategy should be designed separately for each marker in Berkshire pigs.

Association of a Pyruvate Kinase M2 (PKM2) Polymorphism with Back Fat Thickness in Berkshire Pigs

  • Pyruvate kinase M2 (PKM2) is a key regulatory enzyme in the glycolytic pathway. It is one of four pyruvate kinase isoenzymes that widely differ in their occurrence according to tissue type. PKM2 is expressed in differentiated tissues, such as fat tissues, lung, as well as normal proliferating cells, embryonic cells, and tumor cells. The objective of this study was to investigate the association of single nucleotide polymorphisms (SNPs) in the PKM2 gene with meat quality traits in Berkshire pigs. We detected a SNP (g.34341 A>G) in the 3'UTR region of the PKM2 gene in 670 Berkshire pigs through DNA sequencing. Three genotypes, AA, AG, and GG, were found for this SNP, but based on an association analysis with meat quality traits, genotype AA was significantly associated with thicker back fat than genotype GG (p=0.027). Therefore, the g.34341 A>G polymorphism in the 3'UTR region of the porcine PKM2 gene could be applied in pig breeding programs to improve back fat thickness.

Antioxidant Properties and Physicochemical Attributes of Meat from Berkshire Finishing Pigs Supplemented with Rubus coreanus By-Product

  • A 60-d feeding trial was conducted to evaluate the effects of diets supplemented with two concentrations (0% and 0.3%) of black raspberry (Rubus coreanus Miquel) fruit by-product (RCFB) on the physicochemical characteristics, oxidative stability, antioxidant capacity, antioxidant enzyme activity, and fatty acid profile of M. longissimus dorsi (LL) porcine muscle from Berkshire finishing pigs meat. Results revealed that regardless of the sex, diets supplemented with 0.3% RCFB reduced (p<0.05) the thiobarbituric acid reactive substances (TBARS) expressed as malonaldehyde (MDA) content effectively. A higher antioxidant capacity [2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity] was found (p<0.05) in response to feeding supplemented with 0.3% RCBF for male or female pigs. Moreover, 0.3% RCFB dietary feed increased (p<0.05) the glutathione peroxidase enzyme activities (GPX1) in blood plasma for male or female pigs. However, no influences were observed (p>0.05) on meat color, WHC, shear force, and fatty acid contents while fed diet supplemented with 0% or 0.3% RCFB for male or female pigs. Overall, this study suggests that a diet supplemented with 0.3% RCFB may beneficially affect owing to better oxidative stability, higher antioxidant capacity, and antioxidant enzyme activity (blood plasma) in pigs which could be a promising natural antioxidant without affecting meat quality traits.

Influences of Aging Methods and Temperature on Meat Quality of Pork Belly from Purebred Berkshire and Crossbred Landrace×Yorkshire×Duroc (LYD) Pigs

  • We studied effects of aging methods and temperature on the physical, chemical, and amino acid composition of pork belly from Berkshire and Landrace×Yorkshire×Duroc (LYD) swine. Pork belly samples were assigned randomly to breed groups (Berkshire and LYD), aging temperature groups (0℃ and 9℃), and aging method groups. One samples of vacuum-packaged hanging pork bellies were hung in a refrigerated cooler with 83±2.0% humidity, while the other samples were immersed in a 3.5% salt solution in a vacuum package and subsequently stored in the same cooler for 2 weeks. LYD pork had lower pH and purge loss and higher lightness values than those of Berkshire pork (p<0.05). Moreover, thiobarbituric acid reactive substances and hardness values of LYD pork were lower than those of Berkshire pork after aging (p<0.05). Berkshire pork had a higher level of flavorful amino acids than LYD pork did during aging (p<0.05). Bellies aged at elevated temperatures for two weeks had higher volatile basic nitrogen. However, significantly higher percentages of flavorful and sweet taste amino acids were observed in bellies aged at 9℃ compared to those aged at 0℃ for 2 weeks. Moisture content was higher in immersed samples than hanging samples after two weeks of aging (p<0.05). Hanging pork bellies exhibited higher texture profiles than immersed pork bellies at two weeks (p<0.05). We concluded that breeds, aging temperature, and methods affected most quality attributes of pork belly.

사일리지 급여가 돼지 품종별 돈육의 품질에 미치는 영향 (Effects of Feeding Silage on Pork Quality by Pig Breeds)

  • 연구는 사일리지 사료를 급여하였을 때 돼지 품종과 사일리지 급여 유무에 따른 등심의 품질 특성에 미치는 영향을 평가하기 위해 실시하였다. 돼지품종은 가고시마 와타나베 흑돼지 (B), 삼원교잡종[$D(Landrace{\times}Yorkshire){\times} Duroc$], 미국산 버크셔종(A) 등에 대해 각각 시험구와 대조구 20두씩 총120두를 공시하였으며, 개시체중은 평균 $69.3{\pm}3kg$, 시험기간은 평균 $66.7{\pm}9.3$일, 출하일령은 200~210일이었다. 사일리지를 급여하지 않은 대조구 (C)에 비해 급여한 처리구 (T)가 조단백질 함량은 많았고, 육색은 밝았으며, 신선육 관능평가 시 외관, 육색, 상강도 및 전체적 기호도에서 높은 점수를 보였고, stearic산과 oleic산은 낮고, linoleic산, arachidonic산, 필수지방산 및 필수지방산/불포화지방산 비율은 높게 나타났다. 사일리지 급여시 단맛 관련 아미노산 함량은 높은 장점을 지닌 반면 육색의 적색도는 낮고, 가열감량과 육즙감량은 많아 다즙성이 낮았으며, 육의 탄력성이 낮고 지방의 밝기는 어둡고 황색도가 높은 단점을 보였다.

Study on the Prolactin Receptor 3 (PRLR3) Gene and the Retinol-binding Protein 4 (RBP4) Gene as Candidate Genes for Production Traits in Berkshire Pigs

  • To investigate the influence of the prolactin receptor 3 (PRLR3) gene and the retinol-binding protein 4 (RBP4) gene on the production traits of swine, genotyping was performed on 156 and 141 Berkshire pigs, respectively, that were carefully selected for economic traits. The frequencies of allele A in the PRLR3 locus and allele B in the RBP4 locus were 0.50 and 0.42, respectively. Neither locus was in the Hardy-Weinberg equilibrium. After a genotype was assigned to the individuals whose parents had the homozygous genotype, a statistical analysis was conducted for 291 pigs. The animals with the PRLR3 and RBP4 genotypes included 182 and 227 head, respectively. Even though the genotypic effects of PRLR3 (p<0.05) and RBP4 (p<0.01) had a significant influence on the pigs' back fat thickness, the interaction of both genes was not highly significant in terms of the back fat thickness (p = 0.1235). While the estimated epistasis effects of aaBB and aaBb decreased the back fat thickness and reduced the growth rate, the effects of AAbb and aabb increased the growth rate. Despite the insignificant difference in the PRLR genotypes in terms of the days to 90 kg and the average daily gain, the back fat thickness showed a significant difference (p<0.05), and the additive effect of allele A and the dominant effect of the hetero-genotype were -0.377 and 1.206 mm, respectively. The RBP4 genotypes had a very significant effect (p<0.01) on the back fat thickness, the days to 90 kg, and the average daily gain. The additive effects of allele B of the RBP4 locus on the back fat thickness, the days to 90 kg, and the average daily gain were 0.70 mm, -1.3 days and 6.2 g, respectively. Moreover, the dominant effects of the heterozygote for those traits were 0.63 mm, 9.9 days and -45.0 g, respectively. Allele A of the PRLR3 locus favorably influenced the back fat thickness, the days to 90 kg of the body weight, and the average daily gain and its dominant effect unfavorably influenced those traits. Allele B of RBP4 showed an incremental growth rate and back fat thickness, which could lower the lean meat percentage in the carcass. The RBP4 hetero-genotype negatively affected the pork production. These results strongly imply that the selection of allele A of PRLR3 and allele B of RBP4 would produce highly productive pigs in the Berkshire breed. Careful selection of allele B of RBP4 is required because of the increase in the back fat thickness.

농수부산물 발효사료가 양돈에 미치는 경제적 효과 분석 (Agricultural and Marine By-Products Fermented Diet and Its Economic Value in Pigs)

  • 본 연구는 인근에서 쉽게 구할 수 있는 낙과사과, 감껍질, 팽이버섯 부산물, 새송이버섯 부산물 및 맥주박을 이용하여 발효사료를 제조하였고, 이러한 농수부산물 발효사료가 양돈에 미치는 경제적인 효과를 분석하였다. 흑돼지 한 마리당 1일 사료비는 낙과사과 발효사료가 2.16~3.44%, 감껍질 발효사료가 3.83~13.35%, 팽이버섯 부산물 발효사료가 7.47~41.61% 감소하였다. 3원교잡종 한 마리당 1일 사료비는 새송이버섯 부산물 발효사료가 1.59~4.05%, 맥주박 발효사료가 59.09~66.90% 감소하였다. 흑돼지 한 마리당 도체가격은 2% 낙과사과 발효사료가 3.09% 증가하였고, 감껍질 발효사료가 1.20~3.40% 증가하였으며, 10% 팽이버섯 부산물 발효사료가 1.13% 증가하였다. 3원교잡종 한 마리당 도체가격은 새송이버섯 부산물 발효사료가 2.87~4.19% 증가하였고, 맥주박 발효사료가 41.31~49.14% 증가하였다. 따라서 본 연구에서는 사료비 및 도체가격의 분석을 통하여 농수부산물 발효사료는 사료비는 감소하고, 도체가격이 증가하게 되어 양돈 농가의 소득에 기여할 것으로 사료된다.
