Relationship between Thermal Properties of Muscle Proteins and Pork Quality

  • The purpose of this study was performed as model study using four animals to investigate the correction between the changes in Differential Scanning Calorimetry thermogram of muscle proteins during storage and meat freshness. M. longissimus dorsi of pork was obtained immediately after slaughter and chilled/stored at either $-2^{\circ}C$ or $25^{\circ}C$ for up to 96 h for analyses. DSC thermograms were determined and compared with pH values, ATP-related compounds, K-values, volatile basic nitrogen (VBN) levels, bacterial counts and electrophoretic behavior. Changes in pH, bacterial counts, VBN and K-values were associated with increased storage temperature and time. The levels of pH values, bacterial counts, VBN and K-values of pork samples stored at $25^{\circ}C$ were higher than those of the pork samples stored at $-2^{\circ}C$. ATP concentration decreased faster in samples stored at $25^{\circ}C$. Only IMP increased in samples stored at $-2^{\circ}C$, whereas the concentration of hypoxanthine and inosine increased in samples stored at $25^{\circ}C$. One exothermic peak and two endothermic peaks appeared on the thermograms of pork stored at either temperature. Lower transition temperature of myosin, sarcoplasmic protein and actin peaks were observed. The freshness parameters of K-value, VBN and hypoxanthine showed highly negative correlations (-0.742- -0.9980) to the changes in transition temperature. Therefore, the shift temperature on DSC thermogram can be used as an indicator of the freshness parameters of meat.

  • 고속도로의 터널구간은 일반구간과는 다른 주행특성(속도, 교통량, 밀도 등)을 가지게 되고 이에 따라 고속도로 일반부에서 터널진입 전과 후에 운전자 행태가 변하는데, 가장 대표적인 예가 속도의 감소 현상이라 할 수 있다. 하지만, 이러한 다양한 요인들 중 현재까지 연구의 진행 추세는 도로의 용량, 속도감소 측면의 정량적인 부분에 초점을 맞춘 연구들 위주로 진행되고 있는 것이 현실이다. 따라서 본 연구에서는 터널의 다양한 여건을 고려할 수 있는 구간을 대상으로 설문조사와 설문결과 분석을 통해서 터널구간 속도감소에 영향을 미치는 정성적 요인들을 알아 보았다. 분석 결과 최근 증가 추세인 장대터널과 관련된 터널 자체의 형상(차로폭, 갓길폭, 터널길이)에 대한 요인이 터널 내부 속도감소에 영향을 미치는 것으로 나타났다. 또한 터널입구 보임여부와 같은 시각적 환경이 속도감소의 영향요인으로 나타났으며 터널 내부의 조명밝기에 따라 속도변화가 나타나는 것을 알 수 있었다. 본 연구결과를 활용하여 고속도로 터널부 설계관련 기술개발 및 서비스개선을 위해 지속적인 투자가 이루어질 것이라 판단된다.

Zn2+ PVC-based Membrane Sensor Based on 3-[(2-Furylmethylene)amino]-2-thioxo-1,3-thiazolidin-4-one

  • The 3-[(2-furylmethylene)amino]-2-thioxo-1,3-thiazolidin-4-one (FTT) was used as an excellent ionophore in construction of a $Zn^{2+}$ PVC-based membrane sensor. The best performance was obtained with a membrane composition of 30% poly(vinyl chloride), 62% nitrobenzen (NB), 3% FTT and 5% sodium tetraphenyl borate (TBP). This membrane sensor shows very good selectivity and sensitivity towards $Zn^{2+}$ over a wide variety of cations, including alkali, alkaline earth, transition and heavy metal ions. The membrane sensor revealed a great enhancement in selectivity coefficients for $Zn^{2+}$ ions, in comparison to the previously reported $Zn^{2+}$ membrane sensors. Theoretical studies also showed the selective interaction of TFF and $Zn^{2+}$ ions. The proposed membrane sensor exhibits a Nernstian behavior (with slope of 29.3 ${\pm}$ 0.3 mV per decade) over a wide concentration range (1.0 ${\times}$ $10^{-6}$-1.0 ${\times}$ $10^{-2}$) with a detection limit of 8.5 ${\times}$ $10^{-7}$ M (52 ng mL$^{-1}$). It shows relatively fast response time, in the whole concentration range ($\lt$ 20 s), and can be used for at least 10 weeks in a pH range of 3.0-7.0. The proposed membrane sensor was successfully used in direct determination of $Zn^{2+}$ ions in wastewater of industrial zinc electroplating companies, and also as an indicator electrode in titration with EDTA.

충남 일부 대학생의 용돈 수준별 가공식품 섭취실태 비교 (Comparison of Processed Food Intake by Allowance Level in College Students in Chungnam)

  • Diet is closely related to an economic level, but few studies have reported on the relationship between the economic level and eating habits, especially in college students. Therefore, this study was conducted to clarify differences in eating habits with a focus on processed foods according to allowance level in college students. This study was a cross-sectional survey of 500 college students using a questionnaire. The questionnaire consisted of general characteristics, eating behaviors, purchase of processed foods, and preference and intake frequency of processed foods. All subjects were classified based on monthly allowance: less than \300,000 (n=149), \300,000~400,000 (n=177), and more than \400,000 (n=124). All survey results were comparatively analyzed among the spending money groups. As the level of spending money of the subjects increased, the rate of skipping meals, eating out, and unbalanced diet increased (P<0.05). The reason for consuming processed foods was because they are easy to prepare. The factor considered the most when buying processed foods was price. However, these results showed no significant difference according to level of spending money. As spending money increased preference for retort, convenience, canned, and bottled foods significantly increased. Intake frequency of dairy products was lower, and the frequency of processed foods was significantly higher with more spending money. This study found that a higher level of monthly allowance in college students, was associated with higher rate of skipping meals, eating out, and unbalanced diet, and the preference and intake frequency of processed foods were also high. These results suggest that spending money level in college students, as an economic indicator, is relevant to intake of processed foods.

CO2 흡수제 함유 김치포장에서 CO2 농도와 제품 숙성도의 상호관련성 (Interrelationship between Kimchi Ripening and CO2 Concentration of the Headspace in Flexible Packages Included with CO2 Absorber)

  • CO2 concentration in kimchi package has emerged recently as a potential index of product ripening to be monitored or sensed in intelligent packaging. Considering that addition of CO2 absorber into the flexible kimchi package changes behavior of its CO2 concentration, ripening of kimchi in total acidity, package CO2 concentration in partial pressure (PCO2) and package volume at 10℃ were estimated by mathematical model for two size packages included with different CO2 absorbers. In small size package containing 0.5 kg of kimchi, relatively less gas permeable low density polyethylene (LDPE) sachet of the absorber was found to give rise of PCO2 linearly correlated with acidity at acceptable conditions of absorber amount and size. The levels of PCO2 at optimum ripening were different with absorber amount. However, highly gas permeable microporous spunbonded film (Tyvek) sachet did not show the linear relationship except a condition of 1.5 g of CO2 absorbent. In large size package containing 2.0 kg, absorber sachets of LDPE and Tyvek could give the linear relationship between product acidity and package PCO2 but at different levels (PCO2 of package with LDPE sachet: 0.46~0.79 bar, PCO2 of package with Tyvek sachet: 0.00~0.75 bar). The PCO2 at optimal ripening was found to be less variable with LDPE sachets than with Tyvek ones. Use of package CO2 concentration as an indicator of kimchi ripening was shown to be possible on the limited conditions where the linear relationship between them is established or confirmed.

Effect of plate properties on shear strength of bolt group in single plate connection

  • A single plate shear connection, or shear tab, is a very popular shear connection due to its merit in ease of construction and material economy. However, problems in understanding the connection behavior, both in terms of strength and ductility, have been well-documented. Suggestions or design model for single plate connections in AISC Design Manual have been altered several times, with the latest edition settling down to giving designers pre-calculated design strength tables if the connection details agree with given configurations. Results from many full-scale tests and finite element models in the past suggest that shear strength of a bolt group in single plate shear connections might be affected by yield strength of plate material; therefore, this research was aimed to investigate and clarify effects of plate yield strength and thickness on shear strength of the bolt group in the connections, including the validity of using a plate thickness/bolt diameter ratio ($t_p/d_b$) in design, by using finite element models. More than 20 models have been created by using ABAQUS program with 19.0- and 22.2-mm A325N bolts and A36 and Gr.50 plates with various thicknesses. Results demonstrated that increase of plate thickness or plate yield strength, with the $t_p/d_b$ ratio remained intact, could significantly reduce shear strength of the bolt group in the connection as much as 15 percent. Results also confirmed that the $t_p/d_b$ ratio is a valid indicator to be used for guaranteeing strength sufficiency. Because the actual ratio recommended by AISC Design Manual is $t_p/d_b$ + 1.6 (mm) for connections with a number of bolts less than six and plate yield strength in construction is normally higher than the nominal value used in design, it is proposed that shear strength of a bolt group in single plate connections with a number of bolts equal or greater than seven be reduced by 15 percent and the $t_p/d_b$ ratio be limited to 0.500.

UV-B-Induced Changes in Carbohydrate Content and Antioxidant Activity in Rice Seedling

  • The effects of UV-B radiation on the seedling growth, carbohydrate metabolism and antioxidants activities of rice (Oryza sativa L.) were investigated under environmentally controlled chamber. Supplementary UV­B radiation reduced dry matter as well as leaf area, there­fore, relative growth rates (RGR) of seedlings were decreased by up to half compared to control. Photosynthetic products such as soluble sugars and starch were rapidly and significantly reduced by within 1 day of enhanced UV-B radiation due to the inhibition and degradation of photosynthetic processes and thylakoid membrane integrity. In our study, nonstructural carbohydrate levels were proved to be a main indicator on UV-B­induced stress. The behavior of SOD, CAT, APX and POD activities was monitored in the leaves of rice seedlings subjected to UV-B radiation. Under UV-B treatments, SOD activity was initially increased, whereas CAT and POD activities were slowly and slightly increased. However, APX activity showed no presumable results with an increase of UV-B dose. In leaves of rice seedlings, supplementary UV-B radiation caused an increase in free putrescine and spermidine, however spermine remained unaltered, although 24-hrs UV-B treatment slightly increased. This result presumes that an excess UV-B dose may induce ethylene biosynthesis (senescence) rather than polyamine biosynthesis (defense).

  • KSR-III(Korea Sounding Rocket - III), which is being developed by Space Technology R&D Division of KARI(Korea Aerospace Research Institute) will be launched in late 2002. It is a three-stage, liquid propellant rocket which can reach 250 km altitude and will carry out observation of ozone layer and scientific experiments, such as microgravity experiment, and atmospheric measurement. KSR-III is believed to be an intermediate to the launch vehicle capable of carrying a satellite to its orbit. Space Test Department of KARI performed GVT(Ground Vibration Test) fer KSR-III EM at Rocket Test Building of KARI. GVT is very important for predicting the behavior of rocket in its operation, developing flight control program and performing aerodynamic analysis. This paper gives an introduction of rocket GVT configuration and information on test procedures, techniques and results of It. In this test. to simulate free-free condition, test object hung in the air laterally by 4 bungee cords specially devised. For the excitation of test object, pure random signal by two electromagnetic shakers was used and total 22 frequency response functions were achieved. Polyreference parameter estimation was performed to identify the modal parameters with MIMO(Multi-Input-Multi-Output) method. As the result of the test, low frequency mode shapes and modal parameters below 60Hz were identified

Quality monitoring of complex manufacturing systems on the basis of model driven approach

  • Monitoring of complex processes faces several challenges mainly due to the lack of relevant sensory information or insufficient elaborated decision-making strategies. These challenges motivate researchers to adopt complex data processing and analysis in order to improve the process representation. This paper presents the development and implementation of quality monitoring framework based on a model-driven approach using embedded artificial intelligence strategies. In this work, the strategies are applied to the supervision of a microfabrication process aiming at showing the great performance of the framework in a very complex system in the manufacturing sector. The procedure involves two methods for modelling a representative quality variable, such as surface roughness. Firstly, the hybrid incremental modelling strategy is applied. Secondly, a generalized fuzzy clustering c-means method is developed. Finally, a comparative study of the behavior of the two models for predicting a quality indicator, represented by surface roughness of manufactured components, is presented for specific manufacturing process. The manufactured part used in this study is a critical structural aerospace component. In addition, the validation and testing are performed at laboratory and industrial levels, demonstrating proper real-time operation for non-linear processes with relatively fast dynamics. The results of this study are very promising in terms of computational efficiency and transfer of knowledge to manufacturing industry.

프리스트레스트 와이어로프를 사용한 RC 벽체의 단부 경계요소 내진보강 평가 (Evaluation of Seismic Strengthening Approach at the Boundary Elements of RC Walls using Prestressed Wire Rope Units)

  • 이 연구에서는 연성중심의 보강을 위하여 벽체의 양단부에서 경계요소를 형성하는 내진 보강공법이 적용된 벽체의 반복 휨 거동을 평가하였다. 벽체 경계요소에서 구속효과를 위한 횡보강은 프리스트레스트 와이어로프를 사용하였다. 주요 변수는 제시된 단면 확대공법의 보강 높이로 하였다. 최소 보강 높이는 보강 벽체와 기존 벽체의 모멘트 분포의 비교로부터 결정하였다. 실험결과, 제시된 보강방법은 벽체의 휨 강성 및 연성향상에 매우 효율적이었는데, 최대내력 시 강성과 최대내력의 80%지점에서 산정한 일손상지수는 무보강 벽체에 비해 각각 평균 46%와 210% 증가하였다. 보강높이가 벽체의 일손상지수 증가에 미치는 영향은 보강높이가 $2.0l_w$ 이상일 때 중요하지 않았다. 보강된 벽체의 휨 내력은 ACI 318-14에서 제안하는 등가응력블록을 통한 예측 값보다 22% 이상 높았다.
