Some structural characteristics of kidney bean starches (3 varieties : Pink kidney bean, Red kidney bean and White kidney bean) were investigated. The amylose content and the ${\beta}$-amylolysis limit of kidney bean starches were $32.6{\sim}34.5%$ and $69.9{\sim}71.0%$, respectively. The kidney bean amylopectin was composed of super long chain of ${\overline{DP}}$ above 60 ($5.28{\sim}12.62%$), B chain of ${\overline{DP}}$$45{\sim}60\;(29.85{\sim}33.65%)$ and A chain of ${\overline{DP}}\;10{\sim}20(22.94{\sim}29.85%).$ The chain distribution of kidney bean starches were different from variety to variety. The acid (2.2 NHCI) hydrolysis of kidney bean starches showed, as hydrolysis time increased, the patterns of three stages. The acid hydrolysis rate and iodine reaction of acid treated starches were different from variety to variety As acid hydrolysis time increased, the amylose and the ${\alpha}$-1.6-glucosidic linkage of amylopectin of amorphous state were gradually hydrolyzed. Finally, the chain of ${\overline{DP}}$ 20 of crystalline state was left in the acid treated starches.

The present study examined the physiological effects of isoflavone-rich bean sprout on the lipid metabolism of hyperlipidemic rats. Experimental hyperlipidemia was induced by the AIN standard diet with 0.5% cholesterol,9.3% lard and 0.2% sodium cholate in SD rats. Experimental groups consisted of normal control, hyperlipidemic control, 1% or 5% bean sprout powder-supplemented groups, and 0.2% soybean isoflauone extract-supplemented group. Four weeks feeding of isoflavone-rich bean sprout powder or isoflavone extract resulted in a significant lowering of plasma cholesterol and lowering tendency of triglyceride levels. The levels of lipid peroxidation products in the kidney and heart tissues were also lowered by the supplementation of bean sprout powder or isoflavone extract. The activities of hepatic glutathione peroxidase and catalase were increased by the supplementation of bean sprout powder or soybean isoflavone extract. Plasma concentration of vitamin A was significantly raised in the group fed 0.5% bean sprout powder. The results of the study showed that the beneficial effects of isoflavone-rich bean sprout on lipid metabolism of hyperlipidemic animals were comparable with those of soybean isoflavone extract. The positive effect of bean sprout in improving lipid metabolism might be due to the combined action of isoflavone and dietary fiber.
The lectins were separated from Korean and Chinese mung bean seeds finally via chromatography using Sephadex G-100 and their biochemical features were studied and compared. They showed no hemagglutination with human red blood cells regardless of trypsin treatment and showed hemagglutination with only trypsin treated rabbit red blood cells. The molecular weights of two lectins were identified as 54 kDa and 28 kDa by SDS-PAGE. It was found that while the optimal reaction temperature of the lectin from Korean mung bean was $60^{\circ}C$, that of the lectin from Chinese mung bean seeds was $50^{\circ}C$. It was found also that the most thermal stable temperature of the seed lectin from Korean mung bean seeds was $50^{\circ}C$ and the lectin from Chinese mung bean was $40-50^{\circ}C$. The lectin from Korean mung bean seeds showed the highest activity at pH 3.2 and the lectin from Chinese mung bean showed the highest activity at pH 6.2. It was identified that when treating a denaturant, thiourea and guanidine-HCl resulted in no hemagglutination, so they induced denaturalization. It was identified also that there was no hemagglutination with urea, so it did not induced denaturalization. They showed no septicity to 6 types of carbohydrates including D-glucose. In addition, the lectins from the two mung bean seed had specificity to metal ions.
Pod-edible bean or snap bean is a fairly new crop to domestic farmers but the national demand is steadily increasing in recent years along with the development of western food business and change in dietary patterns. At the same time, much efforts are being made to export it to foreign country, mainly to Japan. The amount of seeds introduced from outside is also continuously increasing along with the enlargement of area planted for the crop. Hybridization breeding for the crop has already been started to supply the cheaper and better seeds which will reduce the seed costs and foster the higher income to the farmers. In this experiment, several technologies related with the production of quality seeds are preliminary investigated. Some of the results obtained are summarized as follows; 1. Highly significant interaction was recognized between planting dates and no. of pods per plant and no. of branches but no interaction between planting dates and plant height and no. of nodes on main stem. Days to maturity was proportionally reduced to later planting dates. 2. Rate of viviparous pods and seeds was gradually increased in later planting dates but rate of germination was increased in earlier planting dates with lower germination rate in white seed coat grains than in colored seed ones. 3. Seed yield was higher in the earlier planting dates with a great deal of varietal difference. Early to mid April was considered to he the optimum planting dates for snap bean in Kyungbuk area. High correlation was recognized between seed yield and no. of pods per plant, no. of seeds per plant, and 100 seed weight. 4. Days to flowering was three and seven days longer in Cheongsong, high mountainous area than in Kunwi, somewhat prairie lowland. One hundred seed weight was also higher in Cheongsong than in Kunwi. Rate of viviparous grains, pods, and decayed seeds was higher in Cheongsong but, at the same time, the rate of germination and seed yield was also higher in Cheongsong. 5. One hundred seed weight of KLG5007 increased continuously up to 35days after flowering and decreased thereafter but that of KLG50027 increased to 40days after flowering and slowly reduced thereafter. The content of crude oil reached to maximum at 40 days after flowering and reduced thereafter. The rate of germination in Gangnangkong 1 was the highest, 89.3%, at 35 days after flowering and reduced thereafter while that in KLG50027 reached to maximum, 70.7%. at 40days after flowering and reduced thereafter. Thus, the optimum harvesting time for snap bean was considered to be 35~40days after flowering. 6. The snap bean pods at yellow bean stage easily became viviparous ones under saturated moisture conditions for 24 hours at $25{\sim}30^{\circ}C$. Therefore, it is recommended to harvest pods somewhat earlier than yellow-bean stage and let them do post maturing, especially when it is to be rained.
Omija, the major material of omigalsu, has liver protective and antioxidant effects, while mung bean has detoxification effects. A series of studies were conducted to standardize the traditional recipe for omigalsu to develop traditional functional drinks made from Omija extract and mung bean juice. Study 1 was designed to determine the optimal conditions for Omija extraction and mung bean juice. A higher water temperature and longer immersion time was associated with higher, free sugar and organic acid contents of omija extract; however, sensory evaluation revealed that the optimal extraction conditions for the highest acceptability, proper taste and red tone were $23^{\circ}C$ and 18 hrs of immersion. Conversely, the pH of the mung bean juice produced by varying the immersion time (5 hr, 11 hr, 17 hr) was found to be neutral, containing small levels of organic acid and free sugar, and showing a yellow tone. The results of the sensory evaluation also showed that the optimal conditions for taste, flavor and yellowness of mung bean juice was 5-hour-long immersion. Study 2 was designed to determine the optimum mixing ratio of omigalsu concentrate. Sensory evaluation revealed that the contents of sugar and total free sugar were highest when the mixing ratio among omija extract, mung bean juice and sugar was 1:1:20%, indicating that these conditions produced the most attractive color and highest overall acceptability. Study 3 was designed to determine the optimum dilution magnification for omigalsu. Sensory evaluation during summer revealed that the omigalsu produced by mixing 54 g of omigalsu concentrate into 200 cc water of $4^{\circ}C$ or $80^{\circ}C$ was most preferred, while during winter. Overall, the optimum dilution magnification for omigalsu was 4.7~5.4.
The adzuki bean (Vigna angularis L.) is a red-grained legume that has a number of essential nutrients and is used in traditional dishes in Asia. Adzuki bean industrial by-products are also a potential low-cost source of some unique bioactive polyphenols. Hence, here, the authors aimed to perform a comparative study of the phytochemical profiles of the leaves and seeds of the adzuki bean and compare their antioxidant, ${\alpha}$-glucosidase inhibition, and tyrosinase inhibition activity. The authors assessed antioxidant activity by DPPH, ABTS, FRAP, PR, TPC, and SOD assays, which showed wide variation, respectively. From the relative antioxidant capacity index results, 10 adzuki bean landraces were selected to compare for phytochemicals and bioactivity using leaf and seed extracts. Antioxidant, ${\alpha}$-glucosidase inhibition, and tyrosinase inhibition activity in the leaf extracts were higher than in the seed extracts, and there were more flavonols and isoflavones in the leaf extracts than in the seed extracts. This study demonstrated that adzuki bean leaf extracts could be a new natural antioxidant or antidiabetic agent and a skin whitener and can also be used in industrial applications.
The physicochemical properties of the hydroxypropylated mung bean, sweet potato and water chestnut starches were studied. The blue value and amylose content of mung bean starch were higher than those of sweet potato and water chestnut. Pasting temperature of hydroxypropylated starches were lower than those of native starch and decreased with increasing contents of propylene oxide. Peak viscosity increased with the increase of degree of hydroxypropylation. With increasing contents of propylene oxide, the clarity and swelling power of all starches were increased and those of mung bean were higher. Mung bean starch produced better hard capsules than sweet potato and water chestnut starch. Hydroxypropylated (>6% propylene oxide) water chestnut starch-based capsules completely dissolved, but hydroxypropylated (>12% propylene oxide) mung bean and sweet potato starch-based capsules were dissolved within 10 min. These results showed that hydroxypropylated starch-based capsules have potentials for pharmaceutical applications as a substitute for gelatin hard capsules.
Retrogradation of legume starches and their gel properties were studied. From DSC results, kidney bean starch retrograded faster than other starches whereas cow pea and mung bean starches retrograded slowly. Retrogradation rate of 1% starch solutions during storage showed similar patterns to the DSC results. During storage, the sags of cow pea and mung bean gels(starch conc., 8%) were slowly increased, but that of kidney bean was rapidly increased. The water mobility of cow pea and mung bean gels, which was measured by NMR, remained unchanged for one day, afterwards decreased slowly, whereas that of red bean and kidney bean gels decreased rapidly through the storage time.
Chou-cream bread and Red bean paste bread were made by sponge & dough method with the sweet dough formula. The bread quality was studied by the measurements of the temperature variation, the fermentation level of frozen dough in the special condition(dough conditioner of 5$^{\circ}C$, 10$^{\circ}C$, 15$^{\circ}C$, 20$^{\circ}C$ and 30$^{\circ}C$), the product volume and thesensory evaluation with frozen dough thawed, fermented and baked. When thawing temperature was low, the core temperature of frozen dough increased slowly and the time for thawing and fermentationwas long. In thawing and fermentation, the core temperature of Red bean paste dough increased faster than that of Chou-cream dough. When the thawing conditions of dough conditioner(retarder) were 20$^{\circ}C$ and 30$^{\circ}C$, the level of total time decrease for thawing and fermentation was 55 and 86 min in Chou-cream dough and 62 and 90 min in Red bean paste dough respectively in comparison to dough conditioner of 5$^{\circ}C$. In volume of baked products, they showed no significant difference for three weeks of storage, but slight difference for four weeks of storage. The result was that Chou-cream bread was larger than Red bean paste bread in the decrease of volume. In sensory evaluation, the bread quality became low according to the time. When stored for four weeks in the freezer, significant differences were found in Chou-cream vread, but slight difference appeared in Red bean paste bread. The research identified that Red bean paste dough was more effective in manufacturing time than that of Chou-cream dough, when thawing temperature was high, and if frozen dough was thawed in the retarder of lower than 20$^{\circ}C$, the bread quality in terms of volume and sensory evaluation had no significant difference in comparison to the none-freezing Red bean paste bread.

This study was conducted to investigate quality characteristics of red bean gochujang prepared with different ratios of meju for eight weeks. We determined quality characteristics such as pH, moisture content, total microbial flora counts, amino-type nitrogen content, total polypenol content, and antioxidant activity. The pH decreased by fermentation period, whereas total acidity was 0.36~0.39% in the early stage of fermentation, 0.63~1.16% at four weeks of fermentation, and decreased to 0.43~0.65% after the eighth week of fermentation. Moisture content of the control (no red bean, no rice) decreased 62.13% to 50.93%, but in case of the treatment, it slightly decreased. Total cell counts revealed similar tendency at the beginning of fermentation, and at eight weeks of fermentation. In case of lactic acid bacteria, all samples except RB-1.5 (gochujang added meju made of mixing ratio of rice:soybean:red bean (1:2:1.5) slightly increased. Amino nitrogen and total polyphenol of all samples increased in the fermentation period, especially RB-1.5 sample had the highest levels than other samples. By increasing the amount of red bean, DPPH radical scavenging activities increased. In taste sensing analysis, all treat samples except RB-1.5 revealed lower sourness than the control. Also, in case of bitterness, all samples revealed low content than the control. So, by adding red bean, it can enhance taste and function of gochujang.
