Two experiments were conducted to determine the digestibility of crude protein (CP), amino acids and energy in three Chinese corn distillers dried grains with solubles (DDGS), one rice DDGS, one American corn DDGS and one American high protein distillers dried grains (HP-DDG). In Exp. 1, the apparent ileal digestibility (AID) and standardized ileal digestibility (SID) of CP and amino acids in the six samples were determined using cannulated barrows (initial BW: $43.3{\pm}1.7$ kg). In Exp. 2, the digestible energy (DE) and metabolizable energy (ME) content of these six samples were determined using crossbred barrows (initial BW: $46.0{\pm}2.5$ kg). The results of the two experiments indicated that Chinese corn DDGS is generally similar to American DDGS in chemical composition, digestibility of amino acids, DE and ME. However, Chinese DDGS had a lower Lys concentration (0.50% vs. 0.74%) and SID Lys (52.3% vs. 57.0%, p<0.01). The DE and ME values in Chinese corn DDGS were 3,427 and 3,306 kcal/kg, respectively. Rice DDGS had a similar DE and ME (3,363 and 3,228 kcal/kg) but higher Lys concentration (0.64% vs. 0.50%) to corn DDGS, while the SID of Lys was quite low (61.8%, p<0.01). HP-DDG had high value of SID of Lys, DE and ME (79.8%, 3,899 and 3,746 kcal/kg). In conclusion, except for a lower Lys concentrations and availability, the chemical composition, digestibility of amino acids, DE and ME values in Chinese corn DDGS are similar to American corn DDGS. Additionally, the rice DDGS had lower Lys content and digestible Lys values than that in corn DDGS. Thirdly, HP-DDG has higher levels of digestible amino acids and energy than DDGS.
Various volume of water for the optimal brewing condition of the Korean distilled liquor produced by liquefaction of rice and corn starch was investigated Pilot brewings were carried out by the liquefaction of 5kg of rice and 10kg of corn starch with 150%, 200% and 250% of water regarding the amount of rice and corn starch. The pH, alcohol production and total acidity were normal during the fermentation process. The yield was proportional to the amount of water added and the highest yield was obtained by 250% of water addition without loss of quality. All the test results were not significantly different by the one-way ANOVA and Duncan's multiple range test at p<0.05 and the flavor profiles were also not different according to the amount of water added. As a result, 250% of water addition was the most economical and optimal brewing condition in this study.

The effect of eight varieties of grain and forage type whole crop rice (Oryza sativa L Japonica) each harvested at four stages of maturity were investigated for morphology and yield, proportion of botanical fractions, fermentatability and chemical composition in an $8{\times}4$ factorial experiment. All crops were sown in 1997 at Saitama Prefecture, Japan under identical condition and harvested on 10, 22, 34 and 45 days after flowering in 1998. Total DM yield of forage type varieties was similar to that of the highest yield of grain type varieties. However, while yield of forage type varieties was attributed to higher proportion of straw than head, the reverse was in the case of grain type varieties. Yield in line with the proportion of head increased (p<0.001), but in contrast proportion of straw decreased (p<0.001) with the increase in maturity. Silage fermentability of grain type varieties was better than forage type varieties. Fermentability improved with the increase (p<0.001) in maturity suggesting that the moisture content should be reduced to improve fermentation quality. Forage type varieties contained higher (p<0.001) ash, crude fat (EE), organic cell wall (OCW) and acid detergent fiber (ADF), but contained lower crude protein (CP), organic cell content (OCC), CP in OCC and nitrogen-free cell wall extract (NCWFE) than the grain type varieties. The ash, CP, EE, Oa (60% digestible OCW), Ob (40% digestible OCW), OCW, ADF and acid detergent lignin (ADL) decreased (p<0.001), but OCC and NCWFE increased (p<0.001) with the increase in maturity. It is concluded that stage of maturity not only increases yield and proportion of head, but also improved the fermentation quality and increases quality chemical composition (except CP) of whole crop rice. Forage type varieties may be as good as grain type varieties in terms of yield, but fermentation quality and chemical composition may not be as good as that of grain type varieties.
A survey on feeding practices was conducted with thirty-one cattle farmers belonging to three categories: households without land and no income from agricultural labour (Class 100;10 farms), households without land but deriving considerable income from agricultural labour (Class 101;10 farms), and households with land and without income from agricultural labour (Class 110;11 farms). Information on the types of feeds given of one year. In addition, samples of the feeds offered and refused were collected every two weeks and analysed for dry matter, organic matter (OM), crude protein (CP) and in vitro organic matter digestibility (OMD). Grass was usually cut at an early stage of growth, as such the CP(11.8%) and OMD (62%) were relatively high. All types of rice straw (whole, lower and upper part) and sugarcane forage (tops and leaves) were low in CP (<6 and <8.9%, respectively) and OMD (<45 and <47%, respectively). Rice bran and tofu waste was of much better quality than any other feed. The average number of different feeds in the rations (mean of all farms) was 1.98, with a lower value for class 101 (1.80), than for classes 100 and 110 (2.11 and 2.02, respectively). Of the total amount of OM consumed, 42% was rice straw, 21% grass, 19% maize forage, 10% sugarcane forage, <4% other forages (soya and groundnut straw), 1.3% rice bran and 2.9% tofu waste. The total amount of OM offered varied from <80 $g/kg^{0.75}/d$ in August/September to 1.5 times as much in May (P<0.01). The intake of digestible organic matter (IDOM) for farm class 110 ($37.7g/kg^{0.75}/d$) was significantly (p<0.001) lower than that for classes 100 and 101 (44.1 and $41.3g/kg^{0.75}/d$, respectively). The highest CP/IDOM ratio was recorded for farm class 101 (0.201 as compared to 0.181-0.184).
Two experiments were conducted to study the use of urea-treated rice straw (UTRS) and whole sugar cane (WSC) crop as roughage sources for dairy cattle during the dry season. Experiment I, four rumen-fistulated dairy crossbred steers were assigned to receive roughage treatments according to a $4{\times}4$ Latin square design: $T_1=urea-treated$ (5%) rice straw, $T_2=UTRS$ and WSC at 75:25% DM, $T_3=UTRS$ and WSC at 25:75% DM, and $T_4=WSC$. Experiment II, three rumen fistulated, late lactating multiparous Holstein-Friesian crossbreds were randomly allotted to a $3{\times}3$ Latin square design to receive three types of roughages; $T_1=WSC$, $T_2=UTRS$, $T_3=WSC+UTRS$ at 50:50% DM. It was found that combination of UTRS and WSC at 75:25 ratio significantly increased DM intake while intake of WSC alone was lowest. Moreover, inclusion of UTRS into WSC enhanced digestibilites (Exp. I). In Exp. II, combination of UTRS with WSC at 50:50 ratio (DM) enhanced DM intake (kg/d) (p<0.05) and especially milk yield, milk fat and protein percentages. The findings suggest the combined use of WSC and UTRS improved the feeding values of these roughages for dairy cattle during the dry season.

This book comprises twenty eight items, among which there are eight items of vegetable preserving method, ten items of Jook preparation methods(a kind of cereal soup), nine items of Pyun-Myun methods(a kind of rice cakes and noodles) and Yak-Bab(a kind of spiced rice). In vegetable preserving method, the eggplant, the cucumber and a songi mushroom were preserved with the drying method., A radish, a sorojangii, and the root of white cabbage were used with the cold temperature preservation. A garlic was dried after salting. The sprouts of DooRub, which were coming in the hot room, were used. In the Jook preparations, there were five animal materials which were lamb, chick, crudian, oyster and abalone. In nine Pyun-Myun methods, Jap-Gua-Sil was illegible because the letters were not clear. Among eight items, the stick rice was used in four cases, the regular rice in two cases. The ground pine nuts, honey and the Chinese date were used most ofter. And the sesame salt and the chestnut were next. The analysis of the terms I this book revealed that 26 items were used for cooking processes. And it also showed us that there were seven kind of cutting procedure and eight kinds of heating procedure. The shapes and size of foods were revealed at only three places in all items. The purpose of this study was to find out the taste adjectives of Korean cooked rice, noodles, porridges and rice cakes as well as to analyze the relation between the taste adjectives of foods. We gathered and chose 36 related Korean adjectives for expressing not only the taste but also the smell of foods. Subsequently, we performed a sensory evaluation for 18 Korean foods with 20 trained panelists in order to check the proper adjectives when they tasted the foods. The often selected taste adjectives were 'sweet', 'tasty', 'sticky' and 'soft' among 36 taste adjectives. The PCA was performed to summarize the taste adjectives for each of the 18 foods. The principal components explained 50.94 % of the total variance. The adjectives 'spicy' and 'refresh' were closely related to one another in the positive direction of PC1. In contrast, 'weak', 'hard' and 'sticky' were closely related to one another in the negative direction of PC1. PC2 was marked by 'hard' and 'spicy', which were located in the positive direction. In contrast, 'weak' and 'soft' were located in the negative direction. PC3 was marked by 'nutness', 'bitter' and 'spicy', which are associated with bibimbab, conveying a high degree of correlation among them in a positive direction. In contrast, 'cool', 'sour' and 'refresh' were located in the negative direction.
A study was conducted to determine the safety of feeding processed broiler litter (BL) to beef cattle. The litter was processed by deepstacking, ensiling and composting. The health issues addressed relevant to the safety of feeding litter included pathogenic bacteria, mycotoxins, heavy metals, medicinal drugs and pesticide residues. Exp. 1 evaluated the feed hygiene of processed rice hulls-bedded BL. The presence of pathogenic bacteria in BL was determined before and after deepstacking. A total of 21 BL samples were collected over a 3-year period of commercial and experimental production of BL for beef cattle. Exp. 2 evaluated the safety of meat of cattle fed deepstacked BL. In Exp. 1, there were no pathogenic bacteria, such as coliform, E. coli, E. coli O157:H7, Salmonella, Listeria and Proteus, in deepstacked BL. Levels of heavy metals (Cu, Fe, Mn and Zn) and toxic heavy metals (As, Pb, Cd and Hg) were lower than the commercial feed tolerances. Aflatoxin, medicinal drug and pesticide residues were detected at extremely low levels. In Exp. 2, the meat of the BL-fed animals exhibited few differences in all analyzed items from that of the control group, showing safety from pathogenic microorganisms and heavy metals. When BL was withdrawn for 14 days prior to slaughtering the BLfed cattle, no medicinal drug residues were detected in the meat. Pesticides in the tissues of either group of animals were much lower than the tolerances. In conclusion, processed rice hulls-bedded BL and the meat of cattle fed BL were safe from the potential hazards of pathogenic bacteria, heavy metals, aflatoxin, medicinal drugs and pesticide residues.
An experiment was conducted as a Latin square design with four rumen fistulated local yellow cattle with a mean live weight of 230 kg. The treatments were: $(CLM_0)$ urea-treated rice straw ad libitum plus 1 kg cassava root meal (basal diet), $(CLM_{500})$ basal diet plus 500 g cassava leaf meal, $(CLM_{1000})$ basal diet plus 1,000 g cassava leaf meal, and $(CLM_{1500})$ basal diet plus 1,500 g cassava leaf meal. The results showed that there were differences in dry matter intake of urea-treated rice straw between treatments (p<0.05). The highest total dry matter intake was observed for treatment $CLM_{1500}$, with 2.62 kg DM/100 kg LWt/day, followed by treatments $CLM_{1000}$, $CLM_{500}$ and $CLM_0$, with 2.42, 2.00 and 1.86 kg DM/100 kg LWt/day, respectively. The ruminal ammonia concentration on treatment $CLM_{1500}$ was greater than on treatments $CLM_{1000}$, $CLM_{500}$ and $CLM_0$. There were non-significant differences in the ruminal pH among the treatments. The in sacco degradability of cassava leaf meal and cassava root meal was high, and on average 75 and 85% respectively of the DM had disappeared after 24 h of incubation. Degradation rate of urea treated rice straw was 64% after 72 h of incubation.
This study was designed to investigate the effects of supplementation of spent mushroom substrates (SMS) on rumen fermentation and blood metabolites in Hanwoo steers. The experiment was conducted as a duplicated Latin square design with six Hanwoo steers ($600{\pm}47\;kg$), each permanently fitted with a ruminal cannula. There were three treatments; i) control (concentrates 4.8 kg +rice straw 1.2 kg/d), ii) Pleurotus eryngiia (PE) treatment (concentrates 4.8 kg+rice straw 0.73 kg+Pleurotus eryngiia 1.20 kg/d) and iii) Pleurotus osteratus (PO) treatment (concentrates 4.8 kg+rice straw 0.73 kg+Pleurotus osteratus 1.20 kg/d). There were no major effects of different dietary treatments on rumen parameters such as pH, ammonia-N, individual and total VFA production. Parameters of N utilization, including blood urea nitrogen (BUN), total protein and albumin levels, were not significantly different among the treatments, except for creatinine. Thus, the present results indicated that protein utilization was mostly unaffected by SMS treatments such as PE and PO, even though creatinine concentration was lower in PE compared with control and PO treatments (p<0.05). The present results indicate that Pleurotus eryngii and Pleurotus osteratus could be used as a forage source to replace 40% of rice straw without any negative effects on rumen fermentation and blood metabolites in Hanwoo steers.
