A Study on the Gaesung's Food Culture of the Late 19th Century in the Novel Mimang (소설 "미망" 속 19세기말 개성의 음식문화)

  • In this study, we attempted to understand the cultural characteristics of Korean food based on a traditional understanding of a Korean novel. To achieve this, food characteristics related to "Gaesung's foods" were analyzed in the representative Korean literary work Mimang. Mimang is a novel, from the latter era of the Chosun Dynasty to the Korean War in the Gaesung area. From that novel, it was discovered that first daily foods in the Gaesung area of the 19th century were various stored fermented foods. The second was the devotion of Gaesung food's cooking process and formal attire. The third was reflected in the economic abundance and the splendor of Gaesung food courts. The fourth was a modern public restaurant in Gaesung, an economic and commercial city. Another historically significant food found in Mimang was Gaesung ginseng.

Degradation of Rice Straw by Rumen Fungi and Cellulolytic Bacteria through Mono-, Co- or Sequential- Cultures

  • Two strains of rumen fungi (Piromyces rhizinflata B157, Orpinomyces joyonii SG4) and three strains of rumen cellulolytic bacteria (Ruminococcus albus B199, Ruminococcus flavefaciens FD1 and Fibrobacter succinogenes S85) were used as mono-cultures or combinationally arranged as co- and sequential-cultures to assess the relative contributions and interactions between rumen fungi and cellulolytic bacteria on rice straw degradation. The rates of dry matter degradation of co-cultures were similar to those of corresponding bacterial mono-cultures. Compared to corresponding sequential-cultures, the degradation of rice straw was reduced in all co-cultures (P<0.01). Regardless of the microbial species, the cellulolytic bacteria seemed to inhibit the degradation of rice straw by rumen fungi. The high efficiency of fungal cellulolysis seems to affect bacterial degradation rates.

  • This treatise deals mainly with the culinary cultures of garlics, a very important condiment in Korea and France. Classified specifically as a condiment in the category of spices, garlic(A. sativum L.) is typically used to season a wide variety of foods, to give the dishes to add a pungent and pleasant flavor, highly characteristic of the delicate seasoning styles of Korean and French cuisine. Garlic is also known to be used as an invigorant. used for medicinal and mystical purposes. In both Korea and France. garlic is used in fresh state, sliced, diced, or crushed. Some examples of traditional Korean dishes using garlic is Tongmaneul Jangachi(garlic in a whole bulb, seasoned in soy sauce), alcoholic liquor of garlic, and red pepper paste with garlic. French cuisine includes garlic in sauces such as Aillade, Vinairette a l'alil, Sauce Pailloti, and in a variety of salads and Cruton, mixed with the local vegetables of every province of the country.

  • We examined expression patterns of imc-415 gene in mammary gland and in HC11 mammary epithelial cells in culture. mRNA levels of imc-415 gene were higher at pregnancy and involution stages of mouse mammary gland compared with lactation period. Expression of imc-415 gene was induced with serum starvation or treatment with Fas monoclonal antibody in HC11 mammary epithelial cells in culture.

  • The present study compares the texture describing terms used in East-Asian countries, China, Korea and Japan. The terms and definitions enlisted in the International Standard Sensory Analysis-Vocabulary, ISO 5492(second edition 1992) were used as the reference. It includes hardness, fracturability, chewiness, gumminess, viscosity, springiness, adhesiveness, granularity, conformation, moisture and fatness. The Chinese scripts used for the description of each textural terms in these three countries were compared and their native expressions were collected. The food items representing typical textual characteristics in the East Asian countries were also listed.

  • In other to produce vinegar using Schizandra chinensis Ballon(omija), acetic acid bacteria(AAB) were selected from several conventional vinegars, and total 30 acetic acid bacterial strains were isolated. Among the isolated strains, a strain was selected from medium containing omija juice which showed the highest productivity of acetic acid. The strain was identified as Acetobacter sp. C5-1b. Optimum conditions for acetic acid production of Acetabacter sp. C5-1b were involved with 30t: of fermentation temperature and shaking culture. The acidity of culture medium was reached to 5.3% after 8 days shaking cultivation at 30℃.

  • The effects of allylisothiocyanate on the biosynthesis of various fungus metabolites such as sterigmatocystin, lipid, protein, citrate RNA and AMP from the culture of Aspergillus Parasiticus R-716 were investigated. The content of sterigmatocystin, the precursor of aflatoxin, was lower in the culture added with 50ppm allylisothicoyanate after 48 hours, however was rather higher after 144 hours compared to that of the control. The addition of allylisothiocyanate resulted in the increase of lipid, protein, RNA in mycelium and the content of citrate in the media, but the amount of AMP was low.

  • The emergence of coffee shops and other public spaces in modern Shanghai shows the appearance of the "mass" centered on the middle class. Furthermore, we can further explore the different development paths of the publicity of modern Chinese urban society. The emergence of new public leisure spaces, such as cafes, provides a model of modern life style and a stage of daily publicity for the middle class in Shanghai. With the convenience provided by this kind of public space, people are able to clean up their old opinions and be better at accepting new ideas. A more sensitive and flexible public opinion of Enlightenment has gradually formed in urban life.

  • The purpose of this study was to select market variables that a foodservice company should consider when expanding overseas and to regional market analysis by variables. Twenty-three different variables were derived from 17 previous studies. These were: population, urbanization rate, women employed, enrollment in tertiary education, gross domestic product, value added by service, total number of mobile cellular telephone subscribers, number of internet users, total Asian highway, inward foreign direct investment, total service imports, inflation rate, international tourist arrivals, energy use by industry, growth rates of the food consumer price index, access to urban sanitation, per capita total expenditure on health, male life expectancy at birth, adult literacy rate, contributing women family workers, passenger car, and country risk assessment. The selected variables were collected as secondary data from the UN, Asian Development Bank, International Bank for Reconstruction and Development, and Michigan State University.

  • Myogenic satellite cells have been isolated and identified by several recently elucidated molecular markers. Furthermore, knowledge about the precise function of these markers has provided insight into the early and terminal events of satellite cells during proliferation, differentiation, transdifferentiation, specification and activation. Recently, quiescent myogenic satellite cells have been associated with possession of Pax 3 and 7 that represent pluripotent stem cells capable of differentiating into other lineages. However, the mechanism by which myogenic satellite cells attain pluripotent potential remain elusive. Later, transdifferentiating ability of these cells to another lineage in the absence or presence of certain growth factor/ or agents has revolutionized the scope of these pluripotent myogenic satellite cells for manipulation of animal production (in terms of quality and quantity of muscle protein) and health (in terms of repair of skeletal muscle, cartilage or bone).
