Proximate composition and the contents of free sugar and amino acid of Korean arrowroot were invesigated to develop and produce the high quality processed products. A higher content of moisture, protein, and fiber were found in male arrowroot than in those of female. Among the total free sugars, sucrose was the highest components and fructose and glucose were follwed. In Korean arrowroot, 17 amino acids were determined and proline of male arrowroot and aspartic acid of female arrowroot were found to be the major components. Arginine was abundant in male arrowroot, while aspartic acid was abundant in female arrowroot on the samples of November. Leucine was abundant in male arrowroot and glutamic acid was in female arrowroot in the samples of February. Among the free amino acid of Korean arrowroots, proline was the most plentiful and major components were histidine, alanine and serine.

The purpose of this research is to investigate the anatomical and chemical properties of arrowroots for the use of paper fibers. The cells consisting of arrowroots showed certain affinities with those in the fibers and vessels of hardwood. Its parenchyma cells showed different shapes with those of hardwood. It was observed that starch was filled in the multi-shape cells. The average width and length of arrowroot fibers were $15.2{\mu}m$ ($11.1-20.3{\mu}m$) and 1.9 mm (1.49 mm-2.31 mm), respectively. In the chemical characteristics of arrowroots, the contents of cold- and hot-water, alcohol-benzene, and alkali extractives were 12-17%, 15.6%, and 38.8%, respectively. Its chemical composition was 61.3% holocellulose, 15.5% lignin and 2.0% ash.

The applicability of arrowroots as materials for paper manufacture was investigated by evaluating the characteristics of arrowroots pulping and pulps, and the surface characteristics of paper made of arrowroots. The results is as follows. The yield of grounded pulp, alkaline pulp, grounded bleach pulp, and alkaline bleach pulp are 98.0%, 37.7%, 84.8%, and 32.5%, respectively. The extraction components in arrowroot's fibers was shown high in 1%-NaOH extraction. The amount of holocellulose and lignin were largely decreased, but a slight decrease was shown in the bleaching processes. Many shivers were shown in the grounded fibers. The amount of shivers was decreased and the single fibers were increased during the process of bleaching. The alkaline pulp and the alkaline bleach pulp showed high in the beating time and freeness than the grounded pulp and grounded bleach pulp. The conditions of sheet surface according to beating time is effected largely by the conditions of original pulp.
Baekseolgi made with arrowroot flour (AF, 0 to 15% of rice flour) was steamed to examine the effect of heating on its antioxidant activity and physicochemical properties. Despite the presence of abundant dietary fiber and superior water-holding capacity of AF, moisture in baekseolgi was not significantly increased. This could partly be attributed to AF having 50% less moisture content than rice flour. Hence, hardness of baekseolgi was also not significantly altered. Total reducing capacity and flavonoid content of baekseolgi increased proportionally with the increase in AF addition. However, these values were lower than the predicted values calculated from the antioxidant activities of heated AF, which was more apparent in total reducing capacity. This indicated that the stability of non-phenolic reducing compounds in AF was lower than that of the phenolic compounds. Thermally processed baekseolgi made with 9% AF exhibited antioxidant activity without noticeable loss in the quality of the product.
A comparison of intake, digestibility and nitrogen balance in spotted deer(Cervus nippon) fed forest by-product silage(FBS), arrowroot silage(ARS) and oak leaf hay(OLH) was made to examine the feeding value of forest by-product silage. Dry matter digestibility of ARS was significantly higher(p$<$0.05) than that of OLH while crude protein digestibility was significantly higher(p$<$0.05) in ARS and FBS than in OLH. The digestibility of crude fiber was highest in FBS. Dry matter intake of OLH was significantly higher(p$<$0.05) than that of ARS, and there was no significant difference with FBS. Nitrogen intake was higher in OLH and ARS than in FBS, but there was no significant difference. Fecal nitrogen was highest(p$<$0.05) in OLH and urinary nitrogen was highest(p$<$0.05) in ARS. Retained nitrogen was highest in FBS, however, there was no significant difference among treatments. In Conclusion. FBS was estimated as a useful roughage source for deer, showing high digestibility, dry matter intake and nitrogen utilization.

To determine availability as a feed source of deer of by-products that produced at reforestation areas and comprised shrubs and wild grasses, mixed forest by-product silage(FBS), arrowroot silage(ARS), bristletooth oak tree silage(BOS), white oak tree silage(WOS) were prepared to compare dry matter intake, digestibility and nitrogen balance in digestion balance trials with spotted deer. Dry matter intake was highest in WOS and lowest in ARS but there was no significant difference(P>0.05). Digestible dry matter intake was higher in FBS and ARS that had higher dry matter digestibility than in WOS and BOS that had lower dry matter digestibility(P>0.05). Dry matter digestibility was highest fur ARS and lowest for BOS(P<0.05). Digestibility of crude protein was similar to that of dry matter. That of crude fiber was higher for FBS and ARS than for BOS and WOS(P>0.05). Daily gain of body weight was slightly greater for WOS than fer other treatments(P>0.05). Nitrogen intake was highest for ARS and lowest for BOS(P<0.05), and fecal nitrogen was opposite to nitrogen intake(P<0.05). Nitrogen excretion with urine was highest for ARS that had higher nitrogen intake and lowest for BOS and there was a significant difference(P<0.05). Retained nitrogen was highest for FBS and lowest for. BOS (P>0.05). Although there was no significant difference(P>0.05): the ration of nitrogen intake to retained nitrogen was highest in FBS for 43.9% and lowest in BOS for 24.7%. Consequently because by-products that produced at reforestation areas had high intake and internal availability, it was evaluated to valuable feed source for deer.
