Effect of White and Blue Wind Net Shading on the Quality of 'Fuji' and 'Hongro' Apple Fruits (백색 및 청색 방풍망 차광 처리가 '후지', '홍로' 사과 과실의 품질에 미치는 영향)

  • In Yesan-gun, Korea's main apple-producing region, the area of apple cultivation and yield are declining. In particular, the worsening quality of fruits due to unusually high temperatures amid recent climate change has also become a major challenge for apple orchards located on flatlands. The objective of this research is to investigate quality changes of apples according to different growing environments, depending on the shade of the sun, by covering the trees with different colors of wind nets. A white and blue wind nets with a hole size of 2 × 2 mm is installed on two experimental trees, 17-year-old 'Fuji' and 'Hongro', which are planted 1.5 m × 3.5 m in the north-south direction. Treatment of wind nets effectively lowered fruit surface temperature regardless of apple variety. When measuring the temperature of the fruit surface at 2 pm, the temperature of the air was 34.8℃, but the 'Fuji' of the untreated blocks was the highest at 40.0℃, while the blue wind net and the white wind net were significantly lower at 34.9℃ and 36.6℃, respectively. In 'Hongro', the results showed that the surface temperature was effectively lowered by recording 38.3℃ for the blue wind net and 38.5℃ for the white wind net treatment when the untreated one was 44.2℃. According to the color difference in 'Fuji', the skin redness (a) was the lowest with untreated control at 16.5, but the blue and white wind net treatment higher at 18.0 and 19.3, respectively. In 'Hongro', the white wind net treated fruit also showed a much higher skin redness than the untreated control of 28.1, showing much higher a of 34.9. Sunburn damage in 'Fuji' apples amounted to 9.4% in untreated control. However, the blue and white wind net treatment revealed to 3.8% and 4.2%, respectively. In 'Hongro', those damage in the fruits treated with blue or white wind net, accounted for only 8.8% and 12.4%, respectively, significantly lower than 28.8% occurrence of untreated one. And, these results were understood to be the result of low UV radiation being blocked by the treatment of wind nets.

  • BACKGROUND: This study was conducted to investigate the agricultural product (Pulses, Lettuces, Pumpkins, Apples, Pears and Tangerines) in Korea, monitoring of cadmium (Cd) and lead (Pb) contaminations of agricultural products in cultivated areas and abandoned mine areas were investigated, and risk assessment was performed through dietary intake of agricultural products. METHODS AND RESULTS: The average contents of Cd and Pb ranged from 0.001 to 0.018 mg/kg and from 0.007 to 0.032 mg/kg respectively. The result was showed that contents of Cd and Pb did not exceed maximum residual levels established by CODEX except pumpkins and apples. The average daily intake were in the range of $1.06{\times}10^{-3}$ to $4.76{\times}10^{-2}{\mu}g/kg$ b.w./day at the mean and 95th percentile for Cd, $4.53{\times}10^{-3}$ to $8.35{\times}10^{-2}{\mu}g/kg$ b.w./day at the mean and 95th percentile for Pb for general population, based on the Korean public nutrition report 2008. The Hazard Index (HI) from the ratio analysis between daily exposure and safety level values was smaller than 1.0. CONCLUSION(s): This results demonstrated that human exposure to Cd and Pb through dietary intake of agricultural produces from abandoned mine areas might not cause adverse effect exceeding to those from non-contaminated areas.

Effect of Flower and Fruit Thinner on Fruit Set and Fruit Quality of 'Gamhong' Apples (적화제 및 적과제가 '감홍' 사과의 착과와 과실 품질에 미치는 영향)

  • This study investigated the effects of flower and fruit thinning agents on fruit set and harvested fruit quality attributes in 'Gamhong' apples. Lime sulfur, MaxCel (1.9% BA), and Fruitone (3.5% NAA) were applied either at post-bloom or fruitlet stages to mature 'Gamhong/M.9' trees. In 2011, the numbers of fruits per cluster in terminal flowers were 1.74, 0.82, and 1.15 for the control, lime sulfur, and Maxcel (applied at 10-mm fruit stage) treatments, respectively. The percentages of single fruit per cluster were 36.0, 47.9, and 48.7% for the control, lime sulfur, and Maxcel (10 mm) treatments, respectively, while the percentages of clusters with three fruits per cluster were 22.9, 1.4, and 5.8%. In lateral flowers, fruit numbers per cluster were 1.20, 0.36, and 0.50 for the control, lime sulfur, and Maxcel (10 mm) treatments, respectively. In 2012, all the thinning treatments showed a positive effect on flower and fruit thinning, compared with the control. Moreover, the treatment with thinning agents did not affect fruit quality. Overall, the results suggest that a single application of flower or fruit thinning agents would be sufficient, rather than the mixed application of thinning agents, based on the observed decrease in fruit setting.

  • The properties, land use and genesis of the Jang-weon series, Planosol-like soils, distributed in Cheong-do area were investigated. Planosol-like soils in Korea have been believed unsuitable for perennial crops but 34.6% (594ha) of the Jang-weon soils in Cheongdo-gun are used for perennial crops such as apples, persimmons, peaches, mulberry etc. With productivity more or less equal to alluvial soils. The reason for high productivity and a working hypothesis for the genesis of the fragipan is suggested with discussion.

Baby Food Processing and Properties by using High Pressure Processing (초고압 처리에 의한 이유식 가공 및 특성)

  • In the manufacture of baby food in the form of semi-solid to give the most suitable rheological properties to select thickener, 4% of rice flour, modified starch 1 and modified starch or 0.3% pectin added to baby food. After 3 minutes at a pressure 550 MPa high pressure processing(HPP), sensory evaluation conducted to measure the viscosity results, the addition of rice flour, baby food bananas and apples all the color, texture, flow properties and high affinity for most commercial baby food as well as the most likely to show the viscosity of semi-solid state in the manufacture of baby food there were rice flower most suitable. The baby food that 4%, 6% and 8% of rice flower added as thickener were high pressure processing at 450 MPa and 550 MPa pressure and 1, 3 and 5 min conditions. In results, the higher added percentage of rice flower, the viscosity and lightness were increased, pH and sugar content were not significantly different from. In addition, ultra-high pressure processing conditions and the processing time for a change in pressure due to the increase is not significantly different. Because of high-pressure processing does not significantly affect the physical properties of the baby food, consideration of the economy and gelatinization degree, high-voltage processing conditions for the manufacture of baby food 550 MPa, 3 min was considered the most suitable processing conditions.

The Antioxidative and Antibrowning Effects of Citrus Peel Extracts on Fresh-cut Apples (Citrus 과피 추출물의 항산화 및 사과 슬라이스에 대한 항갈변 효과)

  • This study was designed to evaluate the usability of the following citrus peel extracts (CPEs): Citrus sinensis (orange), C. unshiu (mandarin orange), C. limon (lemon), and C. paradise (grapefruit) as natural antibrowning agents. Overall, 0.1% of the CPEs were effective in reducing the browning of apple slices. The appearance of apple slices dipped in C. limon peel extracts (LPE) were found to be excellent and their Hunter L and ${\Delta}E$ values were similar to the values obtained when apple slices were dipped in ascorbic acid. The pH values of the different CPEs were not significantly different from each other, but were higher than that of ascorbic acid. LPE was found to possess the highest total phenolic content, flavonoid content, DPPH radical scavenging activity, and copper ($Cu^{2+}$) chelating activity. All these results suggest that citrus peel extracts, especially lemon peel extract, can be used as natural antibrowning agents.

Survey on Kimchi Intake Patterns and Attitudes towards Development of Functional Kimchi among Middle and High School Students in Busan Area (부산지역 중·고등학생의 김치 섭취 실태 및 기능성 김치 개발에 관한 태도 조사)

  • The intake patterns and attitudes towards development of functional kimchi among middle and high school students in Busan area were studied. Nine hundred respondents, consisting of middle and high school students, were surveyed. A total of 833 completed copies of the questionnaire were used in this research. Respondents preferred kimchi due to its 'ot taste' (49.2%) and 'alty taste' (17.9%), but they did not like kimchi due to its 'our taste' (33.8%) and 'eotgal taste' (22.9%). Most students (64.3%) consumed kimchi at home, 68.1% of students ate kimchi more than twice a day, and 27.4% of students consumed 3~4 pieces (size of a piece: $3{\timess}4cm$) of kimchi per meal. Students showed a strong desire to develop kimchi with a good taste at school food services (65.1%). They also showed intentions to increase intake of kimchi if 'aste of kimchi' (80.6%), and 'ealth functionality of kimchi' (65.2%) are strengthened. Students wanted kimchi to contain the following fruits: pears (41.3%), apples (24.6%) and pineapples (10.3%). Finally, students showed a desire to develop kimchi that helps growth and development (59.5%), weight loss (40.4%), and learning ability improvement (32.8%). This study concludes that it is necessary to increase kimchi intake in school foodservices by developing new kimchi recipes that meet students' desires and by educating students about the health benefits of kimchi.

Fruit Dieting Behavior of Black-billed Magpies, Azure-winged Magpies, and Brown-eared Bulbuls in the Cage (사육상에서 까치, 물까치, 직박구리의 과실먹이 섭식행동)

  • To investigate the bird's dieting behavior for several fruits in orchards, this study was carried out in 2008. Black-billed magpies (Pica pica), azure-winged magpies (Cyanopica cyanus), and brown-eared bulbuls (Hypsipetes amaurotis) made their unique marks on the surface of pear and apple fruits; black-billed magpies pecked fruits strongly and left round holes with perpendicular angle, whereas those of azure-winged magpies and brown-eared bulbuls were sack-shaped with narrow neck and marked unique stripes on the skin. For the fruits of pear and apple from bagging practices, the birds showed different foraging behavior; black-billed magpies could injure all kinds of fruits whether with paper bags or not, but azure-winged magpies and brown-eared bulbuls could not attack the fruits with paper bag. Azure-winged magpies and brown-eared bulbuls preferred pear fruits to those of apples and satsuma mandarins in the cage trials. To reduce the injuries by azure-winged magpies and brown-eared bulbuls on pear and apple fruit, wrapping bag should not be impaired. Introducing azure-winged magpies to Cheju should be prohibited for the potential citrus injury by them.

  • This report decribes the changes of internal browning and PPO in apples, when the method of storage was changed in the condition of low temperature. Internal browning was found more Fuji harvested in November than Fuji in October. The degree of internal browning was the highest during the storage of 0.09mm 2% and 0.06mm 2%, 0.06mm 20% was followed. In the subatmospheric storage with complete remove of $CO_2$ internal browning was not observed. During the storage of P.E. film bag, Fuji havested in November was higher than in October, and Fuji on 0.09mm 2% was higher than in 0.06mm, and Fuji during the storage of P.E. film bag was increased in PPO activity and PPO specific activity. During the subatmospheric storage with complete remove of $CO_2$, PPO activity of Fuji was little changed, but it's PPO specific activity was continuously decreased. PPO activity of Ralls was more higher than PPO activity of Fuji. PPO activity and PPO specific activity during the early stage of storage and the end stage of storage were little changed. Internal browning of Fuji was more effected $CO_2$ injury than chilling injury. There is no relation between internal browning and degree of PPO activity was effected by $CO_2$ and slightly related with internal browning.

A Survey on Preference and Intake of Kimchi for Elementary School Meal Service (초등학생의 학교급식용 김치에 대한 기호도 및 섭취 실태 조사)

  • The purpose of this research is to get basic information needed for the development of special kimchi for the elementary school students. A questionnaire was used to investigate the consumption and attitude of the students when they having kimchi in the school meal service. The subjects consisted of 426 elementary school students(212 boys and 214 girls) in Seongnam. The collected data were analyzed by SAS package. The frequency of having kimchi was as follows. 52.1% of the students eat kimchi in every meal time, and 97.4% eat more than once a day. However, 54.0% of the students consume more than 5 pieces($2.5\times3.0 cm$) of kimchi per meal while 17.6% 1~2 pieces. They eat more kimchi at home than at school, and the main reason is that kimchi at home is 'more tasty'(79.1%), 'more safety'(29.1%) and 'less hot and salty'(19.2%). Baechu kimchi was found to be the most favorite one in the school meal service, followed by kkakdugi, yoelmu kimchi, chonggak kimchi, oi kimchi and nabak kimchi in order. Students wanted to added apples, pineapples, pears, oranges, shrimps, cucumbers and crab flavored fish paste to kimchi. Students' most favorite foods made with kimchi in the school meal service were Kimchi bokgumbab, Kimchi mandu, Kimchi jjigae, Kimchi jumukbab, Kimchi gimbab, Kimchi bokgum, Kimchi bibimbab, Kimchi hamburger and Kimchi dongas in order. Higher grade students and boys showed higher preference for the variation foods than lower grade students and girls.
