Comparison of Pork Quality and Sensory Characteristics for Antibiotic Free Yorkshire Crossbreds Raised in Hoop Houses

  • The objective of this study was to compare pork characteristics and to determine consumer acceptability of pork chops from antibiotic free Yorkshire crossbreds sired by Berkshire (BY), Large Black (LBY), Tamworth (TY) or Yorkshire (YY) boars and reared in hoop houses. The experiments were conducted at the North Carolina Agricultural and Technical State University (NCA&TSU) Farm in Greensboro, NC and the Cherry Research Station Center for Environmental Farming Systems (CEFS) Alternative Swine Unit in Goldsboro, NC (source of antibiotic free Yorkshire sows used at both places). Twenty-four sows were artificially inseminated at each location in each of three trials. Litters were weaned at 4 wks old, and reared within deep-bedded outdoor hoop houses. To compare pork characteristics, 104 randomly selected animals were harvested at a USDA-inspected abattoir at approximately 200 d of age. Variables measured included pH, color score, $L^*$, $a^*$, $b^*$, marbling score, drip loss, hot carcass weight, backfat thickness (BF), loin muscle area (LMA), and slice shear force. Sensory panel tests were also conducted at two time periods. The data was analyzed with GLM in SAS 9.01 including location, trial, and sire breed as fixed effects. Backfat thickness, LMA, color score and $a^*$ were different among breeding groups (p<0.05). The LBY pigs had thicker backfat and smaller LMA than the other breed types. The TY and YY had less backfat than all other breed groups. Color score was lower for YY than BY and LBY but intermediate for TY. The $a^*$ was lower for TY than other breeds except LBY which was intermediate. For one sensory panel test, YY pork was more preferred overall as well as for juiciness and texture compared to BY and LBY (p<0.05), but no impact of breed type was noted for the other test, with values similar for BY, LBY, TY and YY pork. This information may help small farmers make decisions about breed types to use for outdoor production.

  • The objective of this study was to compare body weight, ADG, and feed:gain ratio of antibiotic-free pigs from Yorkshire dams and sired by Yorkshire (YY), Berkshire (BY), Large Black (LBY) or Tamworth (TY) boars. All the crossbred pigs in each of three trials were raised as one group from weaning to finishing in the same deep-bedded hoop, providing a comfortable environment for the animals which allowed rooting and other natural behaviors. Birth, weaning and litter weights were measured and recorded. From approximately 50 kg to market weight (125 kg), feed intake and body weights were recorded manually (body weight) or using a FIRE (Feed Intake Recording Equipment, Osborne Industries Inc. Osborne, Kansas) system with eight individual feeding stations. Feed intake data for 106 finishing pigs between 140 and 210 d of age and the resulting weights and feed conversion ratios were analyzed by breed type. Least square means for body weights (birth, weaning and to 240 d) were estimated with Proc Mixed in SAS 9.2 for fixed effects such as crossbreed and days of age within the sire breed. The differences within fixed effects were compared using least significant differences with DIFF option. Individual birth weights and weaning weights were influenced by sire breed (p<0.05). For birth weight, BY pigs were the lightest, TY and YY pigs were the heaviest but similar to each other and LBY pigs were intermediate. For weaning weights, BY and LBY pigs were heavier than TY and YY pigs. However, litter birth and weaning weights were not influenced by sire breed, and average daily gain was also not significantly different among breed types. Tamworth sired pigs had lower overall body weight gain, and feed conversion was lower in TY and YY groups than BY and LBY groups (p<0.05), however, number of observations was somewhat limited for feed conversion and for Tamworth pigs. Overall, no convincing differences among breed types were noted for this study, but growth performance in the outdoor environment was satisfactory.

Influences of Plant Extract Supplementation on Performance and Blood Characteristics in Weaned Pigs

  • One hundred and twenty crossbred pigs [(Duroc$\times$Yorkshire)$\times$Landrace] were used to determine the effects of plant extract (PE) supplementation on performance and blood characteristics in weaned pigs fed a corn-dried whey-SBM based diet. Treatments were 1) NC (antibiotic free basal diet), 2) PC (NC diet+100 ppm apramycin and 100 ppm oxytetracycline), 3) PE 0.1 (NC diet+0.1% plant extract), 4) PE 0.2 (NC diet+0.2% plant extract) and 5) PE+AB (PC diet+0.1% plant extract). Through the entire experimental period, ADG of pigs fed PC (300 vs. 281 g/d), PE 0.2 (310 vs. 281 g/d) and PE+AB (306 vs. 281 g/d) diets was higher than that of pigs fed NC diet (p<0.05). However, no differences were found among the treatments for ADFI and gain/feed. At day 2 after the onset of the experiment, fecal consistency score of pigs fed PC, PE 0.1, PE 0.2 and PE+AB diets was lower than that of pigs fed NC diet. There were no significant differences in red blood cell, white blood cell, lymphocytes, neutrophils and monocytes concentrations of blood among the treatments. In conclusion, PE can be used to replace antibiotics in diets for weaned pigs without negative affects on performance. Optimal PE levels seemed to be 0.2% and the results obtained point out to a synergic effect of the combination of PE and antibiotic on performance in weaned pigs.

이유자돈사료에 항생제를 대체하기 위한 재조합 인간 락토페리신 컬처의 평가 (Evaluation of Recombinant Human Lactoferricin Culture as a Substitute for Antibiotic in Pig Starter Diets)

  • 개시시 체중 7.63, 0.41kg, 3원 교잡종 이유자돈(25일령) 60두를 공시하여, 이유자돈 사료내 재조합 인간 락토페리신 컬처(RHLC ; recombinant human lactoferricin culture)의 급여가 성장, 영양소 소화율 및 혈장내 면역글로블린 G 농도에 미치는 영향을 평가하기 위하여 20일간 사양시험을 실시하였다. 시험설계는 1) 항생제 무첨가구(NC), 2) 항생제 첨가구(PC; NC 사료 + 0.1% chlortetracycline), 3) 항생제 무첨가구 사료에 RHLC를 0.3% 첨가한 처리구 (RHLC0.3; NC 사료 + 0.3% RHLC), 4) 항생제 무첨가구 사료에 RHLC를 0.5% 첨가한 처리구 (RHLC0.5; NC 사료 + 0.5% RHLC)로 4개 처리로 하였다. 총 사양시험 기간동안, 일당증체량에 있어서는 항생제 첨가구와 비교하여 RHLC의 첨가수준이 증가함에 따라 높아지는 경향을 보였으나, 표준오차가 크기 때문에 유의적인 차이는 보이지 않았다. 일당사료섭취량에 있어서는 PC 처리구와 비교하여 RHLC0.3 처리구가 유의적으로 높았으며(P<0.05), 사료효율에 있어서는 PC 처리구와 비교하여 RHLC0.5 처리구가 가장 좋은 것으로 나타났다(P<0.05). 영양소 소화율에 있어서는 NC 처리구와 비교하여 PC, RHLC0.3 및 RHLC0.5 처리구가 유의적으로 높게 평가되었으며(P<0.05), 혈장내 면역글로블린 G 농도는 처리구간에 유의적인 차이를 보이지 않았다. 결론적으로, 이유자돈에 있어 재조합 인간 락토페린신 컬처가 항생제를 대체할 가능성이 있는 것으로 사료된다.

Effects of Dietary Supplementation with Blended Essential Oils on Growth Performance, Nutrient Digestibility, Blood Profiles and Fecal Characteristics in Weanling Pigs

  • The influence of dietary supplementation with blended essential oil on growth performance, nutrient digestibility, blood profiles and fecal characteristics was evaluated in 125 crossed ((Duroc ${\times}$Yorkshire) ${\times}$Landrace) pigs (6.21${\pm}$0.20 kg initial body weight and 21 d average age). The pigs were allotted to the following treatments: i) NC (antibiotic free diet), ii) PC (NC diet+44 ppm tylosin), iii) T1 (NC diet+0.1% essential oil), iv) T2 (NC diet+0.1% essential oil (with 0.3% Benzoic acid)) and v) T3 (NC+22 ppm tylosin and 0.05% essential oil). Average daily gain (ADG) was improved in the T2 group on d 14 (p<0.05). In addition, nutrient digestibility was partially affected (both positively and negatively) by the treatments. Furthermore, the immune system was stimulated and the fecal pH and fecal noxious gases were improved in pigs that received the diets supplemented with essential oil (p<0.05). The appearance and score of diarrhea also tended to be lower in pigs that were subjected to the essential oil treatments. Collectively, the results of this study indicate that supplementation of the diet with blended essential oils could replace treatment with antibiotics to improve growth performance and fecal characteristics.

혼합생약제(고뿔®)의 첨가가 육성돈의 성장, 면역관련 혈액학적 지표, 분내 휘발성 지방산과 암모니아태 질소 함량에 미치는 영향 (Effects of Dietary Herbal Plant Mixture (Koppuul® on Growth Performance, Blood Immunological Parameters, Fecal VFA and NH3-N Concentrarions in Growing Pigs)

  • 본 시험에 사용된 생약제제는 지황, 천궁, 감초, 오미자, 차전차, 산약, 둥글레, 당귀 및 황백 등 24가지의 생약을 적절히 배합한 혼합생약제제(고뿔??)로서 육성돈 사료에 첨가 급여시 생산성, 혈액 내 면역관련 혈액학적 지표, 분내 휘발성 지방산 및 암모니아태 질소 함량에 미치는 영향을 규명하고자 실시하였다. 시험동물은 3원 교잡종(Landrace×Yorkshire×Duroc) 육성돈 80두를 공시하였으며 시험개시시의 체중은 16.35±0.05kg 이었고 1) NC (negative control; antibiotics-free diet), 2) PC (positive control; NC diet added 0.16% antibiotic), 3) NCK0.2 (NC diet added 0.2% herbal product(koppuul??)), 4) PCK0.1 (PC diet added 0.1% herbal product (koppuul??))로 4개 처리를 하여 처리당 5반복 반복당 4두씩 임의 배치하여 42일간 실시하였다. 총 사양시험 기간 동안 일당증체량에서는 PCK0.1구와 PC구가 NC구와 비교하여 유의적으로 높게 나타났고(P<0.05) 사료효율에서는 PC구가 NC구와 비교하여 유의적으로 높았다(P<0.05). 혈액 내 백혈구수와 IgG 함량의 변화는 PC, NCK0.2와 PCK0.1구가 NC구와 비교하여 유의적으로 높은 경향을 보였다(P<0.05). Lymphocyte의 경우 PCK0.1구에서 증가량이 유의적으로 가장 높았으며 대조구가 가장 낮게 나타났다(P<0.05). 분내 암모니아태 질소 함량을 보면 NCK0.2구가 항생제를 첨가한 PC구와 대조구에 비해 유의하게 낮은 결과를 보였다(P<0.05). 건물과 질소 소화율에서는 항생제를 0.16% 첨가한 PC구에서 높은 경향을 보였으나 전 처리구에서 유의적인 차이를 보이지 않았다. 결과적으로 육성돈 사료 내 생약제 또는 항생제 첨가시 일당증체량, 혈액 내 백혈구수와 IgG 함량을 증가시키고 분내 암모니아태 질소 함량을 감소시키는 것으로 사료된다.

사료내 희토 첨가가 비육돈의 생산성, 혈액내 면역관련 세포수, 육질특성 및 분 중 악취방출 가스함량에 미치는 영향 (Effects of Rare Earth Supplementation on Growth Performance, Blood Immune-Related Cell Population, Meat Quality and Fecal Odor Emission Gases in Finishing Pigs)

  • 본 연구는 희토의 첨가가 비육돈의 생산성, 면역관련 혈액학적 지표, 육질특성 및 분내 유해가스발생 함량에 미치는 영향에 대해 알아보기 위하여 시험을 실시하였다. 3원 교잡종 비육돈 64두를 공시하였으며, 시험 개시시 체중이 65.42±1.16kg 이었고, 10주간 사양시험을 실시하였다. 시험설계는 1)Antibiotic free diet (NC), 2)NC diet+6 weeks 44ppm of tylosin/4 weeks 22ppm of tylosin(PC) 3)NC diet+100ppm of RE(RE1) 및 4)NC diet+200ppm of RE (RE2)로 4개 처리를 하여 처리당 4반복, 반복당 4두씩 완전임의 배치하였다. 사양시험 기간 동안 일당증체량, 일당사료섭취량 및 사료효율은 처리구간에 유의적인 차이가 없었다(P>0.05). 건물 및 질소 소화율은 RE2처리구가 다른 처리구와 비교하여 높게 나타났으며(P<0.05). 에너지소화율은 RE2처리구가 NC 및 RE1처리구와 비교하여 높은 소화율을 나타내었다(P<0.05). WBC 수준은 6주에서 RE1처리구가 NC 및 RE2처리구와 비교하여 높은 함량을 나타내었다(P<0.05). 배최장근의 명도를 나타내는 L*값은 희토를 첨가한 RE1 및 RE2처리구가 NC처리구와 비교하여 높게 나타났으나(P<0.05), a* 값은 PC처리구가 RE1처리구와 비교하여 유의적으로 높았다(P<0.05). 근내지방 내 지방산 조성에 있어서 total MUFA는 RE2처리구가 다른 처리구와 비교하여 높은 함량을 나타내었으며(P<0.05), total UFA는 RE2처리구가 PC처리구와 비교하여 높았다(P<0.05). 등지방 내 지방산 조성에 있어서 Total SFA는 PC처리구가 희토를 첨가한 RE1 및 RE2처리구와 비교하여 높은 함량은 나타내었다(P<0.05). Total UFA/SFA는 희토를 첨가한 RE1 및 RE2처리구가 PC처리구와 비교하여 높게 나타났다(P<0.05). 분내 유해가스 물질의 발생 함량에 있어서 암모니아(NH3)는 희토를 첨가한 RE1 및 RE2 처리구가 NC 및 PC처리구와 비교하여 낮은 함량을 나타내었다(P<0.05). 결론적으로, 본 시험의 결과 비육돈에 희토의 첨가는 영양소 소화율, 육질특성, 지방산조성 및 분내 유해가스 함량에 영향을 미치는 것으로 사료된다.
